원료된장을 달리하여 제조한 쌈장의 품질특성 (Characteristics of Samjangs Prepared with Different Doenjangs As a Main Material)

  • 막장, 재래식 된장 및 막장과 재래식의 혼용 된장을 주원료로 제조한 쌈장의 일반 성분, 유리 아미노산, 향기성분 등의 품질을 검토한 결과는 다음과 같다. 쌈장은 수분 $51.2{\sim}53.5%$, 염분 $11.47{\sim}14.05%$, 총당 $20.38{\sim}23.6%$, 환원당 $8.44{\sim}9.29%,\;pH\;4.76{\sim}5.53$의 범위로 총당은 막장구, 환원당은 혼용구의 쌈장에서 높았다. 쌈장의 유리 아미노산으로 glutamic acid가 $230.6{\sim}310.9mg/100\;g$으로 가장 높았다. 쌈장의 명도, 적색도, 황색도 값은 재래식 된장구 및 혼용구된장구의 쌈장에서 높았다. 쌈장의 휘발성 향기 성분으로 acid류 13종, alcohol 11종, ester 7종, aldehyde 3종, alkane 4종, phenol 4종, pyraine 3종 등 총 54종이 동정되었다. Ethanol, acetic acid ethyl ester, 3-methyl butanoic acid, 2,4-hexadienoic acid, acetic acid등은 면적비율이 높아 쌈장 향기의 주성분으로 추측된다. 막장구에서는 pentanoic acid methyl ester, 4-methoxy-2-buten-1-ol이 , 재래식 된장구에서는 2-methyl-1-propanol, butanoic acid, 3-methyl butanoic acid 등이, 혼용구에서는 ethanol, ethyl acetate, 2,4-hexadienoic acid 등의 향기성분이 각각 타시험구 보다 면적 비율이 높은 것으로 나타났다.

  • 4-Methyl-2,6,7-trioxa-1-phospbicycle[2,2,2]octane 1-sulfide (BPS)와 4-Methyl-2,6,7-trioxa-1-phosphabicyclo[2,2,2]octance 1-oxide (BPO) 및 관련 단고리화합물을 합성하였고 반응성 중간체와 반응기작을 알아보기 위하여 BPS를 chloroform 및 methanol중에서 MCPBA로 산화시켰다. Chloroform에서는 BPO만이 생성되었고 methanol중에서는 두고리 구조가 열려서 만들어진 반응성 중간체가 methanol을 인산화하여 생성된 이성질체의 단고리화합물이 관찰 되었으며 또한 소량의 BPO도 생성되었다. 인산화 능력을 소유한 반응성 중간체를 여러 가지 기기분석을 동원하여 연구한 결과 그 구조는 단고리 methyl sulfenyl ester로 제안하였다.

  • 2,6-Dimethyl-4-(3'-nitrophenyl)-1,4-dihydropyridine-3,5-dicarboxylic acid 3-methyl 5-(2'-phenylsulfinyl) ethyl ester (10) or 2,6-Dimethyl-4-(2' or 3'-nitrophenyl)-1,4-dihydropyridine-3,5-dicarboxylic acid 3-alkyl 5-(2-methylsulfonyl) ethyl ester (14a, b, c) were hydrolyzed by treatment with NaOH in aqueous EtOH solution to give 2,6-Dimethyl-4-(3'-nitrophenyl)-1,4-dihydropyridine-3,5-dicarboxylic acid monomethyl ester (4b), 2,6-Dimethyl-4-(2'-nitrophenyl)-1,4-dihydropyridine-3,5-dicarboxylic acid monomethyl ester (4c) and 2,6-Dimethyl-4-(2'-nitrophenyl)-1,4-dihydropyridine-3,5-dicarboxylic acid monoisopropyl ester (4d) in 80 -90% yield. By the same procedure, 2,6-Dimethyl-4-(3'-nitrophenyl)-1,4-dihydropyridine-3,5-dicarboxylic acid 3,5-bis (2'-methylsulfonyl) ethyl ester (15) gave 2,6-Dimethyl-4-(3'-nitrophenyl)-1,4-dihydropyridine-3,5-dicarboxylic acid (4e) in 96% yield.

원료된장을 달리하여 제조한 저장쌈장의 품질특성 (Characteristics of the Stored Samjangs with Different Doenjangs)

  • 막장, 재래식 된장, 막장과 재래식의 혼용된장을 주원료로 제조한 저장쌈장의 품질특성을 검토한 결과 적정산도는 저장 30일 최대치를 보였고 재래식 된장구의 쌈장에서 높았다. 제조 직후에 비하여 저장쌈장의 총당은 감소, 환원당은 증가 경향을 보여 저장 40일에 총당 $16.52{\sim}19.58%$, 환원당 $11.45{\sim}12.35%$로 당함량이 높은 특색을 보였다. 아미노태질소는 제조 직후 $45.0{\sim}53.0\;mg%$였으나 40일에 $337.3{\sim}381.1\;mg%$로 현저히 증가하였고 혼용구의 쌈장이 높은 경향을 보였다. Glutamic acid는 $202.6{\sim}464.6\;mg/100g$으로 저장쌈장에서 가장 높은 함량을 보였고, 함량이 높은 glutamic acid, tryptophane, alanine, cystine은 혼용구, 재래식 된장구, 막장구의 쌈장순으로 높았다. 40일 저장 쌈장에서 alcohol류 7종, ester류 4종, aldehyde류 6종, acid류 13종 등 총 42종의 휘발성 향기성분이 동정되었다. 모든 시험구에서 검출된 향기성분은 ethonol, acetic acid ethylester, 2-phenylethanol등 10종이었다. Ethanol, acetic acid ethyl ester, phenylacetaldehyde, acetic acid, butanoic acid, 3-methylbutanoic acid, 2,4-hexadienioc acid의 면적비율이 높아 쌈장의 주향기성분이었다. 막장구의 쌈장에서는 2-phenylethanol, butandioic acid ethyl ester, butanoic acid, 2-methyl-2-butenoic acid가, 재래식된장구의 쌈장에서 ethanol, acetic acid, 2,4-hexadienioc acid, 혼용구의 쌈장에서는 acetic acid ethyl ester, 3-methylbutanoic acid, methyl pentanoic acid의 면적 비율이 각각 타시험구보다 높았다.

