The physicochemical properties of spray-dried rice flour with Lactobacillus plantarum CGKW3 were investigated. Amylose and damaged starch contents of spray-dried rice flour (S10, S20, S30, and S50) with L. plantarum CGKW3 were 14.18~17.75% and 24.65~34.08%, respectively. The particle size of spray-dried rice flour was $82.28{\sim}131.17{\mu}m$. The rice flour with L. plantarum CGKW3 showed a good powder flowability. The water absorption and water solubility of spray-dried rice flour were 1.96~2.13 and 9.91~21.95%, respectively. Thermal properties measured by differential scanning calorimeter revealed that the enthalpy (${\Delta}H$) for starch gelatinization were highest in the rice flour (S50) with L. plantarum CGKW3. When compared, the viable cell number of spray-dried rice flour were found to be in the following order: S10 (5.78 log CFU/g) < S20 (6.38 log CFU/g) < S30 (6.69 log CFU/g) < S50 (7.11 log CFU/g). The survaival rate of L. plantarum CGKW3 was 60.02-73.85%, which reflected the improvement in the quality of rice flour with an increase in treatment concentration. Based on our results, spray-dried rice flour with L. plantarum CGKW3 could be used in various types of rice foods.
Forest soil fertility was evaluated through the approach of numerical method. In this study, the soil chemical properties analyzed for 35 different soil series as table 2 were cited in numerical analysis. Minimum contents of essential nutrients in the surface soil for a satisfactory growth of tree in the plantation were evaluated by comparing with Wild's standard as table 1. Demanding level of fertilization were evaluated by using the formula 1 as table 5. Similar relation of soil chemical properties between soil series were calculated through formula 2, and then classified into 5 groups in soil chemical properties. 1. General chemical properties of surface soil in case of 35 soil series. About 40 percent of 35 different soil series are less than 2 percent in organic matter, 10 ppm in available phosphorus, 1.25m.e/l00g in exchangeable calcium and 0.5m.e/l00g in exchangeable magnesium. Generally, shortage of exchangeable potash are not found. CEC less than 10m.e/l00g are in two thirds and strong acid soil less than PH 5.5 are in about four fifths. 2. Soil series requested or not the fertilization are indirectly evaluated from the formula 1 using the relative figure of chemical components of CEC, OM and MgO. Through this analysis, 8 different soil series have very poor quality in soil chemical capacity so that demands highly the fertilization. On the other hand, other 13 different soil series group have not been thought to need the fertilization according to chemical guality. 3. By the results comparing the similarity of chemical properties of forest soil, it is thought to be suitable that the forest soil fertility are divided into 5 groups as follows: 1. Low CEC soil 1-1 Low organic matter soil less than 2 percent 1-2 Medium organic matter soil less than 4 percent 2. High CEC and organic matter soil 2-1 Low magnesium soil 2-2 High magnesium soil 3. High magnesium and calcium soil as lime stone.
Chicken breast jerky (CJ) was prepared by drying chicken breast at $50^{\circ}C$ for 9 hrs after marinating it in a various sweetening sauce including white sugar (WS), brown sugar (BS), rice syrup (RS), fructooligosaccharide (FO), pineapple concentrate (PC), Rubus coreanus extract (RCE), or honey (H), and its physicochemical and sensory properties were investigated. The CJ was found to contain 22.5-25.0% moisture, 41.0-46.6% protein, and 0.4-1.0% fat, which indicates that it could serve as a high-protein and low-fat snack. The type of sweeteners significantly affected the yield, pH, total viable cell count, and water activity of the CJ, showing ranges of 40.9-50.1%, 5.2-5.9, $2.5-6.2{\times}10^4CFU/g$, and 0.74-0.81, respectively. Both the water activity and pH were the lowest in CJ-RCE where of the highest in CJ-WS. The cohesiveness, springiness, and chewiness of the CJ significantly differed depending on the type of sweeteners (p<0.05). CJ-RCE showed the best taste and overall acceptability in a sensory test. After storage at $50^{\circ}C$ for 2 weeks, thiobarbituric acid reactive substance (TBARS) content (58.3 malondialdehyde (MDA) mg/kg) of CJ-RCE was much lower than those of control beef (75.6 MDA mg/kg) and pork jerky (98.0 MDA mg/kg), showing the good oxidative stability of CJ-RCE. Overall, marination in RCE sauce was suitable for the preparation of CJ with good quality in terms of its water activity, fat and protein contents, sensory property and oxidative stability.
