Preference Evaluation of High Functional Spelt Flour Bread added with Aronia Powder (아로니아를 첨가한 고기능성 스펠트 밀가루 식빵의 기호도 분석)

  • Aronia is a superberry that contains antioxidants. Due to its nutritional value, it has received much attention and has been widely researched. In this study, the proportion of aronia powder applied to spelt wheat flour was measured with the pH ratio of the additive and respondents' preference was examined for the preferred addition to the additive population. As a result of the acidity measurement, the pH value tended to decrease as the amount of aronia powder was increased. As for the fermentation expansion rate, the volume of the dough added with aronia powder was measured to be slightly smaller than that without addition of aronia powder. Preference of breads with aronia powder added showed higher preference when 6% was added compared to when 3% of aronia powder was added. As a result of preference survey of breads containing aronia powder, the most preference was given to taste when 3% of aronia powder was added. Color, fragrance, and overall acceptance were the most preferred when 6% of aronia powder was added. Based on these results, the optimal mixing ratio of aronia powder to spelt flour bread was selected to be 6% of aronia powder.

  • In this paper I propose a simple optimal solution seeking algorithm to a stable marriage problem. The proposed algorithm firstly constructs an $n{\times}n$ matrix of the sum of each gender's preference of the other gender $p_{ij}$. It then selects the minimum sum preference $_{min}p_{ij}$ in the constructed matrix and deletes its corresponding row i and column j. This process is repeated until $i=0{\cap}j=0$, after which the algorithm compares initially or last chosen $_{min}p_{ij}$ its alternatives to finally determine one that yields the maximum marginal increase in preference. When applied to 7 stable marriage problems, the proposed algorithm has improved on initial solutions of existing algorithms.

  • This study focuses on the economies of launching regular air services between capital cities of South Korea and North Korea. The demand for traveling between these two cities is too small to justify scheduled air service. However, it may be possible to provide regular air service by utilizing via flight of incumbent Seoul-Beijing flights. There are numerous flight services between Seoul and Beijing and we may allow some of the Seoul-Beijing flights to stop by Pyung Yang for commercial traffic handling. This study tries to find the optimal discount rate which passengers traveling between Seoul and Beijing via Pyung Yang, the idea is reasonable considering the inconvenience of stopping at Pyung Yang. The Stated Preference Techniques are applied for the study. The required data were collected through interviews of passengers traveling from Seoul to Beijing. The major variables that are considered in flight choice are air fare, flying time, and flight frequency. The relative importance of these major variables is estimated by the logit models calibrated with stated preference data.

Optimal Pricing Design Based on Preference Values of Purchasing Restrictions for Tour Products (여행상품 구매조건의 선호가치에 따른 최적 여행상품 가격설계 연구)

  • Tour products have been recognized as a perishable asset. For tour operation companies (TOCs), improving profitability is a core decision problem for their business. Since package tour products, typical products of TOCs, are perishable after the tour was departed, TOCs have been tried to increase their sales before the departure date with various marketing strategies including price discounts. The pricing problem for perishable assets have been studied in Revenue Management for a long time. However, it is hard to find a research on pricing decisions for tour products. In this paper, we focus on a pricing problem for tour products. In particular, we will consider the pricing scheme with customer preference values on purchasing conditions. With conjoint analysis, we can use the part-worth value as a preference value for each level of purchasing conditions. To construct various discount prices, we use an enumeration method and suggest a mathematical optimization model. With experimental analysis for a sample tour package, we will show that our pricing process is very helpful for designing customer-oriented pricing decision.

  • The wedding seating problem(WSP) is to finding a minimum loss of guest relations(sit together preference) with restricted seats of a table for complex guest relation network. The WSP is NP-hard because of the algorithm that can be find the optimal solution within polynomial-time is unknown yet. Therefore we can't solve the WSP not computer-assisted programming but by hand. This paper suggests min-cut rule theory that the two guests with maximum preference can't separate in other two tables because this is not obtains minimum loss of preference. As a result of various experimental, this algorithm obtains proper seating chart meet to the seats of a table constraints.

Optimal Toll Estimate of a Toll Road Using Fuzzy Approximate Reasoning - Forced on the Geoga Bridge - (퍼지근사추론을 이용한 유료도로의 적정요금 산정 - 거가대교를 중심으로 -)

  • For a private toll road project, deciding optimal toll is an important element of economic analysis for the project and a challengeable work. In this study, the optimal toll of a private toll bridge, Geoga Bridge which connects Geoje Island of Gyeongnam Province and Gaduk Island of Busan was estimated using Stated Preference (SP) data. The SP data were collected by interviewing the passenger car drivers travelling on the National Road 14. They are latent users of the bridge. A fuzzy approximate reasoning model to estimate the optimal toll was built using the SP data. For the input variable of the model, the saved travel time and toll level were employed and the diversion rate to the bridge was employed for the output variable. The diversion rates for each toll level and saved travel time were estimated and the toll level which had maximized the toll revenue was decided as optimal toll. The optimal toll was tested by comparing with the average pay rate of passenger car drivers. Since the optimal toll for passenger cars at one hour saving, the 6,250 won is about 50 % of the average pay rate of passenger car divers, the toll was evaluated not to be high. The technique employed in this study may be used for the estimation of the optimal tolls for other kinds of vehicles.

