Effect of Ozonated Water and Chlorine Water Wash on the Quality and Microbial De-contamination of Fresh-cut Carrot Shreds (오존수 및 염소수 세척이 신선편이 당근의 품질 및 미생물억제에 미치는 영향)

  • Little information exists on how wash operations affect water quality, or the efficacy of sanitizers on vegetable quality and microbial reduction in fresh-cut carrot shreds. This study evaluated the efficacy of chlorine and ozone in reducing microbial loads and maintaining vegetable quality of carrot shreds. Fresh-cut carrot shreds were teated with various chlorine and ozone concentrations for differing times. The samples were then centrifuged to remove excess water, packaged in film, and stored at $5^{\circ}C$. The result indicated that varying the ozonated water wash time affected microbial growth the development of unpleasant odors, color, and the overall quality of carrot shreds. Ozonated water washing for 20 min maintained vegetable quality by inhibiting unpleasant odors, the development of whiteness, and by reducing microbial populations. A single chlorine water wash was effective and resulted in better vegetable quality when compared with two washes. Samples washed for 20 min in ozonated water, however, had better vegetable quality and smaller microbial counts compared to samples washed once in chlorine water A 20 min ozonated water wash is an attractive method for the maintenance of vegetable quality and shelf-life in fresh-cut carrot shreds.

  • Post-harvest technology for rice was focused on in-bin drying system, which consists of about 100, 000 facilities in 1980s. The modernized Rice Processing Complex (RPC) and Drying Storage Center (DSC) became popular for rice dry, storage, process and distribution from 1990s. However, the percentage of artificial drying for rice is 48% (2001) and the ability of bulk storage is about 15%. Therefore it is necessary to build enough drying and bulk storage facilities. The definition of high quality rice is to satisfy both good appearance and good taste. The index for good taste in rice is a below 7% of protein, 17-20% of amylose, 15.5-16.5% of moisture contents and high concentration of Mg and K. To obtain a high quality rice, it is absolutely needed to integrate high technologies including breeding program, cropping methods, harvesting time, drying, storing and processing methodologies. Generally, consumers prefer to rice retaining below b value of 5 in colorimetry, and the whiteness, the hardness and the moisture contents of rice are in order of consumer preference in rice quality. By selection of rice cultivars according to acceptable quality, the periods between harvesting time and drying reduced up to about 20 days. Therefore it is necessary to develop a low temperature grain drying system in order to (1) increase the rate of artificial rice drying up to 85%, (2) keep the drying temperature of below 45C, (3) maintain high quality in rice and (4) save energy consumption. Bulk storage facilities with low temperature storage system (7-15C) for rice using grain cooler should be built to reduce labor for handling and transportation and to keep a quality of rice. In the cooled rice, there is no loss of grain quality due to respiration, insect and microorganism, which results in high quality rice containing 16% of moisture contents all year round. In addition, introducing a low temperature milling system reduced the percentage of broken rice to 2% and increased the percentage of head rice to 3% because of proper hardness of grain. It has been noted that the broken rice and cracking reduced significantly by using low pressure milling and wet milling. Our mission for improving rice market competitiveness goes to (1) produce environment friendly, functional rice cultivars, (2) establish a grade standard of rice quality, (3) breed a new cultivar for consumer oriented and (4) extend the period of storage and shelf life of rice during postharvest.

Optimization of Curing Treatment and Storage Temperature of Chinese Yam (마의 수확후 처리 및 저장 온도 최적화)

  • Effects of curing treatments and storage temperature on the quality of Chinese yams (Dioscorea polystachya Turcz.) were investigated stepwise in three consecutive years for the optimization of postharvest handling procedures. Tuberous roots were harvested in early to mid November and cured under ambient or $29^{\circ}C$ heated air conditions for various periods according to the treatment conditions. Storage temperatures in the range of 0.5 to $7.5^{\circ}C$ were phased in to avoid chilling injury while examining storage potential from 4 to 7 months. As poststorage technology, short-term $60^{\circ}C$ hot-air exposure or low shelf temperature treatments were additively imposed. Curing treatments, especially heated air curing for 3-5 days tended to reduce the respiration and weight loss during storage while maintaining flesh firmness. Storage at $0.5^{\circ}C$ brought out typical chilling injury symptoms on the shelf with increases in respiration and lower flesh firmness by tissue breakdown resulting in the rapid loss of marketability. Optimum storage temperature appeared to be the $3-4^{\circ}C$ range which suppresses quality deterioration while avoiding chilling injury. Low shelf temperature seemed to be a necessary part of postharvest handling system to keep marketability through control of poststorage disorders such as rooting and decay. Overall results suggested that optimized postharvest program consisting of heated-air curing, storage at $3-4^{\circ}C$, and low shelf temperature could extend storage potential of Chinese yam to longer than 7 months.

