The purpose of this study was to assess dietary variety by food habits(regularity of meal time, regularity of repast, repast of breakfast, lunch, and supper, number of suppers and night snacks per week, and duration of meal) in 138 female university students residing in Bucheon and its adjacent area. Food habits were assessed via a self reporting questionnaire, and a 3-day dietary recall survey was conducted by interviewing. Dietary variety was assessed by dietary diversity score(DDS), meal balance score(MBS), and dietary variety score(DVS). The average DDS, MBS, and DVS were $3.87{\pm}0.57$, $7.27{\pm}1.48$, and $12.59{\pm}3.14$, respectively. The DDS($2.21{\pm}0.83$) of the breakfast in the group in which the regularity of meal time per week was 5~7 days was significantly higher($p$ <0.01) than the DDS($1.47{\pm}0.96$) of the breakfast in the group in which the regularity of meal time per week was ${\leq}$2 days. The MBS($6.69{\pm}1.43$) of the group in which the regularity of meal times per week was ${\leq}2$ days was significantly lower($p$ <0.01) than the MBS of the group in which the regularity of meal time per week was ${\geq}3$ days. The DDS($2.38{\pm}0.69$) of the breakfast in the breakfast over eating group was significantly higher($p$ <0.001) than the DDS($1.83{\pm}0.83$) of breakfast under eating group. The MBS($6.56{\pm}1.46$) in the breakfast skipping group was significantly lower($p$ <0.01) than the MBS(about 7.6) in other breakfast eating groups, and the DVS ($13.79{\pm}3.21$) in the breakfast over eating group was significantly higher($p$ <0.05) than the DVS($11.53{\pm}2.94$) in the breakfast skipping group. The DDS of breakfast, lunch, and snack were not significantly correlated with the number of suppers per week, but the DDS($2.65{\pm}0.52$) of the supper in the group in which the number of suppers per week was 7 was significantly higher($p$ <0.05) than the DDS($2.22{\pm}0.49$, $2.25{\pm}0.62$) of the supper in the group in which the number of suppers per week was ${\leq}2$, 3~4. The DDS, MBS and DVS were not significantly correlated with the number of suppers per week. The DDS($1.33{\pm}1.25$) of the breakfast in the group in which the number of night snacks per week was 6~7 was significantly lower($p$ <0.05) than the DDS of the breakfast in the group in which the number of night snacks was ${\leq}5$. Also, the DDS($4.42{\pm}0.32$) per day in the group in which the duration of meal was <10 min. was significantly higher($p$ <0.01) than the DDS($3.51{\pm}0.53$) per day in the group in which the duration of meal was ${\geq}30$ min. These findings suggest that nutritional education based on female university students' eating variety and food habits(regularity of meal time, regularity of repast, repast of breakfast, lunch, and supper, number of suppers, and night snacks per week, and duration of meal) may be required to improve dietary variety.
A trial was performed to study the effects of feeding a diet containing solid-state fermentation rapeseed meal (FRSM) replaced soybean meal (SBM) on growth performance and serum biochemistry parameters of ducks and then to determine the appropriate proportion of soybean meal replacement. The 75% rapeseed meal and 25% blood meal were mixed and inoculated with the Lactobacillus plantarum and Bacillus subtilis. Over the 21-day fermentation, isothiocyanates were reduced from 72.7 to 14.1 mmol/kg. A total of 1,280 fifteen-day-old Cherry Valley ducks were randomly allocated into 4 dietary treatments, 4 replicate groups of 80 ducks each for a 30-day feeding trial. In four treatment groups, fermentation rapeseed meal replaced soybean meal at 0, 33, 67 or 100%, respectively. Results showed that feed intake of ducks fed 100% FRSM was greater (p<0.05) than SBM and partial FRSM in both the finishing period (31-45 d) and entire feeding period (15-45 d). Daily gain increased gradually in the three treatment groups with augmenting FRSM over in the whole study period. In the growing period (15-30 d), compared with the SBM group, phosphorus and calcium content in serum from the FRSM group was improved (p<0.05). Total protein concentration was lower in ducks fed 100% FRSM than SBM and 33% FRSM (p<0.05). Concentrations of IgM were dramatically higher for animals fed 100% FRSM than in the SBM, 33% FRSM and 67% FRSM groups. In the finishing trail stage (31-45 d), only serum IgG content in 100% FRSM group was improved (p<0.05). Therefore, rapeseed meal fermented with Lactobacillus plantarum and Bacillus subtilis is a promising alternative protein source and fermented rapeseed meal can completely replace soybean meal in duck diet and potentially reduce the cost of duck production.
