Dietary intake of fats and fatty acids in the Korean population: Korea National Health and Nutrition Examination Survey, 2013

  • BACKGROUND/OBJECTIVES: The aim of this study was to estimate average total fat and fatty acid intakes as well as identify major food sources using data from the Korea National Health and Nutrition Examination Survey (KNHANES) VI-1 (2013). SUBJECTS/METHODS: Total fat and fatty acid intakes were estimated using 24-hour dietary recall data on 7,048 participants aged ${\geq}3years$ from the KNHANES VI-1 (2013). Data included total fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), n-3 fatty acid (n-3 FA), and n-6 fatty acid (n-6 FA) levels. Population means and standard errors of the mean were weighted in order to produce national estimates and separated based on sex, age, income, as well as residential region. Major food sources of fat, SFA, MUFA, PUFA, n-3 FA, and n-6 FA were identified based on mean consumption amounts of fat and fatty acids in each food. RESULTS: The mean intake of total fat was 48.0 g while mean intakes of SFA, MUFA, PUFA, n-3 FA, and n-6 FA were 14.4 g, 15.3 g, 11.6 g, 1.6 g, and 10.1 g, respectively. Intakes of MUFA and SFA were each higher than that of PUFA in all age groups. Pork was the major source of total fat, SFA, and MUFA, and soybean oil was the major source of PUFA. Milk and pork were major sources of SFA in subjects aged 3-11 years and ${\geq}12years$, respectively. Perilla seed oil and soybean oil were main sources of n-3 FA in subjects aged ${\geq}50years$ and aged < 50 years, respectively. CONCLUSIONS: Estimation of mean fatty acid intakes of this study using nationally represented samples of the Korean population could be useful for developing and evaluating national nutritional policies.

미더덕 추출물을 첨가한 조피볼락용 사료의 제조 (Preparation of Rockfish (Sebastes schlegelii) Feed Fortification with Mideodeok (Styela clava) Extracts)

  • The nutritional contribution of mideodeok extracts (ME) on rockfish (Sebastes schlegelii) feed and fish muscle was investigated. Different concentrations of the ME mixed with commercial diet were fed to mature rockfish for 8 weeks. The lipid and ash contents of the formulated diets were relatively similar to the control diet, while increasing the extract concentration increased the moisture content and decreased the protein contents. Major fatty acid components (C18:1n-9, 16:0, C20:5n-3, C22:6n-3) were of comparable quantity. High presence of C18:2n-6 was attributed to soybean oil incorporated in the diets, while the essential fatty acids were within limits (0.9-1.0%). The diet fortified with 6% ME produced the highest feed efficiency, with increased protein content in the muscle as well as lipid content for both muscle and liver. Hepato- and visceral-somatic index values were elevated with increasing ME concentration Muscle fatty acid contents were mostly C18:1n-9 and C16:0, with low absorption of C18:2n-6 in both the muscle and liver. Total highly unsaturated fatty acid content was significantly reduced in the fish muscle, but the values were higher for fish fed with a ME-fortified diet. An increasing trend for eicosapentaenoic acid and docosahexaenoic acid was also observed with increased ME fortification, with liver levels of these compounds remaining within range throughout the duration of the experiment.

거북손(Pollicipes mitella)의 식품 영양성분 특성 (Characteristics of Food Nutrition Components of Common Stalked Barnacle Pollicipes mitella)

  • Common stalked barnacle Pollicipes mitella is a filter-feeding crustacean that attaches itself to the surfaces of rocks in the ocean intertidal zone. Pollicipes mitella is one of about a dozen species of goose barnacle that are gathered commercially for human consumption. In Portugal and Spain, they are a widely consumed and expensive delicacy known as "Percebes (Pollicipes pollicipes )". However, common stalked barnacle is less popular in Korea, and information on its nutritional component is not yet available. In the present study, we analyzed the proximate and fatty acid compositions and mineral content of common stalked barnacle (muscle and cirrus). The muscle and cirrus of common stalked barnacle were 15.1% and 14.3% protein, and 3.31% and 1.81% lipid, respectively. The prominent fatty acids in the muscle and cirrus were 22:6n-3 (docosahexaenoic acid, DHA), 16:0, 20:5n-3 (eicosapentaenoic acid, EPA), 18:0, 18:1n-9, 16:1n-7 and 14:0. In particular, common stalked barnacle contained high levels of n-3 polyunsaturated fatty acids, such as DHA (25.4-25.6%) and EPA (14.7-15.1%), and low levels of the n-6 fatty acid, 20:4n-6 (1.2-1.3%). Common stalked barnacle contained a relatively large amount of Zn (10-42 mg/100 g) in its muscle and cirrus.

