This study was carried out to investigate the effects of pine needle extracts on lipid oxidation and free radical reaction in iron sources reacted with active oxygen species. The results were summarized as follow; the catalytic effects of active oxygen on lipid oxidation in oil emulsion tended to be showed $OH,\;H_2O_2\;and\;KO_2$ in order. At the same time, pine needle extracts itself were tended to be showed a little catalytic effects. Active oxygen scavenging ability of pine needle extracts didn't show, but pine needle extracts played role as a strong chelating agents to bind iron ion if $Fe^{2+}$ ion exist in oil emulsion. The content of $Fe^{2+}$ ion and total iron in CPNP were higher than those of HPNP and FPN. The content of ascorbic acid of FPN showed the highest (87.77 ppm) among several pine needle extracts. Electron donating ability of HPNP and CPNP were 81% and 78%, respectively, which were showed higher content than those of FPN. The SOD-like activity of HPNP showed 44.30%, compared to other pine needle extracts which means the most strong antioxidant reaction. The nitrite scavenging effects were tended to be different, depending on pH value as pH value was increased. Especially, they didn't show the nitrite scavenging effect in pH6.0.
The ultrastructures of the fertilized egg envelope from Hyphessobrycon serpae belonging to Characidae was studied using scanning and transmission electron microscopes to get systematic fundamental data for classification of species and to confirm whether micropyle is a common trait of Characidae or not. The fertilized egg was of colorless, transparent, spherical, adhesive and demersal type. There were not oil droplets in vitelline membrane and attached structures in the outside of fertilize egg envelope. The egg envelope had a single micropyle resembling the pathway of sperm in the area of the animal pole. The micropyle was surrounded by 13 to 15 protruded lines of the egg envelope in a radiated form. The outer surface of fertilized egg envelope was covered by reticular adhesive fibrous structures and irregularly arranged by pore canals. The fertilized egg envelope consisted of three distinct layers an outer adhesive fibrous layer with high electron density, a middle layer with pore canals, and an inner layer consisting of 6 to 7 lamellae alternating layers with interlamellae of lower electron density. These ultrastructural characters of fertilized egg envelope form Hyphessobrycon serpae can be utilized in taxonomy of teleost, and as fundamental data for study on early development of fertilized egg. This study was carried out to investigate the effect of lipid type on the physicochemical properties and sensory score of pork patties. The samples consisted of pork patties containing 20% pork fat (PP), 20% olive oil (OP), and 20% soybean oil (SP). The surface color, water holding capacity, increased rate in thickness, decreased rate in diameter, rheological properties, pH, VBN content and TBARS value were determined for the pork patties as the physicochemical properties: the sensory scores were also evaluated. The $L^*$ value for PP was the highest, and the lowest for OP among the samples (p<0.05). For the $a^*$ value OP was the highest among the samples, and the $b^*$ value of OP was lower than that of the PP (p<0.05). The water holding capacity and increased rate of thickness were higher for PP than for OP and SP (p<0.05). The cooking loss and decreased rate of diameter of PP were lower than those of OP and SP (p<0.05). The hardness and springiness of OP and SP were higher than those of PP, and SP had the highest chewiness among the samples (p<0.05). However, cohesiveness and gumminess were not different among the samples. The pH of SP was the highest among the samples, and the TBARS value of OP was lowest (p<0.05). The VBN contents were not different among the samples. The amounts of raw color for OP and SP were higher than that of PP (p<0.05). The raw aroma was not different among the samples. Also, roasted aroma and taste were not different among the samples, but the tenderness, juiciness, and palatability of SP were the highest among the samples (p<0.05).

Naphthalene was composed of a substantial fraction of polycyclic aromatic ydrocarbons(PAHs) in crude oil and causes acute toxicity. In this study, we examined the toxicity of different kinds concentrations 0, 1000, 1800, 3200, 5600, $10000{\mu}g/L$ of naphthalene to juvenile flounder, Paralichthys olivaceus for 24h to determine 24-median lethal concentration($LC_{50}$) and acute effect on the hematological properties. 24h-$LC_{50}$ value of this species was $3600{\mu}g/L$. Hematocrit value significantly increased at 5600 and $10000{\mu}g/L$ naphthalene exposed group by 24h compared to control fish. Plasma. Glucose was significantly higher in the $10000{\mu}g/L$ (P<0.05). Plasma osmolality was significantly higher in the 3200, 5600 and $10000{\mu}g/L$. Plasma [$Na^+$] and [$K^+$] significantly increased in the 5600 and $10000{\mu}g/L$, however [$Cl^-$] was not affected by acute naphthalene exposure. The results of this study suggest the acute exposure to naphthalene affects both ionoregulation and osmoregulation in juvenile flounder.