Role of FT-IR in Assessing Lubricant Degradation - A Study on Palm Oil Methyl Ester Blended Lubricant

  • In this paper, studies were made on the palm oil methyl ester (POME) added lubricants using FT-IR for monitoring oil degradation. In order to assess the degradation characteristics of POME added lubricant by FT-IR, static oxidation test was conducted using three different blended lubricants (viz, zero percent POME, five percent POME and ten percent POME with mineral-based oil) for 280 hrs. The oxidation temperature was set at $140^{\circ}C$. FT-IR quantitative data indicate an increased in oxidation products which was formed from 10% POME added lubricants after 280 hrs of oxidation test. The 5% POME added lubricant and mineral-based lubricant (without POME) showed less oxidation product after the test. From the FT-IR spectrum analysis of the oxidized oils it could be concluded that 5% POME can improve the performance of mineral-based oil by forming protective films.

  • The Pseudomonas aeruginosa BYK-2(KCTC 18012p) produced three kinds of glycolipids on olive oil as a substrate and purified two types of major glycolipids(Rf=0.48, BS-1; Rf=0.65, BS-2) using silica gel chromatography, TLC, HPLC, etc. From the analysis of the chemical structure, the glycolipid of BS-1 was estimated as rhamnolipid($2-O-{\alpha}-L-rhamnopyranosyl- {\alpha}-L-rhamnopyranosyl-{\beta}-hydroxyldecanoyl-{\beta}-hydroxydecanoic$ acid; M.W. 650) and BS-2 was detected as rhamnolipid methyl ester($2-O-{\alpha}-L-rhamnopyranosyl-{\alpha}-L-rhamnopyranosyl-{\beta}-hydroxyldecanoyl-{\beta}-hydroxydecanoic$ acid methyl ester; M.W. 664) by FT-IR, FAB Mass spectrometry, $^1H-NMR$, $^{13}C$ FT-NMR, DEPT, 2D-NMR (TOCSY, RELAY, NOESY, HSQC, HMBC). In particular, It was found that a marine bacterium Pseudomonas aeruginosa BYK-2(KCTC 18012P) remarkably produced rhamnolipid and rhamnolipid methyl ester simultaneously.

  • Phlomis umbrosa Turcz. ('Sok-dan') is a perennial herb in Labiatae plants. Shanzhiside methyl ester was isolated from butanol extract of this plant. It was obtained as amorphous powder and its molecular formula is $C_{17}H_{26}O_{11}$. Its structure was determined by chemical reactions, spectral analysis and compared with authentic sample of its pentaacetate.

  • Chemical investigation of a marine-derived fungus, Penicillium sp. 108YD020, resulted in the discovery of six bile acid derivatives, glycocholic acid (1), glycocholic acid methyl ester (2), cholic acid (3), glycochenodeoxycholic acid (4), glycodeoxycholic acid methyl ester (5), and cholic acid methyl ester (6). The structures of six bile acid derivatives 1-6 were determined by the detailed analysis of 1D, 2D NMR and LC-MS data, along with chemical methods and literature data analysis.

  • The present study examined the effect of a methanol extract of Evodiae Fructus on the cardiovascular function in N-nitro-L-arginine methyl ester (NAME)-induced hypertensive Wistar rats after treatment over 6 weeks. In rats treated with NAME, blood pressure, weight of heart, aorta media thickness and media/lumen ratio significantly (p<0.05) increased, whereas coronary flow and heart rate of isolated heart significantly (p<0.05) decreased compared with control group at 6 weeks. In rats treated with NAME and Evodiae Fructus, blood pressure, aorta media/lumen ratio significantly(p<0.05) decreased compared with NAME treated group at 6 weeks. These results suggest that Evodiae Fructus is applicable to the treatment of hypertension and vascular hypertrophy.

Enzymatic Synthesis of Cephaloglycin

  • Cephaloglycin was synthesized directly from D-${\alpha}$ -phenylglycine methyl ester and 7-aminocephalosporanic acid using whole cell enzyme of Xanthomonas citri (IFO 3835). Some optimal conditions for cephaloglycin synthesis were investigated, and yield improvements for its production by several methods were attempted. Using the whole cell enzyme system, the reaction kinetic model for cephaloglycin synthesis is proposed, and the kinetic constants for D-${\alpha}$ -phenylglycine methyl ester hydrolysis, cephaloglycin synthesis, and cephaloglycin hydrolysis were determined. The $K_m$ values of D-${\alpha}$-phenylglycine methyl ester, 7-aminocephalosporanic acid, and cephaloglycin were 11 mM, 24 mM, and 167 mM, and $K_i$ value of D-${\alpha}$-phenylglycine was 15 mM, respectively. The pattern of product inhibition was found to be competitive one.
