Analytical study on the cooking in [Eum Sik Check]

  • Eum Sik Check is a cooking book written in old Korean by a woman called Dan Yang Daek. In this study, the contents of the book are interpreted in modern Korean, and are analyzed, compared, and examined in the point of view of cooking. The book shows 1) the methods of the setting of a large table, of a table for ancestor-memorial services, of decorative seasonings, 2) 11 methods for making rice cakes, 3) 21 methods for side dishes, and 4) 7 methods for berwing rice wine.

듀식방(고려대 규곤요람) 고조리서의 분석적 연구 (An Analytical Study on an Old Cooking Book, Dyusikbang (Kyugonyoram of the Korea University))

  • `Kyukonyoram Dyusikbang` is an old cooking book hand-written in Korean by unknown writer, housed in Shinam-mungo of the Korea university. This book introduces Tojungbigyul and Dyusikbang(the part about food), and explains in detail how to handle emergency cases at home, take care of women who deliver a baby and give it name and so on. It can be summarized as follows. (1) 29 'Koi's seem to keep unexpected accidents and encourage people to enjoy stable life at home. (2) In this book are not only 27 ways of how to make liquors but also ways of how to cook dishes using 12 kinds of food with cold water and one kind of rice cakes. (3) It says good yeast is critical for good quality liquors and also emphasizes the. taste of good 'Jang' to enhance the taste of other food and the importance of having basic food materials and spices at home. (4) It describes in detail the day of good or ill luck while mentioning how to name a baby. It can be seen that there were somethings that were considered especially important such as the process of making Jang, the day of placing the rooftop, or the good or ill luck of people.

고 조리서에 수록된 만두의 종류와 조리법에 관한 고찰 -1600년대부터 1950년대까지 발간된 고 조리서를 중심으로- (A Study of the Types of Mandoo and Its Cooking Methods in the Old Cooking Books - Focused on the Old Cooking Books issued in 1600 to 1950 -)

  • Motivated by a need to provide the basic data of standard recipes for Korean traditional food, Mandoo, this paper explores a historic research about the development of Mandoo classified by Mandoo-crust, Mandoo-filling, spice & condiment, garnish, size & shape and unit for measuring ingredients. The data for this study are obtained from the major old cooking books published in the period 1670-1957, such as ${\ulcorner}Eumsikdimibang{\lrcorner},$ ${\ulcorner}Leejogoongjoungyoritonggo{\lrcorner},$ and so on. The results of this study show that (1) starch, buckwheat flour and flour were used as Mandoo-crust and egg was added in order to improve cohesion, (2) cooked pheasant and beef were used as Mandoo-filling, (3) ginger had been used more generally than garlic as spice & condiment and later red pepper powder was added and pine nut was also widly used, (4) pan-fried meat, egg, and mushroom were used as garnish, (5) Mandoo of different kinds existed and had various sizes and shapes, (6) unit for measuring ingredients began to appear on printing in 1939. These findings provide us with opportunity, which leads to making the standard recipes for Mandoo so that anyone can easily have resources for cooking the traditional food, Mandoo.

"온주법(溫酒法)"의 조리(調理)에 관한 분석적(分析的) 고찰(考察) (Analytical Study on the Cooking in 'On Zu Bub')

  • 'On Zu Bub,' written in Korean, is the anonymous old cook book. The kinds of cooking food recorded-Wine 44, Nu Ruk 2, Sauce 2, dessert 6, side dish 2 etc.-are fifty-six items in all. Especially it was written mirutely about brewage. The wines such as Sub Wang Mo You Bok Gyung Hyang Zu, Gu Ga Zu, Sin Bang Zu, Bang Se Hyang Zu, Zuhk Sun So Zu, Gye Dang Zu, Sa Mi Zu, Gwa Ha Jul Mi Zu were not found in other old cook books, 'Eum Sik Di Mi Bang' and 'Zu Bang Moon' and the contents about Gu Gi Za Zu was guoted from Zi Bung You Suhl. The seasonings used were black pepper, ginger, Chun Cho, Cinnamon, Sugar, ect, but red pepper was not used. But, we can find 'Bingsagua' from this book. First 'Bingsagua' has been found in 1789. 'On zu Bub' is guessed developed in late 1700's.

"음식보(飮食譜)" 의 조리(調理)에 관한 분석적(分析的) 고찰(考察) (Analytical Study on the Cooking in Eum Sik Bo)

  • "Eum Sik Bo," the old cook book in Korean, had been kept on microfilm by Hwang, but the condition of copy was not clear so that interpretation of the content was very difficult. The interpreted content was classified and analyzed. The kinds of cooking food recorded in this book were alcohol beverage 12, Side dish 12, Dessert 11, etc. The materials used for the cooking foods cereals, meats, fishes, honey, vegetables, etc. - were various and the cooking methods were described in detail. But the unit of measuring and the used utensils were very poor. The special feature of "Eum Sik Bo" were the fact that red pepper was not used as seasoning and that Nu Ruk was used for Sik He and Ma ji Jub for Nu Ru Mi compared with "Eum Sik Di Mi Bang" and "Zu Bang Moon" According to these points, "Eum Sik Bo" was supposed to be written contemporary or a little later than "Eum Sik Di Mi Bang(1670's)" and "Zu Bang Moon (the end of 17th Century)."

요리활동에 기초한 책 만들기 활동이 유아의 수학개념 및 쓰기발달에 미치는 영향 (The Effects of Cookbook Making Activities on Young Children's Mathematical Concepts and Writing Development)

  • The purpose of this study was to examine the effects of cookbook making activities on young children's mathematical concept and writing development. The participants were comprised of 50 five-year-old children from two intact classes from a kindergarten in Gyeonggi province, and they were divided into an experimental and a comparison group. The experimental group participated in cooking activities and produced cookbooks as extension activities whereas the comparison group carried out only cooking activities. The results indicated that the children in the experimental group received statistically higher scores in mathematical concept- and writing-tests, suggesting that cookbook making activities are a useful educational tool for enhancing young children's mathematical concepts and facilitating their writing development.

