유자 첨가 사료로 사용된 넙치의 휘발성 향미 성분 (Volatile Flavor Compounds of Olive Flounder (Paralichthys olivaceus) Fed Diets Supplemented with Yuza (Citrus junos Sieb ex Tanaka))

  • Volatile components in Olive Flounder fed diets containing 0, 2,5, 5.0, and 7.5% yuza (Citrus junas Sieb ex Tanaka) for 4 months were investigated. Samples were extracted by solid-phase micro extraction and analyzed by gas chromatography/mass spectrometry. Among 89 compounds detected, 82 were positively identified. Volatile compounds of Olive Flounder fed the unsupplemented diet comprised 12 acids, 10 alcohols, eight aldehydes, five aromatic compounds, nine esters, 12 hydrocarbons, four ketones, two monoterpenes, and one miscellaneous compound. Compounds identified in Olive Flounder fed the yuza-supplemented diets consisted of 10 esters, 11 monoterpenes, 13 sesquiterpenes, and two miscellaneous compounds, with the other compounds being the same as in the control. The most abundant class of compounds in flounders fed the yuza-supplemented diet was the monoterpenes, which included limonene, $\beta$-terpinene, $\beta$-trans-ocimene, and $\alpha$-terpinolene. Of the 13 sesquiterpenes identified in flounder fed the yuza-supplemented diet, bicyclogermacrene was the major volatile compound followed by allo-aromadendrene, trans-caryophyllene, and $\delta$-cadinene. Bicyclogermacrene and germacrene D content increased significantly as the yuza supplementation increased.

Chemical Compositions and Insecticidal Activity of Eucalyptus urophylla Essential oil Against Culex quinquefasciatus Mosquito

  • Eucalyptus oils are widely used as spices, perfume industrial materials, food flavorings, and medicines. Several types of Eucalyptus oils also have insecticidal activity and as carminative. This study investigated the chemical composition, insecticidal (larvicidal and repellent) activity of E. urophylla oil against filarial mosquito Culex quinquefasciatus. E. urophylla oil was obtained from fresh leaves by water-steam distillation with oil yield 1.08%. E. urophylla oil in this study had no color (clear), has odor (typical eucalyptus), with specific gravity 0.941; refractive index 1.465; miscibility in 70% ethanol 1 : 3; and optical rotation (-) $5.83^{\circ}$. The major compounds of the oil were ${\alpha}$-pinene (11.73%), 1,8-cineole (49.86%), ${\beta}$-ocimene (6.25%), ${\gamma}$-terpinene (9.11%), and ${\alpha}$-terpinyl acetate (7.63%). The result showed the excellent insecticide activity against C. quinquefasciatus. The oil provided larvicidal activity with $LC_{50}$: 80.21 ppm and $LC_{90}$: 210.18 ppm, and repellent activity with $IC_{50}$: 0.82% and $IC_{90}$: 4.88%. The present study showed the effectiveness of E. urophylla as natural insecticide against C. quinquefasciatus, the mosquito vector of filariasis.

Headspace GC-MS Analysis of Spring Blossom Fragrance at Chungnam National University Daedeok Campus

  • There are many types of spring blossoms on the Daedeok campus of Chungnam National University (CNU) at the area of 1,600,000 square meters. As an assignment for the class of Analytical Chemistry I for second-year undergraduate students, 2021, flower petals collected from various floral groups (Korean azalea, Korean forsythia, Dilatata lilac, Lilytree, Lily magnolia, and Prunus yedoensis) were analyzed using headspace extraction coupled to gas chromatography-mass spectrometry (HS-GC-MS) to study the aromatic profiles and fragrance compounds of each sample group. Various types of compounds associated with the aroma profiles were detected, including saturated alcohols and aldehydes (ethanol, 1-hexanol, and nonanal), terpenes (limonene, pinene, and ocimene), and aromatic compounds (benzyl alcohol, benzaldehyde). The different contribution of these compounds for each floral type was visualized using statistical tools and classification models based on principal component analysis with high reliability (R2 = 0.824, Q2 = 0.616). These results showed that HS-GC-MS with statistical analysis is a powerful method to characterize the volatile aromatic profile of biological specimens.

Essential Oil Analysis of Illicium anistum L. Extracts

  • Fresh japanese anise (Illicium anisatum L.) tree leaves were collected and ground after drying. The essential oils of the leaves were analyzed by gas chromatography-mass spectrometry (GC-MS) using headspace (HS) and solid phase-microextra (SPME) methods. Volatile components of the leaves were identified 21 and 65 components in HS and SPME, respectively. The main components of the essential oils obtained by HS method were eucalyptol (36.7%), (+)-sabinene (15.61%), ${\delta}$-3-carene (6.87%), ${\alpha}$-pinene (6.07%), ${\gamma}$-terpinen (5.72%), ${\alpha}$-limonene (5.26%), ${\beta}$-myrcene (4.13%), ${\alpha}$-terpinene (4.04%) and ${\beta}$-pinene (3.73%). The other components were less than 3.5%. SPME method also showed that eucalyptol (17.88%) was main. The other were 5-allyl-1-methoxy-2 (13.29%), caryophyllene (6.09%), (+)-sabinene (5.60%), ${\alpha}$-ocimene (4.89%) and ${\beta}$-myrcene (3.73%), and the rest were less amounts than 3.5%. This work indicated that many more volatile components were isolated, comparing to the previous literature data and that SPME method was much more effective than HS method in the analysis of the volatile components.

