  • The purpose of this study was to assess dietary variety by food habits(regularity of meal time, regularity of repast, repast of breakfast, lunch, and supper, number of suppers and night snacks per week, and duration of meal) in 138 female university students residing in Bucheon and its adjacent area. Food habits were assessed via a self reporting questionnaire, and a 3-day dietary recall survey was conducted by interviewing. Dietary variety was assessed by dietary diversity score(DDS), meal balance score(MBS), and dietary variety score(DVS). The average DDS, MBS, and DVS were $3.87{\pm}0.57$, $7.27{\pm}1.48$, and $12.59{\pm}3.14$, respectively. The DDS($2.21{\pm}0.83$) of the breakfast in the group in which the regularity of meal time per week was 5~7 days was significantly higher($p$ <0.01) than the DDS($1.47{\pm}0.96$) of the breakfast in the group in which the regularity of meal time per week was ${\leq}$2 days. The MBS($6.69{\pm}1.43$) of the group in which the regularity of meal times per week was ${\leq}2$ days was significantly lower($p$ <0.01) than the MBS of the group in which the regularity of meal time per week was ${\geq}3$ days. The DDS($2.38{\pm}0.69$) of the breakfast in the breakfast over eating group was significantly higher($p$ <0.001) than the DDS($1.83{\pm}0.83$) of breakfast under eating group. The MBS($6.56{\pm}1.46$) in the breakfast skipping group was significantly lower($p$ <0.01) than the MBS(about 7.6) in other breakfast eating groups, and the DVS ($13.79{\pm}3.21$) in the breakfast over eating group was significantly higher($p$ <0.05) than the DVS($11.53{\pm}2.94$) in the breakfast skipping group. The DDS of breakfast, lunch, and snack were not significantly correlated with the number of suppers per week, but the DDS($2.65{\pm}0.52$) of the supper in the group in which the number of suppers per week was 7 was significantly higher($p$ <0.05) than the DDS($2.22{\pm}0.49$, $2.25{\pm}0.62$) of the supper in the group in which the number of suppers per week was ${\leq}2$, 3~4. The DDS, MBS and DVS were not significantly correlated with the number of suppers per week. The DDS($1.33{\pm}1.25$) of the breakfast in the group in which the number of night snacks per week was 6~7 was significantly lower($p$ <0.05) than the DDS of the breakfast in the group in which the number of night snacks was ${\leq}5$. Also, the DDS($4.42{\pm}0.32$) per day in the group in which the duration of meal was <10 min. was significantly higher($p$ <0.01) than the DDS($3.51{\pm}0.53$) per day in the group in which the duration of meal was ${\geq}30$ min. These findings suggest that nutritional education based on female university students' eating variety and food habits(regularity of meal time, regularity of repast, repast of breakfast, lunch, and supper, number of suppers, and night snacks per week, and duration of meal) may be required to improve dietary variety.

  • This study was conducted to evaluation the quality of meals served in elementary school based on nutrient contents and food diversity . A questionnaire was mailed to school foodservice dietitians requesting one week menus for April and October . Menus served in 388 schools from each province and from major cities in Korea were analyzed. Mean nutrient contents per meal of persons served, and food expenses per meal. Mean percentages of energy from fat was 20.2% , and was significantly l different by foodservice system. When nutrient contents were converted to amount per 1, 000kcal, all were higher than that calculated from RDA except calcium, iron, and Vitamin A. Most of these were not significantly different according to area, foodservice system, the number of persons served, and food expense per meal. Compared to 1/3 of RDA for children , many meals provided lower amounts of energy, Vit A, VitB2, and Ca. More than half of the meals provided less iron than 1/3 RDA for 10-12 years girls. Using the highest values of RDA for the elementary school age group as evaluation, criteria nutrient adequacy ratios(NAR) were lowest for Ca(0.61), Vit A(0.57), and iron(0.77). The mean adequacy ratio(MAR) was 0.86. Mean numbers of food items and dishes per meal were 15.3 and 5.1 , respectively. 66.3% of the meals provided three food groups of grain, meat, and vegetable. Except for the number of different food items served per meal, the aspect of food diversity was similar to that of nutrient contents. There was significant positive correlation between mean number of different food items served per meal and nutrient content . In summary , schools in small cities and rural areas than those in large cities, schools adapting commissary or joint management than those or density. Also the more food groups served per meal, the higher the nutrient content per meal . In summary , schools in small cities and rural areas than those in large cities, schools adapting commissary or joint management than those adapting conventional foodservice system, schools serving smaller number of persons, and schools with higher food expenses provided higher energy contents and food diversity.

