This study was conducted to secure basic information for corn processing by comparing the quality characteristics according to maize cultivars and kernel types (dent, intermediate, flint-like). As a result of analyzing 15 cultivars, a range of measurements were observed: 100-kernel weight, 22.89~35.63 g; moisture, 7.57~8.42%; crude protein, 8.46~11.45%; crude lipids, 3.26~4.83%; Hunter's L-value, 83.70~86.79; a-value, 2.61~5.49; b-value, 22.01~28.15; and total carotenoids, 6.74~17.07 ㎍/g. Significance among the cultivars was shown in all quality characteristics (p<0.001), but the significance among the kernel types was found only in crude protein (p<0.005), crude fat (p<0.001), and Hunter's L-value (p<0.05). The hardness of maize was decreased proportionally to the soaking time for all maize cultivars (p<0.001). In particular, with the same soaking time for different kernel types, the hardness difference was shown in the order of flint-like > dent ≒ intermediate. It was confirmed that the decrease in the hardness of flint-like kernel of close to that of hard-type starch was slowed compare dent and intermediate kernels. So it is expected the some characteristic of kernel types will contribute to the appropriate customized use of the developed cultivars.
This study was conducted to investigate the effect of nitrogen rates on the growth characteristics and yield of maize in agricultural fields with the stream. This indicates the necessity and optimal level of nitrous fertilization to examine the possibilities of quantity enhancement. Plant height and ear height of maize were not significantly different among the nitrogen rates. Stem diameter and leaf area index increased in the nitrogen treatment compared to untreated control. Changes of photosynthetic rate in maize leaves depending on nitrogen treatments increased as much as nitrogen rates were increased up to the highest level, 36 kg per 10a. NDF and ADF content levels of maize were investigated with different nitrogen rates regardless of treatments. In the case of NDF, it showed a tendency to decrease after 8 days of tasseling date. ADF had also decreased after 15 days of tasseling date. Nitrogen uptake of maize leaves with different nitrogen rates showed the highest level, $4.9g\;kg^{-1}$ with 36 kg per 10a on the tasseling date. Ear length and 100-kernel weight, there were no significant differences according to yield and the components with different nitrogen rates. Ear diameter and kernel number, nitrogen rates of 18 kg and 36 kg were increased compared to nitrogen rate of 9 kg per 10a and untreated control. The pericarps in 9 kg nitrogen rate and control were thicker than those of 18 kg and 36 kg treatment. The yield, 18 kg, 36 kg, and 9 kg treatments were increased by 10.96%, 9.27%, and 3.31%, compared to control. The component analysis on maize kernel with different nitrogen rates, starch showed no significant differences among treatments. Total sugar in 18 kg nitrogen treatment represented the highest content level, 6.37%. In addition, Amylopectin in 18 kg treatment showed the highest content level of 90.38%. However, amylose in 18 kg treatment showed the lowest level, 9.62% which drew a conclusion that waxy of 18 kg treatment is considered to be the strongest one. From the results described above, nitrous fertilization is essential to grow maize in agricultural fields with the stream. The optimum level of nitrous fertilization is considered 18 kg per 10a.

To investigate the genetic variation of high-and low-molecular-weight glutenin subunits (BMW-GS and LMW-GS), granule-bound starch synthase I (GBSSI) and puroindoline in 24 Korean wheat cultivars. At the BMW-GS compositions, three Glu-A1 alleles, five Glu-B1 alleles and three Glu-D1 alleles were identified. The high frequency of alleles at each locus was Glu-A1c allele (15 cultivars), Glu-B1b allele (16 cultivars) and Glu-D1f allele (16 cultivars). Four alleles were identified at the Glu-A3 and Glu-B3 loci and three at Glu-D3 locus and Glu-A3d, Glu-B3d and Glu-D3a were mainly found at each Glu-3 locus. Glu-A3d, Glu-B3d, Glu-D3b or c (4 cultivars, respectively) and Glu-A3d, Glu-B3d, Glu-D3a and Glu-A3c, Glu-B3d or h, Glu-D3a (3 cultivar, respectively) were predominantly found in Korean wheats. At the GBSS compositions, 2 waxy wheat cultivars, Shinmichal and Shinmichal1, showed null alleles on the Wx loci and other cultivars were wild type in GBSS compositions. At the puroindoline gene compositions, Korean wheat cultivars carried 3 genotypes, which 10 cultivars (41.7%) were Pina-D1a and Pinb-D1a, 11 cultivars (45.8%) had Pina-D1a and Pinb-D1b and 3 cultivars (12.5%) carried Pina-D1b and Pinb-D1a. These genetic variations could present the information to improve flour and end-use quality in Korean wheat breeding programs.
