This study was attempted to observe the possibility of body fat distribution and fasting serum insulin as potential predictive factors for obesity and energy intake. Subjects participated in this study were seventeen pairs of upper body type women and lower body type women whose age weight BMI daily energy expenditure per body weight were equally matched, Waist to hip girth ratio(WHR) was measured as a criteria of body fat distribution. Comparison of eating behavior between upper body type and lower body type women did not show any significant differences in meal size meal duration and energy intake per minute While serum free fatty acid level was lower in upper body type women percentage of body fat and fasting serum insulin triglycerde level of upper body type women were statistically higher than those of lower body type women(p<0.05) Our data may indicate the possibility that sympathetic nervous system activity was suppressed in upper body type women which needs ti be examined in future studies. In addition since the upper body type women were dieting over the period of survey with the intention of weigh loss we can conclude that upper body type women had larger variabilities than lower body type women in terms of daily energy intake level.
Serratiopeptidase (SRP), a 50 kDa metalloprotease produced from Serratia marcescens species, is a drug with potent anti-inflammatory property. In this study, a powerful statistical design, evolutionary operation (EVOP), was applied to optimize the media composition for SRP production in shake-flask culture of Serratia marcescens NRRL B-23112. Initially, factors such as inoculum size, initial pH, carbon source, and organic nitrogen source were optimized using one factor at a time. The most significant medium components affecting the production of SRP were identified as maltose, soybean meal, and $K_2HPO_4$. The SRP so produced was not found to be dependent on whey protein, but rather was notably induced by most of the organic nitrogen sources used in the study and free from other concomitant protease contaminant, as revealed by protease inhibition study. In addition, experiments were performed using different sets of EVOP design with each factor varied at three levels. The experimental data were analyzed with a standard set of statistical formula. The EVOP-optimized medium, with maltose 4.5%, soybean meal 6.5%, $K_2HPO_4$ 0.8%, and NaCl 0.5% (w/v), gave a SRP production of 7,333 EU/ml, which was 17-fold higher than the unoptimized media. The application of EVOP resulted in significant enhancement of SRP production.
To clarify central mechanisms of ginsenosides, changes in ingestive and ambulatory behaviors were investigated in rats after single or continuous infusion into the third cerebroventricle or various hypothalamic loci. Following single infusion into the third cerebroventricle, ginsenoside Rbl at doses of 0.05, 0.10 and 0.20 $\mu$mol dose-dependently decreased food intake. None of the doses tested affected ambulation. Drinking suppression was only observed at the maximum dose of 0.20 $\mu$mol. Equimolar injections into the peritoneum had no effects on ingestive behavior or ambulation. These findings indicated that ginsenoside Rbl specifically and centrally inhibited food intake. According to analyses of daily feeding patterns, this feeding suppression was the result of a decrease in meal size, not from changes in the postprandial intermeal interval or eating speed. The suppressed food intake was accompanied by hyperglycemia, leaving plasma insulin unaffected. Unilateral micro injection of 0.01 u mot ginsenoside Rb, into the ventromedial hypothalamus specifically decreased food intake, although equimolar injection into the lateral hypothalamic area did not affect food intake. Following continuous infusion of Rg, into the third cerebroventricle, the feeding inhibition due to surgical operation was attenuated. Rbs administered by the same procedure abolished the toxic effect of toxohormone-L on food intake. Taken together, these findings suggest that ginsenoside as a whole may have pharmacological potency to maintain feeding at a certain physiological level.
This study on satisfaction with school food service (FS) programs was conducted with 485 middle school students and 515 high school students based on FS management type. There were four types of FS management: independent-conventional (IC), independent-commissary (ICM), contract-conventional (CC), and contract-delivery (CD). About seventy percent of the students expressed satisfaction with the food quantity of the school lunches. But one third of the students, who felt the quantity was insufficient, cited the small size of the rice serving. Many high school students cited the small size of the side dishes as well as the rice serving. It is suggested that the meal quantity should be determined in consideration of the students' physical development. The satisfaction with FS sanitation was lower than that with the meal quality, eating environment, and environment of dining room with respect to all four types of FS management, and was lowest in the CD. It is suggested that FS sanitation should be managed more thoroughly for the students' safety, and that the school FS Committee should carefully monitor the sanitary management of the contract FS companies by means of a well-designed and monitored management system. Most of middle and high school students expected good taste and a diversity of foods in their school lunches. Food taste should be improved, and various food materials and cooking methods should be used for balanced nutrition and greater student satisfaction, particularly in contract FS types (CC and CD).
