The Effects on Satisfaction for Free Food Service of Elementary and Middle School Students in Chungnam Province (충남 지역 초·중학생의 무상학교급식 만족도에 미치는 영향)

  • The objective of this study to investigate the satisfaction of elementary and middle school students in Chungnam province. We surveyed related to school food service, concerns about food ingredients and dietary life, perceptions of free school food service and satisfaction the quality and management of the school food service. Furthermore, this survey with the previous. Compared to year, frequency of education related to school food service and concerns about food ingredients and dietary life. Perception on free school food service increased 1.2%, not statistically significant. Satisfaction for the quality of the school food service statistically significant increase compared to 2015. ore individuals educated the foods' county-of-origin and a higher concern the food materials and dietary life, subsequently higher satisfaction for the quality and management of school food service. The results of this study suggest that concern and concentration on software of school food service such as education and guide are important.

Effect of Low Doses of Genistein and Equol on Protein Expression Profile in MCF-7 Cells

  • Although action modes of equol and genistein have been extensively studied, their precise roles in tumor cells remain elusive. To address possible effects of these compounds on protein expression in mammary tumor cells, proteins modulated in MCF-7 mammary tumor cells when incubated in absence and presence of 10 uM equol or genistein were identified through 2-dimensional gel electrophoresis, MALDI-TOF MS/MS, and NCBInr database search using Mascot software. Most proteins differentially expressed in MCF-7 cells after treatment with 10 uM genistein or equol were identified as being the same. Exposure to both compounds caused decreased cellular expression of RNA-binding protein regulatory subunit and oncogene DJ1 tubulin beta-1 chain, and increased expression of heterogeneous ribonucleoproteins F and L, KH-type splicing regulatory protein, and translation elongation factor EF-Tu precursor. Genistein and equol at dose used in this study showed common action mechanism.

Design and Fabrication of a Dual Cylindrical Microwave and Ohmic Combination Heater for Processing of Particulate Foods

  • Purpose: Dual cylindrical microwave chambers equipped with an ohmic heating tube were designed and fabricated to maximize the electric field strength for expeditious heat treatment of particulate foods. Methods: The efficacy of the combination heater was investigated by simulating the electric field distribution by using COMSOL Multiphysics software. Results: All components of the designed microwave heating unit were suitable for transmitting maximal microwave power to the load. The simulated electric field distribution implied that single-mode microwave heating would be sufficient for the steady generation of a highly localized heating zone in the cavity. During impedance matching, the calculated reflection coefficient ($S_{11}$) was small, possibly implying minimal power loss and wave reflection in the designed microwave heating chamber. Conclusions: This study demonstrates the possibility of concentrating the microwave power at the centerline for a single-frequency microwave, for thermal treatment of multiphase foods without attenuating the microwave power.

  • This study was conducted to investigate the influence of obesity stress on the eating behavior of elementary school students. Using a questionnaire, 300 students in the sixth grade from 2 schools in Kyunggi-do were surveyed (Boys: N=145, Girls: N=155). Data analysis was managed by SPSS software (version 13.0). The link between obesity stress and eating habits or behaviors was dependent on physical discomfort. There was also a large group of students experienced irregularity in their meal times during the day. Furthermore, there were significant differences in mealtime among boys under psychic stress caused by obesity. In the case of dairy intake during breakfast, the significant signs of obesity stress for were physical discomfort for boys and psychic stress for the girls. It was found for both boys and girls that more frequent midnight snacking decreased the efforts to overcome obesity stress. Therefore, a professional nutrition program that can educate school children must be implemented both in school and at home. In addition to overweight or obesity children, normal weight and underweight children can also benefit from this program that includes health counseling for weight and eating behaviors.

  • Purpose: The purpose of this study was to investigate the relationship between systemic diseases and denture wear status in elderly. The subjects of this study were 4,340 seniors aged 65 or older who conducted screenings and health surveys using the National Health and Nutrition Survey data during the sixth period (2013, 2014 and 2015). Methods: For the general characteristics and denture wear status according to general systemic diseases, complex sample frequency analysis and cross-analysis were performed. After controlling the general characteristics, complex sample logistic regression analysis was performed to determine the relationship between systemic diseases and denture wear status. Statistical software was used for SPSS (SPSS 23.0 for Windows, SPSS Inc, USA). Significance level was considered as 0.05. Results: A multisample logistic regression analysis was performed to determine the relationship between systemic diseases and denture wear status. The results showed that the dentured state had a significant effect on dyslipidemia and diabetes. Conclusion: Dyslipidemia and diabetes, which are related to denture wearing condition, need to be prevented and treated with regular checkups. In addition, based on the results of the study, it is thought that the elderly need denture prosthetic treatment after tooth extraction. In addition, it can be used as basic data for oral health business plan that can maintain and manage oral health.

