국민영양조사를 이용한 영양소별 주요 공급식품에 관한 연구 -II. 무지길 및 비타민- (Study for Major Nutrients Sources of Food by Korean Nutrition Survey -II. Minerals and Vitamins-)

  • We have studied the major food sources of minerals and vitamin based on the data from the National Nutrition Survey in 1993. The most important food sources was anchovy for calcium, spinach for vitamin A, and kimchi for vitamin C. The primary source of iron, thiamin, riboflavin and niacin was rice. Number of foods providing 90% of individual nutrient intake were 54 items for calcium, 40 items for iron, 20 items for vitamin A, 25 items for thiamin, 29 items for riboflavin, 39 items for niacin and 18 items for vitamin C. Among regions, amount of nutrients from same foods(10 more important food source) didn't show any significant differences (p>0.05) in minerals and vitamins studied. Over all rice was found to be the most important sources of minerals and vitamins.

  • The purpose of this study were to analyze the staple food consumption trend of Koreans using KNHANES(Korea National Health and Nutrition Examination Survey) data. Nutrient intake of 38,840 participants of 1998~2008 KNHANES, over 6 year old were analyzed. For the analysis of major staple food intakes, twenty four hour recall data was used. The results were analyzed by SAS Program, as follows. Despite westernized diet, ranking in the primary energy source of food showed similar patterns. But total calory intake was reduced over the past 11 years and percentage of carbohydrate intake was increased. Relative proportions of protein and fat intake was reduced. The major carbohydrate and protein source of Koreans was rice and grains. Pork and ramen were the major fat source food. Although intake levels were different by gender, age and areas, carbohydrate of rice was primary source of energy in Korea.

인터넷 사이트 식품영양정보의 양적 평가 (Quantitative Analysis of Food and Nutrition Informations on the Internet)

  • The purpose of this study was to estimate the sites providing accurate and useful informations to the public by monitoring food and nutrition informations distributed through the internet quantitatively about 13 items of 7 necessary requisites. Total of 457 internet sites on the searching engines of Yahoo, Empas, Nate, Naver and Daum were monitored by 10 panels from May, 2004 to October. Thirty eight % of the sites got 7 & 8 total of 14 points and total sites showed a normal distribution. From the estimation of meta data, individual sites(5.19) were operated insufficiently compared with the commercial sites(6.10) and institutional sites(6.60) (p<0.000). According to administrators, sites were evaluated in the order of research institute> government organization> academic association> pharmaceutical company, club, food company, university> hospital> individual (p<0.000). While low-ranked sites were lack of authority because they didn't show the information provider and source, high-ranked ones lack of sustainable management(updating informations) and security. From this study, we suggest that 1) theme, contents and design have to prepared with variety to suit the need of target clients instead of that of site operator; 2) source and origin of information have to be provided; 3) informations have to be updated often and site to be managed sustainably.

한국인의 당류 섭취현황과 만성질환에 미치는 영향 (intake of dietary sugar and its influence on chronic disease in the korean population)

  • As recently many studies on the relationship between excessive sugar intake and chronic disease have been reported across the world, more attention to sugar intake has been paid. Sugars, called simple sugars, is a kind of carbohydrate and sum of monosaccharides and disaccharides. Sugars that are particularly related to health are added sugars or free sugars, which are added to food by processing or cooking. It is generally not to give satiety and increases energy density without other nutrients. Especially, the major food source of added sugar is sugar-sweetened beverages(SSBs), from which sugars are closely linked with health outcome. The total sugar intake in Korea is 61.4 g per day and it is almost half of those in the western countries such as the U.S. or Australia and it is within the recommendation level by the Dietary Reference Intakes for Koreans. However, when it is classified by age groups or food sources, sugar intake in adolescents and young adults are high and the sugar from processed foods is also high that would lead to high intake levels of added sugar. Particularly, the frequency of SSBs, the major food source of added sugar, is the highest among 20's. While the studies of excessive sugar intake with chronic diseases including obesity, type 2 diabetes, metabolic disease, cardiovascular disease reported in the Western populations, those in the Korean populations have just started. Given our dietary practice is very different from those in the western population, more prospective studies would be necessary to evaluate sugar intake by type or food source exactly and examine its relationship with chronic diseases in the Korean population.

  • Unhealthy dietary behavior such as insufficient calcium intake can be one of risk factors of osteoporosis and chronic diseases in older people. This study evaluated the recent trends in dietary calcium intake and the food source in Korean adults aged 50 years or older using the Korea National Health and Nutrition Examination Survey (KNHANES, 2015-2019) data. This study used 24-hour recall survey data to investigate the calcium intake, the major food groups and main dishes contributing to the calcium intake. The mean calcium intake was 479.55-506.81 mg/day. The major food groups that contribute to calcium intake were vegetables, milks and fishes. Dairy and frozen desserts and kimchi were the major dish groups that contributed to the calcium intake. Calcium intake from milk in dairy and frozen dessert group has been high in last 5 years (50-64 years old: 34.71-47.68 mg, 65-74 years old: 29.72-43.65 mg, over 75 years old: 22.91-42.93 mg). In addition, baechu-kimchi is the most contributed to the calcium intake in kimchi group (50-64 years old: 35.10-41.47 mg, 65-74 years old: 29.62-34.96 mg, over 75 years old: 23.79-29.13 mg). In conclusion, various source of calcium needs to be recommended to increase intake calcium in over 50 years, which may reduce chronic diseases and improve quality of life.

