The present study investigated the effect of inclusion of chromium propionate (Cr-P) and lysophopholipid (LPL) in diet on blood parameters and meat quality of Hanwoo steer. Feeding trial was performed from late fattening period to slaughter and blood parameters (insulin, blood glucose and non-esterified fatty acid (NEFA) concentration) and meat quality were examined. Total 4 experimental groups including control (no addition), T1 (Cr-P 0.2%), T2 (LPL 0.2%) and T3 (Cr-P 0.1% + LPL 0.1%) were employed. For blood parameters, insulin concentration in T1 and T3 showed an elevating patterns from $3.13{\mu}U/mL$ to $3.35{\mu}U/mL$ (T1) and from $4.38{\mu}U/mL$ to $5.23{\mu}U/mL$ (T3). The changes of NEFA in all groups were detected as a decreasing patterns according to days of feeding. However, significant difference was not found. In growth performance, T2 showed greater daily gain and T1 showed greater carcass yield compared to others. However, there were no significance in difference. In meat quality, T1 showed greater yield and intra-muscular fat levels and lower sharing force compared to others. However, significant differences were not detected.
Results of meat quality, physicochemical characteristics, fatty acid and amino acid composition of the Korean Native Black Pig(70 and 90 kg of slaughter weight; KNBP) versus Landrace(110kg of slaughter) are as below. Compared with Landrace, the KNBP exhibited a greater lean meat yield, with no difference in backfat thickness between Landrace and KNBP. There were no difference in chemical composition between Landrace and KNBP, but pH, and cooking loss in the KNBP were superior value than those of the Landrace. These results, KNBP were affected in sensory property and cooking yield. Amino acid content of KNBP and Landrace were significant differences between Landrace and KNBP. Except for the methionine, essential amino acid contents of KNBP had significantly higher than those of Landrace. In the change of fatty acid composition, the Landrace had significantly higher percentages of palmitic(l6: 0), stearic(18: 0) and linolenic(18: 3) acids than that of KNBP, but linoleic acid(l8: 2) was decreased.
In order to investigate the appropriate processing season of ark shell(Scapharca subcrenata) cultured at the south coast of Korea, the edible portions were determined for coefficient of fatness and yield of edible portion using specimens collected bimonthly from December 1994 to December 1995. The relationship between shell length(X) and total weight(Y) of S. subcrenata is shown as follows; Y=0.001608X2.5199. The relationship between total weight(X) and meat weight(Y) of S. subcrenata is shown as follows; Y= 0.3594X 0.5566(r=0.99). The relationship between total weight(X) and meat weight(Y) of S. subcrenata is shown as follows; Y=67.1647X+20.6370(r=0.99). The coefficient of fatness and yield of edible portion showed a marked bimonthly variation with a maximum in December and a minimum in August. The appropriate processing season of S. subcrenata would be in winter and spring, and not in summer and autumn season, the spawning season of the S. subcrenata.

The objective of the study was to compare the carcass characteristics, meat quality, and blood parameters of slow and fast grown female broiler chickens fed in organic or conventional production system. The two genotypes tested were medium slow-growing chickens (SG, Hubbard Red JA) and commercial fast-growing chickens (FG, Ross 308). Both genotypes (each represented by 400 chickens) were divided into two sub-groups fed either organic (O) or conventional (C) systems. Chickens of each genotype and system were raised in a semi environmentally controlled poultry house until 21 d of age and were assigned to 5 pens of 40 chickens each. Then, O system chickens were transferred into an open-side poultry house with an outdoor run. At 81 d of age, 10 female chickens from each genotype and from each production system (n = 40) were randomly chosen to provide material for analysis, and were weighed and brought to the slaughterhouse to assess carcass characteristics and meat quality. The blood parameters were determined by using 5 female chickens from each genotype and from each production system (n = 20). FG had the higher live weight, along with carcass, breast, and thigh-drumstick weights compared to SG (p<0.05). FG had the higher breast yield, whereas SG had the higher thigh-drumstick yield (p<0.05). The O system resulted in a higher amount of abdominal fat (p<0.05). In addition, the O system values were higher for dry matter, crude ash, crude protein, and $pH^{15}$ values in breast meat, and for crude ash, crude protein, and $pH^{15}$ values in drumstick meat (p<0.05). In addition, total saturated fatty acids, total mono-unsaturated fatty acids, and total omega 3 were significantly higher in the O system than in the C system. Thus, the O system showed a positive advantage compared to the C system regarding female chicken meat quality, primarily within the ash, protein, and total omega 3 fatty acid profiles. In conclusion, the present study indicated that the main factor affecting the carcass characteristics of female chickens was genotype, whereas the organic system contributed to enhanced meat quality. These findings provide a better understanding of the relative roles of genotype and production systems in female broiler characteristics, and might aid producers in designing their facilities to optimize yield and quality while maintaining acceptable animal welfare standards.