The effect of flaxseed meal on broiler performance, carcass characteristics, alpha-linolenic acid contents, and organoleptic characteristics of chicken meat was studied during a 42 day experiment. Broiler chicks were randomly allotted to 4 experimental groups and fed iso-energetic and iso-nitrogenous diets containing flaxseed meal at 0, 5, 10 and 15%. Flaxseed meal did not affect the weekly body weight of broiler chicks during the first two weeks but thereafter weekly body weight reduced among flaxseed meal groups. At the end of $6^{th}$ week, birds fed on 15% flaxseed meal showed a reduction of 8% in body weight compared to the control group. Control group had significantly higher weight gain with slightly higher feed consumption and better feed conversion ratio (FCR), protein efficiency ratio (PER), and energy efficiency ratio (EER) than the flaxseed meal groups. Among the treatments, birds of 5 and 10% flaxseed meal groups had significantly better FCR, PER and EER compared to those of the 15% flaxseed meal group. The carcass characteristics data indicated a significant reduction in the eviscerated weight and breast yield at 15% flaxseed meal in the diet as compared to other dietary groups. However, the alpha-linolenic acid content in both breast and thigh meat was higher with an increasing level of flaxseed meal in the diets without affecting the sensory acceptability of meat. Based on the present study, up to 10% of flaxseed meal may be used in broiler diet to enhance the alpha-linolenic acid content in the broiler meat.
This study was conducted to understand the Ramyun's selection attributes of Korean adults and examine differences in demographic characteristics and meal intake behavior among three groups of samples divided based on the Ramyun's selection attributes. Self-administered questionnaires were completed by 702 adults, and data were subjected to frequency analysis, chi-square analysis, factor analysis, reliability tests, cluster analysis, and discriminant analysis using SPSS. The results of the study were as follows. The Ramyun's selection attributes for Korean adults investigated were food quality (four variables), price (three variables), and company reliability (four variables). Cluster analysis resulted in the subjects being divided into three groups according to their Ramyun's selection attributes, a high-selection group, mid-selection group, and low-selection group. Three groups of samples classified by Ramyun's selection attributes differed based on demographic characteristics (gender and education level) and meal intake behavior (meal numbers, reason for meal, meal time, and meal size).
Eighteen water buffalo calves of Nili-Ravi breed (about 15 months age and of $147{\pm}12$ kg average body weight and mixed sex) were used with six animals on each treatment. All the animals were fed long wheat straw for ad libitum intake as the basal ration. Animals in group-I were supplemented with ad libitum amount of urea molasses block having cotton seed meal (CSMB) while the animals in group-II were supplemented with ad libitum urea molasses block containing sunflower seed meal (SFMB) and group III animals were supplemented with a fixed amount of commercial concentrate feed (CCF). The experiment lasted for a period of 80 days (April to June). Results revealed a significantly decreased total feed intake (wheat straw+supplements) in group-III ($1,666{\pm}52$ g/h/d) as compared to group I ($2,299{\pm}194$ g/h/d) and group-II ($2,193{\pm}230$ g/h/d). Average daily supplement intakes were $891{\pm}87$; $666{\pm}104$ and $593{\pm}0$ grams per head in group I, II and III, respectively. Supplement intakes among groups were different (p<0.05). Average daily body weight gains (g/h) were $214{\pm}25$, $174{\pm}23 $and $183{\pm}24$ for group I, II and III, respectively. Feed conversion ratio (FCR) was found to be $10.74{\pm}1.12$, $12.60{\pm}0.88$ and $9.90{\pm}1.33$ grams for group No. I, II and III, respectively. The economic net benefit of live weight gain of calves were 7.63, 6.11 and 7.33 rupees/h/d for group No. I, II and III, respectively. Thus SFM can replace CSM and urea molasses blocks can replace commercial concentrates as supplement to basal ration of wheat straw.