Effects of high carbon dioxide and ethylene treatment on postharvest ripening regulation of red kiwifruit (Actinidia melanandra Franch) during cold storage (고농도 이산화탄소와 에틸렌처리가 레드키위의 수확 후 저온저장 중 숙성조절에 미치는 효과)

  • The effect of high carbon dioxide and ethylene treatment on postharvest ripening regulation of red kiwifruit (Actinidia melanandra) was investigated during cold storage. Physio-chemical properties such as weight loss, firmness, SSC, acidity, and market quality were analysed in red kiwifruit held at $10^{\circ}C$ compared to the fruit treated with carbon dioxide and ethylene during 75 days of storage. No significant weight loss was detected in red kiwifruit treated with carbon dioxide until 75 days of storage while the most rapid loss was found in fruit treated with ethylene. In ethylene-treated fruit, the firmness was dramatically reduced from 4.2kg on the first day to 1.2 kg after 27 days of storage at $10^{\circ}C$. However, the firmness of the carbon dioxide-treated fruit was 1.8kg after 54 days of storage. The highest level of SSC(%) was investigated within the 27 storage days at $10^{\circ}C$ for fresh red kiwifruit treated with exogenous ethylene, whereas the carbon dioxide-treated fruit exhibited a greatly increased SSC after 64 days. The carbon dioxide-treated red kiwifruit maintained statistically(p<.01) higher levels of acidity compared to the control and the exogenous ethylene-treated ones during 41 days of storage at $10^{\circ}C$. The SSC/Acid ratio of fruit treated with carbon dioxide was significantly lower (p<.01) maintained than the other two treatments (ethylene-treated and control fruit)throughout the 75-day experiment. Based on the quality characteristics of postharvest red kiwifruit, it could be concluded that the carbon dioxide treatment significantly delayed the ripening process and maintained the market quality of harvested red kiwifruit, which can be a potential application for commercial use in the kiwi industry.

Current Postharvest Management and Packaging Technology of Strawberries in Korea (국내 딸기의 수확 후 관리와 포장기술 현황)

  • The purpose of this study was to review the brief physiological characteristics and some factors of the quality decay of strawberry harvested in Korea. Strawberries are highly perishable with soft surface. Surface injury and fungus growth are common as a result of handling and distribution. Many growers and distributers are considered to protect the physical impact and inhibit the fungus growth for prolonging the shelf life in the distribution and market channels. Post-harvest treatments of precooling, carbon dioxide, chlorine dioxide, ozone, and ultrasound are practiced on strawberry in order to extend shelf-life and preserve the quality. Modified atmosphere packaging, edible coating, and oxygen absorbent application can be used as supplemental treatments to extend postharvest-life of strawberry. The packaging types for current domestic and export strawberry in Korea were summarized. The findings from this study can be lead to a better understanding of strawberry packaging development associated with the proper handling and distribution of strawberry. This could be useful for the strawberry growers, distributors, and buyers.

Control of Botrytis cinerea and Postharvest Quality of Cut Roses by Electron Beam Irradiation (전자빔 조사에 따른 잿빛곰팡이병원균 방제효과와 절화 장미의 수확 후 품질)

  • The present study was conducted to determine the effect of electron beam irradiation on control of Botrytis cinerea and postharvest quality of cut roses. Electron beam doses of 0.1, 0.2, 0.4, 0.6, 0.8, 1, 2, 10, and 20 kGy were applied with a 10-MeV linear electron beam accelerator (EB Tech, Korea). Electron beams inhibited spore germination and mycelial growth of B. cinerea with increasing irradiation doses. Conidia of B. cinerea were more tolerant to irradiation than were mycelia: the effective irradiation doses for 50% inhibition ($ED_{50}$) of spore germination and mycelial growth were 2.02 kGy and 0.89 kGy, respectively. In addition, electron beam irradiation was more effective in reducing mycelial growth of B. cinerea at $10^{\circ}C$ than at $20^{\circ}C$. Analysis of in vivo antifungal activity revealed that elevated irradiation doses exhibited increased control efficacy for tomato gray mold. Flower longevity and fresh weight of cut roses decreased when the irradiation dose was increased. In addition, flower bud opening tended to be inhibited in a dose-dependent manner. Although 'Decoration', 'Il se Bronze', 'Queen Bee', and 'Revue' roses tolerated and maintained overall postharvest quality up to 0.4 kGy, 'Vivian' did not, demonstrating that the irradiation sensitivity of cut roses varies according to cultivar.

A study on postharvest quality of cut Eustoma and Cymbidium flower with different duration of 1-MCP treatments (절화 리시안셔스 및 심비디움의 1-MCP 처리 시간에 따른 품질 유지 효과에 관한 연구)

  • The 1-methylcyclopropene (1-MCP) is the gaseous ethylene action inhibitor, which delay senescence and wilting by blocking the binding of its receptors. We investigated the effects of 1-MCP with different treated duration (0h (Control), 1h, and 4h) in cut flowers of Eustoma grandiflorum 'Voyage' and Cymbidium 'Lapine Hat'. The relative water uptake increased by 14.5% than control (9.8%) and the flower diameter maintained high from 3 to 11 days in 1-MCP treatment for 4h in E. grandiflorum 'Voyage'. The relative fresh weight was averagely high in 1-MCP treatment for 4h, however, the vase life was not significantly different in both cut flowers. Since the effects of 1-MCP treatment was differently responded by plant species and cultivars, interacted studies of duration and levels of 1-MCP are needed for the pronounced effects of postharvest quality.