The objective of this study was to develop nutrition education materials for older adults, 'nutritional management for healthy aging'. A booklet and four leaflets were developed based on lesson plans. Topics of the lesson plans included eating habit assessment. Korean food guide pyramid, meal planning, eating sensibly and weight management. The titles of the leaflets were 'Eating right for healthy aging', 'Eat calcium-rich foods', 'Enjoy fruits & vegetables' and 'Weight management'. Illustrations and icons appropriate to the texts were designed using illustrator 9.0 and Photoshop 6.0. Booklet (letter size, 5 chapters, 44 pages) and leaflets (B4 size, 6 sections) focused on modifying undesirable eating habits, providing practical tips for desirable behaviors, and behavioral modification such as recording in a food diary, goal setting and increasing self-efficacy. The drafts were pilot-tested by interviews with older adults(n=10), and minor changes were made. The characteristics of revised materials are as follows; i) materials focused on providing desirable eating behaviors for healthy aging, ii) messages were simple and specific, iii) large fonts(13 pt) were used and materials included interesting pictures and illustrations, iv) materials provided tips for balanced diets and recipes fur older adults, v) materials included sections for participation of learners including assessment of nutritional risk factors and obesity, meal planning and games. The revised materials are self-explanatory and can be used by older adults and in nutrition education for older adults.
BACKGROUND/OBJECTIVES: The 6-23 months for infants is the longest period in the "first 1,000 days" of life. This period is very important for child development, so complementary feeding (CF) practices should be optimized to maximize children's potential for growth and development. The aim of this study was to analyze the CF practices and nutritional status of children aged 6-23 months. SUBJECTS/METHODS: For this cross-sectional study, 392 children aged 6-23 months were selected using stratified random sampling. Socio-demographic data were collected through interviews. CF practices, collected by interviews and repeated 24-hour food recall method, were the timely introduction of CF, minimum meal frequency, dietary diversity and minimum acceptable diet, consumption food rich in proteins and vitamin A. Nutritional status was assessed using the indicators of underweight, wasting and stunting. To analyze the association between socio-demographic indicators and CF with nutritional status, the chi-square test with a confidence interval of 95% was used. RESULTS: Results showed that 39% were exclusively breastfed, only 61% received prolonged breastfeeding and 50% received timely introduction of CF. Minimum meal frequency was met by 74% of subjects, but dietary diversity and minimum acceptable diet were only realized in 50% and 40% of the children, respectively. The prevalence of underweight, wasting, and stunting were 26%, 23%, and 28%, respectively. Age of the child, birth order, birth weight, parents' education level, family size and incidence of fever and diarrhea during the previous two weeks were associated with underweight, while child's birth order, fathers' education level, mother's age, family size, completion of the age-appropriate vaccination and fish consumption frequency were associated with wasting. Age of the child, incidence of fever and acute respiratory infection, and fortified food consumption were associated with stunting. CONCLUSIONS: Suboptimal CF practices and high prevalence of underweight, wasting and stunting were found among children aged 6-23 months old in Aceh. These results highlight the need to improve CF and nutritional status.
A black leg disease in wasabi occurred, showed black spots on the leaves, changed a rhizome color to black by invading the vascular bundles of stem and root, thus lowered the quality of the rhizome. The mycelium of the pathogen was yellow at first and then turned to dark yellow on oat meal agar medium. The pycnidium was globose or subglobose, dark brown in color, and 44~120$\times$28~170 ${\mu}{\textrm}{m}$ in size and had one or two ostioles on the upper part. The pycnidiospores are single-celled, hyaline, and 4~6$\times$1.2~2.3 ${\mu}{\textrm}{m}$ in size. The causal pathogen was identified as Phoma wasabiae. The black leg disease of wasabi occurred within the range of 28 to 32% at Chonbuk province in 1994~1995. The disease was appeared from April to October and severe in June and July. The black leg caused by P. wasabiae was first described in Korea.
