감물을 이용한 천염염색과 염직물 특성 (Natural Dyeing and Dyed Fabrics Properties with Persimmon Juice)

  • The natural dyeing of fabrics with persimmon juice(astringent persimmon, sweet persimmon, astringent and sweet persimmon mix) was investigated. After dyeing of cotton and silk fabrics with persimmon juice, we evaluated the dyeability of persimmon juice, the observation of fabric surface with high magnification video microscope, physical properties and color fastness with the conditions of repeating times of dyeing and variables of mordants. The results obtained from this study were as follows: The fabrics dyed with astringent persimmon have shown the highest color difference, while the fabrics dyed with sweet persimmon and the fabrics dyed with astringent and sweet persimmon mix have shown similar color differences. With the increase of repeating times of dyeing, the brightness of fabric decreased. However, $a^*$ value increased gradually, so that it became dark brown color. The $a^*$ and $b^*$ values of dyed fabrics with Fe-mordant have dropped significantly, so that they have shown achromatic colors. But the fabrics treated with other mordants have shown yellowish brown colors. On the surface of the fabrics, threads were bonded together by the viscosity of persimmon juice. Regardless of the types of persimmon juice, stiffness was increased after dying, while crease resistance was decreased. The water repellency of silk fabrics were improved than cotton fabrics after dyeing with sweet persimmon juice, but in case of cotton, it hasn't changed. Washing fastness was improved with the EM(Effective Microorganism)-fermented liquid treatment, and rubbing fastness of two fabrics was better in dry condition than in wet condition.

천연염색을 이용한 자연적 이미지의 골프웨어 디자인 개발 (Development of Golf-wear Design depicted on Natural Image used by Natural Dyeing)

  • This research intends to help local small fashion industry to outgrow its limitation, preserving and developing environment-friendly dyeing tradition in Jeju renowned for persimmon juice dyeing. The study, then, aims to develop eco-friendly golf-wear designs, with maximizing advantages of natural dyeing (with persimmon juice, indigo plant, gallnut, cochineal, turmeric, and loess) such as rot-proofness, bacteria-proofness, stench-proofness and block of ultraviolet rays. The results are as follows: first, natural fabrics such as muslin(cotton 100%), linen(linen 100%) and spandex(mixed cotton 98%, polyurethane 2%) were developed into eco-friendly ones colored with various natural dye sources. Second, four kinds of golf-wear design were developed to stand out golf wear's natural image, focused on classic, neo-minimal style. The characteristic details and design elements of sportswear were added to basic golf wear design. Therefore, it is hopeful that those designs of naturally dyed golf wear for women could be utilized for other various purposes in the future.

중국산 반달곰의 웅담액 생산량에 관한 연구 (Study on the Production of Bile Juice by Chinese Moon Bear S. Y. Baig)

  • This study was conducted to investigation into production of bile juice and bile powder by Chinese moon bear. The color of bile juice and bile powder were appeared to bronze and bronze or yellowlish brown. Average production of bile juice(ml) and bile powder(g) per head and the powdered rate(%) of bile juice were 98.4ml, 20.8g and 20.4% during a surgical operation. Production of bile juice(ml) and bile powder(g) per head were appeared to 120.7ml-139.5m1 and 8.5g-10.2g during experimental period(31 days), respectively. Average daily production of bile powder(g) per head and the collectting days of bile juice was decreased; to 6.7g and 52.5 day in summer compared with another season(10.3g and 60 days) The production of bile juice and bile powder was not difference between seven times collection in 7 days and once collection in 7 days.

과즙 첨가에 의한 골뱅이 내장젓갈의 제조 및 특성 (Preparation and Characteristics of Whelk Internal Organ Jeotgal with the Addition of Fruit Juice)

  • 골뱅이의 가공 부산물인 내장의 효율적인 이용을 위하여 단백질 가수분해효소인 bromelain을 함유하는 파인애플과 actinidin을 함유하는 참다래의 과즙 첨가하여 젓가을 제조하였다. 파인애플 과즙과 참다래 과즙은 각각 52unit/mL, 248 unit/mL의 단백질 가수분해 효소활성을 나타내었다. 마쇄한 골뱅이의 내장을 염농도 12.5%와 과즙 25, 50, 100 mL 첨가하여 1$0^{\circ}C$에서 숙성하였다. 파인애플 과즙을 첨가한 젓갈에서 참다래를 첨가한 경우보다 숙성 중 pH의 변화가 다소 많으며 아미노 질소가 많이 생성되었고 총질소함량과 총균수는 숙성기간이 연장도리수록 증가하는 경향을 보이고 있으나, 첨가한 과즙의 종류와 양에 따른 연관성은 발견하지 못하였다. 한편, 젓갈의 숙성 중의 안전성을 확인하기 위하여 측정한 대장균군 시험에서는 본 연구에서 제조된 모든 젓갈에서 음성으로 확인되어 위생적으로 적합한 것으로 판정되었다.

