어유과 쑥 펠렛의 급여가 돼지고기의 품질에 미치는 영향 (Effect of Feeding Fish Oil and Mugwort Pelleted Addition on Meat Quality of Pork)

  • 본 연구는 어유 1%와 쑥 펠렛 사료의 첨가수준(0, 1, 3, 5%)에 따라 돼지고기의 품질을 검토하고자 돼지 40두를 공시하여 사용하였다. 돼지의 증체량은 유의성이 없었다. 어유와 쑥 펠렛 사료의 급여 수준에 따른 돈육의 일반성분 중 조지방은 감소하는 경향이었고(p<0.05), 수분과 조단백질 및 조회분은 유의성이 없었다. 총콜레스테롤, HDL-C, 중성지방은 처리구에서 높았고, LDL-C은 대조구보다 처리구에서 낮았다(p<0.05). pH, 보수성 그리고 전단력은 대조구보다 처리구에서 높았으며, 특히 T3구에서 가장 높았다. 육색은 처리구에서 대조구보다 $L^*$값이 높아 밝은 색을 유지하였다. 관능평가 결과 어유와 쑥 펠렛의 급여구에서 연도와 풍미가 높은 점수를 나타내었고 특히 T2와 T3구에서 유의적인 결과를 보였다(p<0.05).

제주도 토종 돼지고기의 품질에 영향을 미치는 건조 감귤 부산물 급여 효과 (Feeding Effect of Dried Citrus Byproduct on the Quality of Jeju Native Pig Meat)

  • This study was carried out to investigate the possibility for utilization and the effectiveness of citrus byproducts on the nutritional composition and sensory score of Jejudo native pig meat. The groups are consisting of the Jejudo native pig loin without citrus byproduct ($JNP-T_0$) and the Jejudo native pig loin fed with 8% and 15% citrus byproduct during growing and fattening period($JNP-T_1$). The contents of moisture, crude protein, crude fat, crude ash, calorie, cholesterol content Mg, P, K, Na, vitamin $B_1\;and\;B_2$, total amino acid, and total free amino acid content were not significantly different between $JNP-T_0$ and $JNP-T_1$(p>0.05). It was found that palmitic acid($25.301{\sim}27.403%$) was the highest one among saturated fatty acid while oleic acid($42.234{\sim}43.061%$) was the highest among unsaturated fatty acid in both groups. In case of sensory score, the color and aroma of raw meat, and the flavor preference of boiled meat of $JNP-T_0$ were higher than those of $JNP-T_1$(p<0.05). But the taste, texture, juiciness and palatability of boiled meat were not influenced by feeding of citrus byproduct.

성게 껍질 분말의 급여가 계육의 이화학적 특성에 미치는 영향 (Influence of Dietary Sea Urchin Shell Powder on Physico-Chemical Properties of Chicken Meat)

  • 본 연구는 성게 껍질 분말을 사료내 첨가하여 그 첨가 수준(0, 1, 3, $5\%$)에 따라 계육의 관능검사, 육색, 지방산 및 아미노산 조성 등의 이화학적 특성을 검토하고자 broiler 160수를 공시하여 실시하였다. 전단력은 대조구보다 처리구에서 높고, 보수성은 대조구에서 높았으며(P<0.05), 가열감량, pH는 유의성이 인정되지 않았다. 관능검사 결과 성게 껍질 분말 급여구에서 연도, 다즙성, 풍미가 높은 점수를 나타내었는데 특히 T2에서 유의적인 (P<0.05) 차이를 나타내었다. 육색은 처리구에서 대조구보다 비교적 L$\ast$ 값이 낮고, a$\ast$ 값이 높아 육색이 어두운 편이었다. 대조구에 비해 처리구에서 oleic acid 함량이 유의하게 높거나 높은 경향을 나타내었으며, 총아미노산 함량은 대조구보다 처리구에 많은 함량을 나타내었다. 본 실험 결과 육계사료 내에 성게 껍질 분말의 급여는 관능검사의 결과를 개선할 것으로 사료된다.

