Quality Characteristics of Nutritional Bar with Varying Concentrations of Enteromorpha intenstinalis Powder (창자파래분말을 첨가한 영양바의 품질특성)

  • This study analyzed the quality characteristics of nutritional bars with varying concentrations (0, 0.5, 1.5, 2.5%) of Enteromorpha intenstinalis powder added. To achieve this, color analysis, an assessment of DPPH radical scavenging activities, and sensory evaluations were performed. The results revealed that as the amount of Enteromorpha intestinalis powder (EIP) increased, pH and lightness values decreased. DPPH radical scavenging activities of 75.26%, 56.11%, 71.59%, and 62.49% were exhibited for the 0%, 0.5%, 1.5%, and 2.5% concentrations, respectively at 50 mg/mL. Significant differences were observed between the samples with respect to the color, appearance, texture, taste, and overall preference for the nutritional bars. Overall preference was highest for the nutritional bar with 1.5% Enteromorpha intenstinalis powder added. Therefore, adding 1.5% of Enteromorpha intenstinalis powder to a nutritional bar is most suitable for enhancing preference and quality characteristics.

Growth Performances and Physiological Responses of Quercus spp. and Fraxinus rhynchophylla Subjected to Different Soil Moisture Regimes and Nutrition Levels (수분(水分) 및 양료(養料) 처리(處理)에 따른 참나무류와 물푸레나무의 생장 및 생리 반응)

  • Temporal changes in growth performances, chlorophyll contents, and tissue water relations for determining their physiological responses of five economic tree species subjected to chronic water and nutrition stresses were investigated with containerized seedlings grown in different soil moisture regimes and nutrition levels. Seedlings of Quercus acutissima, Q. variabilis, Q. mongolica, Q. serrata, and Fraxinus rhynchophylla were propagated in plastic pots(I.D. $16cm{\times}Depth$ 16cm) for the experiments. The seedlings were subjected to two soil moisture regimes of dry and wet soils and two nutrition levels of fertilization with N+P+K and no fertilization through the growing season from May to September in a green house. For the purpose of analyzing their responses to the environmental stresses, seedling heights and root collar diameters, chlorophyll contents, and P-V curve parameters of the seedlings were measured in May, July, and September. The environmental stresses coming from moisture and nutrient deficits affected the growth performances of seedlings variously among species and among different growing periods, as well as between height and basal diameter growth of seedlings. The growth performances of Q. acutissima were influenced sensitively on the stresses, but those of Q. mongolica less influenced in comparison with other species. Chlorophyll contents were generally higher in Quercus spp. than F. rhynchophylla through the growing season. The chlorophyll contents changed by species and by treatment through the season within ranges of 0.14~1.96 mg/g dry wt. of chlorophyll a and within 0.16~1.79mg/g dry wt. of chlorophyll b, respectively. But the contents seemed to be decreased gradually through the chronic environmental stresses and leaf senescence. The osmotic potential at full turgor(${\Psi}{{\pi}o}$) and turgor loss point(${\Psi}{\pi}p$) had temporarily declined up to 3 to 5bars from -7.0~-12.4bars in May to -10.2~-17.5bars in September and up to 5 to 6bars from -7.6~-14.2bars in May to -12.9~-20.4bars in September, respectively, with some exceptions. The values of ${\Psi}{\pi}p$ were generally high in F. rhynchophylla in May and July, but high in Q. serrata in September. Relative water contents at turgor loss point(RWCp) were generally high in F. rhynchophylla, but the temporal changes of RWCp were quite and frequently different among species and among treatment.

Purification of Peat Moss Extract Using a Supercritical CO 2 and Verification of Its Biological Activities (초임계 이산화탄소를 이용한 피트모스 추출물의 정제 및 생리활성 검증)

  • In this study, the canadian peat moss extract was purified by a supercritical 2 using three different conditions and assessed its biological activities. Peat moss was extracted by acid-alkaline extraction method (sample 1) and purified by a supercritical $CO_2$ at $40^{\circ}C$ under pressure of 100 bar (sample 2), 120 bar (sample 3) or 150 bar (sample 4). We evaluated the antioxidant activities of the samples by 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging, $Fe^{2+}$/ascorbate (FTC) and 2-thiobarbituric acid (TBA) methods. The antioxidant activities were examined by comparing the results with that of ascorbic acid as a positive control. Sample 3 showed relatively higher DPPH radical-scavenging activities than other samples. The antioxidant activity by FIC method exhibited similar results as the DPPH radical-scavenging activities. On the other hand, sample 2 showed higher antioxidant activity measured by TBA method of all. The whitening effects of the samples were examined using mushroom tyrosinase and B16F10 melanoma cells. Sample 3 exhibited overall significant whitening effects, however, other samples showed relatively lower effects. These results suggest that the peat moss extract purified by a supercritical 2 could be used as a cosmetic ingredient for the anti-aging and whitening effects.