The Kimchi intake of elementary students in both school and home is decreasing due to their westernized eating habits which have been affected by the rapid economic growth and industrialization in our modem society. The purposes of this study were to examine the influence of menu selections on the Kimchi intake rate and to provide basic data for an appropriate Kimchi serving size to reduce the plate-waste rate. The results showed that the average daily intake rate of Kimchi of low-grade students was 58.2%, equating to 6${\sim}$18 g, compared to 64.6% for high-grade students, equivalent to 13${\sim}$24 g. Correlation analysis of the intake rate of menu items and Kimchi showed that the Kimchi intake rate increased with increasing total meal intake rate, rice intake rate, soup intake rate, rice mixed with grains intake rate, clear soup intake rate and soybean-paste soup intake rate, but that it decreased as the intake rate of seasoned uncooked vegetables of high-grade students increased. This study is expected to be utilized as a solution to increase the Kimchi intake rate of elementary school students, and also to determine the proper serving size per person on the menu items by grade.
The use of semiquantitative food frequency questionnaires to estimate dietary intake has become widespread in nutritional epidemiologic studies. It had been suggested that knowledge about a person's usual portion size of each meal in addition to consumption frequency will improve the accuracy of this method. This study was performed to investigate the dietary intake status(nutrient, food, and dish intake) and one portion size of commonly consumed food and dishes to develop a semiquantitative food frequency questionnaire that will be used to expore the relationship between the incidence of cardiovascular disease and diet in Korean women after menopause. Intake of food or dish in 123 elderly women were measured by 3-day food records in March to May, 1996. The results obtained in this study were summarized as follow : 1) Calcium, vitamin A, and vitamin E intakes were less adequate than Recommended dietary allowances(RDA). 2) The subjects who consumed more than 20% of the energy from fat were 35% and the subjects consumed dietary cholesterol more than 300mg were 18$\%$. 3) The most frequently consumed foods or dishes by the subjects were Korean cabbage kimchi〉cooked rice, well-milled〉laver〉apple〉strawberry〉mixed rice〉soybean soup. 4) The major dish groups which contributed to most daily nutrient intakes were cooked rice, Korean cabbage kimchi, soybean soup because of large amount and high frequency of intake although they do not contain large amount of most nutrients. 5) One portion size of commomly consumed foods and dishes in elderly women was different from one portion size suggested in the Korean nutrition society. This study provides information for the design of data-based semiquantitative food frequency questionnaire. for Korean elderly women. Objective: This research was carried out to investigate the effects of corn particle size on the apparent total tract digestibility (ATTD) of energy and nutrients fed to pigs at four different growth stages and therefore to provide basis for better application of corn in pig feeds. Methods: Eighteen weanling piglets, 18 growing barrows, 24 gestating sows and 24 lactating sows were used in this study. Within each stage, pigs were allotted to 1 of 3 or 4 corn-soybean meal diets which were formulated with different corn particle size in a completely randomized design with 6 replicate pigs per diet. Each stage lasted for 19 days, including 7 days for cages adaptation, 7 days for adaptation to diets and followed by 5 days for total collection of feces and urine. Results: For nursery and growing stages, the results showed that digestible energy content and ATTD of gross energy (GE), dry matter (DM), neutral detergent fiber (NDF), and acid detergent fiber (ADF) was increased (p<0.05) as the corn particle size reduced. Meanwhile, the metabolizable energy content and ATTD of crude protein (CP) tended to increase. For gestating sows, no differences were found in the ATTD of nutrients among dietary treatments. As for lactating sows, there were linear and quadratic increases (p<0.05) in the ATTD of DM, GE, NDF as the corn being finer milled. Quadratic response in ATTD of ADF and CP (p<0.05) were observed as sows fed with four different diets. Conclusion: Reducing corn particle size can increase digestibility of nutrients fed to young pigs and lactating sows. No effects were observed in present experiment when gestating sows were fed with different particle sized corn.
