Optimization of drying conditions for the conversion of 6-gingerol to 6-shogaol under subcritical water extraction from ginger (아임계수 추출에서 6-gingerol의 6-shogaol 전환을 위한 생강 건조 조건 최적화)

  • 6-gingerol can be converted to 6-shogaol, one of the predominant active compounds found in ginger, via processing such as drying and extraction. Subcritical water extraction is the environmentally friendly method of extraction of bioactive compounds using only purified water as a solvent. This study investigated subcritical water extraction ($190^{\circ}C$, 15 min) of 6-gingerol, and 6-shogaol from dried ginger (Zingiber officinale) including drying conditions such as temperature (room temperature, 60, $80^{\circ}C$, and freeze drying) and time duration for drying (1-4 h). The amount of 6-gingerol was found to be reduced, and that of 6-shogaol was found to be increased depending upon the water content of dried ginger. Upon oven-drying ginger at $60^{\circ}C$ for 2 h, the maximum yields of 6-gingerol ($0.18{\pm}0.02mg/g$ fresh weight), and 6-shogaol ($0.47{\pm}0.02mg/g$ fresh weight) were obtained upon subcritical water extraction.

  • The residual sulfur dioxide in the five herbal medicines dried with burning bituminous coal for 9 hours showed from 339 (Glycyrrhizae Radix) to 1,138 mg/kg (Zingiberis Rhizoma) measured right after drying. The residual sulfur dioxide, from 70.1 to 95.5%, was remained in the above five matrices even after 30 days passed. The marker components concentration in above five herbal medicines like glycyrrhizic acid, betaine et al., were almost same after drying in oven and with burning bituminous coal.

A comparison of fracture rate of artificial light-weight aggregates by various drying, breaking, and forming methods (건조법, 파쇄법, 성형법에 따른 인공경량골재의 파쇄율 비교)

  • A sheet type of green body was made with the mixture of 60 wt% red clay, 20 wt% fly ash, and 20 wt% stone sludge. Indentations were made on the surfaces of sheets to investigate fracture rate of 1 to 5 mm artificial light-weight aggregates by various drying, breaking, and forming methods. Drying methods of green bodies were natural, electric oven, microwave, and fast drying by torch. Breaking methods of green bodies were ballmill Ⅰ, ballmill Ⅱ, free dropping in the box, and mechanical breaking with roller mill. The depth and width of indent on the surface of the sheet were varied and the thickness of green bodies was also changed to investigate effects of indentation on fracture rates. The highest fracture rate of 42 % among the various drying methods was obtained by microwave drying for 210 sec and the highest fracture rate of 65 % among the various breaking method was obtained by ballmill Ⅱ method. In forming method, an yield of larger aggregates than Ф = 5 mm decreased and that of smaller aggregates than Ф = 5 mm in creased with increasing depth of indentation (only in 3 mm thick green body)and with increasing thickness of green body. The size of aggregates was most homogeneous (by judging from the measurement of aspect ratio of 1 to 5 mm aggregates.) when 3 mm thick green body was rapidly dried by torch and was broken by ballmill Ⅱ method.

A Study on Speedy Water Content Measurement Method for Soils (흙의 급속 함수비 측정방법에 관한 연구)

  • During a construction of embankment, sub base, or retaining wall backfill, the speedy measurement of water content is necessary. In this study, a test method for field determination of water content of soil by the calcium carbide gas pressure (speedy water content measurement method) was evaluated for its reliability and accuracy. Dry oven and microwave oven methods were also used for water content measurement. In the test, weathered granite and Nakdong River sand in the site and kaolinite were used for water content measurement. The mass of 20, 22, 24, 26, 28, and 30 g of soil was respectively tested for 1, 3, and 5 min. The effect of each sample on water content was compared one another and analyzed. As the mass and testing time increased, the water content increased. The amount of soil was more important factor than testing time for the speedy water content measurement. In order to obtain similar result to that of dry oven method, 3 min of testing time with 24 g of soil was necessary for weathered granite classified as SM and 3 min with 30 g for Nakdong River sand classified as SP. For Nakdong River sand with 20-50% of kaolinite, the water content by speedy measurement increased as the clay content increased.

