전북지역 대학생들의 식생활 습관과 건강 관련 식행동에 관한 연구 (A Study on the Eating Habits and Healthy Eating Behaviors of the University Students in Jeonbuk Area)

  • The purpose of this study was to investigate eating habits, healthy eating behaviors, food preference etc. of university students for them to enjoy delightful and healthy campus life and offer preliminary data to the related educational facilities and households for them to make use of the data for making out a menu. We conducted survey aiming at 4-year-course students in Jeonbuk area and survey period was from May 6th of 2013 to May 24th of 2013. The result are as followings. First, food habit evaluation with 10 questions shows that they are inclined to have refreshments, water, vegetables, fruits, grains and protein food often and also eat food blandly. So, we consider this finding is generally positive. Second, through the research on their healthy eating behaviors, we learned their interests in healthy food is average and their selection criteria for healthy food is nutrition value. Information sources for healthy food are mainly TV or mass media and good healthy food in their opinion is Korean food. Third, the findings of food preference show university students like the white rice most but don't like the rice with beans most in terms of rice type. We also found their favorite food is fried rice, favorite noodle is spaghetti, favorite soups are thick beef soups, favorite broth is potato and pork rib broth, favorite stew is kimchi stew, favorite steamed dish is braised short ribs and favorite meat is pork.

전라남도 장수지역 및 서울 일부 지역 거주 80대 노인의 맛 선호도, 식품섭취빈도, 영양 섭취 상태 비교 (A Comparative Study of Taste Preference, Food Consumption Frequency, and Nutrition Intake between the Elderly in Their 80's Living in Long Life Regions in Jeollanam-do and a Part of Seoul)

  • In this study, we compared diet related attributes such as food taste preference, food consumption frequency and nutrition intake between elderly residents in their 80's of areas in Jeollanam-do that are well known for longevity and those of a part of Seoul. Structured in-depth interviews were conducted by trained interviewers on 125 consented subjects (67 Jeonnam and 58 Seoul). Differences of groups were tested using Chi-square tests for nominal or ordinal data and t-tests and ANOVA tests for ratio data. The elderly from Jeonnam tended to sleep longer, express emotion more freely, and interact with others more often than those from Seoul. The elderly tended to prefer sweet or salty tastes, which might be highly related to serious health problems. The most frequently consumed foods were napa cabbage kimchi (2.19 times/day) and multigrain rice (1.99 times/day). Elderly from Jeonnam tended to consume garlic, milk, beans and roasted barley/corn teas less often; whereas, they consumed porridge, dried radish greens, potato, fermented fish, dried fish, pork rib, pork belly, soybean paste soup, soybean paste/Ssamjang, other kimchis, pickled vegetables, snacks, cookies, and green/black teas more often than elderly residents from Seoul. Differences in nutrition intake between the regions were greater than differences between the perceived levels of household economic status. NAR and INQ for folate were lower among elderly from Jeonnam than those from Seoul, while those for protein, vitamin C, niacin, vitamin $B_6$ were higher. The study results indicated that elderly from Jeonnam engaged in a more diverse diet than the elderly from Seoul.

국가표준식품성분표 개정을 위한 국내산 돈육의 부위별 비타민 B12 함량 분석 (Analysis of vitamin B12 in fresh cuts of Korean pork for update of national standard food composition table)

  • 본 연구는 국민 영양평가 및 정책 수립에 근간이 되는 국가표준식품성분표 개정을 위해 농촌진흥청과 국립축산과학원이 공동으로 국산 돈육의 대표 시료를 선정하고 부위별로 신뢰성이 확보된 vitamin $B_{12}$ 함량 데이터 구축을 위해 분석법 검증과 분석품질관리를 수행한 연구이다. Immunoaffinity-HPLC 분석법을 특이성, 직선성, 검출한계 및 정량한계, 정확성, 정밀성 등의 분석수행특성 지표를 이용하여 평가한 결과 모든 항목에서 AOAC 가이드라인 수용기준에 충족되는 것을 확인하였다. 또한 모든 시료 분석 시 in-house QC sample을 분석한 결과 QC chart의 관리한 계선 안에 포함이 되어 본 연구 기간 동안 수행된 모든 시료 분석이 관리하에 정확성과 정밀성을 나타내는 분석값임을 확인할 수 있었다. 총 7개 primal cut과 이들로부터 세분화된 22개 retail cut의 vitamin $B_{12}$ 함량 분석 결과 주요 부위(평균 $0.42-0.69{\mu}g/100g$) 뿐 만 아니라 같은 부위 안에서도 세부 부위에 따라 vitamin $B_{12}$ 함량에서 차이가 나타났다. 특히, 삼겹살과 목심 부위에서 vitamin $B_{12}$ 함량이 높게 나타났으며 세부 부위에서는 삼겹살 부위의 토시살이 $0.98{\mu}g/100g$로 최고값을 보였고, 등심 부위의 알등심살과 뒷다리 부위의 홍두깨살이 $0.33{\mu}g/100g$으로 가장 낮은 수준을 나타냈다. Vitamin $B_{12}$ 함량은 돈육의 부위별 단백질 함량과는 유의적인 차이를 보였으나 지방 및 수분 함량과는 유의적인 차이를 보이지 않았다. 본 연구에서 생산된 국내산 돈육의 부위별 vitamin $B_{12}$ 함량 데이터는 분석법 검증과 분석품질관리를 통하여 신뢰성이 확보된 데이터로 국가표준식품성분표 개정에 활용될 수 있을 것으로 기대된다.

