가열산화 홍화유의 돌연변이원성에 관한 연구 (A Study on the Mutagenicity of Thermally Oxidized Safflower Oil)

  • Deep-fat frying is a common cooking practice. There has been considerable concern regarding the mutagenic and carcinogenic potential of thermally oxidized oils. Studies on deep-fried foods so far have revealed not much on the mutagenicity of the oils in the foods. Therefore, in the present study, it was attempted to investigate the mutagenicity ofthe thermally oxidized safflower oil. Oil was heated in a home-fryer at a temperature of 180$\pm$3$^{\circ}C$ for 48 hours. Oil samples were taken at 0, 8, 16, 24, 32, 40 and 48 hours of heating, respectively. Each sample was used to study the changes in peroxide value (POV), acid value (AV), iodine value (IV), conjugated dienoic acid (CDA) content, %, and fatty acid composition. Another series of samples were fractionated into non-polar and polar fractions by column chromatography. The mutagenicity of the samples taken from the thermally oxidized oils, as well as the non-polar and polar fractions of the thermally oxidized oils, was investigated with the Ames test. The Ames test was carried out with and without metabolic activation. Bacterial tester strains used in the present study were the histidine auxotrophic strains of Salmonella typhimurium TA100, TA1535 and TA102 were used for the detection of base pair mutations, and TA98 and TA1537 for frame shift mutations. Each series of samples was dissolved in tetraphydrofuran (inhibitor-free) and tested at doses ranging from 0.05 to 5 mg/plate. None of the oil samples taken during the 48 hour oxidation period showed any mugagenic activity. This was the case, even after the activaton with 59 mix. Also, none of the polar and non-polar fractions showed any mutagenic activity on all the strains tested.

폴리글리세롤 에스터를 이용한 안정한 에멀젼의 제조연구 (A Study on the Stability of Emulsion by Polyglycerol Ester)

  • 폴리글리세롤에스터 유화제를 이용한 에멀젼의 입자상태 및 시간의 변화에 따른 안정성을 여러 가지 오일을 이용하여 실험을 실시하였다. 실험결과 오일의 종류에 따라 입자크기 및 안정성에 있어서 다소의 차이가 있는 것을 확인하였다. 폴리글리세롤 에스터로 유화된 가장 안정한 오일은 polar 오일인 실리콘계열과 지방산에스터 오일이고, 탄화수소계열의 nonpolar오일(Mineral oil, squalane, polydecene) 등이 유화에 있어서 가장 불안한 상태를 보였다. 식물성오일도 폴리글리세릴 에스터 유화제와는 안정한 형태의 입자형성을 보였다.

Simultaneous Extraction and Separation of Oil and Azadirachtin from Seeds and Leaves of Azadirachta indica using Binary Solvent Extraction

  • Conventional extraction of oil and azadirachtin, a botanical insecticide, from Azadirachta indica involves defatting the seeds and leaves using hexane followed by azadirachtin extraction with a polar solvent. In order to simplify the process while maintaining the yield we explored a binary extraction approach using Soxhlet extraction device and hexane and ethanol as non-polar and polar solvents at various ratios and extraction times. The highest oil and azadirachtin yields were obtained at 6 h extraction time using a 50:50 solvent mixture for both neem leaves (44.7 wt%, $720mg_{Aza}/kg_{leaves}$) and seeds (53.5 wt%, $1045mg_{Aza}/kg_{leaves}$), respectively.