우리나라 주요 김 생산해역의 해수 및 물김에 대한 위생학적 평가 (Sanitary Evaluation for Seawater and Laver Pyropia sp. in the Major Laver Growing Areas, Korea)

  • Sanitary evaluation of seawater and Pyropia sp. laver collected from the five major laver growing areas in Korea was performed four times over the course of a year. The seawater quality in four of these five areas was regarded as the clean area according to Korean criteria, but the seawater at one investigation site in Seoheon area was found to exceed the standard for fecal coliform. In the bacteriological safety analysis of laver (raw source), the percentages of samples not conforming to Chinese criteria at the five sites were 55.6% (Seocheon), 70.0% (Shinan), 81.8% [Jindo (Haenam)], 63.6% (Wando), and 28.6% [Goheung (Jangheung)]. Pathogenic bacteria were not detected in all laver samples. The food safety of laver (raw source) based on heavy metal concentration was confirmed using Korean criteria; the concentrations of heavy metals in laver samples collected from the major laver growing areas were 0.008-0.632 mg/kg wet weight (ww) lead, 0.024-0.137 mg/kg ww cadmium, 0.908-2.892 mg/kg ww total arsenic, and 0.003-0.013 mg/kg ww total mercury. Therefore, pollution source management and periodic monitoring of heavy metals may be required to improve the food safety of laver produced in these laver growing areas.

한국인의 안토시아닌 섭취량과 주요 급원식품 (Estimated Dietary Anthocyanin Intakes and Major Food Sources of Koreans)

  • This study aimed to estimate daily intake of anthocyanins and to identify major sources of anthocyanins in current Korean dietary patterns in order to implement dietary recommendations for the improvement of Korean health. Sixteen foods were selected based on the availability of food intake and reliable anthocyanin content. Food intake data from the Korea National Health and Nutrition Examination Survey 2014 and anthocyanin content data from earlier investigations were used to calculate the consumption of anthocyanins. Anthocyanin contents of 16 foods varied significantly and exhibited a range of 0~4,009 mg/100 g of fresh weight. Daily intake of anthocyanins was estimated to be 3.3 mg to 95.5 mg in Koreans. Of the 16 foods studied, the source contributing most to anthocyanin intake in the Korean population was plums (35.1%), followed by black beans (17.1%) and grapes (15.2%). These results indicate that major foods contributing to anthocyanin consumption in the Korean dietary pattern are fruits and grains.

한국인의 콜레스테롤 섭취 현황: 국민건강영양조사 제6기(2013-2015) 자료를 이용하여 (Dietary Cholesterol Intake in the Korea National Health and Nutrition Examination Survey (KNHANES) VI (2013-2015))

  • Objectives: The aim of the study was to assess the intake of dietary cholesterol and its major food sources in the Korea National Health and Nutrition Examination Survey (KNHANES). Methods: A total of 20,671 nationally representative sample who had 24-hour recall data from the KNHANES VI (2013-2015) was included in this study. Mean cholesterol intake and the prevalence of subjects with cholesterol intake over the Intake Goal of the Dietary Reference Intakes (DRIs) for Koreans were analyzed. Intakes of cholesterol by food groups or each food were calculated to find out the major food sources for cholesterol intake in Koreans. Results: The mean dietary cholesterol intake was 261.3 mg, which was higher in men (303.5 mg) compared to women (219.1 mg). Dietary cholesterol intake and the prevalence of subjects with cholesterol intake over the Intake Goal of DRIs were the highest in the 19-29 year old group. The eggs was the first major food group source for cholesterol intake in all age groups. Major food sources for cholesterol intake among Korean were egg, chicken, pork, squid and beef, which contributed 66.9% to total cholesterol intake. Conclusions: Although the mean dietary cholesterol intake was under 300 mg, the prevalence of subjects with cholesterol intake over the Intake Goal of DRIs was about 30% in adults. Because both the mean intake and the prevalence of subjects with cholesterol intake over the Intake Goal of DRIs were higher in young adult groups, the dietary cholesterol intake was expected to be increased.

Production of high molecular weight of pullulan with agro-industrial byproducts

  • Production of pullulan by Aureobasidium pullulans HP-2001 with agro-industrial byproducts was investigated. Agro-industrial byproducts from the rice processing industry for the traditional Korean food (AIB-A), apple juice production (AIB-B), and soybean sauce production (AIB-C) were used for carbon and nitrogen source for production of pullulan. Major components of AIB-A were glucose, maltose, maltotriose, and dextran. AIB-A and B were found to be good substitute to glucose as carbon source. Productivity of pullulan with AIB-A and B as carbon source was similar to that glucose. Molecular weight of pullulan produced with AIB-A and B was higher than that with glucose. Major components of AIB-B and C were carbohydrate, protein, fat and ash. AIB-C was also a good substitute to yeast extract as nitrogen source. Some of physiological conditions were examined for the large scale production of pullulan.