In this study, the physicochemical properties, nutritional components, and antioxidant activities of kombucha containing ginseng sprouts (control kombucha, CT; strawberry kombucha, ST ; strawberry kombucha with 2% ginseng sprout, ST+GS) were analyzed for comparison of quality characteristics. The total content of free amino acids in ST+GS (273.38 mg/100 mL) was 3.2-14.5 times higher than in CT (18.9 mg/100 mL) and ST (84.9 mg/100 mL). The total mineral content in ST+GS (63.99 mg/100 mL) was 3.3-4.1 times higher than those of CT and ST (15.45 and 19.28 mg/100 mL). The contents of soluble phenolic and soluble flavonoid were 1.2 mg GAE/mL and 0.14 mg RE/mL in ST+GS. Several ginsenosides were detected only in ST+GS; ginsenoside Rg2 (2.4 mg/100 mL), Rh1 (4.5 mg/100 mL), F2 (9.0 mg/100 mL), Rg3 (4.6 mg/100 mL), and compound K (7.8 mg/100 mL) were detected. The content of phenolic acids was 1.2-1.5 times higher in ST+GS than in CT and ST. The amount of flavonol of ST+GS was not significantly different from CT but was 1.4 times higher than in ST. In terms of antioxidant activities, the values of ST+GS were significantly higher in comparison to other kombucha samples. These results confirmed that incorporating ginseng sprouts amplifies the advantages of kombucha.
In order to evaluate the nitrogen (N) balance, from the different application methods and levels of $^{15}N$ applied to a satsuma mandarin orchard soils in spring, we surface-applied N as urea at the rates of 50 (water-dissolved), 100 (solid and water-dissolved) and 150% (solid) of the recommended rate ($180kg\;ha^{-1}$) in spring (lebeled N), summer (nonlebeled N) with application ratio of 5:2:3. Fruit yield and quality were not significantly affected by any treatment. Nitrogen contents of spring flush leaves in late August were 3.0% regardless of the treatments. The N recovery by parts of tree itself was in the order of leaves, fruits, roots, stems, and the highest recovery per tree was 22.3% in the 50% recommended water-dissolved surface broadcast while there were not much differences for N recovery (11.9 to 13.6%) among the other three treatments. Total N content in top 30cm of soils was 0.47% regardless of the treatments, but N proportion and total residual N from the fertilizer applied increased with increasing N rate while the N recovery in soils decreased. For the recommended N rate, N proportion and the residual N from the fertilizer applied were greater in the water-dissolved surface broadcast than those in soils surface broadcast. The highest total (tree + soils) N recovery was 70.9% in the 50% recommended water-dissolved surface broadcast, but tended to decrease to 52.2, 46.6, and 43.2% for the recommended water-dissolved surface broadcast, 100 and 150% of the recommended solid surface broadcast, respectively.
Growth of 6-year old 'Niitaka' pear (Pyrus pyrifolia Nakai) trees and control of insect and disease occurrences were compared between fermented soybean extracts and rain-shelter system for two years. Foliar application of fermented soybean extracts was applied at 6 times as a pre-experiment in the open-field in 2013, with a rain-shelter system in 2014. Fermented soybean extract treatment increased foliar concentrations of approximately 0.46% T-N, 0.17% K, 0.19% Ca, and 0.06% Mg in 2013 compared to the control, with similar macro-nutrients between the control and soybean extract treatment observed in 2014. Rain-shelter system increased foliar concentrations of T-N, Ca, and Mg compared to the open-field. There were no significantly different between the control and soybean extract treatment for number of leaves per fruit, leaf dry weight, phytotoxicity, and completed shoot growth on August during the two years. Rain-shelter system increased leaf dry weight and did not affect phytotoxicity in the leaves. Fruit quality parameters were mostly similar to control and soybean extract treatment for two years, with higher fruit firmness observed for soybean extract treatment. Rain-shelter system advanced 4 days of harvest dates, and increased approximately 7.0 ton fruit yield per ha, 20 g mean fruit weight, and fruit soluble solid contents compared to open-field in 2014. Soybean extract treatment little suppressed occurrence of disease and insect on the leaves and fruits in both years. Rain-shelter system increased occurrence of Venturia nashicola on the leaves and to 63.8% of Gymnosporangium asiaticum on the fruits in 2014. Strong winds and storms in May elevated relative humidity in the rain-shelter system and caused high infection of the disease occurrence, requiring for an additional green control method. Soybean extract treatment little affected tree growth and would have initiated for a long-term study to evaluate tree physiological characteristics. Rain-shelter system improved fruit productivity and advanced harvest dates, which could have been more effective facility at a Thanks Giving Day between middle and end of September.
