Quality Characteristics of Sulgidduk Added with Pine Mushroom(Tricholoma matsutake Sing.) Powder (송이 분말을 첨가한 설기떡의 품질 특성)

  • This study was conducted to investigate rheological and sensory characteristics of Sulgidduk added with pine mushroom powder. The moisture content of the Sulgidduk ranged from 34.79 to 36.93%. Increasing the amount of pine mushroom powder in the Sulgidduk tended to decrease the pH value, but to increase the $brix^{\circ}$ value. Increasing the amount of pine mushroom powder in the Sulgidduk tended to decrease the lightness(L) in Hunter color value, but to increase the redness(a) and yellowness(b). For the textural characteristics, the addition of pine mushroom powder decreased the adhesiveness and springiness. In sensory evaluation, the addition of 3% pine mushroom powder had the best score in appearance, odor, taste and overall preference. Therefore, this results suggest that adding 3% pine mushroom powder would be feasible for making pine mushroom Sulgidduk.

The Arthropod Fauna Inhabited in Pine Mushroom (송이에 서식(棲息)하는 절지동물상(節肢動物相))

  • This study was carried out to classify the arthropods inhabited in pine mushroom (Tricholoma matsutake Singer). The arthropods were collected in a state forest (196 compartment, 157ha) located in Yangyang-gun, Kangwon-do. After collection the arthropods were classified in laboratory. The results obtained are summarized as follow; 1. Insects inhabited in pine mushroom are in total 19 Families of 7 Orders. Some animals in Araneina, Acarina, Nematoda and Stylommatophora were also observed, 2. The most injurious pests are Gyrophaena niponensis, Elateridae, Deosophilidae and Philomycidae (Stylommatophora). 3. The most dominant species is Gyrophaena niponensis (Staphylinidae, Coleoptera). 4. Some possible natural enemies are Oxyporus germanus, Sphedanolestes impressicollis, Phoridae, Carabidae, Pteromalidae, Eulophidae and Araneina.

  • This study was conducted to improve circulation system and the storage of the pine-mushroom by packaging it with moss, the leaf of pine, and onion compared with conventional packaging at $4^{\circ}C$ for 30 days. As a result, the pine-mushroom packed with moss and onion was sustaining a good quality for 14 days to extend its storage period over 7 days, compared with conventional packaging at $4^{\circ}C$.

  • To increase production of Tricholoma matsutake, experiments were carried out in a mountain located in Keumma 2-ri, Joocheon-myun, Yongwol-gun, Kangwon-do, Korea during the period from April to November 1979. The area of the experiment showed pH 6.55 of soil acidity and the rock was found to be granite. Among its vegetation, the major growths were Pinus densiflora Siebold et Zuccarini, Rhododendron mucronulatum Turcz., Rhododendron schlippenhachii Max., Lespedeza bicolor and Pteridium aquilinum (Linne) Kuhn var. japonicum Nakai. Of two equally divided areas of A and B in which pine mushrooms grew, artificial methods such as thinning the upper portion of land raking and water-spraying were applied to area B only, where 21% increase of the production was obtained as compared with the control area A.

Effects on the Pine Mushroom Yield of Controlling Environmental Conditions at the Pine Stands in Namwoon, Korea (남원(南原) 소재(所在) 소나무림(林)의 환경조절(環境調節) 처리(處理)가 송이 발생량(發生量)에 미치는 영향(影響))

  • This paper is presenting a practical result of environmental manipulation effect on pine mushroom Tricholoma matsutake yield and a discussion of key factor seeking for improving pine mushroom production by analyzing the effects on mushroom yield for 10 years with applying five kinds of environmental control at the pine stands located in Namwon, Chollabuk-do, Korea. The environmental controls included density control and forest floor manipulations, and the treatments were applied during early summer of 1983. The mushroom yield itself did not show statistically significant differences among the treatments. But, we could manifest the treatment effects by calculating the relative yield in percent on the basis of pretreatment yield collected in 1982. The forest floor manipulation with density control may affect pine mushroom yield in short term, and continuous management should be applied to keep and improve the mushroom production. The fine root activity was the most important factor of pine mushroom production at the Namwon research site since the floor raking resulted in the largest effect on the mushroom yield although the environmental condition for the growth of fungi is important for pine mushroom production. In addition, the pine mushroom forest with sandy soils demands adequate litter layer since the litter removal showed relatively detrimental effects on pine mushroom yield compared to that in litter covered plot at the research site. That is, soil texture should be considered for forest floor manipulation, and it is reconfirmed that the environmental control to improve pine mushroom production should be applied differently by each region.

Flavor Compounds in Pine Mushroom Liquor Added with Pine Tree Chips (송절편을 첨가한 송이주의 향기 성분)

  • Changes in flavor compounds in pine mushroom (Tricholoma matsutake) liquor added with pine tree chips were analyzed using gas chromatography/mass spectrometry. While three flavor compounds were detected in the control, fifteen were detected in the pine mushroom liquor added with pine tree chips. After eight-weeks of aging, the relative concentrations of β-fenchyl alcohol, 2-octanol, and methyl cinnamate, which are distinctive flavor characteristics of the pine mushroom, increased by 67.57%, 2.14%, and 0.94%, respectively, when pine tree chips were added (5%). Principal component analysis revealed that although flavor characteristics of the pine mushroom liquor were affected by the increased production of β-fenchyl alcohol due to the addition of pine tree chips, the aging time exerted a greater influence on flavor.