Age-related Circulating Inflammatory Markers and Cardiovascular Disease Risk Factors in Korean Women (한국 성인 여성에서 연령에 따른 혈중 염증 표지자와 심혈관계 질환 위험 요인에 대한 연구)

  • The purpose of this study was to investigate the age-related changes of cardiovascular disease risk factors and inflammatory markers in non-obese Korean women. Subjects were 112 women over 20 years old with body mass index (BMI) less than $30 kg/m^2$ and were divided into 3 groups (< 40 years, $40{\sim}59$ years, ${\ge}60$ years). Mean weight and BMI in the oldest group were significantly higher than those in the other 2 younger groups (p < 0.05). Mean total cholesterol, triglyceride, LDL-cholesterol and apolipoprotein B/apolipoprotein A1 ratio (BAR) in the oldest group were significantly higher than those in the youngest group (p < 0.05), and mean HDL-cholesterol of the oldest group was significantly lower than that of the youngest group (p < 0.05). The older-aged group showed significantly higher mean values of atherogenic index (AI) and LDL/HDL ratio (p < 0.05) than the respective younger-aged group, and AI was significantly correlated with age, nitric oxide and thiobarbituric acid reactive substances (p < 0.01). In addition, mean vascular cell adhesion molecule-l (VCAM-1) tended to be higher in the older-aged group than the younger group. Tumor necrosis factor-${\alpha}$, a proinflammatory maker, was significantly positively correlated with serum homocysteine, a cardiovascular disease risk factor (p < 0.01). In addition, a significantly positive correlation was observed between C-reactive protein and BAR (p < 0.01). Overall results suggested that the aging might affect the increase of cardiovascular disease risk factors including the serum lipid profiles, weight and BMI, and age-related increases of weight and BMI might play a role in changes in certain biomarkers of inflammation. Optimization of Fluidized Bed Granulating Conditions for Powdered Milk by Response Surface Methodology (반응표면분석에 의한 분유의 유동층 과립공정 최적화)

  • Optimization of fluidized bed granulating conditions for yield, bulk density, and tapped density of powdered milk was determined using response surface methodology. Yield of powdered milk was greatly affected by feeding rate of water, and bulk density and tapped density could be reduced by decreasing of atomization pressure. The optimum conditions for fluidized bed granulating of powdered milk were predicted with 6$0^{\circ}C$ of inlet air temperature, 16 mL/min of feeding rate, and 2.1 bar of atomization pressure. Also 94% of yield 0.350 g/㎤ of bulk density, and 0.446 g/㎤ of tapped density of powdered milk could be obtained by the optimum granulating conditions.

The Weight Gain Effects of Sungjangjeungbo-tang (Ch$\acute{e}$ngzh$\check{a}$ngz$\bar{e}$ngb$\check{u}$-tang) on Thin Korean Preschool Children (한국의 마른 체형 소아에 대한 성장증보탕(成長增補湯)의 체중개선 효과)

  • Objectives : The aim of this study was to investigate weight gain effects of the Sungjangjeungbo-tang (Ch$\acute{e}$ngzh$\check{a}$ngz$\bar{e}$ngb$\check{u}$-tang) on thin Korean preschool children. Methods : Sungjangjeungbo-tang is composed of 9 herbs for treating indigestion. We analyzed 119 preschool children who visited Kim Kijoon Oriental Clinic BOM from Jan. 1, 2006 to Aug. 31, 2011 with three criteria: 1) 2~5yrs of age and BMI < 50th percentile on the baseline visit; 2) the child had taken the Sungjangjeungbo-tang for 1~3 month(s); and 3) the clinic had records of both height and weight on the baseline and at least once over 1~3 month(s). Results : Sungjangjeungbo-tang significantly improved BMI percentile in all groups. The changes in BMI percentile variations were larger in the 3 months group than in other groups, but not significantly. Gender, age and BMI on the baseline had no significant effects on the effectiveness of Sungjangjeungbo-tang. Conclusions : Sungjangjeungbo-tang positively affected on weight gain in thin Korean preschool children within 1~3 month(s) of treatment. However, additional studies on functional dyspepsia or the change of energy intake were needed to know the factors related to weight gains.

Effect of binder composition on the stability of lipid oxidation and antioxidants of nut-sesame yeotgangjeong (Korean traditional candy bar) (결착제 조성이 견과-깨 엿강정의 저장 중 지방질 산화와 산화방지제 안정성에 미치는 영향)

  • Lipid oxidation and antioxidant stabilities of nut-sesame yeotgangjeong (Korean traditional candy bar) with different binders were evaluated during storage in the dark. S1, S2, and S3 binders consisted of starch syrup, sugar, and water (58:34:7.6, w/w/w); starch syrup, jocheong, honey, trehalose, and water (43.5:11.6:2.9:34:7.6, w/w/w/w/w); and starch syrup, jocheong, honey, sugar, trehalose, and water (43.5:11.6:2.9:17:17:7.6, w/w/w/w/w/w); respectively. Lipid oxidation was determined by peroxide and p-anisidine values, and tocopherol, lignan, and polyphenol contents were determined spectrophotometrically. Peroxide values were significantly higher (p<0.05) in yeotgangjeong samples with S2 or S3 binder than in those with S1; however, the converse was true for tocopherol degradation. Lignan was the most stable antioxidant in yeotgangjeong. The results suggest that tocopherols have a priority over lignans to control the lipid oxidation of yeotgangjeong during storage; reduced lipid oxidative stability after substituting sugar with trehalose might be because it increases oxygen diffusivity and inhibits the antioxidant action of tocopherols on lipids.