Concerns about meat quality, including chicken meat, for the human diet has led to many attempts to manipulate the carcass fat and increase the eating quality. For actual eating quality, the birds must be grown and finished in a manner that results in meat that are tender, succulent and of good flavor, as well as being free from any foreign taint, flavor or safety hazard. Tenderization treatment with high voltage(820V) electrical stimulation and prechill muscle tensioning would improve the tenderness of chicken meat. Proper programs for the withdrawal of feed and water require a team approach for maximizing yield of meat and minimizing carcass contamination. Also effding of supplemental levels of-tocopherol to poultry with vegetable or fish oils increases of desirable polyunsaturated fatty acid(PUFA) content and stablizes the meat against rancidity and fish off-flavors. The nutritional effects of varying dietary ingredients on broiler carcass fat content are also important. Increasing the levels of energy in the ration increases the carcass fat content, while increasing the proteing levels decreases carcass fat content. Supplement-tation of poultry diets with amino acids such as methionine, lysine, glycine and tryptophan as well as amino acid such as well as amino acid mixtures can reduce body fat deposition. Normal stress leads to chicken muscular damage resulting in reduced meat quality, but this can be controlled by preslaughter management practices. Feed manufactures can utilize ntilize nutrient modulation to control pale soft exudative(PSE)syndrome. Finally, the success in poultry meat production depends on the consistent achievement of carefully selected levels of quality. Quality assurance should be the wider function of incorporating quality into the production system and the combination of motivating quality into actions and operations.
Thirty Hanwoo cattle including bulls, cows, and steers (n = 10 each) were slaughtered and investigated for carcass traits (weight, meat color, fat color, yield index, maturity, marbling score, back-fat thickness, and firmness) and meat quality. The meat quality such as: pH, color, cooking loss, fatty acid, thiobarbituric acid reactive substance, warner-bratzler shear force, tensile tests, and texture profiles were analyzed on longissimus lumborum (LL) muscles of the carcasses at different aging times (3 d and 21 d). The results showed that steers and cows had higher back-fat thickness and marbling score, and a lower firmness (p < 0.001) than bulls. Bulls exhibited a lower meat quality indicating by higher cooking loss, thiobarbituric acid reactive substance content, warner-bratzler shear force and tensile test values (p < 0.01). Regarding the sensory property, the bull meat also had higher hardness, and lower tenderness, juiciness and flavor scores than the cow or steer meat (p < 0.01). Additionally, the bull meat had a higher polyunsaturated fatty acid and a lower monounsaturated fatty acid contents (p < 0.01). With increased aging time, the meat tenderness was improved in all the genders. Taken together, the present study demonstrated that the gender and aging time affected the carcass traits, fatty acid and sensory quality of beef. Postmortem aging could improve the meat tenderness of all genders especially bulls.
An experiment was performed to evaluate the effects of dietary metabolizable energy (ME) and lysine on carcass characteristics and meat quality in Arbor Acres (AA) broilers from 1 to 56 days of age. A total of 2,970 1-d-old male broiler chicks were randomly allocated to nine dietary treatments (three ME levels in combination with three lysine levels), and dietary ME and lysine concentrations were formulated by varying corn, soybean meal, tallow, and L-lysine sulfate concentrations. Live body weight (BW), carcass weight (CW), dressing percent, breast muscle weight (BMW), yield of breast muscle, muscle color (CIE L*, a*, and b*), pH values 45 min and 24 h postmortem ($pH_{45}$, and $pH_{24}$), meat shear force value (SFV), and water loss rate (WLR) were evaluated. Results showed that live body weight and dressing percent increased (p<0.05) as dietary energy increased. Higher dietary lysine content improved breast muscle weight. Neither carcass weight nor yield of breast muscle was affected by dietary energy or lysine content. Higher ME increased the b* value (p = 0.067) and $pH_{24}$ value (p<0.05), whereas it decreased SFV (p<0.05) and WLR (p = 0.06). Only water loss rate was influenced (p<0.01) by dietary lysine, which was higher in broilers from the high lysine diet as compared to those from medium or low lysine diets. The $pH_{45}$ value and L* value of breast muscle were not affected by ME or lysine. Significant interaction of dietary ME and lysine was found on a* value of breast muscle. These results indicated that dietary ME and lysine had important effects on breast muscle growth and meat quality, however their effects were different. Different concentrations of dietary ME and lysine might be considered to improve meat quality.