버크셔의 출하체중과 성별에 따른 도체 및 돈육의 물리적 특성 비교 (Comparison of Carcass and Pork Physical Characteristics by Market Weight and Gender of Berkshire)

  • 본 연구는 버크셔종 돼지의 출하체중과 성별에 따른 도체 및 육질 비교를 위해 실시하였다. 첨단양돈연구소에서 사육한 178-183일령 흑돼지(버어크셔) 72두를 공시하여 출하체중과 성별에 따라 95-104kg, 105-110kg 및 111-120kg으로 분리하여 조사하였다. 경남 김해시 어방동 소재 부경양돈 농협 도축장으로 수송하여 관행적인 방법으로 도축 후 도체 특성을 조사하였으며, 육질시험은 도축하여 24시간 냉각한 다음 등심부위(longissimus dorsi)를 공시하여 조사하였다. 출하체중이111-120kg 돼지가 95-104kg과 105-110kg 돼지보다 도체중과 등지방 두께는 증가하였고, 등급은 출하체중이 105-110kg과 111-120kg인 돼지가 A, B등급에 가까운 좋은 등급을 받았지만, 95-104kg인 돼지는 B, C 등급에다(p<0.05). 돈육 p $H_{u}$, 육즙손실 및 가열감량은 출하체중과 성별에 따라 유사하였으며, 수퇘지가 암퇘지에 비해 전단력이 높았다.(p<0.05). 돈육의 육색은 출하체중과 성별에 따라 유사한 경향이었다. 총 육색소 함량은 출하체중이 95-104kg인 암퇘지와 111-120kg인 수퇘지가 다른 출하체중과 성별보다 높았다. 조직특성은 출하체중에 따라 유사한 경향이었고, 미경산 암퇘지가 수퇘지에 비해 탄력성과 파쇄성이 높았다. 이상의 연구에서, 도체특성(도체중과 등지방두께)은 출하 무게와 성별에 따라 영향을 받았고, 암퇘지육은 수퇘지에 비해 전단력값과 조직특성이 향상되었다.다.

일본버크셔의 도살체중이 혈액성상과 돈육품질에 미치는 영향 (Effect of Slaughter Weight on the Blood Profile and Pork Qualities of Japan Berkshire)

  • The effects of slaughter weight on blood profile and pork qualities of japan berkshires were investigated A total 72 pigs were divided into 3 groups$(125\~130,\;105\~110\;or\;95\~104\;kg)$. At each slaughter weight pigs were conventionally slaughtered and then chilled overnight The carcass characteristics (carcass weight backfat thickness and grades) were determined on those carcass, the muscle longissimus dorsi was removed from each left side at 5th to 13th rib and meat qualities were evaluated. Blood profile including cortisol, creatine phos-phokinase (CPK), lactate dehydrogenase (LDH), glucose and phosphorus was not significantly (p>0.05) different among all slaughter weight, However, the calcium contents of pigs at $95\~104\;kg$ were significantly (p<0.05) higher than the other weights. The carcass weight and backfat thickness of pigs slaughtered at $125\~130\;kg$ were higher than those of $105\~110\;or\;95\~104\;kg$. The carcass grade of pigs slaughtered at $125\~130\;kg$ were significantly (p<0.05) lower than the other weight. The moisture contents of pigs slaughtered at $125\~130\;kg$ were significantly lower than the other weights, but crude protein contents were significantly (p<0.05) higher, Cooking loss and shear lone values of pigs slaughtered at $95\~104\;kg$ were significantly (p<0.05) lower than the other weight. CIE $a^*\;and\;b^*$ values of pigs slaughtered at $105\~110\;kg$ were significantly higher than the other weights. These results imply that the carcass characteristics (carcass weight and backfat thickness) could be affected by slaughter weight the cooking loss and shear force values of pigs slaughtered at $125\~130\;kg$ resulted in higher than those of $105\~110kg\;or\;95\~104\;kg$.

