충북 지역 일부 대학생의 우유 섭취와 식습관 실태 (A Study on Milk Intake Patterns and Dietary Habits among University Students in Chungbuk)

  • The purpose of this study was to investigate the factors related to milk consumption in university students. A questionnaire, comprised of general questions and factors related to milk consumption, was administered to 269 male and female university students (134 males, 135 females). The results show that the proportion of males reporting that they drink milk because "for good nutrition" was higher than that of females (p=0.0200). Additionally, males initiated more effort to drink milk than females (p=0.0192). Analysis of the groups classified according to milk consumption shows that the proportion of respondents exercising regularly was significantly high in the milk consumption group (p=0.0199). The proportion of respondents often consuming carbonated drinks as snacks was significantly low in the milk consumption group (p=0.0219). Whereas, the proportion of respondents consuming fruits as their main snack was significantly higher in the milk consumption group than in the non-milk consumption group (p=0.0063). Also, the milk consumption group shows significantly higher awareness of the importance of milk than the non-milk consumption group (p<0.0001). These results can be used as a valid foundation to provide university students with nutritional education relative to milk consumption and its associated benefits in the future.

대학생들의 우유 및 유제품 섭취실태와 소비 성향에 관한 조사 (A Study on Consumption Behavior of Milk and Dairy products in College Students)

  • This study was undertaken to investigate intake and consumption behavior of dairy products in college students in order to identify a better way to increase milk consumption. This survey was carried out through questionnaires. The subjects were 307 college students in ChungJu. A total of 98.3% students thought milk as good for health but only 21.5% of them drank it everyday. Most students reported drinking milk two to three times a week. Male students reported drinking milk for drinking, whereas females students for nutrition. College students preferred flavored milk rather than plain milk. Students preferred the drink-type yogurt among the dairy products. The major reason for drinking fermented milk was taste. After drinking the fermented milk, 39.1% of female students thought that fermented milk could prevent constipation. Most students thought that better taste and quality of milk and milk product would increase their consumption.

Forecasting the consumption of dairy products in Korea using growth models

  • One of the most critical issues in the dairy industry, alongside the low birth rate and the aging population, is the decrease in demand for milk. In this study, the consumption trends of 12 major dairy products distributed in Korea were predicted using a logistic model, the Gompertz model, and the Bass diffusion model, which are representative S-shaped growth models. The 12 dairy products are fermented milk (liquid type, cream type), butter, milk powder (modified, whole, skim), liquid milk (market, flavored), condensed milk, cheese (natural, processed), and cream. As a result of the analysis, the growth potential of butter, condensed milk, natural cheese, processed cheese, and cream consumption among the 12 dairy products is relatively high, whereas the growth of the remaining dairy product consumption is expected to stagnate or decrease. However, butter and cream are by-products of the skim milk powder manufacturing process. Therefore, even if the consumption of butter and cream grows, it is difficult to increase the demand of domestic milk unless the production of skim milk powder produced from domestic milk is also increased. Therefore, in order to support the domestic dairy industry, policy support should be focused on increasing domestic milk usage for the production of condensed milk, natural cheese, and processed cheese.

  • An experiment was conducted to compare the traditional weigh-suckle-weigh method and the $D_2O$ dilution technique to estimate milk consumption of suckling piglets. Milk consumption of 50 individual piglets was estimated on four consecutive days by the $D_2O$ dilution method and for approximately 8 hours on both the second and fourth day by the traditional WSW method. The average milk intake of piglets estimated by the $D_2O$ dilution method was 45.0 g/hr and there were no significant differences between the four measurement period. The traditional weigh-suckle-weigh method provided a significantly lower estimate of milk consumption (36.8 g/hr). However correction for weight losses associated with milk suckling and weighing would increase the weigh-suckle-weigh estimate to a level similar to that determined by the $D_2O$ dilution method.

서울 지역 초.중.고등학생들의 우유 가치구조 인식 및 섭취 행태 분석 (Analysis of the Awareness of the Value and the Consumption Pattern on Milk of Elementary Middle and High School Students)

  • This study was performed to investigate the awareness of the value on milk and the consumption pattern on milk of elementary, middle and high school students. The subjects were 453 students(129 elementary, 129 middle, and 195 high school students) living in the Seoul area. The results were as follows. The students of this study demonstrated low levels of awareness of the value of milk. They had an awareness of the value of milk about 'convenience', 'healthful', 'safety', 'diversity', and 'useful for snack'. Most students reported drinking milk two to three times a week and 13.2% of students preferred flavored milk rather than plain milk. General preference for milk was significantly higher in elementary school students than in high school students(p<0.001). The degree of satisfaction on milk was significantly higher in elementary school students than in middle and high school students(p<0.001). The respondents answered that their source of information about milk was the mass media. Their source of information from school was very low. In order to increase the consumption of plain milk, milk nutritional education is necessary in schools.