This study was performed to investigate the differences in food choice, nutrition labeling perceptions, and prevalence of obesity due to meal skipping in Korean elementary school children. A national survey was performed in 2010 to collect data on food intake frequency, understanding of nutrition labeling, and body mass index from 2,335 fifth grade students in 118 elementary schools selected from 16 metropolitan local governments by stratified cluster sampling. The data were analyzed using the SAS 9.1 and SUDAAN 10.0 packages. Students who consumed three meals for 6-7 days during the past week were classified into the regular meal eating (RM) group (n = 1,476) and those who did not were placed into the meal skipping (MS) group (n = 859). The daily intake frequency of fruits, vegetables, kimchi, and milk was significantly lower in the MS group compared to that in the RM group (P < 0.001), whereas the daily intake frequency of soft drinks and instant noodles (ramyeon) was significantly higher in the MS group than that in the RM group (P < 0.05). The MS group demonstrated a significantly lower degree of understanding with regard to nutrition labeling and high calorie foods containing low nutritional value than that in the RM group. The distribution of obesity based on the percentile criteria using the Korean growth chart was different between the MS and RM groups. The MS group (8.97%) had a higher percentage of obese subjects than that in the RM group (5.38%). In conclusion, meal skipping was related to poor food choice, low perception of nutrition labeling, and a high prevalence of obesity in Korean fifth grade children.
Background: The VLCD that supplies only 400-800kcal meal per day has a lot of problems and can severely harm the health. Certain herbs are known to the side-effects such as weakness, skin dehydration, and dizziness. If VLCD with meal-replacement containing these hearbs can effectively minimize the side-effects, it make weight management easier and reduce any possible danger the health. Objectives: This prospective, double-blinded study is intended to compare the severity of symptoms induced by VLCD and weight loss between the case group supplied with meal-replacement herbal extracts(n=29) and controlled group supplied with meal-replacement not containing herbal extracts(n=29). This was with 52 volunteers for 4 weeks. The measurements of this experiment were as follows: symptoms caused by patients' subjective judgments, the result of blood test illustratingerol level, total protein etc., and changes in overall weight, fat mass and lean body mass. Result: we concluded that there are no significant differences in weight change between case group and controlled group, and that the total protein at the end of trial was significantly higher in case group than in controlled group, and triglyceride level at the end of trial was lower in case group than in controlled group. As expected, the side-effects such as hair loss and dehydration in skin are also lessin case group than in controlled group.
Objectives: The frequency of eating out among adolescents seems to be connected to a high rate of skipping breakfast and be interrelated to various nutritional problems. The purpose of this study was to assess the dietary habits of breakfast and eating out and investigate their relationships in male adolescents. Methods: This study conducted a cross-sectional survey. Dietary habits and eating out status were surveyed among 510 male students at a high school in Incheon and compared according to their breakfast skipping and breakfast type. Results: The percentages of subjects in the breakfast skipping group and breakfast group were 41.0% and 59.0%, respectively, and the breakfast group comprised a Korean meal group (74%) and a convenience meal group (26%). In the breakfast skipping group, the percentage of subjects buying and eating snacks due to hunger was 39.7%. Reasons for eating breakfast among subjects who ate breakfast were because parents prepared breakfast (41.9%) and out of habit (31.5%) in the Korean meal group, in contrast to because parents prepared breakfast (36.7%) and due to hunger (29.1%) in the convenience meal group (P < 0.001). Breakfast preparer was mother (91.4%) in the Korean meal group, in contrast to mother (67.1%) and self (20.3%) in the convenience meal group (P < 0.001). A high proportion of the breakfast group woke up at 07~07:30 or 06:30-07, whereas a high proportion of the breakfast skipping group woke up at 07~07:30 or after 07:30, showing a significant difference according to breakfast skipping (P < 0.001). A high proportion of the breakfast group spent 10,000 won (32.5%) a week eating out while a high proportion of the breakfast skipping group spent 20,000 won or more (28.2%), showing a significant difference (P < 0.01). Conclusions: About 40% of male high school students skipped breakfast and consumed snacks as a solution after breakfast skipping. The students who skipped breakfast spent more money on eating out. These results show that breakfast status may be related to eating out. Therefore, practical education on food choice and meal preparation along with regular breakfast instruction is needed in male adolescents.