Energy Efficiency and Nutrient Deposition in Early-Weaned Pigs, according to Fat Sources Containing Different Acidic Series

  • To evaluate energy efficiency and partition of nutrients, 32 piglets were weaned at 14 d of age and individually fed diets containing 15% fat from coconut oil (CO, medium chain saturated), high oleate sunflower oil (HOSO, n-9 series), soybean oil (SO, n-6 series), or linseed oil plus fish oil, (LF, n-3 series). After 4 weeks, the subjects were sacrificed to evaluate empty body composition and apparent ileal digestibility with the slaughter method. No statistical effect of dietary fat sources on growth was observed. The digestibility of fat from the coconut oil diet was higher than fats from the diets containing high levels of unsaturated fatty acids. The efficiency of use of metabolizable energy for growth averaged 63% and was not affected by the diet. Dietary fat composition was reflected strongly in backfat. Total body neutral and polar fatty acids were influenced too. For the whole body phospholipid fraction the ratio of n-6 to n-3 and the double bond index were 4.3, 5.8, 7.2, 0.78 and 69, 87, 89, 87 for CO, HOSO, SO, and LF respectively. These results show that for the coconut oil diet the degree of unsaturation of phospholipids in the body was lower and that, in the other diets, it did not differ, but double bond index was maintained with different n-6 to n-3 ratios in carcass fat. On the whole the data on body fat composition indicate that the dietary fat tended to be deposited in similar quantity in the body, whatever was the dietary fatty acid profile.

Comparison of the Nutritional Value of Chlorella ellipsoidea and Nannochloris oculata for Rotifers and Artemia Nauplii

  • Microalgae are widely used for mass culture of the rotifer Brachionus plicatilis in aquaculture. Since the nutritional value of the rotifer is closely related to its food, the nutritional value of its food should be known in detail. Chlorella ellipsoidea and Nannochloris oculata are re­presentative food organisms for rotifers that are easily cultured. Therefore, the nutritional values of these micro algae were examined for ultrasmall, small, and large rotifers and Artemia nauplii. Chlorella ellipsoidea contained seven times more total fatty acids than N. oculata. The three types of rotifer fed N. oculata contained more amino acids than those fed C. ellipsoidea. However, the total fatty acids of the rotifers fed each microalga species differed according to the type of rotifer. Newly hatched Artemia nauplii contained more protein and had a higher dry weight than those fed microalgae for 6 h. As with the rotifers, the Artemia nauplii fed N. oculata contained more protein and amino acids than those fed C. ellipsoidea, while the reverse was true for the total fatty acid content. Our results suggest that N. oculata is a good supply of protein, while C. ellipsoidea is a good source of lipids as food organisms for rotifers and Artemia nauplii in aquaculture.

Growth Performance, Meat Quality and Fatty Acid Metabolism Response of Growing Meat Rabbits to Dietary Linoleic Acid

