  • To obtain basic data for efficient health plan, we investigated the condition of farmers' health, living behavior, working environment, and cumulative fatigue symptoms by crops (greenhouse melon, rice and red pepper, stock farming, pear, grapes, dropwort, sweet potato, potato, radish. cabbage). The results are as follows; (1) The condition of farmers health : Among them, cabbage cultivators were in bad health concerning cardiovascular system, musculo-skeletal system, and skin condition. (2) Living behavior : $\circled1$ Radish cultivators were in best of their physical condition. $\circled2$ Rice and red pepper cultivators were taking a regular recess as compared with dropwort cultivators. $\circled3$ On concerning bathe, sleeping, and clothes, stock farmers were in relatively bad condition. (3) Working environment : cabbage, greenhouse melon, and dropwort cultivators had relatively Poor working environment. (4) Cumulative fatigue symptoms : $\circled1$ Dropwort cultivators were in the worst of their condition concerning loss of their energy, physical condition. decline of will to labor, sense of unease, and low spirits. $\circled2$ On concerning general fatigue, dropwort, sweet potato, and cabbage cultivator were in bad condition.

꽃양배추 색소의 추출특성 (Extraction Characteristics of Red Flower Cabbage Pigment)

  • 새로운 천연식용색소원으로서 꽃양배추(Brassica oleracea L. var. acephala)로부터 anthocyanin색소의 추출특성을 조사하였다. 추출된 색소는 $pH\;1{\sim}12$의 범위에서 pH가 높아질수록 ${\lambda}_{max}$가 장파장 쪽으로 이동하는 bathochromic shift 현상을 보였으며 추출용매의 citric acid의 농도가 증가수록 추출속도가 빨라지고 TOD가 증가하였다. 꽃양배추 색소의 추출용매에 $0.8{\sim}1.0%$ citric acid를 첨가하였을 때 최대 TOD값을 나타냈으며 추출용매인 증류수에 10-20% ethanol을 첨가하였을 때 색소의 추출효율이 높게 나타났다. 따라서 citric acid 0.8%를 함유한 10% ethanol 수용액이 꽃양배추 색소를 추출하기 위한 가장 적합한 용매로 결정하였다. 추출 온도가 높을수록 색소추출속도가 증가하였으나 고온에서 추출할 경우 추출시간이 길어지면 색소가 파괴되어 TOD값이 감소하였다. 추출온도 5, 20, 40 및 $60^{\circ}C$에서 TOD값이 2.1에 이르는 시간은 각각 24, 8, 4, 2시간으로 추출온도가 높을수록 추출속도가 증가하여 추출시간이 단축되었다.

상토 환경에서 고추(Capsicum annuum L.), 오이(Cucumis sativus L.) 및 배추(Brassica campestris L. ssp. pekinensis)에 대한 생장촉진제로서 아인산 처리의 평가 (Evaluation of Phosphorus Acid Treatment as a Growth Stimulant for Red pepper (Capsicum annuum L.), Cucumber (Cucumis sativus L.), and Kimchi cabbage (Brassica campestris L. ssp. pekinensis) in the Bed Soil Environment)

  • This study was conducted to evaluate the effect of phosphorus acid (H3PO3) addition to the horticultural bed soil on the initial growth of red pepper (Capsicum annuum L. cv.), cucumber (Cucumis sativus L. cv.), and kimchi cabbage (Brassica campestris L. ssp. pekinensis (Lour.) Rupr. cv.). The stem heights of red pepper and cucumber were 46.1% and 23.0% greater in the 50 mg/L of phosphorus acid treatment than the untreated (control). Further, the stem diameter of pepper and cucumber were 48.7% and 23.0% greater in the 50 mg/L of phosphorus acid treatment than the control. In addition, the number of kimchi cabbage leaves was 47.5% greater in the 50 mg/L of phosphorus acid treatment than the control. The dry weights of red pepper, cucumber and kimchi cabbage were 72.9%, 16.5%, and 30.4% heavier in the 50 mg/L than the control, respectively. Cations (K, Ca, and Mg) and total phosphorus (T - P) were quantitatively analyzed for these three horticultural crops. The concentrations of K, Ca, and Mg, and T - P were higher in the 50 mg/L of phosphorus acid than the control, respectively. Based on the results obtained in this study, it appears that treatment of phosphorus acid in horticultural bed soil enhanced the growth of red pepper, cucumber and Kimchi cabbage.

