Effects of Corchorus olitorius Powder on the Quality Characteristics of Emulsion-type Sausage (몰로키아 분말 첨가가 유화형 소시지의 품질특성에 미치는 영향)

  • In this study, the effects of Corchorus olitorius powder on the quality characteristics of emulsion type sausages during storage at $4^{\circ}C$ for 28 days was evaluated. Sausages were produced containing 0.5%, 1.0% and 1.5% C. olitorius powder. The pH values of sausage containing C. olitorius powder were higher than the control during 28 days of storage. The L and a values of sausage containing C. olitorius powder significantly decreased with increasing C. olitorius powder content; however, the b values significantly increased. The volatile basic nitrogen (VBN) and nitrite content of sausage containing C. olitorius powder were lower than that of the control. Especially, the VBN and nitrite content of sausages containing 1.5% C. olitorius powder were significantly lower compared to the control. In addition, sausages with $0.5{\sim}1.0%$ C. olitorius powder had higher hardness, cohesiveness, gumminess and brittleness than the control. In regards to the sensory evaluation, sausages containing 0.5% C. olitorius powder had the highest overall acceptability. Therefore, these results suggest that it may be possible to manufacture sausages containing 0.5% C. olitorius powder to help improve the overall quality of sausage.

Effect of Red Pepper Seed on Kimchi Antioxidant Activity During Fermentation

  • In this study, the antioxidant activities of red pepper seed kimchi extracts were examined. The extracts were evaluated by various antioxidant assays that included determinations of total phenolic and flavonoid contents, DPPH radical scavenging, superoxide anion radical scavenging, nitric oxide scavenging, superoxide dismutase (SOD) activity, metal chelating activity, and reducing power. All the kimchi extracts showed strong antioxidant activities by the tested methods. The 7% red pepper seed kimchi that was fermented for 6 days possessed the highest activity according to the performed tests. Yet, the highest scavenging activity was exhibited against nitrite, by extracts from kimchi for 0 day of fermentation rather than 6 days. All the activities for the kimchi fermented for 0 day with the addition of 7% red pepper seed increased markedly with an increase in concentration. With the exception of metal chelating and SOD activities, for the antioxidant properties assayed, the red pepper seed kimchi extracts were found to be highly effective.

Effects of Extraction Methods on In Vitro Biological Capacities and Rheological Properties of Polysaccharides from Red Pepper Stems

  • The purposes of this study were to produce polysaccharides from red pepper stems using different extraction methods and evaluate their chemical composition, in vitro biological capacities, and rheological properties. Two polysaccharides were extracted from red pepper stems using an autoclave and alkali treatments, and the extracts were named PAU and PAL, respectively. The contents of total phenolics and flavonoids were significantly higher in PAU than those in PAL. PAU exhibited greater scavenging activities on 2,2-diphenyl-1-picrylhydrazyl radicals, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt radicals, superoxide radicals, and nitrite compared to PAL, suggesting that PAU served as better antioxidants. Similarly, in vitro inhibitory abilities against carbohydrate hydrolyzing enzymes of PAU were higher than those of PAL. Steady shear rheological analysis demonstrated that PAU showed higher psuedoplastic shear-thinning behavior compared to PAL. Based on the results from dynamic shear rheological properties, it was found that both samples had predominantly viscous behavior rather than elastic behavior.

Studies on Distribution of Secondary Amines in Raw Marine Fishes (해산류(海産類)중의 제(第)2급(級) 아민분포(分布)에 관(關)한 연구(硏究))

  • The materials carcinogenic agent, nitrosoamine, is distributed in food circumstances, and is formed when both nitrite and secondary amine are present. Nitrites are added to fishes as a color fixative or preservative and secondary amines exist in fishes. In order to find the distribution and contents of secondary amines, analysis of 19 kinds of fish was conducted. The results showed that, significant differences were not observed in the quantity of secondary amines in 19 kinds of fish by district. The highest value was 20.29 ppm in Theragra chalocogramma and the lowest was 0.022 ppm in Ostrea denselamellosa. Six fishes below 1 ppm were Nibea imbricata, Misgurnus mizolepis, Astroconger myriaster, Evynnis Japonica, Ostrea denselamellosa and Solen gouldi. Dimethyl amine only was identified and diethylamine or diphenylamine was not detected in all kinds of 19 fishes.

