Effect of Freezing, Thawing and Blanching on the Pigment of Purple Sweet Potato (동결, 해동 및 Blanching이 자색고구마 색소에 미치는 영향)

  • The effect of freezing, thawing and blanching on the change of extractable pigment content of purple sweet potato (PSP) was investigated. Freezing at $-5^{\circ}C$ was more effective than freezing at $-20^{\circ}C\;or\;-40^{\circ}C$, and rapid thawing methods such as microwave heating or hat air blast heating were effective than slow thawing methods such as thawing at $4^{\circ}C\;or\;20^{\circ}C$. Inactivation of enzymes, which cause pigment destruction during thawing, by blanching before freezing was necessary to obtain the highest possible amount of extractable pigment from PSP. Microwave blanching for $3{\sim}4$ min or hot air blanching for $10{\sim}15$ min were effective in extracting pigment from PSP.

Effect of Dietary Monascus Pigment on the Liver Damage Induced with $CCl_4$in Rats

  • In the biological world, there are a number of ecological fights for survival between each organism such as plants, animals and microorganism In such events, an organism can use its natural bioactive products as defence agent against other organisms. Furthermore, natural bioactive products can be utilized for medicine or functional food. Recently, we investigate the effect of Monascus pigment extracted from a fungus, Monascus anke, on the alcohol metabolism and blood lipid profile. In the present study, it is observed that Monascus pigment supplemented dietary may have a hepatoprotective effect on rat's liver damage induced with $CCl_4$ . By treatment with $CCl_4$(3 times, I.P), liver damage was reduced more in the rats fed 2% Monascus pigment extract supplemented diet than those fed standard diet, based on the serum levels of alanine aminotransferase, microsomal glucose-6-phosphatse activity and hepaic malondialdehyde content. On the other hand, oxygen free radical generating enzymes, hepatic P-450 dependent aniline hydroxylase, xanthine oxidase, and oxygen free radical scavenging enzymes, hepatic glutathione S-transferase, catalase, superoxide dismutase activities were generally higher both in $CCl_4$ treated group and control fed 2% Monascus pigment extract supplemented diet than those fed standard diet. In conclusion, the rats fed 2% Monascus pigment extract supplemented diet showed more reduced liver damage than those fed standard diet, which may be due to the acceleration of oxygen free radical metabolism.

  • In this study, various Pigment Red 57:1 samples and also their dispersant were prepared in various synthesis conditions via changing parameters such as synthesis time, pH, derivative content and synthesis temperature in order to analyze the pigment particle behaviors and their spectroscopic and physical properties. Each sample was analyzed using Fourier infrared spectroscopy, UV-Vis spectroscopy, particle size analyzer, color spectrophotometer and X-ray diffractometer and their characteristics were compared. As a result, it was possible to control the size of pigment particles by controlling the synthesis conditions.

  • The effect of the dehydration method and EDTA or BHA treatment upon the pigment degradation and water re-absorption of the dehydrated meat of the surf clam Mactra Sulcataria REEVE was studied. Sun drying Produced a realer decrease in pigment content as compared to that produced by hot-air dehydration. The hot-air dehydrated product which was treated with BHA showed little pigment loss in comparison with the pigment of the fresh surf clam meat. The BHA treatment upon the dehydrated surf clam products had an outstanding effect on the pigment retention and the EDTA treated one had a weak effect on it. The hot-air dehydrated products more rapidly re-absorbed water than the sun dried one. It could be seen that there was tittle difference among the rate of rehydration of the BHA or EDTA treated product and untreated one.

Quality Characteristics and Antioxidant Activities of Sausages Made from a Mixture of Purple Sweet Potato Powder and Purple Sweet Potato Pigment (자색고구마 색소와 분말 혼합 첨가에 의한 소시지의 항산화 활성 및 품질 특성)