Effects of Convection Oven Dehydration Conditions on the Physicochemical and Sensory Properties of Ginkgo Nut Powder (열풍건조 조건에 따른 은행분말의 이화학적 및 관능적 특성)

  • Effects of convection oven dehydration conditions on the physicochemical and sensory properties of ginkgo nut powder were examined using three types of pre-treatment on ginkgo nuts: coarse grinding of ginkgo nut (GR); coarse grinding followed by 1 min blanching (GB); 3 min blanching followed by coarse grinding (BG). Pretreated ginkgo nuts were dried in convection oven at 70 and $80^{\circ}C$ to the moisture content of approximately 5%. Rehydration rate, swelling power, solubility, lightness, and greenness of GB ginkgo nut powder dried at $70^{\circ}C$ were the most similar to those of freeze dried one. GR and GB samples dried at $70^{\circ}C$ had higher sensory values of green color and ginkgo nut flavor. Ginkgo nut powder with desirable quality attributes could be produced by drying GB in convection oven at $70^{\circ}C$ for 10 hr.

  • The present study investigated the effects of dry and moist heat treatments on total phenols, total anthocyanins, and antioxidant activity levels in black chokeberry (Aronia melanocarpa) fruits. Lyophilized chokeberry powder samples were heated in a drying oven at 60, 100, 160, 180, and 200℃ for 20, 40, or 60 min. Finely ground fresh chokeberry fruits were heated in water at 60, 80, and 100℃ for 20 min, and bioactive compound and antioxidant activity levels were measured. The bioactive compounds and antioxidant activity decreased with increasing temperature and treatment duration. Antioxidant activity was preserved at 160℃ or lower without significant loss for dry heating, whereas moist heat treatment increased both bioactive compounds and antioxidant activity with increasing temperature.

  • Expression of chinese cabbage was conducted in order to investigate its dewatering behavior. Chipped cabbage was packed into cylinder and pressed by piston up to the predetermined pressure on Instron-1000. The rates of dewatering were affected domintantly by the applied pressure, but not significantly by the packed amount of cabbage in the cylinder. The pressure effect was increased very abruptly at first, but the increase rate was very low at high pressure greater than 20 MPa, showing great deviation from linear dependence of flow rate on pressure in Darcy's Law. Therefore, water expression from cabbage was not Newtonian flow of water through cell wall. In fact, the squeezed water contained a lot of solid particles, showing destruction of cell wall. The content of solid particles in expressed water was only slightly lower than the dry matter content of fresh chinese cabbage, determined by drying oven method.

  • Nuclear magnetic resonance(NMR) was used to study a feasibility test for the possibility to develop a moisture sensor applicable for agricultural products such as raw and powdered grain. Samples of wheat flour and brown rice were tested with a 200MHz hydrogen NMR. The samples were loaded into 5mm NMR glass tubes and $30^{\circ}$ pulses were supplied to get resonance signals. Hydrogen spectrum intensities of the samples were compared to moisture content measured by a drying oven method. High linear correlations were obtained between the hydrogen spectrum intensity and moisture content. Therefore, moisure contents of agricultural products could be measured nondestructively utilizing the NMR principle. A low-cost design concept of the moisture sensor with the NMR principle was proposed for a practical use.

  • This study was conducted to develop a soil moisture meter using capacitance probe. A parallel cylinder type capacitance probe (C-probe) was fabricated The 5 MHz of crystal oscillator was constructed to detect the capacitance change of the C-probe with moist soil. A third order polynomial regression model for volumetric water content having oscillation frequency changes at 5 MHz as independent variables presented the determination coefficient of 0.979 and root mean square error of $0.031\;cm^{3}cm^{3}$ for all soil samples. A prototype soil moisture meter consisting of the sample container, C-probe, oscillator, frequency counter and related signal procession units presented the correlation coefficient of 0.987 and the root mean square error of $0.032\;cm^{3}cm^{3}$ as compared with the oven drying method for unknown soil samples.

  • An automation process of filter unit is presented for the application of the assembling procedure and dry furnace work. By that automation procedure, it is expected to enhance working environment such as reducing laboring load, harmful gas, and burning scald. Furthermore, this automation process also minimizes via standardization of manufacturing process so that it may increase productivity and reliability. An automation process of filter unit is presented for the application of the assembling procedure and dry furnace work. Filter automation process also gives a good quality and productivity by simplifying to only one line from the complicated process such as filter cutting$\rightarrow$ adhering$\rightarrow$fabricating in a very small space. It is found that a new conceptual design of dry furnace shows the better quality like uniform heat distribution compared to the conventional design. It is also found that the present design gives a better working environment by adding cooling system.