The average growth day of 11 maize varieties from planting to silking in the first cropping (FC) was 89.5 days and in the second cropping (SC) was 46.7 days, which was 43 days faster than in the FC. The average 100-kernel weight (100 KW) in the FC was 28.4 g and 18.3 g in the SC, which was approximately 36.4% lower than that in the FC. The average crude oil content of FC was 3.97% and SC was 3.08%, which was about 0.89% lower than that of FC. The composition of stearic and oleic acid was significantly higher in FC, whereas palmitic and linoleic acid were higher in SC; however, linolenic acid was not statistically different between the two crops. The crude oil content was negatively correlated with linoleic acid (FC -0.264ns, SC -0.504**) and positively correlated with linolenic acid (0.526**). Unsaturated fatty acid (USFA) composition showed a significant difference between FC (83.48%) and SC (82.96%). Total phytosterol content was 598.3 mg/100 g and 701.9 mg/100 g in FC and SC, respectively, and showed significant difference by planting dates. The β-sitosterol content showed no statistical difference between the planting dates, but campesterol and stigmasterol were significantly higher in SC than in FC. Therefore, it was considered that the temperature condition during the ripening period affects the 100 KW of maize, and this leads to the variation in phytosterol content. However, among phytosterols, β-sitosterol was relatively little affected by the planting dates. USFA composition showed a significantly negative correlation with phytosterol content. Considering the results, the relatively high phytosterol content in SC was mainly because of the delay in progress of starch accumulation as daily air temperature decreased from the middle of the ripening period, whereas progress of phytosterol accumulation in the maize kernel was considered relatively faster than that of starch accumulation.

Changes in growing periods and productivities of crops under double cropping of potato-rice, potato-soybean and potato-maize, were investigated at the Paddy Experimental Fields in Miryang City from 2015 to 2018. Spring potatoes planted in early March showed a yield of 2.1-2.3 ton/10a and a period of 90 days. In double cropping, growing period of rice, soybean, and maize was about 130, 125 and 115 days, respectively. The potato yield obtained was as much as 616, 330 and 815 kg/10a under double cropping with rice, soybean and maize, respectively. It is beneficial to sow the spring potatoes as early as possible to increase the yield and to secure the growing period of sequential crops. The introduction of summer medium-late variety grain crops into double cropping of spring potato and rice as well as into double cropping of spring potato and soybean/maize, was possible because of no sowing in the fall and plants were able to reach the heading growth stage before the safe heading limit of rice in particular. In the case of maize, the growth period was different according to the change in temperature over the year. The introduction of upland crops such as soybeans and maize instead of rice improved soil physicochemical properties in a short period of time, contributing to the increase of spring potato yields, but there was also a risk of damage by successive cropping for more than three years. Spring potato-maize showed higher yield in terms of starch production, and spring potato-soybean was found to be advantageous for net income.
Genetically selected beef cattle are fed high-energy diets in intensive production systems developed in industrial countries. This type of feeding can induce rumen dysfunctions that have to be corrected by farmers to optimise cost-effectiveness. The risk of rumen acidosis can be reduced by using slowly degradable starch, which partly escapes rumen fermentation and goes on to be digested in the small intestine. Additives are proposed to stabilise the rumen pH and restrict lactate accumulation, thus favouring the growth of cellulolytic bacteria and stimulating the digestion of the dietary plant cell wall fraction. This enhances the energy value of feeds when animals are fed maize silage for example. Supplementation of lipids to increase energy intake is known to influence the population of rumen protozoa and some associated rumen functions such as cellulolysis and proteolysis. The end products of rumen fermentation are also changed. Lipolysis and hydrogenation by rumen microbes alter the form of fatty acids supplied to animals. This effect is discussed in relation with the quality of lipids in beef and the implications for human health. Conditions for optimising the amount of amino acids from microbial proteins and dietary by-pass proteins flowing to the duodenum of ruminants, and their impact on beef production, are also examined.
A maize line was selected in 1979 among 1000 Korean local maize lines collected in 1977. The selected maize line was characterized by having three to four tillers and eight to 10 ears on each individual plant. The line was assumed to have a great potential as a silage crop. The investigation was conducted as one of the serial studies on the Korean maize collected lines to provide basic information on the genetic variabilities of the multi-eared and tillered (MET) line and on other agronomic characters, prior to use the line as material for future breeding works for silage crop. The MET line and Suwon #19, single cross hybrid, as check variety were planted on May 1, 15 and 30, in three different levels of plant populations. The results obtained were summarized as follows: 1. The genetic variabilities of multi-ear and tillering habits were greater than environmental variabilities. 2. Total dry leaf weight of individual plant of MET line was also significantly higher than that of Suwon #19. 3. The mean number of tillers and ears bearing on the individual plant of MET line varied greatly with plant densities. The number of tillers and ears was on the average 2.9 and 7.0, respectively, when planted in 60cm. by 60cm. 4. The total dry matter and dried stem weight of the individual plant on MET line were comparable to those of Suwon #19. 5. The kernel weight from the individual plant of MET line was 5 to 40% less than that of Suwon #19, depending upon the plant densities. 6. The Kernel to stover ratio was higher for Suwon #19 than for the MET line. (41% to 35%). 7. The MET line had shown first tiller two weeks after planted on May 1. The second and third tillers appeared three to five days after the appearance of the first tiller. 8. The MET line was very specific in tillering habits. All the tillers were borne on the first few nodes of main stem below the soil surface. 9. The tillering habits of MET line were vigorous in the early part of the growing season, but less vigorous in the later part of the growing season. The number of efficient tillers bearing useable ears, was around two to three, when planted in 60cm. by 60cm. 10. The difference of plant height between main stem and first few tillers was around 10cm. 11. The ear size of MET line was around one-third of the major corn belt hybrids. The shape of ear of MET line was conical, with different diameter. 12. The kernel of the MET line was flinty with small soft starch patches on the endosperm part. 13. The 100 kernel weight was around 15gr., which is about one half of the major high yielding hybrids. 14. The ear height of MET line was comparatively higher than that of Suwon #19. 15. Significantly high and positive phenotypic correlation coefficients were obtained among major plant characters. 16. The growth rate of MET line was slower than that of Suwon #19. 17. MET line and Suwon #19 were both heavily infected with black streaked mosaic virus.