혼합파장의 LED를 광원으로 재배한 방울토마토와 적채의 생리활성물질 함량 분석 (Effect of LED with Mixed Wavelengths on Bio-active Compounds in Cherry Tomato and Red Cabbage)

  • 본 연구는 식물 공장에서 특정 파장을 조합한 혼합 LED를 광원으로 사용하여 방울토마토와 적채를 재배할 때 식물의 성장과 각각에 존재하는 생리활성물질인 리코펜과 안토시아닌의 함량 변화를 탐색하였다. 대조광으로 형광등을 사용하였고 LED 혼합 파장은 적색, 녹황색, 청색 파장(630 nm:550 nm:450 nm=8:1:1)을 혼합하여 방울토마토와 적채에 조사하였다. 방울토마토에서는 LED을 조사하였을 때, 수확되는 방울토마토의 개수는 적었으나 수확된 방울토마토의 무게와 당도에서 유의적으로 높은 값을 나타내었다. 그러나 방울토마토의 생리활성 물질인 리코펜의 함량은 LED 조사 시 오히려 낮았다. 적채는 LED를 조사하였을 때, 형광등에 비해 적체의 무게에서 유의적으로 높은 값을 나타내었고, 안토시아닌 함량 또한 유의적으로 증가시켰다. 결론적으로 작물의 색에 따라 성장에 요구하는 LED의 파장 및 혼합 비율이 다르다는 것을 알았고, 과실의 색에 따라 LED 파장의 혼합 비율을 달리하는 것이 필요하다는 것을 보여주었다.

계절, 부분, 색의 영향에 의한 양배추의 유리 아미노산 함량 변화 (Effect of season, tissue position and color on content of amino acids in cabbage (Brassica oleracea))

  • The contents of free amino acid in cabbage cultivars originated from China and Korea were measured to determine the quality for taste and nutrition. The experimental variables were season (spring-sowing and fall-sowing), leaf position (inside and outside), and the cabbage color (green and red). Eighteen free amino acids were detected at the range of 0-38 mg/g dry weight. The most abundant amino acid was serine(0-128 mg/g). Alanine, aspartate, glutamate, asparagine, histidine, and proline were relatively rich at 2-12 mg/g dry weight. Glycine were significantly increased in spring-sowing cabbages by 2-fold but proline was reversely decreased by 7-fold. The inside parts of cabbages contained significantly more alanine, glutamate, glycine, isoleucine, serine, and valine than the outside ones. The higher contents of isolecuine, leucine, proline, and valine were observed in the red cabbages than the green ones. The significant cross effects of season-color and position-color were also observed, indicating the red and the green cabbages were differently affected by season and tissue position.

배추김치의 표준화 연구 (Studies on the Standardization of Chinese Cabbage Kimchi)

  • 배추김치의 표준화를 위하여 조리서 및 관련 연구 논문과 김치공장에서의 담금방법과 재료배합비의 표준값을 구하여 표준화김치로 선정하고 뚜렷한 차이가 있었던 고춧가루의 첨가농도는 관능검사 및 이화학적 실험과 항돌연변이 효과와 in vitro 항암 기능성을 검토하여 결정하였다. 배추김치 담금시 사용빈도가 50% 이상인 부재료는 무, 파였으며, 양념류로는 고춧가루, 마늘, 생강, 젓갈, 설탕으로 나타났다. 또 재료배합비는 절인배추 100에 대해 무 $13.0{\pm}7.0$, 파 $2.0{\pm}0.5$, 마늘 $1.4{\pm}0.4$, 생강 $0.6{\pm}0.3$, 멸치액젓 $2.2{\pm}1.6$, 설탕 $1.0{\pm}0.3$, 최종염도 $2.7{\pm}0.3$로 결정되었으며, 고춧가루의 배합비는 차이를 보여 $2.5{\pm}0.3$$3.5{\pm}0.8$로 나타났다. $15^{\circ}C$에서 0, 2, 4, 6, 8, 10일간 김치를 발효시키면서 관능검사및 이화학적 실험을 실시한 결과 발효 기간은 4일이 가장 적당히 익은 상태였다. 고춧가루의 배합비는 3.5%인 경우가 2.5%인 경우에 비해 관능적으로 우수하였고, pH가 서서히 감소되어 보존성도 있었으며, 김치의 맛에 관여하는 젖산균인 Leuconostoc속 젖산균수도 높게 나타났다. 특히 선정된 표준화 배추 김치 즙액은 $AFB_1$에 대한 높은 항돌연변이 효과를 보였고, SRB assay에서는 AGS 인체 위암세포의 성장을 억제함을 알 수 있었는데 고춧가루의 배합비는 3.5%인 경우가 2.5%인 경우에 비해 항돌연변이 및 암세포 성장 억제 효과가 더 뛰어남을 관찰할 수 있었다. 따라서 표준화 배추김치의 재료 및 배합비는 배추 100에 대해 고춧가루 3.5, 무 13.0, 파 2.0, 마늘 1.4, 생강 0.6, 멸치 액젓 2.2, 설탕 1.0, 최종염도 2.7로 결정되었다. 배추김치의 담금방법은 배추를 10% 소금물에서 10시간 절이고, 물기를 뺀 후, 무, 파는 채 썰어 고춧가루 갠 것을 넣은 다음, 멸치액젓을 넣고, 마늘, 생강, 설탕을 섞은 후 고루 버무린다.

