Characteristics and Cutability of Farmed Rusa Deer (Cervus timorensis) Carcasses for Marketing of Venison

  • Rusa deer are the only viable commercial tropical deer species for farming in the tropics because of their hardiness, adaptability and prolific characteristics. Twelve entire rusa stags were slaughtered according to halal procedure and used for carcass evaluation and cutability studies. Three carcass categories; large (46 to 55 kg), medium (36 to 45 kg) and small (25 to 35 kg) were developed for rusa stags. This study indicated that entire Moluccan rusa deer stags with mean live weight ranges from 50 to 80 kg and age groups of 15 to 29 months showed dressing percentage of 58 to 62%. Carcass conformation of rusa stags showed significantly (p<0.05) higher forequarters portion than hindquarters for medium (mean weight, 40.8 kg) and large (mean weight, 50.0 kg) carcass categories. The large carcass category was significantly (p<0.05) bigger in hindquarters portion (47.3% vs. 45.4%) than the medium carcass category. This study showed that medium and large carcass categories are more suitable for boneless cuts since the muscles were larger than small carcasses and easy for deboning. Stag carcasses showed higher proportion of the musculature in the high-priced areas of the carcass such as in round cuts. Bone-in cuts are more suitable for small carcasses since the muscles were smaller and difficult to debone (mean weight, 30.5 kg). About 90% of total deer carcasses in the small carcass category were developed into retail bone-in cuts (excluding 9.9% of breast, shank and trimming). The carcass characteristics and cutability information derived from this study can be used as a basis for a venison marketing strategy for deer farming and production in the tropics.

Differences in Health-related Fatty Acids, Intramuscular Fat and the Physico-chemical Quality in Mutton as Affected by Season, Place of Purchase and Meat Portion

  • The objective of the study was to determine the quality and fatty acid profiles of mutton cuts purchased from rural and urban localities in South Africa. Five hundred and ten samples were collected in four seasons from both rural and urban shops and butcheries. Samples were immediately transported to the laboratory in cooler boxes with ice where the following physico-chemical characteristics of mutton were determined; meat pH, color ($L^*$, $a^*$, and $b^*$), cooking losses and Warner Braztler shear force and replicates stored at $-20^{\circ}C$ pending fatty acid analysis. Meat $L^*$ values were lowest ($24.7{\pm}0.49$) in winter and highest ($32.2{\pm}0.49$) in spring. The loin and sirloin cuts recorded the highest intramuscular fat whilst rib and leg cuts recorded the lowest intramuscular fat. In conclusion intramuscular fat, fatty acid profiles and physico-chemical quality of mutton were significantly affected by season and meat portion and not necessarily by the locality and class of shop.

Quality Determination of Different Wholesale Cuts of Goat Carcass at Different Ages