Quality Changes in Fresh Wild Garlic Leaves Treated with Different Washing Solutions and Packaging Films during Storage (세척수 및 소포장 필름에 따른 산마늘의 저장 중 품질변화)

  • 산마늘은 마늘과 같이 독특한 향이 있어 입맛을 돋우며 웰빙식품으로 3월 중순에서 5월초에 채취하여 생채로 쌍을 먹거나 김치, 절임으로 생산되어 판매된다. 산마늘의 부가가치 향상을 위하여 살균소독 세척과 소포장용 필름포장방법을 구명하고자 본 실험을 수행하였다. 산마늘을 살균소독 세척수(수돗물, 0.2% 구연산 침지 후 50% 에탄올 분무처리)로 2분 세척하고 원심탈수 후, 포장필름은 $30{\mu}m$ oriented polypropylene (OPP), $30{\mu}m$ OPP 필름을 기본재료로 산소투과율 $5,000cc/m^2{\cdot}day{\cdot}atm$ (OPP_5)로 조정한 필름, $30{\mu}m$ micro perforated polypropylene (MPP) 필름에 밀봉하고, $30{\mu}m$ OPP필름에 개봉 포장하여 $4^{\circ}C$에서 42일 저장하였다. 산마늘은 구연산 침지 후 에탄올 분무세척 후 세척 전 보다 일반세균수가 1.5 log CFU/g 감소되었으며 수돗물 세척 후는 0.1 log CFU/g 정도 감소하여 수돗물 보다 구연산 침지 후 에탄올 분무에 의해 균수 감소효과가 보다 컸으며 저장기간이 경과한 후에도 그러한 경향은 유지되었다. 저장 35일 후 세척수에 관계없이 OPP 개봉과 MPP 밀봉 포장에서 의해 산마늘의 황화율과 부패율이 높게 나타났으며 OPP 밀봉에서 이취 발생 지수가 OPP_5 밀봉보다 높게 나타났다. 세척 및 포장처리에 의한 종합선도의 제한요인은 황화, 이취 및 부패취 발생 지수로 이를 종합하였을 때 산마늘의 상품성 향상을 위하여 소포장 하는 경우 구연산 침지 후 에탄올 분무 방법으로 세척한 다음 원심탈수하여 OPP_5필름으로 포장하는 것이 품질 향상에 적합하였으며 40일 이상 저장이 가능한 것으로 나타났다.

Postharvest Application of Ethylene Scrubber and Prolong on the Fruit Quality of 'Niitaka' Pears during Storage and Simulated Marketing (수확후 Ethyelene Scrubber 및 과실피막제 Prolong 처리가 저장과 모형유통 과정에서 '신고'과실의 상품성에 미치는 영향)

  • This study was conducted to find the potential of polyethylene wrapping, ethylene scrubber, and Prolong as postharvest application in oriental pear, 'Niitaka'. Polyethylene film($30{\mu}m$) wrapping greatly reduced weight loss during storage for 80 to 110 days but the occurrence of dark skin browning became severe because of high humidity in polyethylene bags. Also, in long term storage of 110 days, parts of fruit developed uneven skin disorder or rupturing of cuticle layer. Ethylene scrubber reduced uneven skin disorder but no beneficial effect was found on the prevention of core breakdown. This indicates that the ethylene scrubber probably be effective when applied dicrectly to the storage room. The immediate application of Prolong to harverted fruit was confirmed not to be useful as postharvest treatment in 'Niitaka' pears.

Current Status and Prospect of Quality Evaluation in Sweetpotato (고구마 품질평가 현황과 전망)

  • The sweetpotato, Ipomoea batatas L. (Lam.), is one of the important summer upland crops in Korea and has been used as human food, industrial yaw material and vegetable. Sweetpotato has been consumed for human foods such as boiled, roasted, fried or salad etc. It should be developed for higher quality as a snack or health food, primarily through improving the eating and marketing qualities as well as nutritional value. Its quality after cooking or processing is a complex one combining the aroma, taste, texture and fiber content. The other important qualities for consumers are root shape, size, skin color, flesh color, insect and disease resistance, nutritional components and safety from phytoalexins(toxic stress metabolites) etc. Korean people generally prefer to red skin color, round or elliptic shape and dry texture, yellow flesh color of sweetpotato which is high in starch content including vitamins and nutrients. The almost factors of quality components of sweetpotato are genetically controlled by breeder, but postharvest handlings and marketing management for making high quality goods should be done thoroughly according to the quality evaluation criteria of sweetpotato from the moment of harvest until shipping them to the market by farmers and the other users. This paper describes current status and prospects of the quality evaluations and researches in sweetpotato roots in Korea.
