To optimize the mixing ratio of ingredients to obtain the best sensory qualities, a response surface methodology with a central composite design was performed on hot water extracts using crucian carp Carassius carassius treated with diluted vinegar (pH 5.24-5.30). The optimal solutions for four parameters (overall acceptability, odor, flavor, and taste) were obtained using the second-order response surface regression models. The optimal formulation appeared to be 124.15 g of ginger and 96.09 g of garlic with 1 kg of ground crucian carp meat based on the desirability function technique.
To standardize the recipes for healthy fast food market potentiality, a sensory acceptability analysis, instrumental texture analysis and nutritional evaluation were performed on Korean style mung bean pancake (MPC) and modified MPC containing squid meat and soybean. Optimal ingredient formulation was revealed to be 34% mung bean, 49% pork and 17% vegetables for traditional MPC, and 21% pork, 66% squid meat and 13% soybean for modified MPC, using response surface methodology. Flavor and hardness correlated highly with overall acceptability, rather than appearance and color of traditional MPC. Higher squid levels raised adhesiveness, springiness and resilience of modified MPC, but the higher soybean levels decreased these textural attributes. Protein, lipid and total calories of modified MPC were lower than those of traditional MPC. Degree of gelatinization of modified MPC was superior to traditional MPC.
This study was conducted to investigate the physicochemical properties of citrus peel extracts with different hot water extraction and enzymatic hydrolysis conditions. Enzymatic hydrolysis was also employed using Viscozyme L and results were compared with that of optimized hot water extract. Hot water extraction was performed under different parameters; the sample to solvent ratio(1:20, 1:15, 1:10), extraction time(2, 4 hrs), extraction temperature(85, $95^{\circ}C$) and enzymatic hydrolysis(0, 1%) and the subsequent extracts were used for determining their physicochemical properties, such as total yield, total phenolics, total flavonoids, and electron donating ability (EDA). With the increase in the sample to solvent ratio and extraction time, total yield, total phenolics, total flavonoids and EDA increased. But extraction temperature did not significantly affect the hot water extract. As hot water extract was hydrolyzed by the enzyme, total yield and active ingredients increased rapidly. In the result of total yield, total phenolics, total flavonoids and EDA, the activity of enzyme-treated extract was higher than those of enzyme-untreated extract. Based upon the overall hot water extraction efficiency, it was found that 20 times volume or 120 min at a time at $95^{\circ}C$ after enzyme treatment was optimal.
The purpose of this study was to determine the organoleptic charateristics of cauliflower pickles made in various compounding ratio according to central conposite design for optimum organoleptic characteristics of the cauliflower pickles. The optimum mixing condition of cauliflower pickles were optimized, using central composite design with 3 variables and 3 levels, by response surface methodology. The various kinds of cauliflower pickle were made in various compounding ratio of vinegar, salt and sucrose - critical ingredients of pickle recipe - and were presented to reliable panels, who graded the subjects in 7 degrees for 4 items : color, flavor, hardness and overall quality. The optimum mixing conditions of cauliflower pickle were 603.50g of vinegar, 80.13g of salt and 251.07g of sucrose in the maximum point of overall quality.
Preparation of nectar using Kabocha squash was optimized and the quality changes during 7 weeks'storage were investigated. The paste for the nectar base could be effectively obtained by consecutive processes of steaming for 15 min, crude smashing and homogenization. To improve the mouth-feel of the nectar, various pectinases and cellulases were treated with Econase CE, Rapidase press, Macerozyme A, Sumizyme MC and Cytolase M102. Among them, Cytolase M102 was the most effective enzyme at $0.05\%$ for 90 min reaction in terms of the collective results as the residue of the nonsoluble solids, viscosity and alcohol test. The best ratio of the nectar ingredients was a ratio of water to paste of 1.5, $11^{o}$Brix of saccharinity, $0.025\%$ of citric acid and $0.15\%$ of xanthan gum. When the retort sterilized nectar in a can was stored in an incubator at $35^{\circ}C$ for 7 weeks, the color, pH, saccharinity, viscosity and total count plates remained almost unchanged.
