건식 쌀가루 첨가 반건면의 품질특성 (Quality Characteristics of Semi-Dry Noodles Prepared with Various Dry Rice Flours)

  • This study evaluated the quality characteristics of semi-dried noodles prepared with various dry rice flours (0, 25, 50, 75, and 100%) in order to develop the most preferred noodle recipe and to increase rice consumption. Amylography measured the viscosity of composite dry rice flour-wheat flour and indicated that the gelatinization point and maximum viscosity decreased as the level of dry rice flour increased. Both L and a values for cooked noodle significantly increased as the dry rice flour increased; however the L value decreased for uncooked of noodles. Weight, volume and water absorption of cooked semi-dried noodles significantly decreased as the dry rice flour increased; however the turbidity of soup increased. Texture properties such as hardness, springiness, cohesiveness, and adhesiveness decreased as the level of dry rice flour increased. As the amount of rice flour added increased, large particles of gluten were reduced while smaller particles of starch increased by scanning electron microscopy (SEM). The color, taste, and overall preference of 75% noodles were the highest in the sensory characteristics. The results, showed that the addition of dry rice flour positively affects the overall sensory characteristics of semi-dried noodle with 75% representing the optimal level for addition.

탈지에 의한 멥쌀가루 성질의 변화 (Changes in the Properties of Nonwaxy Rice Flours by Lipid Extraction)

  • 수확 시기가 다른 오대벼와 만금벼 쌀가루를 에테르와 85% methanol로 탈지하여 탈지된 지방질의 차이가 멥쌀가루의 성질에 미치는 영향을 조사하였다. 쌀가루 시료중 전분 입자의 형태는 다각형이었고, X-선 회절도에 의한 결정형은 A형으로 탈지에 의한 변화는 없었다. 아밀로오스 함량은 에테르로 추출한 조지방질 탈지 쌀가루의 경우 무처리 시료와 비슷하였으나 메탄올로 추출한 총지방질 탈지 쌀가루는 증가하였고, 물결합 능력은 탈지에 의해 모두 감소하였다. 온도 증가에 따른 팽윤력은 오대벼 쌀가루가 만금벼 쌀가루보다 높았으며, 품종에 관계없이 조지방질 탈지 쌀가루는 무처리 시료와 비슷한 경향을 보였다. 총지방질을 탈지하면 85$^{\circ}C$까지는 높은 팽윤력을 보였으나 95$^{\circ}C$ 이상에서는 조지방 탈지 > 무처리 > 총지방 탈지 쌀가루 순으로 감소하였다. 모든 시료에서 가용성 물질의 용출 양상은 팽윤력과 같은 경향을 보였으며 용출된 가용성 물질의 겉보기 아밀로오스 함량은 총지방질 탈지 쌀가루를 85$^{\circ}C$ 이상 가열했을 때 급격한 증가를 보였다.

  • To optimize the preparation process for oven-roasted glutinous rice cake, an experiment was derived using a central mixing composite design to determine the optimal conditions. The addition of flour by soaking time as well as sucrose and water, were the independent variables, with the moisture content, color, sensory, and texture properties of the ovenroasted glutinous rice cakes selected as response variables. For the moisture content, color, sensory, and textural properties, we found significant effects for moisture, lightness, redness, hardness, and cohesiveness in the oven-roasted glutinous rice cakes, and water was one of the most influential factors. The optimal mixing conditions for the highest quality oven-roasted glutinous rice cake, in terms of sensory and textural properties, were 266.0 g of water, 25.4 g of sucrose, and 61.5 minutes of soaking time for the glutinous rice flour. The soaking time was in close to the median, whereas the water and sucrose values were slightly above the median.

Effects of heat-moisture treatment of rice flour on the properties in tofu

  • The effects of heat-moisture treatment (HMT) on rice flour (RF) have been investigated for possibility of texture modifier in protein-based foods matrix, tofu. The optimum condition for preparation of tofu with maximum textural parameters was investigated by using response surface methodology (RSM). Rice flour was subjected to moisture content (10-30%) and heating temperature (100-140℃). Based on the response surface and superimposed plots, the optimized conditions of hydrothermally treated rice flour was as followed: moisture content, 22%; temperature, 130℃, which showed lower swelling power as compared to native RF and became more stable during continuous heating and agitation than native one. Tofu, prepared with HMT-RF, showed a denser network structure than that with RF, thereby inducing an increase in textural parameters. From the above results, the addition of HMT-RF could preserve the quality of tofu and be useful for developing an acceptable protein-based food product.