Extractions of Surface-Active Substances from Defatted Rapeseed Meal (Brassica napus L.) by Supercritical Carbon Dioxide (초임계 CO2 유체 추출법을 이용한 탈지 유채박 중 표면활성물질 추출의 최적화)

  • In this study, an attempt is being made to extract surface-active substances from defatted rapeseed cakes by supercritical carbon dioxide fluid. Independent variables for the extraction process, being formulated by D-optimal design, are pressure (150~350 bar), temperature ($33{\sim}65^{\circ}C$ and co-solvent (ethanol, 50~250 g). The dependent variables of the extraction yield, the content of neutral lipids, phospholipids and glycolipids in the extracts were analyzed upon the results through the response surface methodology. As for the extraction yield, it was found to increase with increasing independent variables, among which the co-solvent proved to be a major influencing parameter. Similar trends were found for the content of surface-active substances (i.e, phospholipids and glycolipids) in the extracts, except for the content of neutral lipids. Regression equations were suggested to coincide well with the results from the experiments. Extraction conditions are being optimized to maximize the extraction yields, the content of phospholipids, and glycolipids were 350 bar (pressure), $65^{\circ}C$ (temperature) and 228.55 g (co-solvent), respectively.

Moisture Adsorption Preventative Effect of Fermented Red Ginseng Extract Spherical Granules by Using Hydrophobic Compounds (홍삼의 지용성 성분을 이용한 발효홍삼 농축액 알갱이의 흡습방지 효과)

  • For prevention of moisture adsorption, the fermented red ginseng extract spherical granules were coated by using hydrophobic fractions. The hydrophobic parts were extracted from red ginseng such as the perfect soluble part in 90% ethanol (PSE) and non-soluble part in hot water (NSHW). The optimum operating conditions for making fermented red ginseng extract spherical granules coated with PSE were a feeding rate (FR) of 0.49 mL/min, atomization air pressure (AP) of 2.14 bar, and product temperature (PT) of $48.96^{\circ}C$., whereas conditions for granules coated with NSHW were a FR of 0.61 mL/min, AP of 2.75 bar, and PT of $46.30^{\circ}C$. The solubility of coated fermented red ginseng extract spherical granule was lower than that of not coated. The fermented red ginseng extract spherical granules coated with NSHW showed more preventative effects for moisture adsorption than those coated with PSE, although there were no differences in solubility and fluidity. In the sensory evaluation, granules coated with hydrophobic fractions extracted from red ginseng were shown to be bitterer and less soluble than those not coated spherical granules. In conclusion, fermented red ginseng extract spherical granules coated with hydrophobic extracts from red ginseng showed a preventative effect against moisture.

Effect of Supercritical Carbon Dioxide on Physicochemical Properties and Microbial Reduction of Freeze-Dried Bovine Liver (초임계 이산화탄소 처리가 동결 건조된 소간의 이화학적 특성 및 미생물 저감화에 미치는 영향)

  • Supercritical carbon dioxide ($SC-CO_2$) treatment has been becoming an important method for substituting the use of organic solvents for samples extraction prior to analysis due to its low toxicity, ease of handling, low cost of disposal etc. Freeze-dried bovine liver was treated with $SC-CO_2$ under different pressures (200, 300, and 450 bar) in order to investigate effects on physicochemical properties and reduction of microbial load. The yield of lipid extraction from bovine liver by $SC-CO_2$ treatment increased with increasing pressure, with values of 84, 86, and 90% in response to 200, 300, and 450 bar, respectively. Results of high performance liquid chromatography analysis showed that vitamin A and coenzyme $Q_{10}$ ($CoQ_{10}$), which is soluble in lipid, were almost removed from bovine liver by $SC-CO_2$ treatment. Saturated fatty acids ratio of bovine liver decreased with increasing pressure, whereas polyunsaturated fatty acids increased with increasing pressure. Total content of amino acids in bovine liver treated by $SC-CO_2$ was less than that of the control sample without treatment. The number of aerobic bacteria in bovine liver, which was stored at $5^{\circ}C$ for 5 days and freeze-dried, decreased from 6.2 to 4.2 log CFU/g by $SC-CO_2$ treatment at 100 bar for 3 h. Interestingly, coliform bacteria were not found in the bovine liver sample by $SC-CO_2$ at 100 bar for 3 h under all storage conditions. This indicates that $SC-CO_2$ treatment can effectively reduce coliform bacteria in the food matrix even at low moisture. In conclusion, freeze-dried bovine liver by proper $SC-CO_2$ treatment may be used as a potential high protein source, with increasing microbial safety and stability of lipid oxidation.