  • 지방산 조성은 고기의 풍미에 영향력 있는 중요한 경제 형질 중 하나이며, 다양한 유전자들의 효과가 알려져 있다. 본 연구는 한국 재래닭의 지방산 조성에 유의적인 영향을 미치는 것으로 조사된 6개의 후보 유전자들(DEGS1, ELOVL6, FABP3, FABP4, FASN, SCD)의 51개 SNP 조합에 대한 추가적인 분석결과로, 선행연구를 통하여 확인된 SNP 조합들이 가지는 상위성 효과에 대하여 조사하였다. 본 연구를 통하여 매우 다양한 유형의 SNP 조합들이 한국 재래닭의 지방산 조성에 영향을 미치는 것으로 확인되었으며, 추후에 지방산 조성과 같은 다유전자성 형질들을 실제 육종 프로그램에 활용하기 위해서는 이러한 분석이 이루어져야 될 것으로 생각된다. 본 연구 결과는 한국 재래닭의 육질, 특히 지방산 조성의 개선을 위한 유전학적인 정보를 제공할 수 있을 것으로 생각된다.

Clean Label Meat Technology: Pre-Converted Nitrite as a Natural Curing

  • Clean labeling is emerging as an important issue in the food industry, particularly for meat products that contain many food additives. Among synthetic additives, nitrite is the most important additive in the meat processing industry and is related to the development of cured color and flavor, inhibition of oxidation, and control of microbial growth in processed meat products. As an alternative to synthetic nitrite, preconverted nitrite from natural microorganisms has been investigated, and the applications of pre-converted nitrite have been reported. Natural nitrate sources mainly include fruits and vegetables with high nitrate content. Celery juice or powder form have been used widely in various studies. Many types of commercial starter cultures have been developed. S. carnosus is used as a critical nitrate reducing microorganism and lactic acid bacteria or other Staphylococcus species also were used. Pre-converted nitrite has also been compared with synthetic nitrite and studies have been aimed at improving utilization by exploiting the strengths (positive consumer attitude and decreased residual nitrite content) and limiting the weaknesses (remained carcinogenic risk) of pre-converted nitrite. Moreover, as concerns regarding the use of synthetic nitrites increased, research was conducted to meet consumer demands for the use of natural nitrite from raw materials. In this report, we review and discuss various studies in which synthetic nitrite was replaced with natural materials and evaluate pre-converted nitrite technology as a natural curing approach from a clean label perspective in the manufacturing of processed meat products.

안전한 건식 숙성육 제조를 위한 미생물 위해평가 및 HACCP 적용 방안 (Microbial Risk Assessment and HACCP Plan for the Safe Production of Dry Aged Meat)

  • Dry-aging is one of the traditional aging processes, especially for beef. This aging process is being popular, because it produces unique brown/roasted flavor and texture that consumers prefer. However, as it is exposed to outside without packaging food safety concerns have been raised. The objective of this study was to investigate the presence of total aerobic bacteria (TAB) and pathogenic bacteria in manufacturing environment and suggest the safety management plan for the production of dry-aged meat. Surface samples from 66 environmental and 6 beef carcass samples were collected. According to the monitoring results, the contamination levels of TAB were in the order of shelves (5.4±1.1 Log CFU/cm2), cotton gloves (2.9±0.2 Log CFU/cm2), and door knobs (2.8±0.4 Log CFU/cm2) in the dry-aging room. In the door knobs, the level of mold was higher than that of yeast. These results indicate that the mold spores may be cross-contaminated with environmental factors inside the aging room. The risk factors that may occur during the manufacturing process were presented and possibility of risk was determined. From the aspect of microbiology, aging and trimming steps were determined as the critical control points. The temperature of the aging room should be maintained below 10℃ and the humidity below 75-85%. Based on the monitoring and the risk assessment of the dry-aging process, we prepared the safety management plan for the production of dry-aged meat, and it should be useful in improving the food safety of dry-aged meat.