  • The objective of this study was to examine both antioxidant activities and quality characteristics of sausages made from a mixture of purple sweet potato powder and pigment. Five sausages were manufactured: F0 (control), F1 (0.15%-sodium nitrite), F2 (0.2%-purple sweet potato pigment), F3 (0.2%-purple sweet potato pigment and 5%-purple sweet potato powder), and F4 (0.2%-purple sweet potato pigment and 10%-purple sweet potato powder). Sausages were stored at $4{\pm}1^{\circ}C$ for 30 days. Total polyphenol, 2,2-diphenyl-l-picrylhydrazyl (DPPH) radical scavenging activity, acid value, peroxide value, volatile basic nitrogen (VBN), and total bacterial cell contents were analyzed. Total polyphenol content and DPPH radical scavenging activity increased according to the amount of purple sweet potato, whereas acid value, peroxide value, and VBN decreased. Addition of 0.2% purple sweet potato pigment increased lipid oxidative stability and protein deterioration inhibitory effect compared to F0, but not to the levels of 0.15% sodium nitrite. However, F2 showed the lowest pH during storage due to the pH (2.52) of the pigment. Microorganism analysis revealed that total bacterial counts of sausage added with 0.2% purple sweet potato pigment were significantly lower (P<0.05) than that of sodium nitrite-supplemented sausage. As a result, purple sweet potato powder and pigment demonstrate antioxidative activity and lipid oxidative stability in sausages, making them suitable ingredients for manufacturing sausages.

Mineral Compositions of Korean Dancheong Pigment Products using Quantitative XRD (정량 X-선 회절분석을 이용한 국내시판 단청안료의 광물조성 연구)

  • Mineral composition and content of 22 Korean Dancheong pigment products were obtained by Rietveld quantitative analysis. Jubosa, Hwang, Seokrok, Seokcheong and Hobun consist of pure cinnabar, orpiment, malachite, azurite and calcite (or aragonite), respectively. Whereas Seokganju, Hwangto, Noerok, Lapis lazuli, Baekto and Cockie hobun mainly consist of hematite, goethite, celadonite, lazurite, kaolin mineral and portlandite, respectively. And they all consist of soil minerals (quartz, feldspar, sericite and vermiculite) and filler minerals in the industry field (calcite, gypsum and anhydrite) at a different content. Quantitative XRD proved more useful method to determined exact mineral composition and content than chemical or microscopical data. If this method utilize for specification of natural pigment product, it is considered to be applicable in restoration technology and conservation science field.

Stability of the Pigments from Monascus purpuresu CBS 281.34 (Monascus purpureus CBS 281.34가 생성하는 홍국 색소의 안정성)

  • The stability of 80% ethanol-soluble pigments from Monasus purpureus CBS 281.34 was investigated according to storage temperature, pH and addition of organic acid. Also, the stability of ethanol-soluble pigment in aqueous system was examined after the addition of distilled water in the range of 0∼80% during the storage at 1$0^{\circ}C$ and 2$0^{\circ}C$ for 4 weeks with water soluble pigment. The heat stability was the highest (9.74%) when the 80% ethanol-soluble pigments were stored at 1$0^{\circ}C$ for 4 weeks. However, the 80% ethanol-soluble pigments stored at 6$0^{\circ}C$ and 8$0^{\circ}C$ for 24 h and 12 h greatly decreased by 23.06% and 30.36%, respectively. Although the 80% ethanol-soluble pigments were stable in the range of pH 4∼8, the degradation rate of pigment increased at pH 2 and PH 10.80% ethanol extract was adjusted to PH 4 by adding organic acids. The rate of pigment degradation was not different from control for 4 weeks. Red pigment was stable in the treatment of organic acids. And the stability of ethanol-soluble pigment in aqueous system was gradually decreased as the pigment content and storage time increased. Additionally, the stability of ethanol-soluble pigment was higher at 1$0^{\circ}C$ than at 2$0^{\circ}C$.

The Stability of Color and Antioxidant Compounds in Paprika (Capsicum annuum L.) Powder During the Drying and Storing Process

  • The objectives of this study were to examine changes in the color and antioxidant compounds of paprika powder under various conditions, as well as to establish the suitable conditions for drying and storage. Paprika was dried using the following methods: freeze-drying, vacuum drying, far infrared-ray drying, and hot-air drying. Measurements of the moisture content, color pigments, and antioxidant compounds (total carotenoids, capsanthin, ascorbic acid, and total polyphenols) were completed during 120 days of storage at 4 and $30^{\circ}C$. We found that drying methods, storage temperatures, and packaging materials affected the American Spice Trade Association (ASTA) and Hunter color values, as well as the antioxidant content of paprika powder. There was a high correlation (r=0.87, p<0.01) between the ASTA color and the $a^*/b^*$ value. The loss of red color was closely related to the reduction of moisture content (r=0.81, p<0.01) during storage. Drying paprika with a low temperature in the absence of air resulted in better retention of the carotenoids and ascorbic acid. Also, as the retention of the carotenoids and ascorbic acid increased, the stability of the red pigment increased. Freeze-drying was found to be the most suitable drying method for the stability of the antioxidant compounds and red pigment.