Antioxidant activities and nutritional characteristics of smoked duck marinated in natural curing agent (천연 염지제를 첨가한 오리훈제의 항산화 활성과 영양적 특성)

  • Purpose: This study investigated the question of whether the addition of natural ingredients (pear fermented solution, celery powder, vitamin C) in curing agents may influence antioxidant activities and nutritional characteristics of smoked duck. Methods: Smoked duck samples with general or natural curing agent containing three additive ingredients were examined to determine total polyphenol contents, antioxidant activities, pH, TBARS, and food additives residue (nitrite ion, antioxidant, sodium glutamate). Results: Smoked duck with natural curing agent showed a higher level of total polyphenol content and antioxidant activities than smoked duck using general curing agent (p < 0.05). The pH and TBARS of smoked duck were significantly decreased by the addition of natural curing ingredients compared to those of smoked duck using general curing agent (p < 0.05). The residues of food additives were not detected in smoked duck using natural curing agent. Conclusion: Findings suggest that the addition of pear fermented solution, celery powder, and vitamin C in natural duck curing agent may improve the antioxidant activities and nutritional characteristics of smoked duck and provides health benefits.

Kimchi and Nitrosamines (김치와 니트로소아민)

  • Kimchi is a very popular traditional fermented vegetable in Korea, however, contaminations of $NO_3$, $NO_2$ and nitrosamines in Kimchi were suspected. In this review, ingredients used in manufacturing Kimchi, kinds of Kimchi, microorganisms involved the fermentation and nutritional values of Kimchi are introduced. The quantitated levels of $NO_3$, $NO_2$ and secondary amines in the ingredients of Kimchi, and the changes of the contents of $NO_3$, $NO_2$ and nitrosamines during Kimchi fermentation were shown. The level of $NO_3$ during Kimchi fermentation reduced greatly, and the content of $NO_2$ was also trace amounts. NDMA is a major nitrosamine found in Kimchi, but the levels were trace or not detected.

Physiological and Antioxidant Activities of Green, Oolong and Black Tea Extracts (녹차, 오룡차 및 홍차 추출물의 생리활성과 항산화 효과)

  • This study investigated the physiological and antioxidant activities of green, oolong, and black tea extracts. The crude catechin extract yields of green, oolong, and black tea were 4.9%, 3.4%, and 2.5%, respectively. Total phenol contents of green, oolong, and black tea were 40.9%, 43.0%, and 38.5%, respectively. The order of the electron donating abilities of green, oolong and black tea were green tea>oolong tea>black tea extracts. The SOD-like activities of green, oolong and black tea extracts at 5,000 ppm were 21.2%, 17.5% and 13.9%, respectively. The nitrite-scavenging abilities of green, oolong and black tea extracts were higher than that of ascorbic acid (p<0.05). Antioxidant activities in soybean oil substrates at 500 ppm were in the order of green tea>oolong tea>black tea${\geq}$BHT (200 ppm). Therefore these results showed that the physiological and antioxidant activities of green tea were better than those of oolong and black tea.

Distribution Status, Physicochemical Composition, and Physiological Activity of Spergularia marina Cultivated in the Western Region in Jeon-Ra-Nam-Do (전남 서부 해안가에서 생산되는 세발나물의 유통실태, 이화학적 성분 및 생리활성)