외식의 영양정보 제공을 위한 영양 평가 -한식을 대상으로- (Assessment of Nutrient Content for Providing Nutrition Information of Dishes in Restaurant and Food Service Institutions -About Korean dishes -)

  • The purpose of the present study is to assess nutrient content for providing nutrition information such as nutrition labeling on Korean dishes in restaurant and food service institutions. The content of nutrients was calculated in recipies used to prepare dishes which has been frequently consumed in such four groups as the literature, foodservice institutions of industries, restaurants, and households. The numbers of dishes surveyed were 15. Total numbers of literture used for recipies analysis are 20. Recipies used in foodservice institutions of industries were abstracted from the journal 'Guk-Min Young-Yang' published in Korea dietetic association and obtained with the help of dietitians working in those institutions. Also, recipies has been using in restaurants were given from the Korea restaurant association. Recipies in households was calculated from the secondary analysis of the Korean National Nutrition Survey. Nutrient content from foods except steamed rice and side dishes in each dish was calculated using data of Korean food composition table published. The content of energy and protein in 'Gal-bi tang' (beef-rib soup) were highest in recipes used at restaurants, vitamin C in recipes of food service institutions of industries due to the generous use of meats and vegetables than other recipies. 'Doen-jang chigae' (soybean paste stew) showed the lowest content of energy in results analyzing recipes presented on the literature and varied protein level by four groups for difference of protein source used. The content of energy in 'Gop-chang jeongol' (small intestines stew) is 150 kcal more than 'Soegogi jeongol' (beef stew) in general. The energy level of 'Daeji-galbi' jim (braised pork ribs) and 'Dak jim' (braised chicken) turned out to be the highest in recipies presented on literature. Variation of each nutrient content including energy and protein was relatively high, since some of foods used in 'Pibimbab' (mixed rice) varied with four groups. Amounts of energy and protein in 'Naeng-myeun' (cold noodles) is the highest in recipies of foodservice institution of industries because much amounts of noodle and meats were used comparing to other groups. The average content of energy in 'Pulgogi' (grilled meat with sauce) was 50% to Korea recommended amounts of one meal, 833.3 kcal. Content of vitamin $B_1$ in 'Jeuk pyeunuk' (boiled pork), which is made of pork meat, was higher than other dishes. The ingredients of frequently consumed Korean dishes were highly variable among the four groups which inevitably results in variation of nutrient content in each dishes. The high variation of nutrient content in each dish according to study requires careful collecting of the large number of recipies in presenting representative nutrient content for nutrition labeling on dishes in restaurant and food service institutions effectively.

사료의 영양소 수준과 성별이 도체 및 육질특성에 미치는 영향 (Interaction between Nutrient Density Diets and Sex on Carcass and Quality Characteristics in Finishing Pigs)

  • The present study was undertaken to investigate the effects of nutrient density diets and sex on carcass and pork quality characteristics in finishing pigs. A total of 96 pigs(58.04 $\pm$ 6.85 kg) were divided into 2 groups(gilts and barrows), each sex group was assigned to 3 nutrient density(high : 18.5%, middle : 16.0% and low: 14.0% CP, respectively) and raised up to 1l0kg live weight. Each treatment had four replicates with three or five pigs per replicate. The treatments comprised the feeding regimes of 1) the low density diet for 60 days, 2) the middle nutrient density diet for the 30 days followed by a low nutrient density diet for the remaining 30 days and 3) the high nutrient density diet for the 30 days followed by a middle nutrient density diet for the remaining 30 days. Pigs were conventionally slaughtered, and then chilled overnight. Carcass characteristics and grades were determined on those carcasses, and pork loin muscle was removed from each left side at 5th to 13th rib for quality evaluation were evaluated. There were no differences in the carcass weight between sex and nutrient density. Dressing percent of L-L(gilts) treatment was significantly higher than that of other treatments(P< 0.05). Barrows showed a thicker back fat thickness than gilts. There were no difference in intramuscular fat, subcutaneous fat and springiness between sex and nutrient density. Intermuscular fat of barrows groups was significantly higher than the gilts groups(P < 0.05). In the meat quality characteristics, there were no difference in general composition, meat and fat color between sex and nutrient density. pH of L-L(gilts) treatment was significantly higher than that of other treatments(P < 0.05). Cooking loss and shear force value of H-M(barrows) treatment were significantly higher than those of other treatments(P< 0.05). Purge loss of barrows groups was significantly higher than the gilts groups(P < 0.05). Myoglobin content of H-M treatment was significantly lower than L-L and M-L treatments(P< 0.05). Texture of H-M treatment was higher than L-L and M-L treatments. The content of myristic, palmitic, palmitoleic and oleic acid were significantly higher in the barrows groups(P< 0.05). However, stearic, linoleic and arachidonic acid were significantly higher in the gilts(P < 0.05). Amino acid content of L-L treatment was significantly higher than M-L and H-M treatments(P < 0.05). In conclusion, carcass and pork quality characteristics were affected by sex and nutrient density.