  • An experiment was conducted to determine the effects of different amounts of dietary linoleic acid (LA) on growth performance, serum biochemical traits, meat quality, fatty acids composition of muscle and liver, acetyl-CoA carboxylase (ACC) and carnitine palmitoyl transferase 1 (CPT 1) mRNA expression in the liver of 9 wks old to 13 wks old growing meat rabbits. One hundred and fifty 9 wks old meat rabbits were allocated to individual cages and randomly divided into five groups. Animals in each group were fed with a diet with the following LA addition concentrations: 0, 3, 6, 9 and 12 g/kg diet (as-fed basis) and LA concentrations were 0.84, 1.21, 1.34, 1.61 and 1.80% in the diet, respectively. The results showed as follows: the dietary LA levels significantly affected muscle color of LL included $a^*$ and $b^*$ of experimental rabbits (p<0.05). The linear effect of LA on serum high density lipoprotein cholesterol was obtained (p = 0.0119). The saturated fatty acids (SFAs) and monounsaturated fatty acids (MUFAs) contents of LL decreased and the polyunsaturated fatty acids (PUFAs) content of LL increased with dietary LA increase (p<0.0001). The PUFA n-6 content and PUFA n-3 content in the LL was significantly affected by the dietary LA levels (p<0.01, p<0.05). The MUFAs content in the liver decreased and the PUFAs contents in the liver increased with dietary LA increase (p<0.0001). The PUFA n-6 content and the PUFA n-6/n-3 ratio in the liver increased and PUFA n-3 content in the liver decreased with dietary LA increase (p<0.01). The linear effect of LA on CPT 1 mRNA expression in the liver was obtained (p = 0.0081). In summary, dietary LA addition had significant effects on liver and muscle fatty acid composition (increased PUFAs) of 9 wks old to 13 wks old growing meat rabbits, but had little effects on growth performance, meat physical traits and mRNA expression of liver relative enzyme of experimental rabbits.

지렁이 분말의 급여가 산란계의 생산성 및 난황의 지방산 조성에 미치는 영향 (Effects of Feeding Earth Worm Meal on the Performance of Laying Hens and Fatty Acids composition in Egg Yolk)

  • 본 연구는 산란계의 생산성과 난황지방산 조성에 미치는 지렁이 분말(EWM)의 첨가 효과를 구명하기 위해서 실시되었다. 총 360수의 55주령의 산란계를 공시하여서 EWM 0.0% (대조구), 0.1% 및 0.2%를 첨가한 사료로 5주 동안의 사양시험을 실시하였다. 계란은 매일 수집하여 난중을 측정하였고 산란율 및 사료요구율은 시험기간동안 매주단위로 조사하였다. 뿐만 아니라 시험 마지막 주에는 난황 중의 지방산 조성도 조사하였다. 사료섭취량은 지렁이분말 첨가에 의해서 증가하는 경향이 인정되었지만 사료요구율은 처리구간에 차이는 인정되지 않았다. 평균 산란율은 EWM 0.1% 급이구에서 증가하는 경향이 0.2% 급이구에서는 유의하게 증가하였다 (P<0.05). 평균 난중은 EWM 0.1% 급이구에서 대조구 및 지렁이분말 0.2% 급이구에 비해서 감소하는 경향이 인정되었다. 평균 산란량은 EWM 첨가로 개선되어지는 경향이 인정되었으며, 그 개선 정도는 EWM 0.2% 급이구가 0.1% 급이구보다 크게 나타났다. 난황중의 n-6/ n-3지방산의 비는 지렁이 분말 0.1% 및 0.2% 급이구에서 5:1이었지만 대조구에서는 10:1이었다. 결론적으로 55주령의 산란계에 0.2% 지렁이분말의 첨가는 산란계의 생산성 및 난황중의 n-6/ n-3비를 개선시켰다 (P<0.05).

  • This study was conducted to investigate the contents of dietary fiber (DF), compositions of fatty acids in lipid fraction and amino acids in salt-soluble protein from the functional food source such as Platycodi radix, perilla seed, evening primrose seed and aloe vera. The contents of dietary fiber, neutral detergent fiber (N.D.F) , acid detergent fiber( A.D.F) . kignin, hemicellulose an dcellulose in evening primorse seed were higher than those of other samples, except the content of cellulose .The ration of polyunsaturated /saturated (P/S) fatty acid in total lipids was 6.31 in perilla seed, which was higher than those of other samples. The content of linolenic acid (n-3) in perilla seed was 55.47%. The content of linoleic acid (n-6) in evening primrose seed was 71.88% , which was higher than those of other samples. The fatty acid composition in neutral lipids were the same as those of total lipids. The PUFA contents of fatty acid in glycolipids were 61.76% in perilla seed. And also, the ratio of n-6/n-3 in evening primrose seed was 15.19. The fatty acid compositions in phospholipids were the sameas those of glycolipids. The contents of PUFA in Platycodi radix were 62.96% . The essential amino acid contents of salt-soluble protein were 47 mole % in Platycodi radix , which was slightly higher than those other samples. The ration of essential amino acid /nonessential amino acid (E/N) was 0.9 and 0.66 in Platycodi radix and aloe vera, respectively.