In this study, we investigated the possibility of Droplet digital PCR (ddPCR) for detection of foodborne pathogens. ddPCR combines partitioning of PCR reactions into several thousands or millions of individual droplets in a water-oil emulsion, and counting of positive PCR reaction using flow cytometry. Four species of foodborne pathogens, Bacillus cereus, Staphylococcus aureus, Salmonella Typhimurium and Escherichia coli O157:H7, were used to quantify the target sequence with each of the designed primers and double stranded DNA-binding Evagreen dye. All tested foodborne pathogens showed a detection limit ranging from $100fg/{\mu}L$ to $10ng/{\mu}L$. It was concluded that ddPCR could be used to detect very low concentrations of foodborne pathogens from complex food matrices. For multi-detection of target pathogens, we also tested the samples using multiplex ddPCR and obtained successful results.
This study was performed to investigate the effect of essential oils and ethanolic extracts of approximately 650 plant species on acetylcholine esterase (AChE) enzyme activity using Ellman's colorimetric method in 96-well microplates. The results showed that the ethanolic extracts from twig of Sophora subprostrata, twig of Phellodendron amurense, seed of Corylopsis coreana, and essential oil (EO) from Citrus paradisi, Cupressus sempervirens, Ocimum basilicum, Pinus sylvestris and Rosmarinus officinalis inhibited more than 80% of AChE activity. Among these, EO from Pinus sylvestris, C. sempervirens and C paradisi exhibited higher values of AChE inhibitory activity, which were 75, 84 and 99% at a concentration of 50 ug/ml, respectively. Finally, EO from C paradisi (grapefruit, GEO) showed the highest inhibitory activity towards AChE, which showed 91% of inhibition at a concentration of 20 ug/ml. We also examined the anti-dementia effects of GEO in mouse by passive avoidance test and Morris water maze test. The model mouse (male, ICR) of dementia (negative control) was induced by administration of scopolamine (1 mg/kg body weight). The latency time of sample group administrated with GEO (100 mg/kg, p.o.) increased significantly as compared with negative control on passive avoidance test. There were significant recovery from the scopolamine-induced deficits on learning and memory in water maze test through daily administrations with GEO (100 mg/kg, p.o.). From these results, we conclude that GEO treatment might enhance the cognitive function, suggesting that the EO of C. paradis may be a potential candidate for improvement of perceptive ability and dementia.
Organic residues analysis is an analysis method that reveals the types of organic material samples by using the characteristic that main components constituting substances are different depending on the species of animals and plants. In this study, scientific analysis of the organic residues attached to wood coffins in the Joseon Dynasty Hoemyo excavated from the site of Singok-dong, Uijeongbu was used to identify the types of remnants and to use them as information to restore the uses of organic materials and the way they lived in the past. As a result of FT-IR analysis of the residue attached to the inside of the wood, it was estimated to be a natural plant resin material. In addition, as a result of analysis by GC-MS to confirm the characteristic factors of natural resins, diterpenoids (abietane) and pimaran (pimarane), such as dehydroabietic acid and pimaric acid (diterpenoid) compounds, and saturated and unsaturated fatty acid components were detected together. Diterpenoid compounds are components mainly found in Pinaceae resins. It is confirmed in the literature that rosin, a representative material of Pinaceae resin, was used as an adhesive material. Considering the situation where an organic material remained at the joint of the wood, the organic material attached to the wood is judged to be an adhesive material made of Pinaceae resin. In addition, the fatty acid component detected together is a component derived from plant oil, and it is presumed to be made by mixing rosin and oil as recorded in previous studies. This study confirms that organic residues remain in the burial environment without losing their characteristics. It is expected that scientific analysis of organic residues will be conducted in the future to accumulate information necessary for the interpretation of past living culture.

