경상남도와 울산광역시 초등학교의 급식 및 영양관리 실태조사 II - 영양관리 - (Study on Foodservice and Nutrition Management for Elementary Schools in Kyungnam and Ulsan - Nutrition Management -)

  • The purpose of this survey was to investigate the status of dietitians' nutrition management and nutrition education in the elementary school lunch program. 386 dietitians in Kyungsangnamdo and Ulsan that participated in this survey, 350 dietitians were selected for analysis. The main results of this study are as follows. 80.6% don't survey the nutrition of home food, the reason is that 'too much work' 60.2%, - The more it increases the longer they have career record - 'botheration' 21.9%, 'no idea about process' 9.5%, 'no idea about way of survey' 8.4%. 23.5% don't survey the student's preferences, the reason is that firstly 'too much work' 55.1% ,secondly 'botheration' 34.7%, as well as the case of nutrition survey. The rate of nutrition education working is about 94%. The subject of education is mostly about 'advisable diet habit'(62.6%), then importance of nutrition(19.5%), elementary knowledge about food(10.0%), table manners (5.5%), sanitary and environment(24.6%). All(100%) of them who manage over 1501 works nutrition teachig while 83.0% do but 17.0% don't in a case of 401-800 at the relationship between whether they work education or not and how many students they manage.

어린이급식관리지원센터의 예산규모에 따른 유아 당류 영양교육 실태 및 요구도 (Current Status and Needs of Nutrition Education on Children's Sugars Intake Reduction according to the Budget of Center for Children's Foodservice Management)

  • This study investigated the current status and needs of nutrition education to help reduce children's sugars intake, according to the annual budget of the Center for Children's Foodservice Management (CCFM). Through an online survey conducted in October 2015, the 115 CCFMs participated in this survey and they were divided into the following three groups according to the annual project budget: 1~2 million won (${\leq}2M$; n=25), 3~4 million won (3~4 M; n=60), and 5 million and over won (${\geq}5M$; n=30). A total of 8.0% of the ${\leq}2M$ group respondents provided nutrition education on the sugars intake to young children as a main topic, which was significantly lower than those of the 3~4 M(16.7%) and ${\geq}5M$ (16.7%) groups (p<0.05). The most common reasons given for not delivering nutrition education on sugars were "insufficient nutrition education information and materials" for the ${\leq}2M$ (47.1%), and "more urgent nutrition education topics than that" for the 3~4 M (66.7%) and ${\geq}5M$ (50.0%). The percentage of nutrition education on children's sugars intake provided to their parents was low, showing about 8% in the ${\leq}2M$ group, 28.3% in the 3~4 M group and 23.3% in the ${\geq}5M$ group (p<0.05). However, more than 90% of the respondents answered providing nutrition education on sugars intake reduction to children was needed regardless of the annual project budget. The results indicate a great need for the development and dissemination of standardized educational programs about children's sugars intake in order to provide a leveled education program regardless of the project budget, and to solve the difficulties of development and operation of nutrition educational programs due to a lack of budget and human resources of CCFMs with less annual project budget to manage the projects.

성인 대상 영양표시 교육프로그램 개발 및 효과평가 (Development and Evaluation of Nutritional Education Program on Nutrition Labeling for Adults)

  • The aim of this study was to develop and evaluate a nutrition education program that was designed to increase the knowledge, attitudes, and skills of Korean adults regarding nutrition labeling. The education program was 45 minutes of short-term training, which was conducted in the form of lectures and exercises. The contents of the program were as follows: in the introduction stage, talking about status and reasons for checking nutrition labels; in the development stage, explanation of nutrition labeling and their content, reading, and identifying sample nutrition labels, as well as comparing nutrition labels and selecting better foods; in the closing stage, summary of nutrition labeling and a pledge to check nutrition labels when purchasing processed food. A total of 53 adults (88.5% female) aged 30 years and over participated in this study. The nutrition labeling awareness of the subjects was increased significantly from 55.8 to 96.2% after the education. After the education, the correct recognition rate of a nutrition label was increased significantly from 26.9 to 78.8% for the amount of food, from 25.0 to 73.1% for the calorie content, from 36.5 to 69.2% for the nutrient contents, and from 30.8 to 82.7% for the percent daily value. The self-efficacy of checking nutrition labels was also increased significantly compared to that before the education. The overall satisfaction score of the nutrition education program was 4.2 out of 5. The outcome showed that the nutrition education program of nutrition labeling improved the participants' awareness and self-efficacy towards checking nutrition labels.