휘발성 Branched-Chain과 n-Chain Fatty Acids가 육고기의 종을 결정하는 향기 성분으로서의 역할 (Role for Volatile Branched-Chain and Other Fatty Acids in Species-Related Red Meat Flavors)

  • 2-Methylbutanoic, 3-methylbutanoic, 4-methylpentanoic, 2-ethylhexanoic, 4-methylhexanoic, 4-methyloctanoic, 6-methyloctanoic, 4-ethylhexanoic. 4-methylhexanoic 및 2-ethylhexanoic acids를 포함하는 다수의 volatile branched-chain fatty acids(VBCFAs)가 쇠고기, 돼지고기, 염소고기(미국산 흰염소고기, 한국산 흑염소고기), 양고기로부터 분리, 동정되었다. 쇠고기 향은 amino acid, carbohydrate, 그리고 lipid의 반응에 의해 생성된 향기성분에 의해 이루어지는 기본 meaty flavor로 결정되어 지는 반면, 염소고기가 양고기의 경우는 쇠고기의 기본향에 4-ethyloctanoic acid와 4-methyloctanoic acid의 독특한 노린내가 더해지므로 염소고기나 양고기 특유의 향을 내었다. 돼지고기는 3-methylbutanoic acid 함량이 다른 세종류에 비해 높고 3-methylbutanoic acid 특유의 꼬린냄새는 돼지고기의 기름층으로부터 나는 unclean flavor 에 중요한 영향을 미치는 것으로 생각된다. 염소고기는 C5-C7 chain length의 volatile branched 및 n-chain fatty acids를 적게 함유하고 있는 반면 4-ethyloctanoc acid는 염소고기의 노린내를 내는 결정적인 화합물이었다. 4-Methyloctanoic acid는 양고기의 sweaty-muttony flavor를 내는 중요한 화합물이었으며 염소고기와는 달리 C5, C6, 그리고 C7 branched-chain fatty acids 도 상당량 함유되어 있었다. 한국산 흑염소고기와 미국산 흰염소고기 중에 들어있는 VBCFAs의 종류는 같으나, 한국산 흑염소고기가 미국산 흰염소고기 보다 노린내가 강하며 4-ethyloctanoic 의 함량도 높았다.

가정에서 제조된 전통된장의 품질특성 (Quality characteristics of home-made doenjang, a traditional Korean soybean paste)

  • 가정에서 제조된 전통된장의 품질을 비교하기 위하여 일반성분, 유기산, 아미노산 및 지방산 조성을 조사하였다. 1. 된장의 수분, 조단백, 조지방, 적정산도(0.1N NaOH 소비 ml수)및 염도는 각각 평균 57.3%, 11.6%, 8.3%, 11.8 및 13.9%였으며, 특기 적정산도.조단백질과 염도는 시료간에 차이가 많이 나타났다. 아미노산성 질소의 함량은 평균 308.4 mg%로서 202.3∼416.3mg%의 범위로 시료간에 1.3∼2.1배 이상 차이를 나타내는 경우도 있었다. Hunter색차계의 L(명도), a(적색도), b(황색도)값은 각각 평균 37.7, +19.6, +7.5이었으며, 수용성 및 지용성 갈변물질은 각각 평균 흡광도 2.23, 0.39로서 유리 아미노산 함량이 총 아미노산 함량보다 5.7배이상 높았다. 2. 유리 및 구성아미노산의 총 함량은 각각 평균 2908.9, 9,019.3 mg%이었으며, 시료간에 1.8∼6.2배와 1.2∼2.0배의 차이가 나타났다. 가장 많은 아미노산은 glutamic acid로서 각각 576, 1,126mg%였다. 3. 유기산은 lactic acid(평균 326.8 mg%)가 가장 많았는데 시료간에 59.4∼613.4mg%의 범위로 큰 차이를 나타내었다. 총 지방산 중에 linoleic acid의 비율(평균49.24%)이 가장 높았으며, 불포화 지방산은 평균 81.97%였고, 다가불포지방산은 시료간에 51.79∼62.97%의 범위로 차이를 많이 나타내었다.
