Effect of Dietary Fiber Level on Meat Quality in Colored Broiler (식이섬유 수준이 유색육용계의 육질에 미치는 영향)

  • This study was conducted to investigate the effect of dietary fiber(DF) levels on the meat quality in colored broiler. Colored broiler were fed on containing corn-soy basal diet(DF 5%) and high level(DF 6,7 and 8%) of dietary fiber diets for 7 weeks. Dietary fiber level of diet was make up by adding some alffalfa meal. Colored broiler meats were stored at 3$\circ$ for 24hr after skaughter, and used to analyze physico-chemical properties. Proximate component, pH, shear force value, myofibril fragmentation index, water holding capacity, cooking loss, protein extractability, fatty acid composition, Hunter's L, a value and palatability of cooked meat were not significantly affected by dietary fiber levels, whereas the Hunter's value of meat was significantly affected bty dietary fiber levels for the final period of feeding. Crude protein content, myofibril fragmentation index, water holding capacity, protein extractability and Hunter's b value of breast meat's were higher than thigh meat's, but crude fat content, pH, shear force value, cooking loss, palmitoleic acid, linolenic acid, and Hunter's a value were lower, regardless of dietary fiber level.

Quality properties of whole milk powder on chicken breast emulsion-type sausage

  • The aim of the study was to determine the effect of whole milk powder (WMP) as heterologous proteins on chicken breast emulsion-type sausages. The quality properties of WMP on such chicken breast emulsion-type sausages were investigated by measuring the proximate composition, pH, color, cooking yield, protein solubility, and by applying other methods, such as texture profile analysis (TPA), microphotograph, sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE), and electronic nose. The crude fat, protein, and ash contents of 15% WMP samples were significantly higher than the control samples (p < 0.05). The redness of the cooked samples significantly increased with an increase in the WMP contents (p < 0.05). The cooking yield of WMP treated samples was significantly higher than the control sample (p < 0.05). Additionally, the hardness, gumminess, and chewiness of WMP treated samples were significantly higher than the control sample (p < 0.05). The sarcoplasmic and myofibrillar proteins of samples containing 15% WMP were significantly higher than the control samples (p < 0.05). The result of SDS-PAGE showed that the C protein, sarcoplasmic protein, actin, and tropomyosin increased with an increase in the WMP contents. The principal component analysis plot of WMP-treated samples was clearly different from that of the control samples. Based on these results, it was predicted that WMP could be useful as heterologous protein on emulsion-type sausage.

Changes of Korean Traditional Yu-gwa Flavor and Characteristics during Storage (유과의 저장기간에 따른 휘발성 향미성분 및 특성 분석)

  • The changes of the color, texture and volatile flavor compounds of Yu-gwa were investigated that affected by the oxidation during storage to characteristic Yu-gwa quality. Among the proximate compositions, carbohydrate was the most abundant component, and followed by lipid and moisture. Although the change of the color showed different pattern by the packaging materials during the storage period, the value of yellowness(b) increased but that of lightness(L) decreased dramatically after 3 month storage. In the textural properties reported closely related with the moisture content, hardness was fairly affected on the period of the storage rather than the type of packaging materials. The flavor compounds of Yu-gwa were analyzed to evaluate the change of distinct volatile compounds during storage. Of the twenty one separated volatile compounds, major volatiles were aldehydes, alcohols and alkenes. The results also showed that polyethylene(PE) contained less volatiles than polypropylene(PP) by the oxidation process during storage.2,4-Decadienal was gradually increased with the period of the storage, whereas octane and furan were decreased. The results provided that the change of the flavor distribution during the storage, and also the possibility of the volatiles such as hexanal, nonanal and 2,4-decadienal as the indicator for the oxidation process.

Food Component Characteristics of Skipjack (Katsuwonus pelamis) and Yellowfin Tuna (Thunnus albacares) Roes (가다랑어 및 황다랑어 알의 식품성분 특성)