어린이급식관리지원센터의 영양 및 위생·안전관리 방문교육지원 효과 -울산지역을 중심으로- (Effects of Periodic Visiting Education Support on Nutrition and Hygiene Practices at Center for Childeren's Foodservice Management -Focus on Ulsan Area-)

  • The purpose of this current study was to examine the effects of nutrition and food safety management support by the Center for Children's Foodservice Management (CCFSM) in foodservice facilities for children in the Ulsan area. From December 2014 to July 2015, the status of nutrition practices and hygiene practices was assessed by dietitians using nutrition and hygiene practice checklists. The subjects of study were 48 institutional foodservice facilities for children. Some nutrition practice items showed significant increases in average scores of 'using CCFSM menus (P<0.001), revising menus (P<0.05), and reconfirm menus (P<0.01)' from pre-support to post-support. Regarding hygiene practices, some items between pre-support to post-support showed significant increases in average scores of 'having equipment for hand washing & disinfecting' (P<0.01), 'wearing disinfected clothing for kitchen hygienically' (P<0.05), 'proper sterilization' (P<0.05), 'recording the origin of ingredients' (P<0.01), 'use of different knives/cutting boards' (P<0.05), and 'an appropriate thawing process' (P<0.05) from pre-support to post-support. Based on the above results, we found that nutrition and hygiene management support by CCFSM in foodservice facilities for children had a positive influence on status of some nutrition and food safety practices.

  • This has been a brief overview of where infant nutrition has been, where it is, and my projection of where it's going. The purpose has been to provide an indication that in the U.S., foods are available to provide sound nutrition for infants. More remains to be done-largely in the education of parents in good feeding practice and in continued refinement and expansion of foods.

일부 노인들의 건강관련 생활습관, 식습관, 영양지식 및 식품섭취에 관한 비교 연구 (A Study on Health-related Lifestyle, Dietary Habits, Nutritional Knowledge and Food Intake of the Elder in Gyeong-gi Area)

  • This study was designed to provide the basic data of an effective nutrition education for desirable lifestyle and dietary habits to improve the nutritional status for the elderly by investigating health-related lifestyle, dietary habits, nutritional knowledge, and food intake of the elderly. The subjects included 58 elderly men and 146 elderly women. 35.8% had no more than an elementary school education. Most subjects (54.4%) were widows/widowers. Most subjects (71.0%) made over 150,000 won. 52.5% of subjects lived in houses. Smoking, drinking, exercise, the average sleeping time were significantly difference between the gender (p<0.05). In terms of dietary habits, our results showed that 80.9% of respondent eat regularly meals, including breakfast (83.5%). Both sexes prefer soft and salty food. Women enjoys more spicy and salty food compared with men and then shows meaningful difference (p<0.05). Their favorite meals are soup, stew, salad and boiled vegetables. Compared to women, men have a higher rate of correct answers about questions related to nutrition knowledge as showing significantly difference (p<0.05). In a study of dietary habits, they take in carbohydrates with the highest percentage and following by vegetables and fruits. The amount of meat, first and egg they eat is more than the previously. Eating meat is higher men as showing significant difference (p<0.05). In summary, nutritional status for the elderly shows healthy lifestyle and diet about half of those and most them try to live healthy life in future. It is hope that the elderly may need to learn proper nutrition knowledge for healthy lifestyle and nutrition education and counseling for building up healthy lifestyle and desirable dietary habits. Furthermore, it is necessary to start work to establish a baseline nutritious evaluation for the elderly and at a time to study the development of standard eating tool proven reliability and validity, consequently to provide a basic framework for the evaluation of nutritional status.

