Heavy Hymenolepis nana Infection Possibly Through Organic Foods: Report of a Case

  • We encountered a patient with heavy Hymenolepis nana infection. The patient was a 44-year-old Korean man who had suffered from chronic hepatitis (type B) for 15 years. A large number of H. nana adult worms were found during colonoscopy that was performed as a part of routine health screening. The parasites were scattered throughout the colon, as well as in the terminal ileum, although the patient was immunocompetent. Based on this study, colonoscopy may be helpful for diagnosis of asymptomatic H. nana infections.

Rapid Identification of the ${\alpha}$-Glucosidase Inhibitory Compounds from Geranium thunbergii Sieb. et Zucc. by HPLC-micro-fractionation and HPLC-UV-$MS^n$

  • In this study ethanol extracts of aerial part of Geranium thunbergii Sieb. et Zucc. was investigated for their ability to inhibit a-glucosidase, and thus was fractionated using two organic solvents, including dichloromethane, ethyl acetate. The ethyl acetate-soluble fraction, which manifested potent enzyme inhibitory properties, was then followed by tracking down the active compound by combining HPLC micro-fractionation to an enzyme assay in 96-well plate. The ${\alpha}$-glucosidase inhibitory activity profile showed that two peaks exhibited potent inhibitory activity, and then the structural analyses of the two peaks were carried out by HPLC-UV-MS. The main ${\alpha}$-glucosidase inhibitory compounds in the ethyl acetate-soluble fractions of ethanol extracts of Geranium thunbergii Sieb. et Zucc. were tentatively identified as geraniin and kaempferol-7-rhamnoside.

조사료 가치 평가를 위한 근적외선 분광법(NIRS)의 활용 (Applications of Near Infrared Reflectance Spectroscopy(NIRS) in Forage Evaluation)

  • Farmers need timely information on the nutritional status of their animals and the nutritive value of pastures and supplementary feeds if they are to apply successfully this existing nutritional information. Near infrared reflectance(NIR) spectroscopy has been used over the last forty years to analyse accurately protein, fiber, and other organic components in animal foods. NIR spectroscopy is a rapid, non-destructive, and non-polluting technology. When properly calibrated, NIR spectroscopy is used successfully with both concentrate and forage feeds. NIR methods predict in vitro digestibility accurately and precisely, and can predict in vivo digestibility at least as well as conventional "wet chemistry" methods such as in vivo digestion or the pepsin-cellulase method, and much more rapidly. NIR technology has been applied to the routine monitoring (through analysis of feces samples) of the nutritional status of cattle and other grazing animals. This report reviews the use of near infrared reflectance(NIR) spectroscopy to monitor the nutritive value of animal feeds and the nutritional status of grazing animals.

우리나라 발효조미료 산업의 발달사 (History of fermented condiments industry in Korea)

  • The history of fermented condiments symbolizes that of the fermentation industry of Korea. Daesang Co. (ex Miwon) initiated the production of MSG using fermentation process in 1960 for the very first time. Ever since, both Daesang and CJ Co. (ex Cheil Jedang) have scrambled for taking up bigger share of Korean market in the field of MSG, IG-coated MSG, and mixed seasoning. It is noteworthy that both companies have powerfully contributed to the development of Korean fermentation industry. Daesang initiated exporting plants to Indonesia in 1973, whereas CJ has become the global leader of the IMP market. Furthermore, both of them have developed such as not only amino acids but also nucleic acid-related substances, organic acids, enzymes etc. with glutamic acid as a platform. It is anticipated that the two will develop the newly diversified edible substances and various kinds of fermented foods along with new food cultures.

  • The global nematicides market is expected to continue growing. With an increasing demand for synthetic chemical-free organic foods, botanical nematicides are taking the lead as replacements. Consequently, in the recent years, there have been vigorous efforts towards identification of the active secondary metabolites from various plants. These include mostly glucosinolates and their hydrolysis products such as isothiocyanates; flavonoids, alkaloids, limonoids, quassinoids, saponins, and the more recently probed essential oils, among others. And despite their overwhelming potential, variabilities in quality, efficacy, potency and composition continue to persist, and commercialization of new botanical nematicides is still lagging. Herein, we have reviewed the history of botanical nematicides and regional progresses, the potency of the identified phytochemicals from the key important plant families, and deciphered some of the impediments involved in standardization of the active compounds in addition to the concerns over the safety of the purified compounds to non-target microbial communities.

Teenagers Consumption Within the Moderating Role of Saudis Habit Through Fuzzy Set Approach

  • The healthy products dedicated for young people are qualified as a solution to protect the future generation, especially that most commercial deals do not consider the consumer's health and environment. Therefore, it is crucial to define the antecedent of healthy purchases and to examine their impact on teenagers. This research aims to explore the antecedents and the consequences of the consumption of Saudis teenagers. Therefore, we develop a research model in the conceptual framework and the hypotheses to test. The empirical analysis required two samples from Saudis youth consumers. The first sample was utilized in the exploratory study with SPSS software. Then, the second was employed to the confirmatory part with the Amos software, as well as the validation of the hypotheses, and model with Fuzzy Set approach. The findings of this study have significant insights into the Saudi consumption and implications for both practitioners and researchers. Then, we have particularly strenuous on intention purchase antecedents of organic foods, and their consume habit moderation.

Flavor identification and analysis of fermented soybean pastes

  • Soybean paste is a staple food used to make doenjang (DE), cheonggukjang (CGJ), and miso (MI). In this study, solid-phase microextraction followed by gas chromatography-mass spectrometry was used to identify volatile components in DE, CGJ, and MI, and principal component analysis (PCA) was performed to determine their correlation between soybean pastes. Esters and hydrocarbons accounted for more than 55% of the total volatile components. PCA showed that esters were highly correlated with DE; pyrazines were correlated with CGJ; and alcohols were highly correlated with MI. Because DE, CGJ, and MI are made of the same material, their overall volatile content tended to be similar. However, the main volatile components and fragrances were different. These findings will be used as basic research data to promote quality improvement of soybean-based fermented foods in Korea and Japan.