방사선조사 고추가루로부터 휘발성 표지물질의 구명 (Identification of Irradiation -induced Volatile Marker Compounds in Irradiated Red Pepper Powder)

  • 방사선 조사된 고춧가루의 휘발성 화합물로부터 방사선 조사 표지물질의 선정에 의한 새로운 검지방법의 개발 가능성을 검토하기 위해, 각 선량별(0, 1, 3, 5, 10 kGy)로 조사된 고춧가루를 시료로 하여 SPME법 및 P&T법으로 휘발성 화합물을 추출한 후 GC/MS법으로 분석하였다. 그 결과 SPME법 및 P&T법에 의해 각각 51종과 34종의 휘발성 화합물이 검출되었다. 이 중 방사선 조사선량과 유의 적 상관성 (p<0.05 또는 p<0.01)을 가지는 총 25종의 화합물이 SPME법 및 P&T법에 선별되었으며 이는 주로 탄화수소류(4종, dodecane, tridecane, tetradecene, pentadecane), 알데히드류(7종: propanal, 2-methylpropanal, 2-propenal, hexanal, (E)-2-octenal, benzaldehyde, (E)-2-noneal), 케톤류(1종: 2,2,6-trimethyl-cyclohexanone), 알콜류(3종: 1-ponton-3-ol, hexanol, 1-octen-3-ol), 방향족화합물류(4종: toluene, ethyl benzene, o-xylene, 1,3-bis(1,1-dimethylethyl)benzene), 에스테르 화합물류(2종, methyl acetate, ethyl acetate) 및 기타 화합물(4종: p-cymene, tetramethyl-pyrazine, dimethyl disulfide, $\beta$-ocimene)로 구성되어 있었다. 하지만 방사선 조사선량과 화합물의 함량 간의 회귀분석에 의한 결정계수($R^2$) 0.80 이상을 나타내며, 방사선 조사된 시료에서만 검출되는 조건을 만족하는 화합물은 1,3-bis(1,1-dimethylethyl)benzene 1종 뿐이었으며, 1,3-bis(1,1-dimethylethyl)benzene이 SPME법 과 P&T법에 의한 고춧가루의 방사선 조사 판별을 위한 휘발성 표지물질로 선정되었다.

노지 및 시설에서 재배된 한라봉의 기기분석 및 관능평가에 의한 향기특성 (Volatile Flavor Properties of Hallabong Grown in Open Field and Green House by GC/GC-MS and Sensory Evaluation)

  • 노지 및 시설에서 재배된 한라봉의 과피에서 냉압착법에 의해 추출한 정유의 향기성분을 동정하였다. 노지에서 재배된 한라봉 정유에서 44개의 향기성분(99.7$\%$)이, 시설 한라봉 정유에서 45개의 성분(99.4$\%$)이 동정되었으며, (E)-lim-onene-1,2-epoxide와 neral은 노지 한라봉 정유에서만 동정되었고, $\beta$-cubebene, $\beta$-elemene, decyl acetate의 세 성분은 시설 한라봉 정유에서만 동정되었다. 노지 및 시설 한라봉 정유에서 동정된 향기성분 중 limonene이 86$\%$이상의 가장 높은 비율로 함유된 성분으로 확인되었으며, 그 다음으로 myrcene과 sabinene이 2$\%$이상으로 높게 함유된 것으로 확인되었다. 노지 및 시설 한라봉 정유의 향기성분 특성을 나타내는 가장 큰 차이는 linalool의 함유량으로 노지 한라봉 정유의 함유량(1.2$\%$)이 시설정유의 함유량(0.5$\%$)의 2배 이상으로 높았다. 향기 성분의 기기분석과 함께 신선한 한라봉 과육 및 과피의 관능평가를 실시하였다. 신선한 한라봉의 향기특성에 대한 관능평가 결과는 한라봉 과육 및 과피 모두에서 노지에서 재배된 한라봉이 시설에서 재배된 것에 비해 상대적으로 강한 향기특성을 지니는 것으로 평가되었다. 노지 한라봉 과육은 단맛이, 시설 한라봉 과육은 신맛이 유의적으로 높게 평가되었다. 또한, 향과 맛을 고려한 전체적 선호도에서도 노지에서 재배된 한라봉이 높게 평가되었다. (p<0.01).이러한 결과는 노지 한라봉 정유에서 유의적으로 높은 linalool의 함유율 및 재배방법의 영향을 받은 향기성분의 구성비율이 관능평가에 의한 과피 및 과육의 향기특성 결과에 영향을 주는 것으로 판단되었다.