  • For the effective utilization of tuna processing byproducts such as roes of skipjack tuna (Katsuwonus pelamis) and yellowfin tuna (Thunnus albacores) as a food resource, the roes of skipjack and yellowfin tuna were examined on food component characteristics and also compared to those of Alaska pollack (Theragra chalcogramma). The concentrations of heavy metal in both roe of the skipjack and yellowfin tuna were below the reported safety limits, therefore, these roes appeared to be safe as a raw material for food resource. The contents of crude protein were 21.4% in the skipjack tuna roe and 21.5% in the yellow fin tuna roe, which showed to be the major component in tuna roes. The prominent amino acids of total amino acids were aspartic acid, glutamic acid, leucine and lysine, and these amino acids were comprise to be 38.4-41.2% of total amino acid in both tuna roes. The total lipid content were 2.1 % in the skipjack tuna roe and 2.0% in the yellofin tuna roe. The major component of total lipid was found to be triglyceride in both tuna roes (skipjack tuna roe, 93.3%; yellow fin tuna roe, 92.0%), which was high in the compositions of 16:0, l8:1n-9, and 22:6n-3. The content of DHA in total lipid of the tuna roes (skipjack tuna roe, 29.9%; yellowfin tuna roe, 36.3%) were higher than that of Alaska pollack roe (18.1%). Based on the results of the proximate composition, mineral, amino acid and lipid characteristic, roes of skipjack tuna and yellowfin tuna showed potential as a raw material for food.

Component Analysis and Comparison of Biological Activities of Salvia miltiorrhiza Bunge from Different Cultivation Regions (재배지역별 단삼의 성분 분석 및 생리활성 비교)

  • The purpose of this study was to compare the chemical components and biological activities of Salvia miltiorrhiza Bunge (SMB) from different cultivation regions (Gochang, Yeongyang, Jangheung, and China). Proximate compositions and contents of total polyphenols and flavonoids were measured. Depending on the cultivation region, proximate composition of SMB showed significant variations. Total polyphenol and total flavonoid contents were highest in Yeongyang SMB and Gochang SMB, respectively. We prepared hot water and 75% ethanol extracts of SMB from different cultivation regions and also investigated the biological effects of extracts on anti-oxidant, antibacterial, and anti-inflammatory activities. Extracts of Yeongyang SMB were the most effective at scavenging DPPH and ABTS free radicals, and hot water extract showed better scavenging activity than 75% ethanol extract. We observed that extracts of Yeongyang SMB exhibited the best antibacterial activity against Bacillus cereus, and 75% ethanol extract showed better antibacterial activity than water extract. Anti-inflammatory activities of SMB extracts from different cultivation regions were investigated through evaluation of their inhibitory effects on production of nitric oxide (NO) in lipopolysaccharides-induced RAW 264.7 cells. At $50{\mu}g/mL$, extract of China SMB showed the highest NO inhibitory activity of 34% among water extracts, and extract of Gochang SMB showed the highest NO inhibitory activity of 68% among 75% ethanol extracts. Salvianolic acid B level was the highest in extract of Yeongyang SMB with values of 110.59 mg/g for water extract and 111.93 mg/g for 75% ethanol extract.

Quality Characteristics of Sikhye made with Berries (베리류로 제조한 식혜의 품질 특성에 관한 연구)

  • This study compared the physicochemical characteristics, proximate composition, taste compound, and antioxidant properties of Sikhye prepared with berries. Proximate composition and color were significantly different depending on the type of berry, whereas crude fat content and pH were not. The highest brix degree was $18.92^{\circ}Bx$ in strawberry Sikhye. Total free sugar, glucose, and fructose contents were highest in blueberry Sikhye. Titratable acidity, total acidity, and organic acid contents were highest in raspberry Sikhye. Analysis of relative antioxidative properties indicated that bokbunja Sikhye had the highest total polyphenol, flavonoid, and anthocyanin contents, highest DPPH radical scavenging ability, and highest reducing power and ferric reducing abilities in plasma. Principal component analysis suggests that bokbunja Sikhye has strong antioxidant and sweetness properties.

Contents of Minerals and Vitamins in Organic Vegetables (유기농 야채의 무기물 및 비타민 함량)

  • Proximate components, minerals, vitamins and chlorophyll contents were determined in vegetables purchased at Garak-dong market and organic vegetables cultivated at Hongchun, Kangwon-do. The vegetables were Kale, Angelica Keiskei Koidz, Celery, Lettuce and Allium fistulosum. In proximate component contents, analyzed crude protein and fat contents of organic vegetables were higher than those of general vegetables. Organic vegetables had strong green color. Minerals such as sodium, potassium, calcium, phosphorus, iron as well as vitamins were determined. Contents of minerals and vitamins in organic vegetables were higher than those of general vegetables. Total mineral content of organic and general kales were 811.8 mg/l00g, and 688.1 mg/l00g, respectively. Total mineral content of organic Angelica Keiskei Kowz, Celery, Lettuce and Allium fistulosum were 447.9, 486.5, 368.6, and 320.9 mg/100g, respectively.

