The purpose of this study was to investigate consumer preferred formats of nutrition labels: the type of nutritional information provided on the labels. A survey was conducted on 222 housewives between the age of 20 and 65 in Daejeon city in 1998, using an interview questionnaire showing illustrated nutritional label formats. Among twelve nutrients and caloric values listed on the nutrition labels, the housewives ranked their interest in the items in the following order of calorie (58.56%), calcium (56.76%), cholesterol (54.05%), protein (39.19%) and vitamin C (36.04%). The majority of the subjects (69.37%) checked labels when they bought milk or dairy products, whereas only 8.11% looked at labels when they bought Ramyon or noodles. Most of the subjects (90.99%) preferred products with labels with nutritional information as compared with products without labels. this was especially so true of the younger individuals and of pc-ople who checked food labels more frequently. The subjects preferred labeling which described the nutrient content per Package (55.41%), sewing size (32.88%) and food weight of 1009 (11.71%) as a standard nit. Generally, they prefer-red a simplified list to a detailed list of the number of nutrients, a figure graph to bar graph in nutrition claim, vertical bar graph to horizontal bar graph showing the nutritional content of foods and a web-type graphic format to a radiation-format when describing the item's percentage of the Korean RDA's nutrient content. The subjects who checked labels frequently especially preferred detailed list, while housewives with job or with unhealthy family members preferred a simplified list and graphic, rather than a numerical display. From this result, it is suggested that providing consumers with more nutrients information in a more easily understood graphic format would encourage the consumers to check nutritional labels. This study was to investigate consumer recognition on food label of food package. The results of this study were as follows: 1. when shopping for food, the items considered the most were taste of family, food safety, nutrition and price, respectively. 2. 95.5% of respondents confirmed of the food label of food package when shopping for food. The items confirmed the most on food label were expiration date, manufacture date, manufacturer, food additives and nutrition, respectively. 3. 85.3% of respondents did not satisfy on the food label of food label of food package. 43.6% of respondents demanded food additives more detailed. 28.2% of respondents demanded nutrition information more detailed. 28.2% of respondents demanded food function more detailed. 4. The food which respondents satisfied on food label most were snack '||'&'||' cookies, nuddle, spices, can '||'&'||' bottled food, instant food, processed meat foo, frozen food and imported food, respectively. 5. The group with the most hphrases falling in the top rank was nutrition/calories. The phrases in the nutrition/calories group scored in the top rank were 3 "positive" nutritional characteristics(addition of vitamins, addition of DHA, high dietary fiber) and 5 "nagative" nutritional characteristics(no sugar, low sugar, low calories, low salt and low cholesterol). The group with the most phrases falling in the third rank was ingredient. The phrases in the ingredient scored in the third rank were add of food additives. 6. 55.5% of respondents did not know Recommended Daily Allowance(RDA) information and 61.9% of respondents did not understand the nutrition declaration(content) of food package but 65.7% of resspondents understood the nutrition claim of food package. From these result, respondents were more affected by nutrition claim than by nutrition declaration on food package when shopping for food.ood.

Today's food technologist is receiving increasingly pointed directions in the “selection of”and often “minimum amounts of”ingredients to use in the development of new food products. This increasing emphasis by marketing on “label”claims is real and gaining momentum in most market places. Thus, the development of functional foods that are providing customers with new and distinct nutritional choices. The driving force for the increased direction of the food technologist is that many governments are now allowing health related label claims on food products. These health claims are a result of very clearly and focused research that shows known nutritional benefits. The regulatory environment is well focused on the results of this peer reviewed research. In the USA, FDA has allowed several opportunities for health claims including fiber, soy protein and choline. This presentation will focus on only two of many functional ingredient options-the soy proteins and lecithin(choline).