This study was designed to evaluate the effects of dietary prebiotic (mannan oligosaccharide = MOS) and probiotic (Saccharomyces cerevisiae = SC) in finishing turkey diets on carcass, cut yield, meat composition and colour. A total of 72 ten-weeksold Big6 male turkey poults were used in the trial. There were eight replicate floor pens per floor with three birds in each. The experiment lasted up to 20 wks of age. The trial was set up as a completely randomized design with 3 dietary treatments. The treatments were: i) negative control (C, no additive); ii) MOS 1 g per kg of diet and iii) SC 1 g per kg of diet (strain SC47, $300{\times}10^{10}$ CFU/kg). Body weight (BW) and feed intake were determined for each of the two week intervals. Twenty-four birds were slaughtered and eviscerated to determine carcass, carcass parts and internal organ weights at 20 wks of age. Meat colour and pH levels were measured 24 h after slaughter. The dietary treatments did not affect BW and average daily gain during the trial (p>0.05). The average daily feed intake and feed conversion ratio of turkey toms fed with MOS were higher than those of control and SC groups during the overall period (p<0.05). The dietary treatments did not affect carcass yield, breast meat, thigh, wing, liver, heart, empty gizzard, intestine, and abdominal fat pad proportions and meat pH, composition and pigmentation (p>0.05). These results suggest that the addition of MOS and SC is not likely to produce any performance or carcass characteristics in finishing turkeys at 10 to 20 wks of age.
The response of broiler chicks to intubation of nutrients (starch, casein, soybean oil or their combinations) into the crop immediately after hatch was evaluated for performance, intestinal development, meat yield and immune competence up to 35 d of age. A control group with no access to feed and two test groups fed either inert material (sawdust) or starter diet for the initial 24 h after hatch were compared with nutrient intubated groups (n = 7). A total of 300 broiler chicks were equally distributed to 10 dietary groups with 6 replicates of 5 chicks each. After 24 h of hatch, all groups were fed ad libitum the starter (0-21 d) and finisher diets (22-35 d). Results indicated that post-hatch intubation of starch into the crop significantly (p${\leq}$0.05) improved body weight (at 14 and 35 d of age), readyto-cook meat yields, weights of breast muscle and small intestine segments, cell-mediated immune response, ND titers and weight of bursa compared to chicks starved or fed sawdust during the initial 24 h after hatch. However, chicks with access to feed immediately after hatch or intubation of starch, soybean oil, starch+casein, starch+soybean oil or starch+casein+soybean oil exhibited similar positive effects. Intubation of casein either alone or in combination with soybean oil was superior to the starved or sawdust fed groups, but inferior to other groups for all the parameters studied. It was concluded from the study that intubation of starch individually or in combination with casein and/or soybean oil effectively circumvented the negative effects of post-hatch starvation for 24 h. Among the nutrients intubated, carbohydrate (starch) was better utilized by the chicks than protein (casein) or fat during the initial post-hatch period.
Background: Dietary fats can alter the deposition and distribution of body fats in ruminants. The deposition and distribution of body fat play a vital role in the quality of ruminant carcasses and are of great commercial value since they influence the profitability and consumer acceptability of ruminant meat. The current study examined the effects of dietary blend of 80 % canola oil and 20 % palm oil (BCPO) on carcass characteristics, meat yield and accretion of fatty acid (FA) in subcutaneous, omental, perirenal, and mesentery adipose depots and m. supraspinatus (SS) in goats. Methods: Twenty four Boer crossbred bucks (BW $20.54{\pm}0.47kg$) were randomly assigned to diets containing on DM basis 0, 4 and 8 % BCPO, fed for 100 d and harvested. Results: Diet had no effect (P > 0.05) on slaughter weight, dressing percentage, carcass and non-carcass components, meat yield, color, moisture and carotenoid contents and weight of adipose tissues in goats. The proportion of C18:1n-9 and cis-9 trans-11 CLA in the omental, perirenal and SS was higher (P < 0.05) in goats fed 4 and 8 % BCPO compared with the control goats. Dietary BCPO reduced (P < 0.05) the proportion of C14:0 in the omental, perirenal and mesentery depots, C18:0 in the perirenal depot, C16:0 in the SS and C16:1n-7 in the SS, omental and perirenal tissues. Dietary BCPO enhanced the proportion of C18:1 trans-11 Vaccenic and C18:3n-3 in SS and C20:5n-3 in SS and mesentery depot. No significant changes were found in the FA composition of subcutaneous depot. Conclusions: Results indicate that dietary BCPO can be utilized to alter the FA composition of adipose tissues without detrimental effects on carcass characteristics in goats. Nonetheless, dietary BCPO is not an effective repartitioning agent for body fats in goats.