부천 지역 유아의 우유 섭취 실태와 소비 성향에 관한 조사 (A Survey on the Intake Pattern and Consumption Propensity of Milk by Preschool Children in the Bucheon Area)

  • We identified the intake pattern and consumption propensity of milk and sought improvements to promote consumption of milk. We targeted 362 preschool children aged 5~7 years old who attended nursery school in the Bucheon area. Questionnaires were distributed and 328 questionnaires were collected. Approximately 36.2% of boys and 31.2% of gorls drank milk six times per week. A total of 32.9% of the preschool children drank more than 2 cups of milk/day. Approximately 72.9% of them currently drink white milk, and 46.0% preferred milk to processed milk. The reasons why they drink milk included 'want to be tall'(66.5%) and 'good health'(52.4%). Mothers(54.6%)and preschool children(39.3%) were the purchasers with the greatest impact on product purchases. Consumer propensity to buy milk was shown in the order of expiration date(4.80 points), and nutrition facts(4.01 points). (4.88 points) and enhanced nutrients(4.59 points) should be promoted for milk consumption. Therefore, it is thought that continuous nutrition education should be made together in order to increase consumption of milk of children and education targeting teachers and school parents should be conducted as well. And in order for children to drink milk without repulsion, the development of various products satisfying both symbolic aspects and nutritional aspects should continue to be made.

전국 초.중.고등학생의 학교우유급식 실태조사 (A Study on the School Milk Program among Elementary, Middle and High School Students in Korea)

  • This study was carried out in order to facilitate the consumption of milk which tend to decrease in recent years and to improve the school milk program. The survey by means of prepared questionnaire was conducted to investigate a perception and satisfaction of school milk program, and milk intake at home and school with elementary, middle, and high school students. Most of the subjects thought drinking milk is important for their health but only 50.2% of them were actually drinking milk everyday. In particular, the frequency of consuming milk at home was significantly lower in students being provided with school milk program than the students without school milk program. Most of the students commonly drunk plain milk rather than flavored milk, however actually they preferred flavored milk to plain milk. The frequency of consuming milk and the degree of satisfaction for milk being served in the school milk program was lowered. The major reason of disliking milk being served in school milk program was ‘poor taste’. And to promote milk consumption in school milk program, the subjects anticipated the serving of various milk and dairy products, flavored milk and yogurt etc. Thus, it was suggested that to improve the school milk program and promote milk consumption among the students, serving various products that can satisfy their preferences and demands and the proper food guide and education on nutrition are called for.

대학생의 우유 소비행태분석 (Analysis of Milk Consumption Behavior of College Students)

  • This study analyzed milk consumption behavior of college students. According to the results of the analysis, the respondents mainly purchase milk with a capacity of 900 to 1,000 ml at the hypermarket. However, it was found that convenience stores mainly purchase 200 ml capacity. According to the results of factor analysis on milk purchase factors, milk purchase factors were classified into nutritional and cosmetic attributes. Nutritional properties include nutritional ingredients, sterilization method, bio-origin, quality, HACCP labeling, milk fat ratio, etc., and external properties include brand, manufacturer, packaging/package design, and manufacturing date. In order to expand the milk consumption of the young generation, I think it is necessary to strengthen marketing strategies.

우유를 통한 칼슘의 공급이 일부 아산시 노인 여성의 골밀도에 미치는 영향 (Increased Calcium Intake through Milk Consumption and Bone Mineral Density of Elderly Women Living in Asan)

  • The objective of this study is to determine the effectiveness of 4-month milk consumption in the prevention of osteoporosis in elderly women living in Asan. Subjects included 277 women age over 65 years were divided into control (n=111) and milk (n=166) groups. For those in the milk group, one cup (200ml) of partially lactose-digested low-fat milk was provided everyday for 4 months. Each subject was interviewed to assess food intake by 24-h recall method before and after milk supplementation. Prevalence of osteoporosis was determined by WHO criteria with calcaneus bone mineral density (BMD) measured by quantitative ultrasound (QUS) on left heel. After 4 months, the nutrient intake levels of control did not change while intakes of energy, protein, calcium, phosphorous, riboflavin, pyridoxin, niacin and folic acid were significantly increased in milk group. No significant changes were observed in anthropometric, and BMD in both control and milk groups. T-score of milk group, however, was significantly increased after 4 month milk consumption. Prevalence of osteoporosis was increased (27% to 32%) in control group while that of milk group was decreased (32% to 30%). When BMD and t-score changes after 4 months of milk consumption were compared between those with low baseline calcium intake and high calcium intake subjects in the milk group, BMD and t-score were significantly improved in the low baseline calcium intake group. We conclude that one cup a day milk consumption for a relatively short period of 4 months can prevent further bone loss and significantly improve intakes of both macro and micro-nutrients of elderly women.

일부 노년기의 우유 및 유제품 섭취 양상과 소비 성향에 관한 연구 (A Study on the Intake and Consumption Pattern of Milk and Dairy Products in Elderly Korean)

  • The elderly population in Korea is growing rapidly and their nutritional status is not acceptable. Data were collected from the self-administered questionnaire of 495 free living elderly, over 65years old, in Korea to asses the intake and consumption pattern of milk and dairy products. The questionnaire contains demographics, health related characteristics, and perception on milk, and consumption behaviors of milk and dairy products. Most of the elderly subjects understood that milk is good foods in terms of nutritive value and health. And 67% of the subjects satisfied with the sanitation status of milk on the markets. The kind of milk that majority of the subjects consumed was whole milk, and only 5.1% of them consumed low fat milk. Less than 20% of the subjects consumed milk everyday, living alone group consumed milk less frequently than living with others. It was found that the majority of the elderly subjects did not meet current recommendation for milk. Liquid and curd type yogurt were the major dairy products used among elderly, and the reasons were good taste and digestion. They believed that these kinds of dairy products help constipation and digestion problems. The price of milk was ranked for the first factor needed to be considered for milk and dairy products consumption in elderly korean.