  • This study was conducted to examine the distribution status, the physicochemical composition, and the physiological activity of Spergularia marina grown in the western region in Jeon-Ra-Nam-Do, looking for its potential as a local specialty goods. The amount sold of Spergularia marina to different areas from a rural market place was examined during April, 2008. The proportions of Spergularia marina are as follows; Yeongam(30.5%), Muan(24.3%), Naju(20.3%), Hampyeong(18.0%), and Haenam(7.0%), which were shown higher than those of Pimpinella brachycarpa. Total vitamin C and total chlorophyll contents in Spergularia marina were 68.61mg/100g DW and 58.11mg/g DW, respectively. Total amino acid contents were 331.94mg/100g DW and 20 kinds of amino acids were separated and classified. The contents of inorganic matters in Spergularia marina were as follows; Na(64.23mg/L), Mg(15.88mg/L) K(9.99mg/L), Ca(3.83mg/L). The total phenol and the total flavonoid contents of methanol extracts from Spergularia marina were 41.7mg/L and 18.9mg/L, respectively, with an extracting concentration of 2,000mg/L. The nitrite scavenging activity was highest (83.4%) in hot water extract. These results may be useful as basic data for using Spergularia marina as a local specialty goods.

Antioxidant Activities of Ethanol Extracts from Solidago virga-aurea var. gigantea (울릉미역취 에탄올추출물의 항산화 활성)

  • Objectives : This study aimed to analyze contents of chlorogenic acid among major ingredients and determine the optimal solvent for the antioxidant activity from Solidago virga-aurea var. gigantea(SV) aerial part. Methods : Mature aerial part of extracted SV at the first crop on June 2018 was used. SV was mixed with each at the ethanol concentrate rates of water, 10, 30, 50, 70, and 100% and extracted them for three times for eight hours at $70^{\circ}C$. The contents of chlorogenic acid and seven kinds of antioxidant activities were measured in SV extracts. Results : The highest the contents of chlorogenic acid was from 10% ethanol extracts showed. Total polyphenol and flavonoids of SV extracts were 126.16 mg/g and 105.84 mg/g, respectively. Scavenging activities of DPPH, ABTS, and hydroxyl radical significantly increased in a dose-dependent in SV extracts, while it was almost similar with control at the concentration of $500{\mu}g/mL$. $Fe^{2+}$ chelating activity significantly increase in a dose-dependent in SV extract, it was lower than control. Nitrite scavenging activity increased, dose-dependent in the sequence of pH 1.2> pH 3.0 > pH 6.0 in SV extracts, while it was almost similar with control at the concentration of $500{\mu}g/mL$, pH 1.2, and pH 3.0. Conclusions : Thus, this study found that higher contents of chlorogenic acid and excellent antioxidant activity were contained in 10% ethanol extracts in mature aerial part of SV. It is expected to be used as basic data as natural antioxidant materials.

Component Analysis and Antioxidant Effects of Youngia sonchifola Max. (고들빼기의 성분분석과 항산화효과)

  • In the present study, we investigated the chemical composition, antioxidant activities and nitrite scavenging ability in leaf and root of Youngia sonchifolia Max. The leaf powder contained 4.3% of water, 53.9% of crude carbohydrate, 21.6% of crude protein, 3.5% of crude fat and 16.7% of crude ash. The root powder contained 4.8% of water, 65.9% of crude carbohydrate, 17.4% of crude protein, 3.2% of crude fat and 8.7% of crude ash. The major mineral elements both in leaf and root powder were potassium, calcium, and magnesium. Contents of unsaturated fatty acids were higher than those of saturated fatty acids both in leaf and root powder. Total polyphenol and flavonoid contents of methanol extract in leaf were 3,922.4 mg/100 g and 1,903.2 mg/100 g respectively. In comparison, total polyphenol and flavonoid contents of methanol extract in root powder were 1,898.4 mg/100 g and 359.8 mg/100 g. The antioxidative activities of several solvents extract of leaf and root powder were investigated by measuring electron-donating ability using 1,1-diphenyl-2-picrylhydrazyl (DPPH). Of the each extracts, ethyl acetate extract of leaf and root powder showed relatively higher antioxidant activity; 94.3% in the leaf powder and 92.9% in the root powder. Nitrite scavenging ability was also highest in the ethyl acetate extract of leaf (45.4%) and root powder (28.8%). These results suggest that ethyl acetate extract of Youngia sonchifolia Max. can be used as a functional materials.