  • 본 연구는 도매상에서 판매하고 있는 염소육의 영양학적 및 미생물학적 품질을 평가하기 위하여 수행하였다. 시료는 1년생, 2년생, 3년생 염소육을 대상으로 수행하였으며, 각 연령별에서 3마리씩 4부분의 다른 부위(어깨, 목, 허리, 다리)를 선정하여 총 36점을 대상으로 본 실험을 수행하였다. 염소육의 품질을 평가하기 위하여 각 시료의 외형, 색, 냄새, 육즙, 일반조성분, pH, 총균수, 대장균군과 효모수를 측정하였다. 각 부위별 염소육의 pH는 평균적으로 5.647-5.692로 나타내어 각 부위별 염소육의 pH는 유의적 차이가 나타나지 않은 반면 연령별 염소육의 pH는 5.585-5.743로 유의적 차이(p < 0.01)를 나타냈다. 각 연령별 염소육의 육즙함량은 32.24-42.10%로 유의적인 차이(p < 0.01)를 나타내었으며, 마블링은 다른 부위보다 목살부위에서 더 명확하게 확인할 수 있었다. 염소육의 단백질 함량은 20.78-27.71%의 결과로 유의적 차이(p < 0.01)를 나타내었고, 다리부위는 다른 부위에 비하여 높은 단백질 함량을 나타내었으며 각 부위별 염소육의 지방 함량은 2.657-11.469%로 유의적인 차이(P < 0.01)를 나타냈다. 염소육의 수분함량은 69.20-73.31%, 1년생 염소육의 회분함량은 0.989 $\pm$ 0.129%로 다른 연령대의 염소육보다 높은 것으로 나타났으며 이 결과 또한 유의적인 차이(P < 0.01)를 나타내었다. 칼슘의 함량은 유의적인 차이를 나타내지 않은 반면 1년생 염소육의 인의 함량은 0.149 $\pm$ 0.0251%로 다른 년생의 염소고기에 비하여 높은 것으로 나타냈다. 연령별 염소육의 총균수 수준은 5.05-5.15 log cfu/g으로써 유의적 차이를 나타내지 않은 반면 각 부위별 염소육의 대장균군의 오염수준은 2.56-3.05 log cfu/g으로 유의적인 차이(P < 0.01)를 나타냈다. 연령별 염소육 또한 대장균군 오염수준은 2.79-2.84 log cfu/g으로써 유의적인 차이(P < 0.05)를 나타냈으며 1년생 염소육의 대장균 오염 수준은 다른 연령의 염소육에 비해 높은 것으로 나타났다. 효모의 오염수준 또한 각 부위별(P < 0.01), 연령별(P < 0.05)로 유의적인 차이를 나타내었다. 결론적으로 염소육의 영양학적, 미생물학적 품질은 염소의 연령과 판매 부위에직접적인 영향을 받는 것으로 사료된다.

엔드밀 가공의 정밀도 향상을 위한 최적정삭여유에 관한 연구 (A Study on the Optimum Finish Allowance for Machining Accuracy Improvement in the End Milling Processes)

  • A significant error in the end milling processes is generated due to using slender tools of which the strengths are not sufficient. In order to obtain the desired machining accuracy, therefore, it is general that at first the rough cut is implemented, then the finish cut is followed. The rough cut eliminates large volume and the finish cut does the remained part. This remaining portion after the rough cut is called as the finish allowance. Larger finish allowances make it hard to get precise dimensions at a following finish cut. Smaller finish allowances are helpful for good dimension, but it sometimes is responsible for inferior surface qualities and over cuts. This study suggests a guidance for the optimum finish allowance for machining accuracy improvement, in which the rough cuts are regulated to remain the desired margins without any over cuts. Some experiments were carried out with various cutting conditions including the change of tool strengths and depth of cuts, and also extended to up millings as well as down millings.

Carcass Composition and Cuts of Bulls and Steers Fed with Three Concentrate Levels in the Diets

  • In this paper, weight, carcass dressing, weights of the primary cuts, weights of the physical components of the primary cuts, and weights of the main commercial cuts of 66 $Purun{\tilde{a}}$ animals, of which 33 were bulls and 33 were steers were evaluated. These animals, with an average age of 19 months at the beginning of the experiment, were finished in a feedlot system during 116 days, and were fed with diets containing three levels of concentrate (0.8%, 1.1%, and 1.4% of body weight). The concentrate was formulated with 25% soybean meal, 73% ground corn grain, 1% of a mineral mix, and 1% of limestone. The interaction between sexual groups and the concentrate level was not significant for any of the variables. Likewise, no effect of the concentrate level was detected on the same variable traits. The bulls demonstrated higher hot carcass weights (265.1 vs 221.7 kg) and a higher proportion of forequarter (38.4% vs 36.1%) however the steers presented with higher proportions of side (19.7% vs 18.5%) and hindquarter (44.2% vs 43.1%). The bulls produced higher yields of muscle in the three primary cuts, there by resulting in higher yields of edible portions of the carcass. The bulls also produced higher weights of tenderloin, knuckle, topside, flat, eye round, rump, and rump cover. The finishing of young bulls in feedlot is to be recommended, since the animals produce carcasses with higher amounts of edible meat and higher yields of commercial cuts, thus allowing for a better price for the carcass. Low concentrate level could be used due to the lower cost of production for farmers.