새싹채소 오염세균의 에탄올과 유기산에 의한 제어 (Bacterial Biocontrol of Sprouts through Ethanol and Organic Acids)

  • 즉석섭취 신선편이식품 중의 하나인 새싹채소에 대한 수요가 증가하고 있으나, 오염 미생물 제어방법에 대한 정보가 거의 없는 상황이다. 따라서 본 연구는 국내 대형할인마트에서 유통 중인 새싹채소 20제품을 수집하여 세균수와 B. cereus를 살균소독하는 방법으로 에탄올과 초산, 구연산, 젖산 등의 유기산을 사용하여 그 효과를 평가하고자 하였다. 에탄올과 유기산을 각각 처리하였을 때보다 혼합처리한 실험구에서 세균생육저해가 현저하였으며, 유기산 중에서는 1% 젖산-20% 에탄올 처리구에서 10분 노출시간에 7~8 log CFU/g의 세균을 저감화 시킬 수가 있었다. 주요한 식중독 세균인 E. coli, S. typhimurium, B. cereus, S. aureus, E. faecalis에 직접 20% 에탄올-1% 젖산로 처리했을 때 10분 후에 세균의 감소가 5~7 log CFU/g 이루어졌으며, Gram 음성세균에서 효과가 더 좋았다. 새싹채소에서 에탄올 20%와 젖산, 초산, 구연산 1%를 처리한 후 관능검사는 처리 직후가 하루 후보다는 조직감, 갈변화, 이취 등에서 약간 더 양호한 것으로 나타났다. 따라서 차아염소산과 더불어 에탄올-젖산 등의 유기산의 적절한 조합으로 새싹채소의 오염 미생물을 저감화할 수 있는 것으로 보인다.

다양한 유래에서 분리된 황색포도상구균에 대한 유기산과 천연항균물질의 저해 효과 (Inhibitory Effect of Organic Acids and Natural Occurring Antimicrobials Against Staphylococcus aureus Isolates from Various Origins)

  • 본 연구에서는 다양한 유래에서 분리한 병원성 세균 S. aureus에 대한 5종의 유기산(acetic, propionic, citric, malic, lactic acid)과 3종의 정유성분(carvacrol, thymol, eugenol) 및 그 밖의 자연유래 항균물질(nisin, cinnamic acid)의 항균효과, 최소저해농도 및 각각의 최소사멸농도를 연구하였으며, 이를 바탕으로 항균물질간의 혼합처리 시 항균효과를 평가함으로써 이와 같은 자연유래 항균물질들의 화학합성 보존제 대체 가능성을 연구하고자 하였다. Agar disc diffusion실험을 통해 propionic acid (1.38 cm) > nisin (1.00 cm) > thymol (0.98 cm) > carvacrol (0.90 cm) 순으로 S. aureus에 대해서 높은 항균력을 나타내었다. 최소저해 농도는 carvacrol (0.06%), thymol (0.06%), nisin (0.06%)이 항균효과가 가장 좋은 것으로 나타났다. 그 이외의 항균물질의 경우 eugenol (0.13%), propionic acid (0.23%), acetic acid (0.38%), citric acid (0.60%), malic acid (1.66%) 순으로 효과가 나타났다. 이를 바탕으로 항균물질간의 혼합 처리시 propionic acid와 citric acid의 결합처리 효과가 가장 높게 나타났다. 자연유래 항균물질은 합성 보존료에 비해 항균활성이 미약해 보존료의 이용이 어렵지만 본 연구결과 자연유래 항균물질들의 혼합처리를 통해 시너지 효과를 알 수 있었다. 따라서 자연유래 항균물질의 혼합처리를 통한 연구가 계속적으로 이루어진다면 인공 합성보존료를 대신하는 천연 보존료의 상업적 이용이 가능할 것으로 사료된다.

해양심층수 관련 국내 특허출원 동향 (Current Status of Applied Korean Patents Regarding the Deep Sea Water)

  • Deep sea water exists at depths of over 200m under the sea. As no sunlight reaches it, photosynthesis does not take place within it, and it contains no organic matter. In addition, its temperature is maintained at a stable low level throughout the year, so it does not get mixed with the sea water on the surface. It contains a large amount of nutritious salts, whose cleanness is maintained. It is a marine resource that has matured for a long period of time. Research into deep sea water, which started in the 1970s, has been made around the whole world, including the USA and Japan. In Korea, research has been active in this area since 2000. As there has been a good amount of research into industrial applications for deep sea water, since 1993, patents for the relevant technologies have been applied. This paper intends to provide a resource to researchers of deep sea water, by summarizing of all domestic deep sea water-related patents applied with Korean Intellectual Property Office from 1993 to 2008. This research was conducted using a computer and KIPRIS Database owned by the Korea Institute of Patent Information. 'Deep sea water' was used as the search keyword. A total of 222 Korean patents relating to deep sea water have been registered on the basis of IPC. Of these, 126 patents relate to the manufacturing and the treatment of foods, foodstuffs, or non-alcoholic beverages(A23L), while 50 patents relate to the production for medical, dental, or cosmetic purposes(A61K). 38 patents relate to water purification, treatment of wastewater, sewage and sludge (C02F), while 8 patents relate to fishery and farming(A01K). In summary, it was found that studies for the practical use of deep sea water have been conducted in relation to the manufacturing and the treatment of foods, foodstuffs, beverages, and cosmetics.