Whereas NIR spectroscopy has been applied in agriculture for more than 20 years, few studies refer to those plant substances occurring only in smaller amounts. Nevertheless there is a growing interest today to support efficiently activities in the production of high-quality medicinal and spice plants by this fast and non-invasive method. Therefore, it was the aim of this study to develop new NIR methods for the reliable prediction of secondary metabolites found as valuable substances in various plant species. First, sophisticated NIR methods were established to perform fast quality analyses of intact fennel, caraway and dill fruits deriving from single-plants [1]. Later on, a characterization of several leaf drugs and the corresponding fresh material has been successfully performed. In this context robust calibrations have been developed for dried peppermint, rosemary and sage leaves for the determination of their individual essential oil content and composition [2]. A specially adopted NIR method has been developed also for the analysis of carnosic acid in the leaves of numerous rosemary and sage gene bank accessions. Carnosic acid is an antioxidative substance for which several health promoting properties including cancer preservation are assumed. Also some other calibrations have been developed for non-volatile substances such as aspalathin (in unfermented rooibos leaves), catechins (in green tea) and echinacoside (in different Echinacea species) [3]. Some NIR analyses have also been successfully performed on fresh material, too. In spite of the fact that these measurements showed less accuracy in comparison to dried samples, the calibration equations are precise enough to register the individual plant ontogenesis and genetic background. Based on the information received, the farmers and breeders are able to determine the right harvest time (when the valuable components have reached their optimum profile) and to select high-quality genotypes during breeding experiments, respectively. First promising attempts have also been made to introduce mobile diode array spectrometers to collect the spectral data directly on the field or in the individual natural habitats. Since the development of reliable NIRS methods in this special field of application is very time-consuming and needs continuous maintenance of the calibration equations over a longer period, it is convenient to supply the corresponding calibration data to interested user via NIRS network. The present status of all activities, preformed in this context during the last three years, will be presented in detail.
In order to determine the infestation patterns for metacercaria of digenetic trematodes, several kinds of fresh-water and brackish-water fish were caught in River Hyungsan, Kyungpook Province, Korea and examined from March to October in 1983. They were collected by netting, fishing with rod and line, or using the bait of crushed oil cake in transparent plastic bowls, and were dissected into the flesh, scales and 6ns with tail, and then examined for the presence and infestation density of larval trematodes. Of the 11 kinds of fish examined, the encysted larvae of Exorchis oviformis were found all of them, Metagonimus yokogawai from 9 kinds, Cyathocotyle orientalis, Metacercaria hasegawai and Metorchis orientalis from 6 kinds, alld Clonorchis sinensis from 4 Kinds in the present study. In the intensity of infestation with Clonorchis sinensis, the Korean shiner, Gnathopogon atromaculatus Nichols et Pope, was the most heavily infected species, the average number of metacercariae per grata of fish flesh being 45.5, followed by the striped shiner, Puntungia hirxi Ibersenstein 11.6, and Southern top-Inouthed minnow, Pseudorasbora larva (Temminck et Shlegel) , 9.7. The intensity of infestation with the iwetagonimus larvae in 8 species of fresh-water fish was relatively low, and the average number per gram of flesh varied from 0.23 to 9.1. In comparison, the brackish-water fish were more heavily infected and the mean number of cysts per gram of flesh in the sweetfish, Plecoglossus altiwelis, was 32.9. The results of this study generally indicate that Clonorchis sinensis and Metagcnimus yckogawai infection may occur by consuming raw fresh-water fish caught in the river Hyungpook, Kyungpook Province, Korea.

The purpose of this study was to evaluate the food functional properties and in vitro bioactivity of vacuum freeze-dried fish roe concentrates (FRCs) prepared from Alaska pollock Theragra chalcogramma (AP), bastard halibut Paralichthys olivaceus (BH) and skipjack tuna Katsuwonus pelamis (ST). All three species showed better buffering capacity on the alkaline side (pH 10-12) than on the acidic side. The water-holding capacities of the FRCs were 3.5, 8.5 and 4.2 g/g protein for AP, BH and ST, respectively, and were significantly higher than that of commercial egg white. The protein solubilities of the FRCs were 42.5% (AP), 50.0% (BH) and 13.9% (ST). The foaming capacities of the FRCs were not significantly different among the species (128.0% for AP, 128.3% for BH, and 143.3% for ST; P>0.05), and their foam stability was maintained at 53.0-74.2% for 60 minutes. The oil-in-water emulsifying activity indexes of AP and BH (19.5 and 20.2 ㎡/g protein, respectively) were significantly superior to that of ST (P<0.05). The 2,2-diphenyl-1-picrylhydrazyl and 2,2'-azino-bis-3-ethylbenzothia-zoline-6-sulfonic acid radical-scavenging activities (IC50, mg/mL) of the FRCs were in the ranges of 1.05-3.26 and 0.13-0.18 mg/mL, respectively, and the angiotensin I converting enzyme inhibitory activity was in the range of 0.97-1.89 mg/mL.