가온 수침처리가 습식제분 쌀가루의 특성에 미치는 영향 (Effect of Elevated Steeping Temperature on Properties of Wet-milled Rice Flour)

  • 실온 이상의 온도(40, 50, 50℃)에서 햅쌀과 저장 쌀을 가온 수침하여 습식제분한 쌀가루의 특성을 조사하였다. 습식처리한 쌀가루는 모두 30% 이상의 수분을 지니고 있었으며, 60℃에서 수침을 한 쌀가루가 40℃, 50℃수침에 비해 수분 함량이 높게 나타났다 쌀가루의 L값은 햅쌀로 제조한 쌀가루에서 약간 높았으며 황색도를 나타내는 b값은 저장 쌀이 햅쌀 백미로 만든 쌀가루보다 높게 나타났다. 햅쌀과 저장 쌀 모두에서 쌀가루의 WAI, WSI 및 gel consistency는 수침 온도가 증가함에 따라 증가하였다 Amylograph peak viscosity, hot paste viscosity, 그리고 cold paste viscosity 모두 수침온도가 증가함에 따라 증가하였으며 특히 저장 쌀 시료에서 보다 큰 폭으로 증가하였다. DSC호화개시온도 및 호화정점온도는 수침온도가 높아짐에 따라 증가하였고, 호화엔탈피는 감소하는 경 향을 보였다. 쌀가루의 입도 분석 결과 저장 쌀이 햅쌀로 제조한 쌀가루에 비해 작은 경향을 보여주었으며 햅쌀의 경우 수침온도가 60℃, 50℃, 40℃순으로 입도분포가 큰 경향을 보여주었다. SEM에 의한 쌀가루의 미세구조 관찰 결과 수침 온도의 증가에 따라 입자 크기의 증가와 손상된 쌀가루 표면이 관찰되었다.

블루베리-쌀 천연발효종과 자광미 가루를 첨가한 우리밀 식빵의 품질 특성 (Quality Characteristics of Korean Wheat Bread prepared with Naturally Fermented Blueberry-Rice Starter and Purple Rice Flour)

  • This study investigated quality characteristics of pan breads prepared with 0, 10, 20, 30 and 40% purple rice flour and naturally fermented blueberry-rice starters. RVA (Rapid Visco Analyzer) analysis showed that wheat flour retrogradation was not retarded by addition of purple rice flour. Using amylography, gelatinization tem. perature of purple rice flour samples was higher than that of the control, whereas maximum viscosity temperature. and maximum viscosity of purple rice flour samples were lower than those of the control. Weights of pan breads containing purple rice flour were lower than that of the control, whereas volume, specific volume and baking loss rate were higher than those of the control. The anthocyanin contents and antioxidative activites as measured by DPPH radical scavenging activity of breads increased as the concentration of purple rice flour increased. The moisture content of pan breads containing purple rice flour decreased as storage time increased. The pH of breads containing purple rice flour was higher than that of the control. Color L value decreased, whereas a and b values increased significantly, as storage time increased. In texture analyzer measurement, hardness of breads containing purple rice flour significantly increased as storage time increased. Breads containing 10~20% purple rice flour showed acceptable sensory properties, such as mouth feel, appearance, flavor, texture, taste and overall acceptability.

다진 대추를 첨가한 대추인절미의 관능적, 이화학적 특성과 저장성 연구 (Sensory and Physicochemical characteristics and Storage time of Daechu-Injeulmi added with various levels of chopping jujube)

  • The purpose of this study was 10 investigate the effect of jujube on the physicochemical properties of lnjeulmi during storage. Various lnjeulmi samples were prepared with steamed glutinous rice, glutinous rice flour, or brown glutinous rice flour along with the addition of chopped jujube at 3, 6, 9, or 12% of rice. In sensory evaluation, the more jujube was added, the stronger sweetness and bitterness were obtained. The samples made with steamed glutinous rice gave the harshest texture. Tenderness and moistness of Deachu-Injeulmi were the highest in the samples made with glutinous rice followed by brown glutinous rice flour, and glutinous rice flour, and they were increased with less amount of jujube. The chewiness of the samples made with brown glutinous rice flour' was the highest and the samples made with glutinous rice were the coarsest. The more jujube was added, the redness and yellowness of Daechu-Injeulmi were increased. The moisture content was higher in the samples made with glutinous rice followed by glutinous rice flour and brown glutinous rice flour. The reducing sugar content of samples during storage was higher in the order of glutinous rice, glutinous rice flour, and brown glutinous rice flour, and it was dramatically reduced until 48hr of storag e; however, it was increased a little bit after 72 hr. The degree of gelatinization was reduced rapidly during the first 24hr of storage, and it was decreased in the order of brown glutinous rice flour, glutinous rice flour, and glutinous rice. The springiness and cohesiveness were decreased during storage. The chewiness and gumminess were increased with the increase of added jujube, and they were increased until 24hr of storage, then decreased after 48hr. The hardness was the highest in the samples made with glutinous rice and 12% of chopped jujube showed the least change in the hardness. The more jujube was added, the less change in the hardness of samples was observed during storage, consequently retarded the speed of retrogradation

