The effects of hot air dried tomato powder on the physicochemical and sensory properties of meat patties were studied. The control(C, no addition) and 4 treatments with addition of hot air dried tomato powder(T1, 0.25; T2, 0.50; T3, 0.75; and T4, 1.00%) were prepared and stored for 7 days at 5℃. The pH values of T4 were significantly lower(p<0.05) than those of control and other treatments during initial storage, however, the pH values of T4 were higher(p<0.05) at 7 days of storage. The cooking loss was not significantly different between control and all treatments. The 2-thiobarbituric reactive substances (TBARS) of meat patties containing hot air dried tomato powder were significantly lower(p<0.05) compared to those for control during the whole storage. The volatile basic nitrogen(VBN) values of T2 increased(p<0.05) significantly as the storage period increased, but there was no difference in VBN between control and the other treatments(T1, T3, T4). In meat color, L*, a* and b* of meat patties containing hot air dried tomato powder showed slightly higher (p>0.05) than that of control. a* and b* of T4 were the highest(p<0.05) among the all products. Total plate counts(TPC) increased(p<0.05) significantly as the storage period increased. The result of TPC showed the range of 5.48(T2)~6.98(C) log CFU/g at the 7 day of storage. Sensory panels evaluated that pork patties containing hot air dried tomato powder had the slightly higher score in overall acceptability.
This study was undertaken to investigate the effects of ruminally protected amino acids (Methionine and Lysine) on in vitro ruminal parameters, and in vivo milk yield and milk composition in mid-lactating cows. In the first in vitro experiment, there were no statistical significances between treatments in ruminal pH and dry matter digestibility during various incubation times. In the second in vivo experiment, milk yield decreased by 11.92% in control and 5.68% in the treatment respectively, but decrease rate of milk yield in the treatment was lower than control. Milk yields naturally decreased as time goes by since the DIMs(Days in milk) of the cows in experiment were in mid-lactation period. 4% FCM(Fat corrected milk) and milk protein yields also, respectively, decreased by 11.25% and 11.09% in control and 6.16% and 5.47% in the treatment as compared with the intial. Milk protein and milk fat production were higher in the treatment(0.90kg, 1.10kg) than those of control(0.66kg, 0.79kg). Milk fat content significantly increased with supplementing protected amino acids as compared to control(P<0.05). From the above results, protected amino acids were positively utilized in the performances of mid-lactating cows without inhibiting rumen fermentation. Further investigation is suggested for essential amino acid composition and intestinal digestion rate out of rumen bypass protein in dietary protein to be estimated.
In order to determine an authenticity of food ingredient, we used DNA barcode method by universal primers. For identification of animal food ingredients, LCO1490/HCO2198 and VF2/FISH R2 designed for amplifying cytochrome c oxidase subunit1 (CO1) region and L14724/H15915 for cytochrome b (cyt b) region on mitochondrial DNA were used. Livestock (cow, pig, goat, sheep, a horse and deer) was amplified by LCO1490/HCO 2198, VF2/FISH R2 and L14724/H15915 primers. Poultry (chicken, duck, turkey and ostrich) was amplified by LCO1490/HCO 2198 and VF2/FISH R2 primers. But, Fishes (walleye pollack, herring, codfish, blue codfish, trout, tuna and rockfish) were only amplified by VF2/FISH R2 primers. For plant food ingredients, 3 types of primers (trnH/psbA, rpoB 1F/4R and rbcL 1F/724R) have been used an intergenic spacer, a RNA polymerase beta subunit and a ribulose bisphosphate carboxylase region on plastid, respectively. Garlic, onion, radish, green tea and spinach were amplified by trnH/psbA, rpoB 1F/4R and rbcL 1F/724R. The PCR product sizes were same by rpoB 1F/4R and rbcL 1F/724R but, the PCR product size using trnH/psbA primer was different with others for plants each. We established PCR condition and universal primer selection for 17 item's raw materials for foods and determine base sequences aim to PCR products in this study. This study can apply to determine an authenticity of foods through making an comparison between databases and base sequences in gene bank. Therefore, DNA barcode method using universal primers can be a useful for species identification techniques not only raw materials but also processed foods that are difficult to analyze by chemical analysis.