Even though snacks or meals purchased by teenagers have dramatically increased in Korea, it has not been investigated whether teenagers know and take notice of the nutrition label. Therefore, in this study, we investigated the usefulness and utilization of food and nutrition labels amongst teenagers. Questionnaires were distributed 814 of junior-high school students and were completed by self-administrated questionnaires. Questionnaires included questions regarding general characteristics, perception and utilization of food and nutrition labels and degree of necessity and satisfaction on food products and nutrition labels. Data was analyzed with regards to sex and school year by using a SAS package program. Significant differences of each variable were tested by using the $x^2$-test, t-test and ANOVA. Only 4.4% of participants were well informed about food and nutrition labels, while 26.0% of them did not know about it. Most of participants(78%) perceived that food and nutrition labeling system is necessary but are not satisfied with it. More of them did not check the food and nutrition label when they purchased food. Students usually checked the food and nutrition label to know about the nutritional value, and additives. The survey showed that more than three quarters of participants take notice of the food and nutrition label on products whereas only 57.7% of them knew what the food and nutrition actually meant. This study showed that most teenagers did not know the food and nutrition label, didn't have right information and didn't use it. Therefore, it is necessary to include an educational program about the food and nutrition label in the school curriculum and that will help students use the nutrition label and help them choose healthy food.
Purpose: This study was conducted in order to investigate nutrient and food intake status and dietary quality in Korean adults according to nutrition label utilization. Methods: We analyzed data from the combined 2010-2011 KNHANES (Korean National Health and Nutrition Examination Survey). The analysis included 8190 adults aged 19 to 64 years. In this study, according to nutrition label utilization, we classified the subjects according to the "non-utilization of nutrition label (NUNL)" group (male, n = 2716, female, n = 3147), "identification of nutrition label (INL)" group (male, n = 143, female, n = 330), and "Utilization of nutrition label (UNL)" group (male, n = 363, female, n = 1491). Nutrient and food group intake, NAR (nutrient adequacy ratio), MAR (mean adequacy ratio), and INQ (index of nutritional quality) were analyzed using data from the 24-recall method. Results: Results of this study showed that subjects in the NUNL group were significantly more likely to drink alcohol compared with the other two groups. The NUNL group showed a significantly higher frequency of consuming instant noodles, Soju (male), and carbonated drink (female) than the UNL group, whereas the NUNL group showed a significantly lower frequency of consuming milk, soymilk, and yogurt than the UNL group. In addition, regarding diet quality (NAR and INQ), significantly lower vitamin $B_2$, vitamin C, and calcium was observed in the NUNL group compared with the UNL group. For both male and female, significantly higher MAR was observed in the UNL group than in the NUNL group. The NUNL group showed significantly lower consumption of milk compared to the UNL group. Conclusion: Good dietary practice such as referring to nutrition labels and its influence can affect the quality of nutritional intake and selection of food, while it can also provide basic data for specific nutrition education regarding use of nutrition labeling.
The purpose of this study was to search for new food labeling system that would support effective consumer decision-making, by examining consumer behavior of food labels and its' related factors. The survey was conducted on 410 housewives under 60-year-old who live in Seoul or Metropolitan area, using questionnaires and the illustrated material of labels. Respondents generally considered food labels very important as devices. Among 12 items of label which are required to disclose, they evaluated circulation period, and nutritional information. Among 12 items of label, housewives read manufacture date, circulation period, and price more often than business admission number and self standard number. The respondents preferred the format of marking both manufacture date and expiration date on the same side, the format of printing both price and weight on the same side of package, the diagramatic type, and the format represented by ration graph per daily value.
This study describes the demographic and diet-related psychosocial correlates of nutrition label use, and examines the relationship between label use and diet. Self-reported dada from a population-based cross-sectional survey of 2073 Korean women aged 20 to 60 years were collected to identify demographic and health-related characteristics, belief on diet-disease relationship, awareness on importance of healthy eating practice and diet quality associated with label use. Label users, who are in the stage of action and maintenance (31.6%), were more likely to have belief on nutrient-disease relationship (in sodium, cholesterol, sugar and trans fat) and were more likely to have higher awareness of the importance of healthy eating practice compared with label nonusers, who are in the stage of precontemplation, contemplation and preparation. Label users were more likely to have higher dietary quality compared with label nonusers [odds ratio (OR) = 2.01; 95% confidence interval (CI): 1.66, 2.44](P < 0.001). Also, label use appeared to be associated with the consumption of diets that were higher vegetables and fruits, and lower in cholesterol. The findings of this study suggests that reading nutrition labels on food packages may improve food choices and enable healthful dietary practices.