어유산화생성물의 DNA손상작용 2. 극성 및 비극성지질획분산화생성물의 DNA 손상작용 (The DNA Damage of Fish Oil Peroxidation Products 2. DNA Damage by the Peroxidation Products of Polar and Non-polar Lipid Fractionated from Mackerel Lipid)

  • 어유의 산화에 의한 DNA 손상작용기구를 밝히는 연구의 일환으로 고등어에서 추출한 지질을 다시 극성 및 비극성지질로 분획하여 이들을 각각 plasmid DNA와 $37^{\circ}C$에서 반응시키면서 이들 지질의 산화에 의한 DNA 손상작용을 $1\%$ agarose gel 전기영동을 통하여 조사하였는데 그 결과를 요약하면 다음과 같다. 극성지질을 DNA와 반응시킨 경우에는 가장 적은 농도에서도 DNA 손상작용이 크게 나타나 반응 l일째에 Form I DNA가 완전히 절단되어 Form II 및 Form III DNA로서 검출되었다. 극성지질의 산화에 의하여 그 농도가 증가함에 따라 POV의 증가가 빠르게 이루어졌으나 반응 4일동안 POV가 100 millieq./kg 이하에서 DNA 손상작용이 일어나는 것을 알 수 있었고, 한편, 극성지질의 산화에 의한 DNA 손상작용에 대한 활성산소종의 영향에서는 총지질의 경우처럼 일중항산소 $^1O_2$와 superoxide anion ${\cdot}O_2^1$의 영향이 가장 컸으며 수산 radical${\cdot}OH$과 과산화수소$(H_2O_2)$는 그다지 뚜렷한 영향을 나타내지 않았다. 비극성지질의 경우에서도 극성지질과 마찬가지로 농도에 따라 DNA 손상능이 커졌으나 극성지질과 총지질에 비하여 그 정도가 훨씬 떨어지는 것을 알 수 있었으며, 이상의 DNA 손상작용에 대한 활성산소종의 영향에 있어서도 극성지질과 동일한 경향을 나타내었다.

탈지들깨박 Ethanol 추출물의 항산화 효과 (Studies on Antioxidant Activity of Ethanol Extracts from Defatted Perilla Flour)

  • The antioxidant activity of ethanol extracts from defatted perilla flour was investigated by measuring peroxide value of perilla oil during storage at $45^{\circ}C$. The antioxidant activity of ethanol extracts was also compared with BHA, BHT and tocopherol. Anti-oxidant activity of ethanol extracts was also examined in corn oil and lard. The ethanol extracts contents of defatted perilla flour and the original perilla seed were 7.69 and 4.56% respectively. The antioxidant activity of ethanol extracts was superior to that of 0.02% BHT, BHA and tocopherol in the perilla oil substrate, merely in concentration of one-twentieth as much as that contained in original perilla oil seeds. The fractions of non-polar solvent (hexane and chloroform) obtained from silicic acid column chromatography are less effective than that of polar solvent as an antioxidant. Antioxidant activity of partially purified ethanol fraction is slightly inferior to that of original crude ethanol extracts. Ethanol extracts were also effective in corn oil and lard almost same as in perilla oil. The total phenolic compound contents of crude ethanol extracts and partially purified ethanol fraction were 9.3, 6.4%, respectively.

디젤-열분해유 유상액을 사용하는 직접분사식 디젤 엔진의 엔진성능 및 배기특성에 관한 연구 (Performance and Emission Studies in a DI Diesel Engine Fuelled with Diesel-Pyrolysis Oil Emulsion)

  • Pyrolysis oil (PO), also known as Bio crude oil (BCO), has the potential to displace significant amounts of fuels that are currently derived from petroleum sources. PO has been regarded as an alternative fuel for petroleum fuels to be used in diesel engine. However, the use of PO in a diesel engine requires modifications due to low energy density, high water contents, low acidity, and high viscosity of the PO. One of the easiest way to adopt PO to diesel engine without modifications is emulsification of PO with the fuels that has higher cetane number. However, PO that has high amount of polar chemicals is immiscible with non polar hydrocarbons of diesel. Thus, to stabilize a homogeneous phase of diesel-PO blends, a proper surfactant should be used. In this study, a DI diesel engine operated with diesel and diesel-PO emulsions was experimentally investigated. Performance and gaseous & particle emission characteristics of a diesel engine fuelled by diesel-PO emulsions were examined. Results showed that stable engine operation was possible with the emulsions and engine output power was comparable to diesel operation.