Applications of Proteolytic Enzymes from Kiwifruit on Quality Improvements of Meat Foods in Foodservice

  • The purpose of this study was to evaluate kiwifruit as a tenderizer by its effects in improving the quality of various beef parts. Basic data are provided for development of standard recipes for convenient cooking in foodservice. The optimum temperature of the crude proteolytic enzymes in the kiwifruit was determined to be $65^{\circ}C$. The substrate specificity of the enzymes was higher in beef than in pork, chicken, or duck. The enzymes had their greatest effects on chuck and rib parts, and had lower effects on loin, breast, and round parts, in that order. As the amount of kiwifruit extract increased, the moisture content of the cooked beef also increased. The addition of 10% kiwifruit improved the sensory quality of the cooked beef. In particular, the texture scores of cooked beef samples treated with 10% and 15% kiwifruit extract were significantly higher than the other samples (p<0.001), and juiciness and overall acceptability scores were also highest. In summary, 10% kiwifruit extract is deemed an appropriate addition to improve.

산수유 열수추출물을 첨가한 찜류용 기능성 간장소스 개발 (Development of functional soy-based stew sauce including hot water extract of Cornus officinalis S. et Z)

  • We developed a kind of soy-based sauce for stews using three recipes and sensory evaluation processes, and examined the biological activities such as antioxidative, fibrinolytic and ${\alpha}$-glucosidase inhibitory activities of hot water extract of Cornus officinalis S. et Z in order to use as functional ingredient. The developed stew was composed of soy sauce $1\frac{1}{2}$ Tbsp, sugar $1\frac{1}{4}$ Tbsp, garlic, small green onion, powdered sesame and sesame seed oil $\frac{1}{2}$ tsp, respectively, ginger extract $\frac{1}{4}$ tsp, black pepper $\frac{1}{8}$ and water $\frac{2}{3}$C per 300 g of main ingredients(pork rib, chicken and dried pollack). It was evaluated more highly acceptable than the original recipes by sensory test. Replacement of water in the recipe of the developed stew sauce with hot water extract of Cornus officinalis S. et Z did' nt affect the sensory quality. From the above results. we concluded that hot water extract of Cornus officinalis S. et Z might be a excellent source to provide health functionality.

Association of Insulin-like growth factor binding protein 2 genotypes with growth, carcass and meat quality traits in pigs

  • Background: This study was conducted to investigate the potential association of variation in the insulin-like growth factor binding protein 2 (IGFBP2) gene with growth, carcass and meat quality traits in pigs. IGFBP2 is a member of the insulin-like growth factor binding protein family that is involved in regulating growth, and it maps to a region of pig chromosome 15 containing significant quantitative trait loci that affect economically important trait phenotypes. Results: An IGFBP2 polymorphism was identified in the Michigan State University (MSU) Duroc ${\times}$ Pietrain $F_2$ resource population (n = 408), and pigs were genotyped by MspI PCR-RFLP. Subsequently, a Duroc pig population from the National Swine Registry, USA, (n = 326) was genotyped using an Illumina Golden Gate assay. The IGFBP2 genotypic frequencies among the MSU resource population pigs were 3.43, 47.06 and 49.51 % for the AA, AB and BB genotypes, respectively. The genotypic frequencies for the Duroc pigs were 9.82, 47.85, and 42.33 % for the AA, AB and BB genotypes, respectively. Genotype effects (P < 0.05) were found in the MSU resource population for backfat thickness at $10^{th}$ rib and last rib as determined by ultrasound at 10, 13, 16 and 19 weeks of age, ADG from 10 to 22 weeks of age, and age to reach 105 kg. A genotype effect (P < 0.05) was also found for off test Longissimus muscle area in the Duroc population. Significant effects of IGFBP2 genotype (P < 0.05) were found for drip loss, 24 h postmortem pH, pH decline from 45 min to 24 h postmortem, subjective color score, CIE $L^*$ and $b^*$, Warner-Bratzler shear force, and sensory panel scores for juiciness, tenderness, connective tissue and overall tenderness in MSU resource population pigs. Genotype effects (P < 0.05) were found for 45-min pH, CIE $L^*$ and color score in the Duroc population. Conclusions: Results of this study revealed associations of the IGFBP2 genotypes with growth, carcass and meat quality traits in pigs. The results indicate IGFBP2 as a potential candidate gene for growth rate, backfat thickness, loin muscle area and some pork quality traits.