This study investigated the knowledge, attitude, and behavior of 280 University students towards nutrition labels. The purpose of the study was to examine knowledge, attitudes, and behaviors of university students regarding nutrition labeling, and whether body mass index (BMI) with nutrition labeling was associated with knowledge, attitudes, and behaviors. Descriptive statistics analyzed knowledge, attitudes, and behaviors of university students regarding food labeling. The ANOVA and ${\chi}^2$ analysis was evaluated and assessed for its relationship with BMI. Pearson's correlation coefficient analysis examined relationships between knowledge, attitudes, and behaviors. More than 90 percent of answers relating to 11 nutritional knowledge questions were correct. Only 30% of participants answered correctly regarding questions about plan source oil and cholesterol content. Attitudes and behaviors of nutrition labels were significantly higher among participants who were obese (p<0.001). Knowledge score was positively correlated with general label usage behavior (r=.169, p<0.01), and item buying behavior (r=0.142, p<0.05). Attitude also was positively correlated with behavior (p<0.01). Nutrition labeling education efforts are needed to provide university students with a nutritional education program and information on how to read nutritional labels and apply this information to their lives. University students need to understand their need for numerous nutrients instead of merely focusing on the fat and calories of foods.
In this study, 294 housewives in Siheung, Gyeonggi-do, were surveyed to evaluate the differences in the recognition and use of nutrition labeling according to age and to present data for nutrition education. The younger the age, the more aware the consumer was of the information on the nutrition label. Housewives who were younger than 60 years were more likely to check the nutrition labels. The lower the age, the higher the reliance on the nutritional labeling content of the food, and the higher the recognition level of nutritional labeling. It was found that the lower the age, the easier it was for the consumer to understand the nutritional labeling. Among housewives in their 30s and younger, 89.5 percent said they believed checking nutrition labels would help their health. In the younger age group knowledge and information on nutrition labeling was acquired from the internet, and in the older age group, knowledge was acquired from television, radio, and newspapers. Research conducted on housewives in other regions in the future could provide more detailed information suitable for the population of each region. This would serve as data for nutrition education on the recognition and use of nutrition labeling for a healthy diet.
The purpose of this study was to provide basic materials and assistance for developing a nutritional education program targeting marriage immigrant women, and it was carried out on 86 female marriage immigrants living in the Gyeongbuk region. An average age of the female marriage immigrants who participated in this survey were 28.6 years, and their home countries were the Philippines (32.6%), Vietnam (29.1%), and so on. Exactly 59.3% of subjects had been married for 1~5 years, and 40.7% of the subjects had an education status of less than middle school graduation. The majority of them (65.1%) had one more children, and 51.2% of subjects were a part of a nuclear-family, with the husband's age between 40~49 years old (58.1%). Concern for nutrition label was significantly different according to number of children (P<0.01), period of marriage (P<0.001), and education level (P<0.05). It was demonstrated that a higher level of education was associated with a higher need to learn about nutritional information. Understanding nutritional facts and knowledge was significantly higher among the women with two children than no child (P<0.05), period of marriage >10 years than <1 year (P<0.01), and education level of college & university graduation than less than middle school (P<0.05). Sixty percent of the women surveyed participated in the education program of 'Korean language' as they were in their country, and the most preferred education program was 'Korean dietary life and culture' (39.5%). Regarding participation and educational method, the majority of subjects responded that they wanted to learn nutritional education in a cooking academy or school (52.9%) and public health center (34.1%).