마늘즙의 미생물증식 억제효과 (Growth Inhibition of Garlic (Allium sativum L.) Juice on the Microorganisms)

  • 향신료중에서 항균성 물질을 찾고자하는 연구의 일환으로 검정균의 생육에 대한 항생제와 보존료의 영향을 조사하였고, 마늘즙과 생강즙이 미생물의 생육에 어떠한 영향을 미치는 가를 조사하였다. 마늘즙은 세균과 효모 및 곰팡이에 대해 항균활성을 나타내는 반면, 생강즙은 세균과 효모에 대하여는 항균활성을 나타내지 않았다. 마늘즙의 균증식 억제작용은 마늘즙의 농도에 따라서 증가하였으며, 비증식 생장속도를 조사한 결과, 마늘즙의 항균 효과는 세균보다 효모에서 월등하게 높았다.

Effect of Different Salt Concentrations and Temperatures on the Lactic Acid Fermentation of Radish Juice

  • The characteristics of natural lactic acid fermentation of radish juice were investigated at different salt concentrations (0~2%) and temperatures (10~3$0^{\circ}C$). Major lactic acid bacteria isolated from the radish juice fermented at 2% slat concentration were Leuconostoc mesenteroides, Lactobacillus plantarum, and Lactobacillus brevis. The percentage of lactic acid bacteria against total microbe in the fermented radish juice was over 80% at 0~1% salt concentrations, suggesting the possibility of fermentation even at low salt concentration, but was still active even at 1$0^{\circ}C$. The time to reach pH 4.0 during fermentation of juice of 1% salt concentration was 281~301 hrs at 1$0^{\circ}C$ and 50-73 hrs at 3$0^{\circ}C$. The concentrations of sucrose and glucose in the fermented juice were low at high temperatures and were the lowest at a 1.0% salt concentration. However, the content of mannitol showed the opposite trend. Although sour taste, ripened taste, and acidic odor of the fermented juice showed no significant differences among various temperatures and salt concentrations, sensory values of ripened taste and sour acidic were high at high temperatures. The overall quality was the best at 1.0% salt concentration, irrespective of the temperature.

Effects of sleep-inducing juice on sleep quality and heart rate variability in adults with disturbed sleep

  • BACKGROUND/OBJECTIVES: Although some juices affect subjective sleep quality, there is a lack of information on the effect of a specific juice on objective sleep quality and heart rate variability (HRV) during sleep; thus the present study investigated whether a blended juice made from natural extracts influenced sleep quality and HRV during sleep in adults with disturbed sleep. SUBJECTS/METHODS: A randomized, crossover study was conducted on twenty-five adults (15/10, female/male) complaining of difficulty initiating or maintaining nighttime sleep (Pittsburgh sleep quality index [PSQI] ≥ 5). During feeding sessions (FS), subjects received sleep-inducing juice made of natural ingredients (250 mL/trial) twice a day for 8 weeks or non-FS (N-FS) for 8 weeks while maintaining normal activities. Sleep quality and parameters were recorded via wearable actigraph for 7 consecutive days, and PSQI scores were assessed before and after the intervention. HRV was also monitored at rest and during sleep. RESULTS: After receiving the sleep-inducing juice intervention (FS), PSQI scores were significantly decreased (P < 0.001) and correlated with a significant decline in fatigue severity scale and visual analogue scale levels (P < 0.05; both). HRV indices of vagal activity were significantly improved during FS (P < 0.05), and no significant differences in N-FS were observed. Sleep efficiency and total sleep time increased significantly (P < 0.05) and sleep latency, total counts, sleep fragmentation index, and movement index, decreased significantly (P < 0.05, all 4) during FS, with no significant differences-observed during N-FS. CONCLUSIONS: This study results demonstrated that an 8-week course of sleep-inducing juice has led to improve sleep quality, suggesting an enhanced cardiac vagal tone during sleep. Thus, it could be a well-tolerated option for adults with disturbed sleep.

청미래덩굴(망개)잎 에탄올 추출물의 항균효과 (Antimicrobial Effect of Ethanol Extract of Smilax China Leaf)

  • The extract with the dilution of $50\%$ ethanol and treatment of $121^{\circ}C$ for 15min were inhibited highly the growth of staph aureus, Ent. cloacae, Sh. sonnei, A. hydrophila, b. subtilis, St. faecalis and L. casei. of food samples, red-bean dregs with addition of extact of smilax china. leaves or sorbic acid took the similar inhibition effect to microorganisms for the early storage days(1-3days). There was inhibited the growth of microorganisms in strawberry Juice added to 20m1 of $1\%$ extract solution for one storage day in comparison with no addition of smilax china L. Over all with growth inhibition capability to microorganisms and foods, it was believed that the effect and value as the natural food preservatives and the extracts like as this natural plant material took the food safety and it was capable to develop the natural food preservation.