  • A study on the variation of the air temperature in the pine mushroom box containing dry ice for the preservation of the freshness of the pine mushroom, Tricholoma matsutake (Ito et Imai) Sing. produced in Korea was made in Seoul, Korea during the period of August 1 to 30, 1975. A safe shipment of 5 kg (net weight) of fresh mushrooms with freshness preserved for 24 hours in August required the placement of 4.5 kg of dry ice-a half in the upper portion and the other half in the middle portion-in an airtight container (mushroom box). The container used for the shipment test, made of 3mm-thick double-layer cardboard, was of the dimensions : $0.33{\times}0.4{\times}0.5=0.066(m^3)$. As the temperature fell, decreased amounts of dry ice were needed : 3 to 2 kg in September and 1.5 to 0.3 kg in October. With this preservation method, large quantities of fresh mushrooms were exported to Tokyo ana Osaka, Japan without damage in the process of transportation.

The 18s rDNA Sequences of the Basidiocarps of Tricholoma matsutake in Korea (한국산 송이버섯에서의 18s ribosomal DNA 서열)

  • The 18S rDNA sequences of Tricholoma matsutake (TM=T. caligatum var. nauseoum) collected in Korea were analyzed for the ectomycorrhizal fungi in the roots of Pinus densiflora. The 514 base pairs of rDNA region were synthesized by UF-5 and UR-6 primers, and double checked in the base pair. The sequence of four strains synthesized were all identical in this work, but different from those done by the previous workers. The basidiocarps collected in this work. were identified to T. matstake after searching the 18s rDNA by the BLAST in NCBI. Only several base pairs of 18S rDNA analyzed from other related basidiocarps were different from our analyses of 18S rDNA. The dendrogram were made based on the sequences of the 514 bp 18S rDNA by CLUSTAL-X alignment program. The groupings of the species at the level of genus in the dendrogram were well constructed.

Physiological Activity of Extracts from Mixed Culture of Medical Herbs and Mycelia of Tricholoma matsutake and Cordyceps militaris by Fermentation (송이버섯과 동충하초 균사체를 혼합 배양한 한방추출물의 발효에 의한 생리활성)

  • Objectives : The purpose of this study was to investigate extracts from mixed culture of Oriental medicines and cereal medium and mycelia of Trichloma matsutake and Cordyceps militaris by fermentation to develop new material for pharmaceutical products and medicinal food, Methods : To evaluate physiological activities of OCM extracts, we examined antioxidant activity(total polyphenol contents, electronic donating ability, SOD-like activity), ${\beta}$-glucan contents, nitric oxide production and cytotoxicity by MTT assay. Results : Total polyphenol contents of fermented OCM(UF) and non-fermented OCM(UM) extracts were more than 40% UM and UF of DPPH radical scavenging activity was 25.67%, 23.43% respectively. Total polyphenol content of non-fermented extract (UME) was 12.57%, while that of fermented extract(UFE) was 7.05%. SOD like activity showed UM 85.35%, UF 76.18%, UME 58.42%, UFE 72.21%. UME, and UFE 31.43%, ${\beta}$-glucan contents of UME and UFE were more than 40%. NO productions of UME, and UFE showed a LPS dose dependent tendency. Cytotoxicity on Raw 264.7 cell showed more than 90% viability. Inhibitory effect of UFE on HT1080 cell growth was higher than UME. Conclusions : These results showed that extracts from mixed culture of mushroom mycelium and OCM have physiological activities which can be used in pharmaceutical products and medicinal food.

A Study on the Genetic Variations of Tricholoma matsutake Collected from Eleven Sites of Korea Using I-SSR PCR (I-SSR PCR을 이용한 한국의 11개 주요 산지에서 채집한 송이의 유전변이에 관한 연구)

  • The objectives of this study was to identify genetic variations of Tricholoma matsutake (S. Ito et Imai) Sing. growing in different geographic ranges in South Korea. Mushrooms were collected during fruiting seasons from 1994 to 1997 from 11 major sites which included four sites (Bonghwa, UIjin, Goryoung, and Chungdo) in Kyongbuk Province, three sites (Changnyung, Hadong, and Hamyang) in Kyongnam Province, two sites (Yangyang and Inje) in Kangwon Province, one site (Goisan) in Choongbuk Province, and one site (Namwon) in Chonbuk Province. Two mushrooms each from three to eight shiros in each sites were collected. Genetic characteristics were analyzed by Inter-Simple Sequence Repeat Polymerase Chain Reaction (I-SSR PCR) method using six primers. With a total of 131 DNA bands identified, Nei's genetic distance and UPGMA tree were constructed. It was estimated that genetic variations between sites amounted to 12.9%, while 87.1% of total variation was explained by variations among individuals within sites. The cluster analysis indicated that the eleven major sites were clustered into four groups, group I (Yangyang, Hamyang, Inje, Hadong and UIjin), group II (Changnyung, Namwon and Chungdo), group III (Goryoung), and group IV (Bonghwa and Goisan). It is concluded that matsutake mushrooms in South Korea have a considerable degree of genetic variations between major sites.