To obtain basic data for the utilization of saltwort (Salicornia herbacea L.) as a functional ingredient in steamed foam cake, the optimum component ratios for major raw ingredients (saltwort, salt, and wheat flour) as independent variables that affect the product quality were scientifically determined using RSM (response surface methodology) technique. A three-factor and five-level rotational central composite design was used for treatment arrangement. The complete design consisted of 16 experimental points. The three independent variables selected for the RSM experiment were amounts of saltwort (X$_1$, 5${\sim}$25 g), salt (X$_2$, 0${\sim}$10 g), and wheat flour (X$_3$, 470${\sim}$530 g). The optimum responses in specific gravity of the batter and volume, color, texture, and sensory evaluation result of the cake were obtained. The specific gravity and viscosity of the batter at p<0.01 was verified from the regression curve. The characteristic of the batter was influenced by all independent variables, but was extremely dependent on the amount of saltwort ordinary points of the surface responses from the batter formed the minimum points for specific gravities of the batter while viscosities of the batter appeared with the saddle points. Analysis of the response indicated that the amount of saltwort was the most influential factor over the physical properties of the cake, among the dependent variables. Ordinary points of the surface responses from the cake formed the maximum points for loaf volume, hardness gumminess, and chewiness, while Hunter colorimetric parameters appeared with the saddle points. The result indicated that level of the saltwort deviating more or less from the optimal amount decreased the volume and increased the specific gravity with less tender product. Ordinary points of the surface responses of the sensory evaluation scores from the cake formed the maximum points for appearance, flavor, softness, and overall acceptability, while color values appeared with the saddle points. The result also indicated that the level of the saltwort deviating more or less from the optimal amount reduced the preference for the product. Integration of the optimum responses common to all dependent variables that overlapped all the contour maps finally indicated that the combination of 8.3${\sim}$13.8 g saltwort, 2.5${\sim}$6.6 g salt, and 486.5${\sim}$511.5 g wheat flour under the selected preparation recipe optimized the physical and sensory properties in the teamed foam cakes. Practical preparation of the product with median amounts of the ingredients, i.e., 11.0 g saltwort, 4.6 g salt, and 499.0 g wheat flour resulted in similar qualities to the predicted responses. In conclusion, these study results indicated that preparation of steamed foam cake with added saltwort ingredient could potentially produce a more nutritious product with less salt. Further research is required to acquire the optimum levels for sub-ingredients to improve the product quality.

Beta-glucan is a polymerized polysaccharide on beta-1,3 chemical bonds. It has the main pharmacological action of various anticancer mushrooms and is colorless and odorless. In addition, it enhances phagocytosis of macrophages against mycobacterium tuberculosism and increases resistance of host against food poisoning bacteria. Owing to these advantages, beta-glucan was used in various health supplement foods such as immune boosters, hypotensive agent and hypoglycemic agent. Our study was aimed to investigate the effective components of beta-glucan, which was optimized via the contents of Sarcodon aspratus and rice bran. First, the mixture ratio condition of Sarcodon aspratus and rice bran were respectively 10:0, 7:3, 5:5, 3:7, and 0:10. The raw materials were fabricated using hot water extraction method. Distilled water of 100 mL was added to the raw material and extracted. After the extraction processed, the content of effective components was analyzed. The absorbance of beta-glucan was measured using a beta-glucan kit (Megazyme, (1-3) (1-4) BETA-D-GLUCAN ASSAY KIT). The absorbance analysis was repeated three times for accurate analysis. After the extracts were lyophilized, the yields of extracted raw materials according to the mixture ratio conditions of Sarcodon aspratus and rice bran (10:0, 7:3, 5:5, 3:7, and 0:10) were respectively 33.1%, 34.5%, 35.3%, 30.7%, and 24.3%. The absorbance was 1.52, 1.47, 1.50, 1.79, and 1.56, respectively. As a result, the optimum ratio of beta-glucan is 3:7 at Sarcodon aspratus and rice bran. This study suggested that the optimal amount of beta-glucan could be used as a health supplement foods and food additive such as immune boosters, hypotensive agent and hypoglycemic agent. However, the new condition (temperature, time) of hot water extraction to maximize the content of beta-glucan could be considered, could be necessary to compare with the existing extracts.
This study was conducted to develop a recipe for a nutritional cookie containing chungkukjang powder that had a composition of ingredients and a texture that resulted in a high preference by all age groups. Wheat flour was partially substituted with chungkukjang powder to reduce its content. Response surface methodology was then used to analyze the measured results, which showed 16 experimental points including 2 replicates for chungkukjang powder, butter and sugar. The compositional and functional properties were then measured, after which these values were applied to a mathematical model. A canonical form and perturbation plot revealed the influence of each ingredient on the final mixture. The results of the sensory evaluation showed significant values with respect to color (p<0.01), texture (p<0.05) and overall quality (p<0.05). Taken together, the results of this study indicated that the optimal ratio was 26.57 g of chungkukjang powder, and 82.08 g of butter for every 52.36 g of sugar. The physical and chemical sensory measurements were then evaluated by a t-test, and the results revealed significant differences in the flavor of the optimized cookie when compared to the control cookie.