The Rural Development Administration (RDA) of Korea now operates a system called Rice Variety Selection Tests (RVST), which are now being implemented in eight Agricultural Research and Extension Services located in eight province RVST's objective is to provide accurate yield estimates and to select well-adapted varieties to each province. Systematic evaluation of entries included in RVST is a highly important task to select the best-adapted varieties to specific location and to observe the performance of entries across a wide range of test sites within a region. The rice yield data in RVST for ordinary transplanting in Kangwon province during 1997-2000 were analyzed. The experiments were carried out in three replications of a random complete block design with eleven entries across five locations. Additive Main effects and Multiplicative Interaction (AMMI) model was employed to examine the interaction between genotype and environment (G$\times$E) in the biplot form. It was found that genotype variability was as high as 66%, followed by G$\times$E interaction variability, 21%, and variability by environment, 13%. G$\times$E interaction was partitioned into two significant (P<0.05) principal components. Pattern analysis was used for interpretation on G$\times$E interaction and adaptibility. Major determinants among the meteorological factors on G$\times$E matrix were canopy minimum temperature, minimum relative humidity, sunshine hours, precipitation and mean cloud amount. Odaebyeo, Obongbyeo and Jinbubyeo were relatively stable varieties in all the regions. Furthermore, the most adapted varieties in each region, in terms of productivity, were evaluated.
This study was conducted to determine the effects of different types of hilly pasture grazing on growth and meat quality in organic Korean black goats, and to obtain basic data for the production of organic goats. A total of 40 goats with similar age and BW were equally allocated to four dietary treatments in a randomized complete block design. Dietary treatments included grazing types of four different hilly pastures; T1: forages types, T2: organic forages types, T3: native plants types, and T4: browse types, respectively. The trial lasted for 174 days from 15th of May to 5th of November, 2007 in Livestock Genetic Resources Experiment Station, National Institute of Animal Sciences. At the end of trial, all animals were slaughtered to analyze carcass characteristics and meat quality. Average daily gain was significantly (p<0.05) higher for T1 treatments than for others. Dressing percentage was significantly (p<0.05) higher for T1 and T2 than for T3 and T4 treatments. Meat percentage of T1 treatments was significantly (p<0.05) higher than those of other treatments. For meat properties, crude fat content was highest in T3 treatments. Linoleate (18:2n6) and linolenate (18:3n3) contents tended to be higher in T1 than those of other treatments, while arachidonate (20:4n6) content tended to be higher in T3 and T4 than that of other treatments. Shear force was lower (p<0.05) for T3 than other treatments. For sensory results, juiciness and tenderness tended to be greater (p<0.05) in T2 and T3, and flavour tended to be greater (p<0.05) in T3 and T4. The results indicated that grazing in hilly pastures for organic Korean black goats was somewhat less in their performances and carcass characteristics, but not behind in the meat quality and physical characteristics as compared with the conventional regimen. Therefore, it would be expected that goats grazing in hilly pastures made it possible to produce organic animal products with a high safety and also might lead to increase of breeders income and consumers satisfaction.
Clenbuterol and ractopamine, which are ${\beta}$-agonists, have been misused as a growth promoting agent in meat producing animals. Clenbuterol was banned for veterinary drug in Korea because of its problems regarding safety. Due to their adverse effects, such as cardiovascular and central nervous diseases on human health proper control and monitoring should be conducted. The existing analytical method of clenbuterol and ractopamine in the Food code was improved through our present study. The bovine muscle samples were subjected to enzymatic hydrolysis, extracted with ethyl acetate and defatted by hexane-methanol partitioning. A molecular imprinted polymer (MIP) solid phase extraction cartridge was used for clean-up and LC-MS/MS was operated in positive multiple reaction monitoring (MRM). Clenbuterol-$d_9$ and ractopamine-$d_3$ were used as an internal standard. The renewed method was validated according to the CODEX guideline. The limits of quantitation for clenbuterol and ractopamine were 0.2 and 0.5 ${\mu}g/kg$, respectively. The mean recoveries ranged in 104.2-113.5% for clenbuterol and in 107.6-118.1% for ractopamine. The improved method was able to save both time and expenses.
A simultaneous determination was developed for 9 aminoglycoside antibiotics (amikacin, apramycin, dihydrostreptomycin, gentamicin, hygromycin B, kanamycin, neomycin, spectinomycin, and streptomycin) in meat by liquid chromatography tandem mass spectrometry (LC-MS/MS). Each parameter was established by multiple reaction monitoring in positive ion mode. The developed method was validated for specificity, linearity, accuracy, and precision based on CODEX validation guideline. Linearity was over 0.98 with calibration curves of the mixed standards. Recovery of 9 aminoglycosides ranged on 60.5~114% for beef, 60.1~112% for pork and 63.8~131% for chicken. The limit of detection (LOD) and limit of quantification (LOQ) were 0.001~0.009 mg/kg and 0.006~0.03 mg/kg, respectively in livestock products including beef, pork and chicken. This study also performed survey of residual aminoglycoside antibiotics for 193 samples of beef, pork and chicken collected from 9 cities in Korea. Aminoglycosides were not found in any of the samples.