파프리카 발효즙의 화장품 소재개발 연구 (Development of Cosmetic Ingredient by Fermented Paprika Juice)

  • 본 연구에서는 천연물 화장품 원료의 유기용매 추출법과 미생물을 이용한 발효법의 장단점을 보완하기 위해, 생(生) 천연물에 미생물을 이용한 발효를 통해 과즙을 만드는 새로운 제조법으로 화장품 소재를 개발하였다. 천연물은 다양한 색상과 비타민이 풍부한 것으로 알려진 파프리카 중 두 가지 색상(빨간색, 녹색)을 선정하였고, 발효에 사용된 미생물로서 당분해 효소능이 있는 유산균(Lactobacillus plantarum)을 이용해 파프리카에 접종하여 발효하였다. 먼저 고압으로 착즙한 파프리카 생즙 2종과 유산균으로 발효한 발효즙 2종의 생리활성변화를 확인해 보았다. 총 페놀함량과 총 플라보노이드 함량 측정 실험 결과, 파프리카 생즙보다 발효즙에서 모두 함량이 높았으며 특히 빨간색 파프리카 발효즙에서 가장 높은 함량을 나타내었다. 프리라디칼 소거효과와 지질과산화 억제효과 역시 파프리카 생즙에 비해 발효즙에서 우수한 항산화 효과가 나타났으며, 그중 빨간색 파프리카 발효즙의 효과가 가장 높았다. 항산화 효과가 높은 빨간색 파프리카 발효즙을 이용해 MMP-1 발현실험을 한 결과 농도 의존적으로 MMP-1 mRNA와 MMP-1 단백질의 발현을 억제하였다. 노화에 따른 glycation(당화현상) 실험의 경우, 파프리카 발효즙에서 상대적으로 anti-glycation 효과로 최종 당화산물(advanced glycation end-products, AGEs) 생성 억제 활성이 높아 항산화효과와 밀접한 연관성을 나타내었다. 또한, 세포노화 지표물질인 senescence-associated ${\beta}$-galactosidase (SA-${\beta}$-gal) 활성을 사람 섬유아세포(HDF)를 이용하여 실험한 결과, 파프리카 발효즙을 처리하였을 때 노화에 의해 염색된 세포의 수가 감소하여 세포의 senescence를 억제하는 것을 확인할 수 있었다. 결론적으로, 파프리카는 생즙보다 유산균을 이용한 발효즙이 항산화 효과와 항노화 효능이 우수했으며, 그중 빨간색 파프리카 발효즙이 가장 우수한 항산화와 항노화 효능을 가져 이를 이용한 항산화 및 항노화의 천연 신소재로 적용될 수 있을 것으로 사료된다.

Effects of the Addition Levels of White Kimchi Powder and Acerola Juice Powder on the Qualities of Indirectly Cured Meat Products

  • This study investigated the effects of the addition levels of white kimchi powder and acerola juice powder, as natural sources of sodium nitrite and sodium ascorbate, on the quality of cooked ground pork products. Freeze-dried white kimchi powder was prepared and used after fermentation for 2 wk. Six treatments were included: control (100 ppm sodium nitrite and 500 ppm sodium ascorbate), treatment 1 (0.2% white kimchi powder, 0.02 % starter culture, and 0.1% acerola juice powder), treatment 2 (0.2% white kimchi powder, 0.02% starter culture, and 0.2% acerola juice powder), treatment 3 (0.4% white kimchi powder, 0.04% starter culture, and 0.1% acerola juice powder), treatment 4 (0.4% white kimchi powder, 0.04% starter culture, and 0.2% acerola juice powder), and treatment 5 (0.4% celery powder, 0.04% starter culture, and 0.2% acerola juice powder). The pH values were decreased (p<0.05) because of lower pH of acerola juice powder, resulting in lower cooking yields (p<0.05) in these treatments. CIE L* and CIE a* values of indirectly cured meat products were not different (p>0.05) from the sodium nitrite-added control. However, indirectly cured meat products showed lower (p<0.05) residual nitrite contents, but higher (p<0.05) nitrosyl hemochrome contents and cure efficiency than the control. Treatments 2 and 4 had higher (p<0.05) total pigment contents and lipid oxidation than the control. This study indicates that white kimchi powder coupled with acerola juice powder has substantial potential to substitute synthetic nitrite to naturally cured meat products, which could be favored by consumers seeking clean label products.