초음파 추출공정을 이용하여 밀싹으로부터 유효성분을 추출하고, 중심합성계획모델을 이용하여 추출공정을 최적화하였다. 중심합성계획모델의 반응치로는 추출수율과 플라보노이드성분 함량을 설정하고, 독립변수인 추출시간, 주정/초순수 부피비, 초음파 조사세기에 따른 주효과도와 교호효과도를 해석하였다. 추출수율의 경우 주정/초순수의 부피비와 초음파 조사세기가 상대적으로 큰 영향을 미쳤으며, 플라보노이드성분 함량의 경우에는 추출시간의 영향이 가장 크게 나타났다. 추출수율과 플라보노이드성분 함량을 모두 고려한 결과 최적조건은 추출시간(17.00 min), 주정/초순수의 부피비(50.25 vol%), 초음파 조사세기(551.70 W)이며, 이때 예측 추출수율은 28.43 wt%, 예측 플라보노이드성분 함량은 $29.99{\mu}g\;QE/mL\;dw$을 얻을 수 있었다. 실험을 통해 유효성분 추출수율(28.73 wt%), 플라보노이드성분 함량 ($29.65{\mu}g\;QE/mL\;dw$)의 실험값을 얻을 수 있었으며, 이를 예측값과 비교했을 때 오차율은 각각 1.05, 1.13%이다.
영양성과 경제성 및 내외국인에게 선호도가 높은 빈대떡에 대한 40대이상의 소비자들의 기호도와 물성으로 재료혼합비율을 반응표면 분석법으로 최적화하였다. 먼저 전통적 방법으로 조리된 빈대떡의 재료 혼합비율을 최적화 한 뒤, 오징어와 대두를 단백질 대체재료로 사용한 개량빈대떡의 흔합비율을 최적화하였으며, 또한 이들의 영양적인 품질을 평가하여 단백질 재료의 대체에 따른 개량빈대떡의 품질의 변화를 알아본 결과는 다음과 같다. 빈대떡 재료의 3가지 요인변수(전통빈대떡, $X_{1}$ : 녹두, $X_{2}$ : 돼지고기, $X_{3}$ : 혼합채소 ; 개량빈대떡, $X'_{1}$ : 돼지고기, $X'_{2}$ : 오징어, $X'_{3}$ : 대두)의 변화에 따른 기호도의 관능적 특성($Y_{1}$ : overall acceptability, $Y_{2}$ appearance, $Y_{3}$ : color, $Y_{4}$ : flavor, $Y_{5}$ : hardness)인 반응변수의 변화를 분석한 결과, 전통빈대떡의 경우 녹두 : 돼지고기 : 채소의 비율이 0.55 : 0.13 : 0.32로 돼지고기 비율이 현저히 낮고 녹두 비율이 높은 것이 선호되었으며, 이때 예상되는 관능치는 6.7로서 양호하였다. 이를 돼지고기 대신 오징어와 대두로 부분 대체한 개량빈대떡의 경우는 돼지고기 : 오징어 : 대두의 비율이 0.03 : 0.42 : 0.55로 대두의 비율이 높은 것이 선호되었으며, 예상점수는 6.5로 전통빈대떡과 같은 정도로 양호하였다. 구성 식재료가 물성적 특성에 미치는 영향은 전통빈대떡의 경우, 녹두와 돼지고기양이 증가할수록 탄력성, 응집성을 비롯한 모든 물성 특성치가 증가한 반면, 채소양이 증가에 따라서는 경도와 부착성을 비롯한 대부분의 물성치가 감소하다가 최소점에 도달하였다. 개량빈대떡에서는 오징어 대체량이 많아짐에 따라 대부분의 물성치가 높아진 반면, 대두양이 많아질수록 대부분의 물성치는 낮아졌다. 최적비율 빈대떡의 영양학적인 평가는 개량빈대떡이 전통빈대떡보다 조단백, 조지방, 총열량이 낮았고 회분양은 높았으며, TBA value와 갈변도는 높았지만, 단백질 효율도 유의적으로 높게 나타나 단백질급원을 대두와 오징어로 대체하여 기대했던 긍정적 효과를 얻을 수 있었다. 이와 같이 혼합물 실험계획법에 의한 반응표면분석으로 목표세대의 기호도에 맞춘 다양한 맛의 전통식품을 상품화 한다면,우수한 전통 식생활문화를 계승 발전시키는 동시에, 전통음식의 세계화가 촉진될 것으로 생각된다.