  • The sound dietary habit is formed in childhood, which is basic foundation for keeping health. The school foodservice is practiced to provide proper nutritions, to establish the sound dietary habit. Continuous evaluation and improvement are necessary to operate school foodservice effectively. This study was conducted to evaluate the quality of meals served in elementary school based on nutrient content, food diversity. A questionnaire was mailed to dietitian of each school requested for menus of one week. Menus served in 77 schools from each province and major cities in Korea were analyzed. The results of this study were summarized as follows; Compared to 1/3 of RDA for children, many schools provide lower amounts of energy, calcium and Vitamin A. Proportions of energy from carbohydrate, protein and fat were 59.64%, 17.43% and 20.11%, respectively and were not significantly different by the area, the foodservice system, and the number of persons served. NAR(nutrient adequacy ratio) were lowest for calcium(0.67) and Vitamin A(0.65). MAR(mean adequacy ratio) was 0.83. The results of comparison of NAR and MAR by the area, the foodservice system, and the number of persons served were similar to those of nutrient contents. Comparing foods served by the nutrient density were different by nutrient contents, NAR and MAR. Mean nutrient density per meal were higher in large cities than in small cities and rural area, in conventional than in commissary foodservice system. Mean number of dishes and food items per meal were 5.86 and 19.87, respectively. The mean of total quantity of each food group per meal was 352g. The mean of total quantity of each food group per meal were higher in small cities and rural area than in large cities, in commissary than in conventional foodservice system. This study is based only on served menus, and the evaluations of meals based on actual consumption of children are needed. These results suggest that in order to improve the quality of school food service, realistic standard should be suggested and basic study should be done continuously.

  • Children are very sensitive to exposure to heavy metals such as mercury which can accumulate in the body. Exposure to even low concentrations of such metals is reported to be very harmful to health. An evaluation of the mercury content of meals in public elementary schools could provide information which could be used to reduce this level. Two public elementary schools were selected from 16 cities and provinces. The meals provided were analyzed in the third week of spring, summer, fall, and winter. The average mercury allowance per meal was calculated using the provisional tolerable weekly intake (PTWI) established by the government. The number of instances of excess content observed was compared by region based on the mercury allowance per meal, and the frequency of use of mercury-containing marine products that cause the excessive levels was identified. The results of analyzing a total of 575 menus revealed that the use of marine and processed marine products with a high mercury content was more in the coastal areas. The mercury content in school meals was also higher in coastal areas than in inland areas. Conversely, in inland areas, the frequency of intake of marine products and marine products with a high mercury content was low, and the amount of mercury intake in school meals was also correspondingly low. In conclusion, this study intended to provide information that could be used to make school meal menus safer. This data can be used to replace school meal menus with high mercury content in coastal areas with menus with low mercury content.