This study was carried out to investigate the effects of dietary lipid sources and meal frequency on growing performance and lipid metabolism in Sprague-Dawley strain male rats. The experiment was conducted in 4$\times$2 factorial arrangement with 4 sources of dietary lipid(palm oil, beef tallow, soybean oil and hydrogenated soyben oil) and 2 meal frequencies(ad-libitum or meal feeding). During the 4-week feeding period the rats were fed either ad-libitum (AL) or a single daily 3-hour meal (09 : 02-12 : 00) during the dark period. In vitro cultures were carried out to study the cholesterol synthetic activity in hte liver prepared from rats used in feeding trials. And in vitro cultures were also carried out to study the lipogenic and lipolytic activity in the liver and adipose tissues prepared from rats used in feeding trials. Present data indicated that body weight gain, feed intake and FER of AS(ad-libitum+soybean oil)and AHS(ad-libitum+hydrogenated soybean oil) group were significantly(p<0.05) higher than those of the other groups. It was found that the feed intake of MF group was much less than that of AL group. Total body weight gained by MF group was only 60% of AL group. Growing performance was not affected by dietary lipid sources. The cholesterol synthetic activity in liver tissues culture was markedly(p<0.05) increased in MF diets, especially in soybean oil group. The lipogenic activity in liver tissues culture of MP(meal feeding+palm oil) and MHS(meal feeding+hydrogenated soybean oil)group was significantly (p<0.05) higher than that of AP(ad-libitum+palm oil) group and AHS(ad-libitum+hydrogenated soybean oil) group(p<0.05). Rats fed ad-libitum+beef tallow and fed meal feeding+beef tallow showed significantly(p<0.05) higher lipogenesis than the other groups. It was apparent that the lipogenic activity in liver tissues culture was not affected by dietary lipid sources and meal frequency. Lipolytic activity in liver tissue culture was significantly(p<0.001)different with meal frequency; MF group was higher than AL group, but was not greatly affected by dietary lipid sources. In the in vitro studies with adipose tissue, MF diets increased the lipogenic activity and inhibited the lipolytic activity in adipocytes. The lipogenic activity in adipocytes was significantly (p<0.001) different with dietary lipid sources and found to be beef tallow group was the higherst, but the sources of lipid in the diet did not exert any effect on the lipolytic acitivity.
This study was designed to find out opinions about free congregate site meals that the program served to improve nutritional status of low socio-economic elderly. This study was conducted in Sungnam-shi. The purpose of this study provided the baseline data to extend the meal service program in this area. Five hundred samples were selcted by the propotion of population in three districts(Sujung-gu, Jungwon-gu, Bundang-gu). The result were as follows. 72.8$\%$of subjects were women and 27.2$\%$of subjects were extended family type. Seventy$\%$ of respondant were not aware of the free meal service for elderly. Major channels of information about free meal service were mass media(33.8$\%$)and advertisement material from city (24.3$\%$). The rate of recognition and channels of information about free meal service were different according to demographic characteristics of subjects. Sixty-eight of subjects pointed that the meal service program was highly necessary in these areas and the necessity of the program was not significantly different by socio-economic variables. The group who know about free meal service had a positive attitude toward supporting the meal service program. Women preferred labor volunteers(46.8$\%$)at meal service center and men preferred donations.