다양한 광원이 배추 내 Carotenoid와 Glucosinolate 함량에 미치는 영향 (Effects of Various Light Sources on the Carotenoid and Glucosinolate Contents in Chinese Cabbage (Brassica rapa L. ssp. pekinensis))

  • BACKGROUND: Chinese cabbage biosynthesizes various phytochemicals including carotenoids and glucosinolates. Environmental stress has a major effect on the growth and yields of vegetables, and can significantly affect nutritionally important phytochemicals. Phytochemicals of plants are influenced by light, temperature, carbon dioxide, and growing conditions. The aim of this study was to investigate the effect of various light sources on carotenoid and glucosinolate contents in Chinese cabbage. METHODS AND RESULTS: [Experiment I] Set the control (field control, FC) on the ground. Using acrylic sunlight, experiments were set up transparency box (field transparency, FT), red box (field red, FR) and blue box (field blue, FB). [Experiment II] Set the control (chamber control, CC) in the greenhouse. Using plant growth chamber with artificial light, experiments were set up LED red (chamber red, CR), LED blue (chamber blue, CB), LED mixed red+blue (chamber red+blue, CRB) and fluorescent (chamber fluorescent, CF). After plant growth, Chinese cabbage was harvested at 110 days after sowing (DAS). The status of plants growth (leaf length, width, fresh weight etc.) was immediately investigated. Carotenoid and GSL contents were analyzed by HPLC. [Experiment I] Results documented that the ranges of total carotenoid contents were 25.39 ~ 58.80 mg/kg dry wt for lutein, 0.84~ 4.22 mg/kg dry wt for zeaxanthin, and 3.85~18.71 mg/kg dry wt for ${\beta}$-carotene. Lutein was the highest for the content and the largest for the variation as well. [Experiment II] Results documented that the ranges of total carotenoid contents were 24.66~137.96 for lutein, 2.51~20.65 for zeaxanthin, and 8.40~49.80 mg/kg dry wt for ${\beta}$-carotene. The total carotenoid contents of CR (156.62) and CB (115.90) were 1.6~2.3 times larger than the other treatments, and ${\beta}$-carotene content was about twice as high as that of the other treatments on the CR (38.74 mg/kg dry wt.). [Experiment I] Total GSL content was the highest in FT (19.76) that was higher 1.7 times than the lowest treatment ($11.39{\mu}mol/g\;dry\;wt$.). [Experiment II] The total content of GSL was highest in CRB (4.19) and lowest in CF ($2.88{\mu}mol/g\;dry\;wt$.). In the CRB, total GSL contents ($4.19{\mu}mol/g\;dry\;wt$.) was the highest. CONCLUSION: Total and individual carotenoid and GSL contents in Chinese cabbage show significant differences under different light sources. Red and blue lights contribute to significant carotenoids expression and antioxidant activity for nutrition and health benefits. These results concluded that the introduction of varying lights affected the synthesis of important nutrient compounds in Chinese cabbage. It is predicted that the application of good light source enhances the accumulation of functional compounds.

Effect of Nitrogen Application Rates on Nitrous Oxide Emission during Crop Cultivations in Upland Soil