  • One of the methods improving the seismic behavior of a structure is the frame with reduced beam section (RBS) which cuts a segment of flanges of the beam near the beam-to-column connection so that the section with reduced flanges has smaller flexural strength than the beam end. It is difficult to analyze the RBS frame because RBS portion has circular-cut type flange. And inelastic response of the steel frame with the RBS is very sensitive to the RBS model. In this paper, the analytical models of RBS portion are investigated and the results of the inelastic analysis for RBS analytical models are compared and then the analytical model for RBS is determined based on the results of inelastic analysis. Inelastic behavior of the RBS frame and its dynamic characteristics are investigated for selected analytical model of RBS.

A perceptual study of the three-way contrast in Korean stops with cross-spliced syllables

  • This paper examines the contribution of vocalic information (after the onset of voicing) to the perception of Korean alveolar stops: the aspirated /$t^{h}$/, the lenis /t/, and the fortis /$t^{*}$/. These stops have been analyzed as differing in VOT (Abramson & Lisker, 1964), the glottal width or aspiration (Kim, 1970), and F0 and intensity build-up (Han & Weitzman, 1970). These studies focused on the articulatory and acoustic qualities of the consonants and often assumed that the consonantal portion before the onset of voicing plays the main role in maintaining the three-way distinction. In contrast, the role of the following vowels was given less attention. In order to investigate the contribution of the following vowels, a perceptual study was conducted using stimuli cross-spliced from three naturally produced syllables [$t^{h}al$] 'mask', [tal] 'moon', and [$t^{*}al$]) 'daughter'. Stimuli were presented to 12 Korean listeners for identification. Each subject responded to a total of 486 tokens. The results show that vowels play the primary role when the cut occurs at the star of voicing. Even with cuts at 10 ms and 40 ms into voicing, the following vowel still plays a clear role. This suggests that vowels carry the important information for distinguishing the three stops.

국내 유통 닭고기의 부분육별 화학적 특성 조사 (Comparison of Chemical Composition in Different Portions of Domestic Broiler Meat)

  • 본 연구는 국내 유통 닭고기의 육질 특성을 구명하기 위한 기초자료를 수집하기 위하여, 일일 도계량이 50,000수 이상 되는 대형 도계장에서 구입한 닭고기의 부분육에 대한 화학적 분석을 실시하였다. 일반성분의 수분함량은 봉과 넓적다리에서 각각 73.37, 73.19%를 나타낸 반면 북채와 날개는 75.65, 75.76%를 나타내었다. 조단백질은 가슴살 및 안심이 23.17, 22.96%으로 비교적 높은 반면 북채와 넓적다리에서 18.74, 18.77%를 나타내어 가슴살이 비교적 높은 단백질 함량을 나타내었다. 반면에 조지방은 가슴살 및 안심의 평균이 0.73%를 나타낸 반면, 넓적다리에서는 6.86%를 나타내 가슴살 부위가 타 부위에 비해 낮은 지방 함량을 나타내었다. 무기물 함량에서 Fe는 안심에서 4.0ppm을 나타낸 반면, 넓적다리에서 7.3ppm으로 1.8배이상 높은 것으로 나타났다. Zn도 안심에서 6.0ppm을 나타낸 반면, 봉에서는 15.0ppm으로 2배 이상의 함량을 나타내었다. 아미노산 중에서 맛과 관련이 있는 glutamic acid의 함량은 안심에서 4.02%으로 북채의 2.42%보다 1.7배정도 높게 나타났고, methionine의 함량은 안심이 0.56%, 북채가 0.49%으로 안심이 약간 많이 함유된 경향을 나타내었다. 콜라겐함량에서 북채는 3.97mg/g과 넓적다리 3.24mg/g으로 가슴부위보다 많은 함량을 나타냈다. 날개부위의 콜라겐 함량은 윙이 2.64mg/g와 봉은 3.70mg/g을 함유하고 있었다.