단백질과 트란스글루타미나제 첨가 글루텐 프리 쌀빵의 품질에 대한 친수콜로이드의 효과 (Effects of Hydrocolloids on the Quality of Protein and Transglutaminase Added Gluten-free Rice Bread)

  • Purpose: To improve the quality of basic gluten-free rice bread composed of white rice flour, salt, sugar, yeast, skim milk powder, olive oil, and water, the effects of transglutaminase (TGase), whey protein (WP), propylene glycol alginate (PGA), and hydroxypropylmethylcelluose (HPMC) were investigated. Methods: TGase, WP, PGA, and HPMC were added to rice flour cumulatively. The pasting properties of rice flour blends as well as volume, shape, color value, textural properties and sensory evaluation of basic rice bread (RB1) RB1+TGase (RB2), RB1+TGase+WP (RB3), RB1+TGase+WP+PGA (RB4), and RB1+TGase+WP+PGA+HPMC (RB5) were compared. Results: Consistency of rice batter increased upon addition of TGase, WP and PGA, and RB3 and RB4 had higher specific volumes than others. PGA improved volume, crumb air cell uniformity, and resilience but lowered elasticity and moistness of RB. HPMC increased, hardness, moistness and softness, and slightly reduced volume. Conclusion: Therefore, it is suggested that hydrocolloids, PGA and HPMC may be necessary to improve volume, crumb structure, textural properties and overall eating quality of gluten-free rice bread.

제조 방법이 다른 팽화미 분말의 이화학적 특성 (Physicochemical Properties of Extruded Rice Flour and Gelatinization Popped Rice Flour)

  • This study is carried out in order to develop food materials for the promotion of rice consumption. In this study, we researched the physicochemical properties of extruded rice flour (ER) and gelatinization popped rice flour (GPR) by the extrusion process and by the popped method with milled rice and brown rice. The extrusion process used a couple of screw extruders. The extrusion parameter was kept constant at a feed moisture content of 25%, barrel temperature of $120^{\circ}C$ and screw speed of 400 rpm. GPR was prepared by batch popping machine after gelatinization of rice. In order to evaluate the physicochemical properties of ER and GPR, as well as the gelatinization rate, water soluble index (WSI), water adsorption index (WAI), DPPH radical scavenging activity and total dietary fiber content, the color value was carried out. The gelatinization rate was similar to 71.1~73.8%. Further, the results of WSI and WAI were increased at ER and GPR compared to the raw materials; ER was also higher than GPR. DPPH radical scavenging activity and total dietary fiber content showed a tendency to reduce after extrution and popping. As a result of the color value, the L value of ER decreased more than the raw materials, whereas GPR increased at a and b values.

흑미가루 첨가 쿠키의 품질 특성 연구 (Quality Characteristics of Cookies with Black Rice Flour)

  • The quality characteristics of cookies containing black rice flour, which has a greater variety of functional components than wheat flour, were studied. The results of the pasting properties shows that the inclusion of black rice flour to the wheat flour-mixture did not affect the pasting temperature but increased the enthalpy, indicating that more energy is needed for the starch gelatinization. The total dietary fiber and total polyphenol content increased and the cookies color became darker and deeper with increasing black rice flour content. According to the results from TA on texture, the hardness decreased and the crispness increased significantly (both, p<0.001) with increasing black rice flour content. From the acceptance test, the appearance, aroma and texture of the cookies with added black rice flour were significantly (p<0.001) lower than those of the wheat flour cookies. However, the taste and overall acceptance of the cookies with added black rice (lour did not differ significantly from those of the wheat flour cookies. According to the results from the sensory evaluation, the aroma, black rice flavor, crispness, graininess and color(gray-violet) of the cookies increased significantly(p<0.001) with increasing black rice flour content and those of the cookies with 30% black rice flour had the highest values among the cookies which weren't significantly different from those of the cookies with 20% black rice flour. From the above results, the optimal ratio for the addition of black rice flour to the cookies was 10% from the viewpoint of the sensory evaluation and functional components.