  • BACKGROUND: Generally, nitrogen (N) fertilization higher than the recommended dose is applied during vegetable cultivation to increase productivity. But higher N fertilization also increases the concentrations of nitrate ions and nitrous oxide in soil. In this experiment, the impact of N fertilization was studied on nitrous oxide ($N_2O$) emission to standardize the optimum fertilization level for minimizing $N_2O$ emission as well as increasing crop productivity. Herein, we developed $N_2O$ emission inventory for upland soil region during red pepper and Chinese milk vetch cultivation. METHODS AND RESULTS: Nitrogen fertilizers were applied at different rates to study their effect on $N_2O$ emission during red pepper and Chinese milk vetch cultivation. The gas samples were collected by static closed chamber method and $N_2O$ concentration was measured by gas chromatography. The total $N_2O$ flux was steadily increased due to increasing N fertilization level, though the overall pattern of $N_2O$ emission dynamics was same. Application of N fertilization higher than the recommended dose increased the values of both seasonal $N_2O$ flux (94.5% for Chinese cabbage and 30.7% for red pepper) and $N_2O$ emission per unit crop yield (77.9% for Chinese cabbage and 23.2% for red pepper). Nitrous oxide inventory revealed that the $N_2O$ emission due to unit amount of N application from short-duration vegetable field in fall (autumn) season (6.36 kg/ha) was almost 70% higher than that during summer season. CONCLUSION: Application of excess N-fertilizers increased seasonal $N_2O$ flux especially the $N_2O$ flux per unit yield during both Chinese cabbage and red pepper cultivation. This suggested that the higher N fertilization than the recommended dose actually facilitates $N_2O$ emission than boosting plant productivity. The $N_2O$ inventory for upland farming in temperate region like Korea revealed that $N_2O$ flux due to unit amount of N-fertilizer application for Chinese cabbage in fall (autumn) season was comparatively higher than that of summer vegetables like red pepper. Therefore, the judicious N fertilization following recommended dose is required to suppress $N_2O$ emission with high vegetable productivity in upland soils.

Salmonella 실험계의 십자화과 채소류의 항돌연변이효과 (Antimutagenic Effect of Various Cruciferous Vegetables in Salmonella Assaying System)

  • The antimutagenic effects of juices and methanol extracts from cruciferous vegetables (cabbage, red cabbage, Korean cabbage, kale, cauliflower, broccoli, radish root, leafy radish, rape leaves and shepherd's purse) on the mutagenicity induced by aflatoxin B1(AFB1) and N-methyl-N'-nitrosoguanidine(MNNG) were studied using Salmonella assay system. In the case of juices from the cruciferous vegetables, the juices of cabbage, kale, cauliflower and radish root in the concentrations of 50, 200 and 500 ${mu}ell$/plate considerably decreased the mutagenicity induced by AFB1, and the juices of cabbage and broccoli in the concentrations of 200 and 500${mu}ell$/plate significantly reduced the mutagenicity induced by MNNG. The antimutagenic activities of the juices against AFB1 were stronger than those against MNNG. In the case of methanol extracts from the cruciferous vegetables, the methanol extracts of kale, broccoli and shepherd'purse appeared to inhibit the mutagenicity induced by AFB1 and MNNG in Salmonella typhimurium test strains. The effects of the juices against mutagens quite different from ones of the methanol extracts. The juice of cabbage showed antimutagenicity, but its methanol extract was less effective. However, both juices and methanol extracts from kale and broccoli exhibited strong antimutagenic activities against the mutagens.

MA저장중 몇가지 싹기름 채소의 저장성 비교 (Comparison of Storability of Some Sprout Vegetables in MA Storage)

  • 저장중 5가지 싹채소, (무, 적무, 적양배추, 알팔파, 브로콜리)의 생체중은 $50{\mu}m$ LDPE필름으로 밀폐하여 $2^{\circ}C$$8^{\circ}C$모두 99%이상 유지되었다. 저장중 포장재내 이산화탄소 농도는 $8^{\circ}C$에서 $2^{\circ}C$에서 보다 높았으며 작물별로 무와 적무가 높았다. 산소농도는 이와 정반대로 $2^{\circ}C$에서 높게 유지되었고, 무와 적무가 가장 낮은 농도를 보였는데 특히 $8^{\circ}C$저장 3일째는 3%미만까지 낮아지기도 하였다. 에틸렌 농도도 $2^{\circ}C$에 비해 $8^{\circ}C$에서 다소 높았으며 작물별로는 알팔파가 0.1ppm으로 가장 낮았고 나머지 4 작물은 작물간 농도차이에 유의성 없이 1ppm미만으로 낮았다. 이취는 산소농도가 가장 낮았던 무와 적무에서 오히려 낮은 수준을 보였으며 온도별로 큰 차이가 없었다. 외관상 품질은 역시 $2^{\circ}C$$8^{\circ}C$보다 높게 유지되었으며, 두 온도 모두에서 무가 가장 높게 유지되었고, 다음으로 적무, 브로콜리, 적양배추, 알팔파 순서였다. 이상의 결과에서 싹채소의 작물간 저장성에 차이를 알 수 있었는데 무와 알팔파의 경우 $4{\sim}5$일의 저장기한의 차이를 보였다. 따라서 싹채소 유통에 있어 작물별 관리가 다르게 실시되어야 할 것이라 생각된다.