Water environment and freshwater algae were studied in the upstream of the Tamjin River Dam. Among the environmental factors, DO concentration in the Tamjin River ranged from 9.0 mg $O_2/l$ to 9.2 mg $O_2/l$, pH from 7.0 to 7.1 and conductivity from $98{\mu}S/cm$ to $100{\mu}S/cm$. Average concentration of $NH_4$ and $NO_3$ ranged from $40{\mu}g\;N/l$ to $56{\mu}g\;N/l$ and from $489{\mu}g\;N/l$ to $611{\mu}g\;N/l$, respectively. $NO_3$ was more plentiful above 9~15 fold than that of $NH_4$. Average concentrations of soluble reactive phosphorus and soluble reactive silicon were $2{\mu}g\;P/l$ and 1.6 mg Si/l, respectively. Particulaly, Si nutrient increased by heavy rain events during summer season. The ratios of N/P and Si/P ranged from 248 to 261 and from 640 to 740, respectively. It is assumed that P would be limiting nutrient on the freshwater algal growth. Average content of planktonic chlorophyll-a ranged from $5{\mu}g/l$ to $13{\mu}g/l$. Mean contents of chlorophyll-a, phaeo-pigment and ash-free dry matter of periphyton were $50.3mg/m^2$, $11.9mg/m^2$, $11.5g/m^2$ in the main stream and $30.1mg/m^2$, $5.6mg/m^2$, $7.8g/m^2$ in the tributary. By comparison of the epilithon biomass, the main stream was higher with 1.5~2.1 fold than the tributary. The impotant algae were composed of diatom Achnanthes linearis, A. minutissima, Fragilaria crotonensis, Gomphonema gracile, Tabellaria flocculosa and blue-green algae Microcystis aeruginosa. In the relative abundance of the phytoplankton and epilithon, the serial dominance were diatom > green algae > blue-green algae, and diatoms were very abundant in comparison with other algal phylum.
Groundwater quality of the natural mineral water was investigated in hydrochemical aspects in order to ensure that mineral water meets stringent health standards. There exist 20 mineral water plants in the Daebo granite and 4 mineral water plants in the Bulguksa granite, respectively. Both granite areas show some differences in water chemistry. The pH, EC, hardness, total ionic contents in groundwater of the Daebo granite area are higher relative to those of the Bulguksa granite area. The content of major cations is in the order of Ca>Na>Mg>K, while that of major anions shows the order of $HCO_3>SO_4$>Cl>F. The fact that the $Ca-Na-HCO_3$ type is most predominant among water types may reflect that the dissolution of plagioclase that is most abundant in granitic rocks plays a most important role in groundwater chemistry. Representative correlation coefficients between chemical species are variable depending on geology. In the Daebo granite area, $Ca-HCO_3(0.84),{\;}Mg-HCO_3(0.81),{\;}SiO_2-Cl(0.74),{\;}Na-HCO_3(0.70)$ show relatively good correlationships. In the Bulguksa granite area, fairly good correlationships are found among some components such as K-Mg(0.93), $K-HCO_3(0.92)$, Mg-Cl(0.92), $Cl-HCO_3(0.91)$, and K-F(0.90). According to saturation index, most chemical species are undersaturated with respect to major minerals, except for some silica phases. Groundwater is slightly undersaturated with respect to calcite, whereas it is still greatly undersaturated with respect to dolomite, gypsum and fluorite. Based on the phase equilibrium it is clear that groundwater is mostly in equilibrium with kaolinite and becomes undersaturated with respect to feldspars, evolved from the stability area of gibbsite during water-rock interaction. While the activity of silica increases, there is no remarkable increase in the acivities of alkali ions and pH, which indicates that some amounts of silicic acid dissolved from silica phases as well as feldspars were provided to groundwater. It is concluded that chemical evolution of groundwater in granite aquifers may continue to proceed with increasing pH.
Nutritional compositions of three Tochukaso species (Paecilomyces tenuipes hosted by Larva and pupa, Cordyceps militaris, C. sinensis) were compared. Fruiting body and host fractions were separately analyzed. Fruiting body fraction of P. tenuipes (36.6%) hosted by larva was higher than that hosted by pupa (10.2%), an indication that the quality of the former is superior to the latter. Carbohydrate content of C. sinensis (39.6%) was $2.5{\sim}7$ times higher than those of others, probably due to the presence of polysaccharides. Protein and crude lipid contents of C. sinensis and C. militaris were 25.8 and 10.3%, and 75.1 and 3.9%, respectively. C. sinensis showed the lowest Ca content and $30{\sim}75$ times higher Fe content among the samples tested. Vitamin A content of C. militaris was 308.9 IU/100g, two fold higher than those of the other species. Saturated fatty acid content was the highest in P. tenuipes (pupa, 27.7%), whereas unsaturated fatty acid was the highest in P. tenuipes (larva, 83.3%). Aspartic acid, glutamic acid, and glycine were abundant in all species. Cordycepin content of C. militaris was $20{\sim}50$ times higher than those of the other species.
The physicochemical characteristics and sensory properties of Deodeok wine, formed by leaching of Deodeok at room temperature for 180 days, were investigated over the following range of Deodeok levels: 10, 15 and 20% (all w/v). The higher the level of Deodeok, the greater were the final values of total sugars, reducing sugars, total polyphenols, and crude saponins. The Hunter's b-value (yellowness) of Deodeok wine varied markedly with Deodeok levels, and yellowness was highest in Deodeok wine containing 20% (w/v) Deodeok. Non-volatile compounds, that form the basis of the liquor tax law, were 0.64, 1.38 and 2.11% (all w/v), respectively, at day 160. Of these values, that of 2.11% (w/v), the level of non-volatile compounds in Deodeok wine containing 20% (w/v) Deodeok, was in accord with the liquor tax law (that requires this figure to be 2.0%). Sensory evaluation showed that Deodeok wine containing 20% (w/v) Deodeok was superior to the other wines tested.