Genetic Relationships of Carcass Traits with Retail Cut Productivity of Hanwoo Cattle

  • This study aimed to estimate genetic correlation between carcass grading and retail productivity traits and to estimate the correlated response on retail productivity traits through selection for carcass grading traits in order to assess the efficacy of indirect selection. Genetic parameters were estimated with the data from 4240 Hanwoo steers using mixed models, and phenotypes included carcass weight (CWT), back fat thickness (BFT), eye muscle area (EMA), marbling (MAR), and estimated lean yield percentage (ELP) as the carcass grading traits, and weight and portion of retail cuts (RCW and RCP), trimmed fats (TFW and TFP) and trimmed bones (TBW and TBP) as the lean productivity traits. The CWT had positive genetic correlations with RCW (0.95) and TFW (0.73), but its genetic correlation with RCP was negligible (0.02). The BFT was negatively correlated with RCP (-0.63), but positively correlated with TFW and TFP (0.77 and 0.70). Genetic correlations of MAR with TFW and TFP were low. Among the carcass grading traits, only EMA was positively correlated with both RCW (0.60) and RCP (0.72). The EMA had a relatively strong negative genetic correlation with TFW (-0.64). The genetic correlation coefficients of ELP with RCP, TFW, and TFP were 0.76, -0.90, and -0.82, respectively. These correlation coefficients suggested that the ELP and EMA might be favorable traits in regulating lean productivity of carcass.

인삼 부산물 급여 돼지의 도체 및 육질 특성 (Feeding Effect of Ginseng by-product on Characteristics of Pork Carcass and Meat Quality)

  • 인삼 잎과 줄기의 crude saponin 함량은 약 8% 정도로 그 가치가 높아 사료로 이용하기 위한 방법으로, 인삼 잎과 줄기 부산물의 추출액을 사료에 3% 혼합하여 생산한 사료를 돼지에 20일, 30일 및 40일간 급여하여 생산한 돼지의 도체 및 육질특성을 조사한 결과 다음과 같다. 급여수준에 따른 돼지의 도체특성에 있어서 정육율은 20일 급여구가 65.55%로 가장 높았으며, 대조구, 30일 급여구, 40일 급여구 순으로 나타났으며, 제거 지방율은 40일 급여구가 18.32%로 가장 높았다. 부분육벽 생산율은 목심, 갈비, 등심, 삼겹살, 뒷다리, 안심부위에서는 처리간에 유의적인 차이가 나타나지 않았으나, 앞다리 부위에서는 20일급여구에서 가장 높은 11.12%로 나타났다(P<0.05). 처리별 도체등급 A 및 B 등급 출현율은 30일과 40일 급여구에서 오히려 낮게 나타났으며, 등지방 두께는 20일 급여구가 가장 적었다(P<0.05). 처리구별 명도(Hunter L)는 30일 급여구가 50.22로 가장 높은 값을 보였고, 20일 급여구가 46.91로 가장 낮은 값을 보였다. PSE 출현율은 20일 급여구가 가장 낮게 나타났고. pH는 인삼부산물을 40일 급여한 처리구에서 5.72로 가장 높게 나타났다(P<0.05). 인삼부산물 급여 돼지 등심육의 물리적 특성을 조사한 결과, 전단력은 유의적인 차이는 없었으며, 가열감량은 인삼부 산물 급여시 감소하는 경향으로 나타난 반면, 보수력은 인삼 부산물 급여시 증가하는 경향을 보였다(P<0.05). 이상의 결과에서 인삼부산물 추출액 급여에 의한 돈육 생산시 도체특성 및 부된육 수율에서 인삼부산물 급여에 의한 차이는 없었으나, pH는 인삼부산물을 40일간 급여한 처리구 에서 유의적으로 높았으며, 가열감량 및 보수력은 인삼부산 물을 각각 40일 또는 30일간 급여한 처리구가 다른 처리구에 비해 좋은 것으로 나타났다.