HVP를 이용한 Maillard 반응에 의한 Meatlike Flavor의 생성 (Formation of Meatlike Flavors by Maillard Reaction Using Hydrolyzed Vegetable Protein (HVP))

  • HVP를 기본 원료로 하여 몇몇 반응 전구물질을 첨가하여 여러 가지 반응 조건에 따라 meatlike flavor를 제조하였다. pH와 온도는 반응액의 갈변화도에 큰 영향을 미쳐, pH와 온도가 높을수륵 갈변화 속도는 빨라졌다. 반응액에 잔존하는 환원당과 유리 아미노산은 반응 1시간까지 급격히 감소하였으나 반응 온도의 영향은 거의 받지 않았다. 각 아미노산의 경우, glutamic acid와cysteine은 반응 시간이 경과함에 따라 감소하나, glycine과 methionine은 거의 변화가 없었다. Maillard 반응을 통해 생성되는 meatlike flavor외 향기 성분은 49종이 통정되었으며, 이중에 3-methyl butanal, 2-methyl tetrahydrothiophen-3-one, 3,4-d imethyl thiophene, 2,4-dimethyl thiagole 둥의 잘 알려진 natural meat flavor 성분들도 포함되어 있었다. $120^{\circ}C$에서 제조된 반응액을 관능 평가한 결과, 반응 1시간대의 반웅액이 5% 유의수준에서 구수한 맛이 가장 강하였고, 이미가 가장 적었다. 이상의 결과에서, 본 반응 system에서는 반웅 1 시간내에 대부분의 Maillard 초기 반응이 일어나고, 그이후, 반응이 진행될수록 구수한 맛을 내는 성분은 줄어들고, 이미를 나타내는 성분이 증가한다고 추정되었다.

Effects of β-glucan with vitamin E supplementation on the growth performance, blood profiles, immune response, pork quality, pork flavor, and economic benefit in growing and finishing pigs

  • Objective: This study was conducted to evaluate the effects of β-glucan with vitamin E supplementation on the growth performance, blood profiles, immune response, pork quality, pork flavor, and economic benefit in growing and finishing pigs. Methods: A total of 140 growing pigs ([Yorkshire×Landrace]×Duroc) were assigned to five treatments considering sex and initial body weight (BW) in 4 replications with 7 pigs per pen in a randomized complete block design. The experimental diets included a corn-soybean meal-based basal diet with or without 0.05% or 0.1% β-glucan and 0.02% vitamin E. The pigs were fed the diets for 12 weeks (phase I, 0 to 3; phase II, 3 to 6; phase III, 6 to 9; phase IV, 9 to 12). The BW and feed intake were measured at the end of each phase. Blood samples were collected at the end of each phase. Four pigs from each treatment were selected and slaughtered for meat quality. Economic benefit was calculated considering the total feed intake and feed price. Pork flavor was analyzed through inosine monophosphate analysis. Results: The average daily gain and feed efficiency were improved compared to the control when β-glucan or vitamin E was added. Supplementing 0.05% β-glucan significantly increased the lymphocyte concentration compared to the addition of 0.1% β-glucan and the content of vitamin E in the blood increased when 0.02% vitamin E was added. The treatment with 0.1% β-glucan and 0.02% vitamin E showed the most economic effect because it had the shortest days to market weight and the lowest total feed cost. The addition of β-glucan or vitamin E had a positive role in improving the flavor of pork when considering that the content of inosine monophosphate was increased. However, carcass traits and meat quality were not affected by β-glucan or vitamin E. Conclusion: The addition of 0.1% β-glucan with 0.02% vitamin E in growing and finishing pig diets showed great growth performance and economic effects by supplying vitamin E efficiently and by improving the health condition of pigs due to β-glucan.