  • This paper develops a multiple comparison method for finding an optimal ordering of K geometric means of exponential parameters. This is based on the paired comparison experimental arrangement whose results can naturally be represented by a completely oriented graph. Introducing posterior preference probabilities and stochastic transitivity conditions to the graph, we obtain a new graphical model that yields criteria for the optimal ordering in the multiple comparison. Necessary theories involved in the method and some computational aspects are provided. Some numerical examples are given to illustrate the efficiency of the suggested method.

Relationship between Obesity, Threshold of Salty Taste, Optimal Saltiness and Blood Pressure in Middle School Students in Fishing Village (어촌지역 중학생들의 비만, 짠맛의 역치, 최적염미도와 혈압과의 관련성)

  • The purpose of this research was to evaluate the correlation between obesity, threshold of salty taste, optimal saltiness and blood pressure in middle school students in a fishing village. The subjects were 115 boys and 103 girls in middle school in a fishing village. The BMI index and systolic and diastolic blood pressures of subjects were measured, and the subjects were divided into a normal and obese group according to their BMI. The threshold of salty taste and salt preference for a semisolid dish (steamed egg dish), liquid dish (bean sprout soup), and a solid dish (raw radish salad), were estimated by sensory evaluation. Calorie intake was measured using the weighing plate method. The boys in the obese group showed significantly higher systolic and diastolic blood pressures than those in the normal, but girls did not. Furthermore, calorie intakes of the boys in the obese group were significantly higher than those in the normal group, but this was not shown in girls. On the threshold of salty taste, both boys and girls in the obese group needed higher concentration of salt than those in the normal group. The threshold of salty taste were significantly positively correlated with systolic pressure and diastolic pressure in boys. Regarding the salt preference in the steamed egg dish, bean-sprout soup, and raw radish salad, both boys and girls in the obese group preferred higher concentrations. The higher concentration they preferred, the higher the systolic and diastolic pressures were in boys, but only systolic blood pressure was higher in girls. From these results, it is evident that a nutritional education program is needed in school to help restricting middle school students salt consumption and decreasing obesity to prevent hypertension.

Optimization of Tank Model Parameters Using Multi-Objective Genetic Algorithm (I): Methodology and Model Formulation (다목적 유전자알고리즘을 이용한 Tank 모형 매개변수 최적화(I): 방법론과 모형구축)

  • The objective of this study is to evaluate the applicability of multi-objective genetic algorithm(MOGA) in order to calibrate the parameters of conceptual rainfall-runoff model, Tank model. NSGA-II, one of the most imitating MOGA implementations, is combined with Tank model and four multi-objective functions such as to minimize volume error, root mean square error (RMSE), high flow RMSE, and low flow RMSE are used. When NSGA-II is employed with more than three multi-objective functions, a number of Pareto-optimal solutions usually becomes too large. Therefore, selecting several preferred Pareto-optimal solutions is essential for stakeholder, and preference-ordering approach is used in this study for the sake of getting the best preferred Pareto-optimal solutions. Sensitivity analysis is performed to examine the effect of initial genetic parameters, which are generation number and Population size, to the performance of NSGA-II for searching the proper paramters for Tank model, and the result suggests that the generation number is 900 and the population size is 1000 for this study.

Quality properties of Pak-choi Baikkimchi with Red Pepper (Capsicum annuum L.) Seed during Storage (고추씨를 첨가한 청경채 백김치의 저장 중 품질 특성)

  • To develop a variety of salted vegetables, this study investigated the quality properties and sensory characteristics of pak-choi Baikkimchi with 0, 1, 3, 5 and 7% (w/w) red pepper seed during 50 days at $10^{\circ}C$. The pH of pak-choi Baikkimchi decreased little for the first days but decreased significantly after day 20. The larger amount of the red pepper seed kept pH the less affected. The total acidity of pak-choi Baikkimchi increased within 20 days. Lactic acid bacteria count, pak-choi Baikkimchi with 0% red pepper seed decreased after 30 days' increase, while pak-choi Baikkimchi with 3% and 5% red pepper decreased significantly after 20 days' increase. Hunter's color L value increased during storage but a and b value decreased. Pak-choi Baikkimchi with 0%, 5% and 7% red pepper seed on day 10, pak-choi Baikkimchi with 1% 3% red pepper seed on day 20. Flavor preference was higher on day 20 of storage. In taste analysis, pak-choi Baikkimchi with 3% and 7% red pepper seed higher preference on day 10 and with 5% on day 30. Appearance preference was higher for pak-choi Baikkimchi with 0% and 3% red pepper seed on day 10 and with the others on day 20. Texture preference decreased as the storage time. Overall preference of pak-choi Baikkimchi with 0%, 1% and 7% were higher on day 10, pak-choi Baikkimchi with 3% and 5% red pepper seed were higher on day 20. In conclusion, the quality properties and sensory characteristics of pak-choi Baikkimchi were optimal on day 20 of storage and 3% red pepper seed.