  • Objectives: This study examined the determinants of quality of life, depending on the presence or absence of asthma in adults, based on secondary wave data. Methods: Among the 21,724 people participating in the 6th Korea National Health and Nutrition Examination Survey as it was conducted from the first to third period, 495 participants who were aged 19 or older and responded to the question of the presence or absence of asthma were included in the final analysis. Demographic characteristics were examined using the SPSS/WIN 23.0 software tool for analysis of complex sample survey data. Health-related characteristics were presented using descriptive and multivariate analysis of data. Rao_Scott ${\chi}^2$ was used for the analysis of differences in quality of life, and multiple regression analysis of complex sample survey data was used to analyze factors affecting quality of life. Results: The variable factors negatively influencing quality of life were aging, cognition of their ill health, and limited activities. Conclusions: Based on the analysis, the study suggests that practical and ongoing nursing intervention proposals to improve the quality of life of asthmatic patients should be implemented not only for physical limitations and aging but also for psychological factors that reflect subjective health statuses.

Relationship between depressive symptoms and unmet dental treatment according to gender of the elderly in Korea: 7th National Health and Nutrition Survey (우리나라 노인의 성별에 따른 우울 증상과 미충족 치과 치료의 관련성: 제7기 국민건강영양조사 자료 활용)

  • Objectives: This study aimed to study the association between unmet dental treatment and depression in the dental area of the elderly. Methods: The data was from the 7th period of the National Health and Nutrition Examination Survey. Multiple logistic regression analysis was performed to evaluate the relationship between depression and unmet dental treatment when confounding factors such as income quintile and smoking were considered. Statistical software, SAS 9.4 version was used. Results: After correcting all confounding factors, the analysis showed that the experience of unmet dental treatment was 2.73 times more likely among depressed men and 2.52 times more likely among depressed women (p<0.05). Conclusions: The results of this study suggested that we should consider that depression in the elderly can affect unmet dental treatment regardless of gender.

  • Objectives: The purpose of this study was to investigate the effect of denture use on the quality of life of cancer patients aged ≥40 years. Methods: Data from the National Health and Nutrition Examination Survey (2013-2018) were used in this study. A total of 302 individuals were selected as the final study participants. Data were analyzed using the chi-square test and logistic regression analysis using SPSS software. Results: The quality of life in the group with dentures was lower than that in the group without dentures. Conclusions: The use of dentures had a significant effect on the quality of life of cancer patients aged ≥40 years. Therefore, national dental care guidelines and policies should be developed to prevent an increase in tooth loss in patients with cancer.

  • The purpose of this study was to develop a software system for menu planning program in an institutional food service. In this research, a Qnix-7700/AT(16 bit personal computer) compatible with IBM-PC/AT was used and all the files and programs were created by using COBOL. This study provides food service managers with more effective management system by personal computerized menu planning program. Software programs developed in this study were summerized as follows : (1) Programs for outputing standard amounts of the basic food groups. (2) Programs for inputing the cooking type code, the food code and the food amount of the menu. (3) Programs for outputing distribution of the basic food groups of the computerized menu. (4) Programs for calculating the price of each food and menu. (5) Programs for calculating the nutrient content of each food and menu. (6) Programs for outputing the purchasing amount of food. (7) Programs for outputing the menu table. (8) Programs for inputing and modifing the food composition in the food composition file. (9) Programs for inputing and modifing the cooking types in the cooking types file. (10) Programs for inputing and modifing the food prices in the food prices file.

Selection and optimization of nutritional risk screening tools for esophageal cancer patients in China

  • BACKGROUND/OBJECTIVES: Malnutrition has multiple impacts on surgical success, postoperative complications, duration of hospital stay, and costs, particularly for cancer patients. There are various nutrition risk screening tools available for clinical use. Herein, we aim to determine the most appropriate nutritional risk screening system for esophageal cancer (EC) patients in China. SUBJECTS/METHODS: In total, 138 EC patients were enrolled in this study and evaluated by experienced nurses using three different nutritional screening tools, the Nutrition Risk Screening 2002 tool (NRS2002), the Patient-generated Subjective Globe Assessment (PG-SGA), and the Nutrition Risk Index (NRI).We compared sensitivity, specificity, positive and negative likelihood ratios, and Youden index generated by each of the three screening tools. Finally, cut-off points for all three tools were re-defined to optimize and validate the best nutritional risk screening tool for assessing EC patients. RESULTS: Our data suggested that all three screening tools were 100% sensitive for EC patients, while the specificities were 44.4%, 2.96%, and 59.26% for NRS 2002, PG-SGA, and NRI, respectively. NRI had a higher positive likelihood ratio as well as a higher area under the receiver operating characteristic curve compared to those of NRS 2002 and PG-SGA; although, all three tools had null negative likelihood ratios. After adjusting the cut-off points, the specificity and accuracy for all tools were significantly improved, however, the NRI remained the most appropriate nutritional risk screening system for EC patients. CONCLUSIONS: The NRI is the most suitable (highest sensitivity and accuracy) nutritional risk screening tool for EC patients. The performance of the NRI can be significantly improved if the cut-off point is modified according to the results obtained using MedCalc software.