  • The status of general food service administration and nutrition education was investigated in 111 elementary schools located in Inchon Metropolitan Area by questionnaires. The results are as follows ; 1. Most schools served 5 lunches per week. Meal cost per capita was 1212.1 won in urban type school and 979.0 won in rural type school. Most schools(91.9%) had 1 regular dietitian and 1 regular cook. With increasing number of students the number of temporary employees increased significantly. Most school dietitians(86.5%) were in their twenties and had 2 year careers. 2. Most dietitians(90.1%) planned the menu based on the RDA with the first consideration in nutritional needs of the students. Many dietitians(81.8%) surveyed on the food preferences of the students at least once a year. About 86% of the schools had the food service committee which was helpful. Dietitians were the first one in charge of food purchasing and checking, and sometimes a manager in general school affairs worked together. One third of the schools used the volunteer parents in food services. 3. Most school dietitians(97.2%) gave the students nutrition education using handouts once a week. However, they could not teach the students through the classroom lecture because they are not the regular teachers. Food garbages were removed by the professional trash collecting company or by using fermentation machines or by giving them to animals as feeds. School events concerning the food and nutrition were mostly drawing pictures and composition. Only 36.4% of the school dietitians had experienced in nutrition counseling for an individual student. • The purpose of this study was to examine the dietary habits and nutrient intakes of school-aged children participating in extracurricular classes, to with regards to class schedule. Three-hundred and two students from Seoul were selected and classified into two groups. One group attended extracurricular classes less than 12.43 hours per week, which was determined as the average number of hours per week(AELT, n=147). The other group attended extracurricular classes more than 12.43 hours per week(AEMT, n=155). The average student age in both the AELT and AEMT groups was 11.9 years, respectively. In terms of height and weight, there were no significant differences between the two groups. AELT received significantly more hours of sleep than AEMT(p<0.01), and there were significantly more responses with regard to lack of sleep in the AEMT group than in the AELT group(p<0.05). In a survey on 17 clinical symptoms regarding health, the AEMT group had significantly higher response rates than the AELT group in the following sections: no appetite (p<0.001), dizziness(p<0.001), headache(p<0.01), tiredness(p<0.01), cold symptoms(p<0.05), and sore eyes(p<0.05). Meal time irregularity was significantly higher than AEMT than in AELT(p<0.05). Approximately 50% of the subjects were picky eaters, and 40% and 20% skipped breakfast or dinner, respectively. The average energy intakes for AELT and AEMT were 2122.2 kcal and 2061.5 kcal, respectively, and there was no significant difference between the two groups. AEMT consumed significantly lower quantities of protein, animal fat, vitamin $B_6$, calcium, and phosphorus(each p<0.05) as compared to the AELT group. Beverage intake was significantly higher in AEMT than AELT(p<0.05). The number of hours in extracurricular classes showed a significant negative correlation with the intakes of protein, animal protein, animal fat, vitamin $B_6$, folate, calcium, plant calcium and phosphorus(each p<0.05). The number of hours in extracurricular classes also showed a significant negative correlation with soy foods intake(p<0.05). These results suggest that continuous and systematic nutritional education should be performed in order to prevent and improve the unbalanced diets and problematic of dietary habits that may result in students due to attendance in extracurricular classes.

  • The purpose of this study was to examine 1) the relationship between the vegetable eating behavior of care givers and that of children, 2) the effectiveness of nutrition education with vegetable playing using direct visual stimulating programs on vegetable eating behavior of preschool children, and 3) the times and period of nutrition education with vegetable playing for significant changes on vegetable eating behavior. A total number of 56 individuals, aged 42 to 66 months old, participated in this study in which three kinds of vegetables (30 g)/meal were served per individual, and vegetable eating behavior was measured by the residue on the dish during 5 weeks (25 days). To the simple visual stimulating group, vegetable dish was served without education, and other groups included education 1 group (nutrition education 1 time/week), education 2 group (nutrition education 2 times/week), and education 3 group (nutrition education 3 times/week) with simple visual stimulation by the vegetable dish. The results showed 1) the significant relationship (P<0.001) between the vegetable eating behavior of the care giver and that of children by analysis of the questionnaire, 2) the effectiveness of nutrition education using vegetable playing on vegetable eating behavior of preschool children (P<0.05), and 3) the significant changes in vegetable eating behavior by the 3rd week in the education 3 group. This study shows that food neophobia caused behavior problems in children regarding vegetable eating and repeated exposure was able to reduce food neophobia.