장년기 여성의 칼슘영양상태와 골다공증 예방을 위한 영양교육의 효과 (A Study of Calcium Status and Effect of Nutrition Education of Prevention Osteoporosis in Middle - Women)

  • This study was conducted to investigate the relationship of calcium intake , serum calcium level to calcium supplementation and the effect of nutritional education in middle-aged women. The age distribution of the subjects was 49-55 years. Daily nutrient intakes and dietary sources of calcium were analyzed by convenient method and food frequency questionnaire. At the same time, fasting blood samples were collected and serum calcium and magnesium concentrations were measured before and after nutritional education. The BMD of subjects were measured by Dual Energy X-ray Absorptiometry(DEXA). Serum calcium and magnesium concentrations were significantly(p<0.05) different between pre and post nutritional education. After nutritional education, nutrient intakes were significantly increased(p<0.05), especially calcium. This results suggested that dietary calcium intake as well as nutritional education seem to be important in preventing in middle-aged women.

제2형 당뇨환자에 대한 영양교육이 당뇨병 관리와 혈액 항산화 상태에 미치는 영향 (Effects of Nutrition Education in Type 2 Diabetes Mellitus on Diabetes Control and Blood Antioxidant Status)

  • 본 연구는 효과적인 당뇨 교육 및 평가 방안을 모색하는데 기초 자료를 제시하고자 안동시 보건소를 내원하는 제2형 당뇨병 환자를 대상으로 4주간의 당뇨교육을 하고, 교육 전, 교육 후 및 교육 후 3개월에 각각 영양소 섭취, 혈당 관리와 항산화 영양상태 및 DNA 손상 정도를 조사하여 영양교육의 효과를 평가하였다. 시기에 따른 교육 효과를 반복 측정 분산 분석으로 검정한 결과, HbA1c와 총 콜레스테롤은 유의적으로 감소하였고, 혈장 레티놀(p=0.001)과 토코페롤(p=0.000), 그리고 CAT(p=0.000)와 GPx(p=0.000)의 활성은 유의적으로 상승하였으며, 혈장 과산화지질(TBARS) 농도(p=0.000)와 DNA 손상 정도(p=0.000)는 유의적으로 감소한 것으로 나타났다. 영양소 섭취 상태에 대한 영양교육의 효과는 에너지의 경우, 교육 전에 EER의 76.4% 수준으로 섭취하였으나 교육 직후와 교육 후 3개월에 각각 83.6%와 90.6%로 유의하게 증가한 것으로 나타났다(p=0.009). 에너지 섭취의 증가와 함께 인(p=0.033), 나트륨(p=0.001), 칼륨(p=0.019), 아연(p=0.043), 리보플라빈(p=0.050), 엽산(p=0.048) 및 비타민 C(p=0.008)의 섭취도 유의적으로 증가하였다. 한편, 영양소 섭취 상태의 변화와 생화학적 특성 변화 간의 관련성을 분석한 결과, 대부분의 영양소 섭취 변화는 공복혈당 및 HbA1c의 변화와 유의성은 없었으나 음의 상관성을 보였고, 칼륨(r=-0.418, p<0.05), 철분(r=-0.443, p<0.05), 리보플라빈(r=-0.432, p<0.05) 및 엽산(r=-0.446, p<0.05)의 섭취 상태 개선이 혈액의 과산화지질 감소와 관련성이 있는 것으로 나타났다. 에너지(r=0.543, p<0.01), 단백질(r=0.545, p<0.01), 인(r=0.425, p<0.05), 철분(r=0.485, p<0.05), 아연(r=0.570, p<0.01) 및 나이아신(r=0.510, p<0.05)의 섭취는 혈장 레티놀과, 엽산섭취(r=0.605, p<0.01)의 변화는 CAT와 각각 유의적인 양의 상관성을 보였다. 이처럼 당뇨병에서 식이를 통한 영양소의 섭취 증가는 항산화 상태 개선 및 산화 스트레스 감소와 일부 연관이 있는 것으로 사료된다.