조선시대 어만두(魚饅頭)의 종류 및 조리방법에 대한 문헌적 고찰 - 의궤와 고문헌을 중심으로 (A Literature Review on the Type and Cooking Methods for Emandoo during the Joseon Dynasty, with a focus on Euigwe and old literature)

  • 조선시대 의궤 15책과 고문헌 8권에 수록되어 있는 어만두에 대하여 문헌 고찰하였다. 조선시대 전기에는 1종, 중기에 2종, 후기에 15종으로 모두 18종이 소개되었다. 만두소의 재료로는 꿩, 닭, 소고기, 전복, 해삼 등이 사용되었다. 어만두는 생선살을 얇게 저며 소를 넣고 녹말을 입힌 후 물에 삶은 것으로 현재의 '물만두' 형태임을 알 수 있었다. 어만두의 크기는 작은 모시조개 크기로 만들었다. 초장에 '고초(苦椒)'의 사용은 "무신 진찬의 궤"(1848년)의 '어만두'를 시작으로 나타났다. 본 연구를 통해 어만두에 대한 새로운 조명과 메뉴개발을 위한 기초자료로 활용되기를 바란다.

18세기 고문헌 「잡지」에 기록된 조리에 관한 문헌적 고찰 (Bibliographical Considerations of Cooking Recorded in the 18th Century Document 「Japji」)

  • "Japji" was an old cookbook written in 1721. There are 27 types of foods recorded in "Japji"; 10 descriptions of Byeonggwaryu (rice cakes and cookies): Yakgwa, Junggye, Mandugwa, Chaesugwa, Umujeonggwa, Dongajeonggwa, Baekjapyeon, Aengdupyeon, Toranbyeong, and Yeot; and 16 descriptions of Chanpumryu (side dishes): Jinjumyeon, Jeunggyetang, Geumjungtang, Eoreumtang, Changjajjim, Gajijjim, Oejjim, Dubuseon, Dubuneureumi, Geneureumi, Gesanjeok, Hodojaban, Jeonyak, Seokryutang, Sungeojuak, and Yangmandu. There is also a description of Gugija (Chinese wolfberry) liquor. Here, comparative analysis based on culinary science was carried out on the Korean foods recorded in "Japji" as well as the similar foods recorded in "Gyuhapchongseo" (Women's Encyclopedia) written around 1815. Of the 27 types of Korean foods recorded in "Japji", 13 were also found recorded in "Gyuhapchongseo". The time period for "Japji" can be assumed to be 1721 based on the fact that it is written in a cursive handwriting style of Hangeul, that chili was never used as an ingredient, and that the word "Shinchuknyeon (辛丑年)" was transcribed at the beginning of the book. The dating method also included considerations of whether Neureumi was used or not as well as changes in its cooking style.

『음선정요(飮膳正要)·식료제병(食療諸病)』의 식치(食治)에 관한 연구(硏究) (A Study on the Food Cure in Eumsunjungyo Singnyojaebyeong)

  • Objectives : This study examined the food cures in Eumsunjungyo Singnyojaebyeong. The diseases described in Singnyojaebyeong still occur frequently in modern times. This study also investigated the recipe of food cures for applying to the modern time treatment. Methods : I categorized the major symptoms of the sixty-one food therapies in Singnyojaebyeong, and sorted the main ingredients of each symptoms, and organized the efficacies of food sources based on third book of Eumsunjungyo. Results : Singnyojaebyeong, which organized the treatment methods curing diseases with foods, provided information about the foods that are good for twenty diseases, such as Heoro, Shinheo, Pung, Yotong, Heoyak, Biwui Heoyak, Seupbi, Sujong, Sogal, Sobyeonbultong, Gakgi, and Chijil. The food therapy methods were used to cure diseases using the food sources suitable for each major symptom. Conclusions : The food therapies in Eumsunjungyo Singnyojaebyeong proves that people in all regions have used food to cure diseases from old times. And to cure diseases, people have used the characteristics, tastes, and cooking forms of food ingredients for a long time. Thus, this study can be a reference for creating another food therapy.

「계미서(癸未書)」를 통해 본 조선시대 초기의 음식문화에 대한 고찰 (A Study on the Food Culture in the Early Joseon Dynasty through Gyemiseo (癸未書))

  • This study will introduce the foods recorded in Gyemiseo and disclose the substantive characteristics of traditional Korean food in the early stage of the Joseon Dynasty. Gyemiseo is a cook book manuscript written in the Chinese language that was rebound into book format at the end of the Joseon Dynasty in 1911, some 358 years after it was originally written in the $163^{rd}$ year of the Joseon Dynasty (1554) While the majority of cook books begin with recipes for various types of wines and liquor followed by those for fermented sauces, fermented vegetables (such as kimchi), vinegars and storage methods, etc., Gyemiseo begins with recipes for fermented sauces, followed by recipes for various kimchis, how to make vinegars, main meals, side dishes, rice cakes and confectionaries, with recipes for wines and liquor introduced last. Therefore, it can be assumed that the methods of brewing wines and liquors were additionally recorded for bookbinding. There are a total of 128 recipes recorded in Gyemiseo, including 13 for fermented sauces, 14 for kimchi, 11 for the main meal, 26 for side dishes, three storage methods, four for rice cakes and confectionaries, and 44 for wines and liquors. It is believed that contents of Gyemiseo will provide a foundation on which to pursue researches on the process of transition of cooking methods of traditional cuisines of Korea during the Joseon Dynasty.