  • 튀김유의 품질평가 방법으로서 high performance size exclusion chromatography를 이용하여 이중체, 다중체 등의 중합체를 보다 신속하게 분리할 수 있었다. 단일체 triglyceride는 가열시간이 경과함에 따라 감소하는 경향을 나타났으나, 복합처리제를 처리한 처리구의 경우에는 감소속도가 현저히 늦어지는 경향을 나타냈다. 단일체 triglyceride와 극성지질 함량사이에는 좋은 상관관계를 나타냈으며, 회기직선의 기울기에 있어서는 처리구와 대조구 모두 거의 같은 경향을 나타났다. 이러한 방법에 의하면, 단일체 중성지질 함량이 71% 이하로 저하된 튀김유는 폐기되어야 하며, 이 값은 극성지질 함량 27%에 대응하는 측정값이다.

Impregnation of Castanea creanata Wood by Hydrophobic Oil

  • This paper investigates the penetration of essential oil into radial and longitudinal directions of Castanea crenata. Present study was performed to know the essential oil penetration depth in radial and longitudinal direction of Castanea crenata. Essential oil penetration depth was found higher in longitudinal direction than in radial direction and it was about 53 times high at 15.0 second of penetration. In early wood, fiber conducted oil more than that of large vessel. In heartwood, fiber had played an important role for the conduction of oil. But in sapwood, small vessel conducted oil deeper than wood fiber, which was also significantly different from large. On the other hand, large vessel in heartwood had statistically lower penetration depth than that of fiber and small vessel. At the beginning of penetration the speed was high and gradually decreased in course of time.

  • 전 세계적인 경제 및 정치 이슈로 인한 원유가격의 급변으로 비전통 원유자원인 오일샌드에 대한 관심이 증가하고 있다. 주로 오일샌드 현장은 극한지에 위치하고 있다. 혹독한 환경인 극한지의 오일샌드 현장에서 원유를 생산하기 위해서는 빠르고 간단한 절차의 기초 설치가 필요하다. 하지만 플랜트 기초로 주로 사용되는 현장타설 및 항타말뚝은 저온 및 유기토 표층이 있는 극한지 환경에 설치하기가 적합하지 않다. 따라서 본 연구에서는 항타나 굴착없이 소형 회전관입 장비로 간편한 급속시공이 가능한 헬리컬 파일의 거동을 분석하고자 한다. 헬리컬 파일은 강관축에 헬릭스가 부착된 형태로 헬릭스의 개수 및 형상별 지지거동의 차이가 발생되므로, 헬릭스의 조합(개수, 직경)에 따라 지지력 거동의 차이를 수치해석적으로 분석하였다.

식품 성분과 식품 포장용 인쇄 잉크 용매의 화학적 구조가 분배작용에 미치는 영향 (Effect of chemical and physical structure on partitioning behavior of representative printing ink solvents and various food ingredients)

  • Migration behavior of selected solvents and food samples showed differences of the chemical structures and polarities, the food samples which have similar polar expresses more higher affinity than different polar degrees. Water which is polar has a highest partitioning coefficient values on polar isopropanol, and oil which is nonpolar has highest partitioning value on non-polar toluene. The increasing order of partitioning values was accord with increasing water contents in food samples. It is showed that the wheat flour with 13.2% moisture content has the highest partitioning coefficient values on the isopropanol with -OH. Kp value of sugar showed remarkable lower partitioning coefficient values than other food samples due to high degree crystallinity. This phenomenon can be predictable with ${\delta}$ values, because order of partitioning coefficient values which comes out through the experiment and the sequence of Hildebrand solubility parameter value difference between food sample and printing ink solvent correspond almost. This Hildebrand solubility parameter value can be easily applied to the food package industry because the effect of food-safety can be considered without passing through complicated steps by using this method.