광주.전남 지역 학교급식 영양사.영양교사의 학교유형에 따른 직무분석 및 만족도 연구 (Job analysis and satisfaction of dietitians.nutrition teacher in school foodservice by school type in Gwangju and Jeonnam area)

  • The objective of this study was to examine job performance and importance, and job satisfaction of school foodservice dietitians nutrition teacher in Jeonnam and Gwangju area according to the school types (elementary school, middle school, high school). A total of 646 questionnaires were distributed, 244 questionnaires were analyzed using SPSS 12.0 for a descriptive analysis, t-test and ANOVA. There were significant differences between the school dietitians' nutrition teachers' job performance and importance in all areas of the job analysis for all school types. In the foodservice management/evaluation and nutrition education area, elementary and middle school foodservice dietitian nutrition teacher showed a significantly higher performance, compared to that of high school dietitian nutrition teacher. Nutrition education was recognized by elementary and middle school dietitian nutrition teacher to be more significantly important than that of high school dietitian nutrition teacher. Elementary school foodservice dietitian nutrition teacher was most satisfied with their job condition. Dietitian working in middle school was least satisfied with the salary and compensation. These results suggest that appropriate curriculum should be structured according to foodservice dietitian nutrition teacher of the school type for improving the work efficiency. In order to increase the job satisfaction, the employment status of school dietitian should be guaranteed by the government and school officials, especially in the middle and high schools.

경기도 초·중·고등학교의 식생활 교육 현황 : 학교급 및 영양교사 배치여부에 따른 비교 (Current status of dietary education in elementary, middle and high school in Gyeonggi province: Comparison according to school level and placement of nutrition teacher)

  • 본 연구는 경기도에 위치한 초 중 고등학교 영양(교)사를 대상으로 식생활 교육 현황을 조사하여 식생활 교육수준 향상을 위한 개선방안을 모색하고자 학교급 및 영양교사 배치여부에 따라 비교 분석하였다. 2015년 12월에 경기도 도내 91개 초 중 고등학교의 영양(교)사 91명을 대상으로 설문조사를 실시하였으며, 주요 결과는 다음과 같다. 1) 영양교사와 영양사의 비율은 50.5%와 49.5%로 비슷한 수준이었으나 고등학교로 갈수록 영양교사의 배치율은 더 낮아지는 경향을 보였다. 2) 정기적으로 식생활 교육을 실시하는 비율은 초 중 고등학교가 각각 58.1%, 24.2%, 20.0%로 학교급에 따라 유의미한 차이가 나타났으며, 영양교사가 배치된 학교는 67.4%, 영양사가 배치된 학교는 11.1%로 학교급 및 영양교사 배치여부에 따라 유의미한 차이가 나타났다. 3) 연간 평균 수업시간은 평균 $12.4{\pm}20.9$시간이었는데 초등학교는 $19.9{\pm}20.9$시간, 중학교는 $6.1{\pm}16.0$시간, 고등학교는 $5.1{\pm}12.3$시간으로 큰 차이가 있었으며, 평균 수업시간도 고등학교로 갈수록 적었다. 4) 식생활 교육은 창의적 체험활동 시간을 가장 많이 활용하고 있었고, 식생활 교육 관련 체험활동은 요리실습이 가장 많았으며, 다음으로 견학인 것으로 나타났다. 5) 영양(교)사들은 학교급식과 연계한 식생활 교육으로 주로 식단의 영양에 대한 정보 제공을 활용하고 있었으며, 식생활 개선을 위한 교육방법으로 식단안내문을 통한 방법이 효과적일 것이라는 의견이 많았다. 6) 학교급식을 통한 식생활 교육을 효과적으로 수행하기 위해서는 학교 관계자 (교장 교감, 교사 등)와 학부모의 유기적인 협력 체계가 필수적임에도 전반적으로 협조가 미흡하였고 영양교사가 배치되어 있는 학교의 교장 교감, 교사의 협조 정도와 학생의 참여도가 영양사가 배치되어 있는 학교보다 높게 나타나 유의미한 차이가 있었다. 앞으로 식생활 교육이 정규프로그램으로 정착하기 위해서는 영양교사의 배치가 필수적이며, 식생활 교육에 대한 직무 규정과 교육지도안 마련, 정규 수업시간의 배정 등의 제도적 지원을 통하여 식생활 교육이 효과적으로 이루어질 수 있도록 해야 하며, 학교급별로도 교육대상자의 수준을 고려한 식생활 교육이 진행되어야 할 것이다. 또한 향후 학생들의 올바른 식습관 형성에 도움을 줄 수 있도록 학부모 및 교사들에게도 영양상담과 식생활 교육을 받을 수 있는 기회를 제공할 필요가 있으며, 교육방법에 있어서도 강의식 이론 교육보다는 요리실습, 게임 등의 체험형 참여교육이 효과가 높을 것으로 사료된다.