Food Component Characterization of Muscle From Salmon Frame (연어 Frame 육의 식품성분 특성)

  • For the effective use of salmon processing by-products, the food components of salmon frame muscle were investigated and compared with those of fillet muscle. The proximate composition of salmon frame muscle was 73.2 g/100 g muscle for the moisture, 76.9 g/100 g dry material for the protein, 15.7 g/100 g dry material for the lipid and 4.1 g/100 g dry material for the ash. pH and volatile basic nitrogen (VBN) content of salmon frame muscle were 6.63 and 16 mg/100 g, respectively. The proximate composition, pH and VBN of salmon frame muscles were similar to those of salmon fillet muscle. The Hunter values of salmon frame muscle were 55.34 for L value, 16.60 for a value, 19.99 for b value and 48.83 for ${\Delta}E$ value, which were different compared to the salmon fillet muscle. The trichloroacetic acid (TCA) soluble-N content of salmon frame muscle was 542 mg/100 g, which was lower than that of salmon fillet muscle. No difference was found in fatty acid composition, total amino acid, calcium, phosphorus contents and sensory evaluation between salmon frame muscle and salmon fillet muscle. These results suggested that muscle from salmon frame could be used as resources for seafood processing.

Comparison of Physicochemical Composition of Kohlrabi Flesh and Peel (콜라비 가식부와 껍질의 이화학적 성분 비교)

  • This study was investigated to compare the major chemical components of kohlrabi (Brassica oleracea var. gongylodes) flesh and kohlrabi peel. Among the proximate compositions, the crude fat of kohlrabi peel contained lower than that of kohlrabi flesh, while the contents of carbohydrate and the crude protein were higher in the kohlrabi peel. Total free sugar content of the flesh kohlrabi was higher than that of the peeled kohlrabi, and the major free sugars of the flesh kohlrabi and peeled kohlrabi were identified as fructose and glucose. The value of glutamic acid was greater in amino acids of kohlrabi flesh and kohlrabi peel, and the contents of total amino acids and essential amino acids were higher in kohlrabi peel compared with kohlrabi flesh. Kohlrabi flesh also contained a higher level of unsaturated fatty acids than kohlrabi peel. The contents of organic acid were higher in kohlrabi peel, and the level of oxalic acid was the highest in both kohlrabi. The vitamin C contents of flesh kohlrabi and peeled kohlrabi were 231.36 mg/100 g and 402.75 mg/100 g, respectively. The mineral content of the peeled kohlrabi was higher than that of the flesh kohlrabi, and the mineral contents of the flesh and peeled kohlrabi were greater in the order of K>Ca>Mg>Na. As a result, the contents of total amino acid, essential amino acid, organic acid, vitamin C and mineral were higher in the peeled kohlrabi, and the free sugar and unsaturated fatty acid contents of the flesh kohlrabiwere higher.

Changes in Proximate Compositions of the Oysters (Crassostrea gigas) Cultured with Korean and Japanese Spats (한국산 및 일본산 참굴 종패의 양식과정 중 일반성분의 변화)

  • Changes in proximate composition and meat weight of oysters cultured in shallow-water at Bukman bay of Tongyeong in Korea with Korean and Japanese spats were investigated. Protein content (dry basis) was rich in August and September, accounting for $70\~72\%$ in the oyster (Korean oyster) cultured with Korean spat and $75\~76\%$ in the oyster (Japanese oyster) cultured with Japanese spat. On the contrary to protein content, carbohydrate contents (dry basis) in the both oysters were poor in the both months, There was a negative correlation (r=-0.94, p<0.01) between protein and carbohydrate content during growing of the bath spats. Total lipid (TL) content was the poorest in August, which is known as spawning season, accounting for $1.4\~1.5\%$ in the both oysters. In addition, the korean oyster also showed the lowest level or TL content in october. Meat weights or the Korean and japanese oysterswere 4.2$\~$4.8 g/specimen and 7.5$\~$8.3 g/specimen, respectively, in the harvest season from November to December. Meat weight increased exponentially with TL content, $y=0,2081e^{1.5696x}$ (r=0.8856, p<0.001). These nutritional components per specimen were contained about two times more in the Japanese oyster than in the Korean one in the harvest period.