To develop health functional foods using high amylose rice flours, the properties of flours prepared from domestic high amylose rice varieties, Goamy2 and Goamy, and imported rice from Thailand were investigated. After soaking the rice grains and drying, the dry-milled rice flours were passed through a 120-mesh sieve. The protein and total starch contents of the Goamy2 rice flour were lowest, but its crude lipid and ash contents were highest among the flours. In addition, apparent amylose content, water binding capacity, and total dietary fiber were highest in the Goamy2 flour (36.2, 255.0, and 9.2%, respectively). The Thai rice flour had the highest swelling power, whereas the Goamy2 flour had the lowest swelling power and solubility. By Rapid visco-analysis, the Thai flour showed the highest peak and total setback viscosities and lowest breakdown viscosity. The pasting pattern of the Goamy2 flour was different from that of the other flour, where low viscosity was maintained during heating and cooling. Goamy and Thai rice flours showed an A type crystallinity, but Goamy2 flour showed a B type crystallinity similar to high amylose maize starch. The Goamy2 flour presented a dull and yellowish color, and the lowest lightness (L) value and the highest yellowness (+b) value.
The increasing price of surimi has affected the economical benefits of surimi based food industry, To maintain gel strength in low grade surimi, the optimum formulation adding functional proteins to low grade surimi is required. The objective of this study was to develop the optimum formulation of ingredients in making gels in low grade surimi on the addition of functional non-muscle proteins to low grade surmi by measuring rheological properties of the gels. The rheological qualities of the cooked gels made with A and RA grade surimi on the effects of adding five kinds of starches (potato, wheat, waxy maize, corn and modified corn) and four kinds of functional proteins (bovine plasma protein, dehydrated egg white, soy protein isolate and whey protein concentrate) to the gels were evaluated, The gel styengths at cooking with A and RA grade surimi were decreased with increasing the added starches. The kind of starches added affected little the gel strengths in Rh grade surimi, while potato and corn starches decreased at the least in gel strengths of the gel made with A grade surimi with increasing the concentration of starches. The bovine plasma protein (BPP) significantly increased the gel strength, especially in RA grade surimi, but BPP decreased the whiteness of the gel. Therefore, the optimum content of BPP was up to $2\%$ because of the whiteness of the gels in RA grade surimi, The optimum formulation for the gel with RA grade surimi to satisfy the gel strength of 1000$\times$g and $78\%$ moisture was $40.9\%$ surimi, $9.1\%$ dehydrated egg white (DEW) and $0.9\%$ starch, while that with A grade surimi under the same condition was $37.9\%$ surimi, $6.6\%$ DEW and $3,4\%$ starch.
This study investigated the metabolizable energy (ME) intake, net energy of production (NEp), heat production (HP), efficiencies of ME use for energy, lipid and protein retention as well as the performance of broiler chickens fed diets based on cassava chips or pellets with or without supplementation with an enzyme product containing xylanase, amylase, protease and phytase. The two products, cassava chips and pellets, were analysed for nutrient composition prior to feed formulation. The cassava chips and pellets contained 2.2% and 2.1% crude protein; 1.2% and 1.5% crude fat; and 75.1% and 67.8% starch, respectively. Lysine and methionine were 0.077%, 0.075%, and 0.017%, 0.020% protein material, respectively, while calculated ME was 12.6 and 11.7 MJ/kg, respectively. Feed intake to day 21 was lower (p<0.01) on the diet containing cassava chips compared to diets with cassava pellets. Enzyme supplementation increased (p<0.01) feed intake on all diets. Live weight at day 21 was significantly (p<0.01) reduced on the diet based on cassava chips compared to pellets, but an improvement (p<0.01) was noticed with the enzyme supplementation. Metabolizable energy intake was reduced (p<0.01) by both cassava chips and pellets, but was increased (p<0.01) on all diets by enzyme supplementation. The NEp was higher (p<0.01) in the maize-based diets than the diets containing cassava. Enzyme supplementation improved (p<0.01) NEp in all the diets. Heat production was highest (p<0.01) on diets containing cassava pellets than on cassava chips. It is possible to use cassava pellets in diets for broiler chickens at a level close to 50% of the diet to reduce cost of production, and the nutritive value of such diets can be improved through supplementation of enzyme products containing carbohydrases, protease, and phytase.