효소처리 조직대두단백을 이용한 햄버거패티의 품질특성 (The Quality Characteristics of Hamburger Patties Based on Enzyme Treated Textured Soy Protein)

  • This study addresses the development of a soy hamburger patty containing enzyme-treated textured soy protein (TSP) as a meat analogue. In order to reduce the beany flavor and enhance the texture, TSP was treated with 0.3% Flavourzyme for 5, 10, 20, or 30 min. The degree of hydrolysis and the water holding capacity of the TSP increased with increasing hydrolysis time. The oil binding capacity of the TSP also increased with increasing hydrolysis time, approaching the maximal value, 175.82%, at 30 min, whereas that of pork scored with the lowest value of 128.67%. The volume of pork was reduced to 81.5% as the result of heat treatment, whereas that of the TSP increased to 140.57%. The values of 'L', 'b', and '${\Delta}E$' differed significantly (p<0.001) with heat treatment, but the 'a' values did not differ significantly. With regard to texture, the hardness values were highest in the pork hamburger patty (PHP), and were lowest in the soy hamburger patty (SHP) containing untreated TSP. The hardness of the SHP containing TSP treated for 20 min did not differ significantly from that of the PHP. The cohesiveness and gumminess of the SHP treated for 20 min were highest, whereas those treated for 10 min were the lowest. The gumminess of the SHP treated for 20 min did not differ significantly from that of pork. The chewiness of the PHP was the highest, whereas that of the SHP treated for 5 min was the lowest. In our sensory evaluation, PHP evidenced the highest scores, followed by the SHP treated for 30 min, as color, texture, beany flavor, and overall quality all improved as the consequence of increasing enzyme treatment duration. In conclusion, it is believed that SHP has great potential as a substitute for meat, in that the flavor, texture, and beany flavor of SHP did not differ significantly from those of PHP.

기계발골가금육의 특성 및 이용에 관한 연구 (Chemical and Functional Characteristics of Mechanically Deboned Chicken meat and its Utilization in Processed Meat)

  • 국내의 산란노계의 브로일러로부터 생산된 수동 및 기계발골육의 수율, 화학적 조성, 기능적특성, 저장성, 미생물 등을 조사하고 이들 발골육을 여러 가지 비율로 배합하여 제조한 치큰패티와 프랭크의 특성성, 보존성, 기호성을 평가하였던 바 다음과 같은 결과를 얻었다. 1) HDCM 수율은 도체 중의 35%, MDCM은 45%로서 총 산육량은 도체중의 80%에 이르렀다. 2) MDCM은 수분 65%, 단백질 12%, 지방 20%회분 1.7%, Ca 0.2-0.4%로서 HDCM에 비해 수분과 단백질은 낮고 지방, 회분, Ca은 현저히 높았다. 또한 MDCM의 총 색소함량은 HDCM의 2.5배로서 이는 주로 Hemoglobin의 증가에 기인하였다. 3) MDCM의 고기 g당 유화능은 HDCM의 70%에 불과하나 단백질 g당 유화능은 오히려 더 높았는데 이는 MDCM의 염용성 단백질 구성비가 HDCM보다 높았기 때문이었다. 4) -2$0^{\circ}C$에서의 냉동저장 중 MDCM의 TBA value는 4주 이후부터 급격히 증가하였으므로 MDCM의 최적 저장기간은 4주 이내로 추정되었다. 5) MDCM의 미생물수는 약 1.8$\times$$10^{6}$g/ 으로서 HDCM이나 적육의 미생물수와 큰 차이가 없었다. 6) MDCM을 사용한 chicken patty의 TBA value는 냉동저장중 계속 증가하였으나 8주까지는 보존성이 양호하였다. 7) chicken patty의 색과 기호성에 있어 MDCM을 30% 첨가한 것이 가장 우수하였고 50%까지도 양호하였으나 70%이상 첨가는 권장할 수 없었다. 8) Frankfurter의 제조에 있어 MDCM을 50%까지 첨가한 것의 기호성이나 조직적 특성은 HDCM으로만 만들 제품과 비등하게 양호하였으나 70%이상 첨가는 불량하였다. 9) MDCM을 함유한 frankfurter의 보존성은 4$^{\circ}C$에서 4주까지 무난하였으며 저장 기간에 따른 TBA가의 변화는 거의 없었다. 10) 결론적으로 patty나 frank등의 육제품 제조에 있어 MDCM을 총 원료육의 30-50%까지 첨가하여도 조직이나 기호성이 우수한 제품을 생산할 수 있었다.