The aim of this work was to analyze the effects of salt and $NaNO_2$ on weight loss, proximate compositions. chemical parameters and texture characteristics of dry-cured ham processed using Korean methods. Four different treatments were considered: The HS group of 3 hams (11.30 kg) was salted with 9.2 g/kg salt (w/w) (high salt batch), the HS+$NaNO_2$ group of 3 hams (10.65 kg) was salted same as HS group and added 100 ppm $NaNO_2$. The LS group of 3 hams (11.42 kg) was salted with 6.2 g/kg salt (w/w) (Low salt batch), the LS+$NaNO_2$ group of 3 hams (10.62 kg) was salted same as LS group and added 100 ppm $NaNO_2$. The highest weight losses took place at the drying stage (27.46, 28.25, 26.99, and 28.42%). However, there were no significant differences in the weight losses between treatments (p>0.05). The moisture content was significantly affected with addition of $NaNO_2$ (p<0.05), the LS hams had significantly higher moisture content than HS+$NaNO_2$ and LS+$NaNO_2$ (p<0.05). The level of salt and $NaNO_2$ did not affect the fat, protein and ash contents. The hardness and chewiness in biceps femoris muscle from LS hams were significantly lower than in the muscles from HS+$NaNO_2$ hams (p<0.05). The $NaNO_2$ did not affect the texture characteristics of dry-cured hams. The processing conditions significantly affected the chemical parameters of biceps femoris muscle (p<0.05). The water activity in biceps femoris muscle from LS hams was significantly higher than in muscles from HS and HS+$NaNO_2$ hams (p<0.05). The salt content in biceps femoris muscles from LS+$NaNO_2$ hams was significantly lower than in the muscles from HS and HS+$NaNO_2$ hams (p<0.05). The $NaNO_2$ treatment did not affect the $NaNO_2$ content in biceps femoris muscles (p>0.05). The processing conditions did not significantly affect the lightness (L), redness (a), and $h^{\circ}$ of biceps femoris muscles (p>0.05). The yellowness (b) and chroma in biceps femoris muscle from HS+$NaNO_2$ hams were significantly higher than in the muscles from HS and LS hams.

The biological wastewater treatment is more eco-friendly and can be used effectively in wastewater for a variety of purposes than that of the conventional treatment. In particular, the wastewater treatment using microalgae in biological treatment processes has attracted great attention due to its ability to remove economically nutrients from wastewater and have many advantages as a renewable energy source. This study was investigated to establish the optimal growth conditions for microalga Scenedesmus obliquus. Additionally, the removal efficiencies of nutrients (N, P) and heavy metals (Cu, Zn) from the synthetic wastewater were evaluated. As a results, the optimal growth conditions were established at $28^{\circ}C$, pH 7, and light and dark cycle of 14 : 10 h. In the evaluation of nutrient removal efficiencies at each concentrations of 500, 1,000, 5,000, and 10,000 mg/L, the removal rates were 17.6~70% N and 8.4~34% P in the single treatment and 12.0~58.0% N and 3.0~40.3% P in the binary mixture treatment. In addition, the evaluation of heavy metal removal efficiencies at each concentrations of 10, 30 and 50 mg/L, the removal rates were 13.7~40.3% Cu and 10.0~30.0% Zn in the single treatment and 16.0~40.0% Cu and 12.0~20.0% Zn in the binary mixture treatment. Based on the results of the study, it appears that Scenedesmus obliquus can be used for the removal of nutrients and heavy metals from the swine wastewater.

Today, as the specification of pigs increases, it is important to develop eco-friendly livestock feeds that do not add antibiotics to highly utilizable materials as feed resources, and to produce functional eco-friendly pork and processed products. The purpose of this study was to establish Rubus occidentalis (RO) byproducts containing various amounts of physiologically active substances such as anticancer, anti - inflammation and antioxidant as a raw material for pig feed. The multifaceted efficacy of the RO fermented fodder (ROFF) was confirmed by the nutrient transport factors and antioxidant activity of Berkshire pigs. ROFF was added 0.3% to the general diet and the efficacy was confirmed by feeding diets to Berkshire pigs according to each weight for 43~73 days. As a result, the total cholesterol (TC), LDL-cholesterol (LDL-C) and HDL-cholesterol (HDL-C) levels were decreased or were increased in the castrated male and female Berkshire pigs but not significantly. It was confirmed that the tendency was improved in nutrition physiology. The biochemical levels of female finishing pigs were not significant but increased. In the case of finishing pigs with possibility of pregnancy, it is expected that the nutrition supply for piglet production and will help in the production of the healthy piglet. Transferrin (TFE) levels tended to increase in female growing pig and 110-150 kg finishing pigs. Thus ROFF could minimize the negative effects of iron contents deficiency in female Berkshire pigs. Glutathione peroxidase 1 (GPx1) activity was increased in castrated male and female 110-150 kg finishing pigs. Therefore, ROFF tends to improve the antioxidant capacity. The results of this study suggest that ROFF is one of the most favorable dietary sources when considering the contents of RO in feed. In particular, ROFF could have a positive effect on nutrient transport and iron content of female rather than castrated male Berkshire pigs.
