In the present study, we compared and investigated the nutritional compositions of Amaranthus cruentus and Amaranthus hypochondriacus baby-leaves cultivated in Korea. Baby-leaves of two amaranthes consisted of more than 92% moisture, and A. cruentus contained a higher amount of moisture than A. hypochondriacus. Meanwhile, A. hypochondriacus contained higher levels of crude ash, crude protein, crude lipid, carbohydrates, and dietary fiber than A. cruentus. The major free sugars of the two amaranth baby-leaves were fructose and glucose. Fructose content of A. hypochondriacus was higher than that of A. cruentus, and glucose content of A. cruentus was higher than that of A. hypochondriacus. Acetic acid, malic acid, and fumaric acid were detected in two amaranth leaves, but succinic acid was not detected. Two amaranth leaves contained 17 amino acids except for methionine, proline, and tyrosine, and leaves contained the highest glutamic acid contents. In addition, A. cruentus and A. hypochondriacus leaves contained high contents of taurine and ${\gamma}$-aminobutyric acid and showed various biological activities. The major mineral and fatty acid of the two amaranth leaves were potassium and linolenic acid (C18:3), respectively. The ${\beta}$-carotene contents of A. cruentus and A. hypochondriacus leaves were $478.72{\mu}g/100g$ and $474.12{\mu}g/100g$, respectively. In vitamin B complex, $B_2$, $B_3$, and $B_5$ were detected in the two amaranth leaves whereas vitamins $B_1$, $B_6$, and $B_{12}$ were not detected. A. hypochondriacus contained higher amounts of vitamin C and E than those of A. cruentus. Overall, amaranth leaves contained high amounts of nutritional components. Therefore, amaranth leaves are expected to be useful for the development of a functional food. Moreover, these results will provide fundamental data for advancing sitological value, breeding new cultivars, and promoting leafy vegetable usage.

The chemical components and antioxidative activity of Korean gold kiwifruit were investigated. The values of pH, soluble solid and total acidity were 4.43${\pm}$0.16, 17.01${\pm}$0.04$^{\circ}Brix$, and 0.082${\pm}$0.02%, respectively. Hunter L, a, and b values were 49.80${\pm}$0.24, -6.79${\pm}$0.02, and 19.72${\pm}$0.18 value, respectively. Proximate compositions were as follows; moisture 78.62${\pm}$2.26%, crude protein 1.34${\pm}$0.25%, crude lipid 0.70${\pm}$0.06%, crude fiber 1.99${\pm}$0.13%, crude ash 0.99${\pm}$0.26%, and carbohydrate 16.36${\pm}$1.23%, respectively. Mineral elements were K 265.86${\pm}$5.00, P 71.82${\pm}$29.18, and Ca 23.84${\pm}$2.10 mg%, respectively. Free sugar compositions were sucrose (1.04${\pm}$0.18%), glucose (2.17${\pm}$0.21%) and fructose (1.86${\pm}$0.11%). Amino acid contents of Korean gold kiwifruit was very rich in glutamic acid 86.51 ${\pm}$5.58 mg/100 g and deficient in tyrosine 15.00${\pm}$4.91 mg/100 g. Organic acid compositions were quinic acid (6.65${\pm}$0.21 mg/g), malic acid (1.62${\pm}$0.13 mg/g) and citric acid (4.82${\pm}$0.21 mg/g). Contents of ascorbic acid and total phenols were 0.27${\pm}$0.06 mg/g and 0.047${\pm}$0.002 mg/g, respectively. The DPPH radical scavenging activity and reducing power of the water extract from Korean gold kiwifruit was 86.87% and 1.96 at a concentration of 25 mg/mL. The water extract showed considerable antioxidative activity against linoleic acid autoxidation in a dose-dependent manner.
In this study, the general compositions, amino acids, fatty acids and collagen content of three abalones, which were harvested in Wando, Heuksando and Jeju Island in Korea, were analyzed and compared. The abalone body and viscera were separated from each other and the physicochemical properties were investigated. The moisture and protein contents of the viscera were lower than that of the body; while the lipid, carbohydrate, and mineral contents were higher. The general compositions and mineral contents also presented fluctuation among the three abalone groups. The amino acid content via hydrolysis in the abalone viscera ranged from 93.16 to 127.02 mg/g, which was lower than the amino acid content of the abalone body of approximately 145 mg/g. However, the free amino acids level in the abalone viscera ranged from 16.81 to 20.10 mg/g, which was higher than that of the abalone body level of approximately 7.90 to 10.59 mg/g. The fatty acid analysis revealed that while the saturated fatty acid percentages in the abalone body were higher than in the abalone viscera, the percentages of the monoenoic and polyenoic fatty acids of the body were significantly lower. The body of the abalone harvested in Wando contained the highest level of collagen ($2.26{\pm}0.46mg/g$), followed by the abalone harvested in Jeju Island and Heuksando. The abalone viscera contained much lower collagen, which ranged from $0.37{\pm}0.15mg/g$ to $0.20{\pm}0.03mg/g$. The results of this study will provide useful information for the future research of abalone.

As a part of investigation to use the Anatrctic krill, Euphausia superba, more effectively as a food source, processing conditions, utilizations and storage stability of krill paste (intermediate product of krill) were examined and also chemical compositions of krill paste were analyzed. Frozen raw krill was chopped, agitated with $25\%$ of water to the minced krill and then centrifuged to separate the liquid fraction from the residue. This liquid fraction was heated at $98^{\circ}C$ for 20 min. to coagulate the proteins of krill, and it was filtered to separate the protein fraction. Krill paste was prepared with grinding the protein fraction, adding $0.2\%$ of polyphosphate and $0.3\%$ of sodium erythorbate to the krill paste for enhancing of functional properties and quality stability. The krill paste was packed in a carton box, and then stored at $-30^{\circ}C$. Chemical compositions of krill paste were as follows : moisture $78\%$, crude protein $12.9\%$, crude lipid $5.9\%$, and the contents of hazardous elements of krill paste as Hg 0.001 ppm, Cd 1.15 ppm, Zn 9.1 ppm, Pb 0.63 ppm and Cu 11.38ppm were safe for food. The amino acid compositions of krill paste showed relatively high amount of taurine, glutamic acid, aspartic acid, leucine, lysine and arginine, which occupied $55\%$ of total amino acid and also taurine, lysine, glycine, arginine and proline were occupied $65\%$ of total free amino acid. Fatty acid compositions of krill paste consist of $32.4\%$ of saturated fatty acid, $29.6\%$ of monoenoic acid and $38.0\%$ of polyenoic acid, and major fatty acids of product were eicosapentaenoic acid ($17.8\%$), oleic acid ($16.9\%$), palmitic acid ($15.3\%$), myristic acid ($8.7\%$) and docosahexaenoic acid ($8.4\%$). In case of procssing of fish sausage as one of experiment for krill paste use, Alaska pollack fish meat paste could be substituted with the krill paste up to $30\%$ without any significant defect in taste and texture of fish sausage, and the color of fish sausage could be maintained by the color of krill paste. Judging from the results of chemical and microbial experiments during frozen storage, the quality of krill paste could be preserved in good condition for 100 days at $-39^{\circ}C$.
This study investigated the effects of dietary moisture level and storage temperature on lipid oxidation and fatty acids composition of the extruded pellet feed. The diets containing the moisture levels of 5%, 15% and 25% were prepared by adding moisture (water) to the commercial extruded pellets and stored at $5^{\circ}C$, $20^{\circ}C$ (room temperature) and $35^{\circ}C$. The samples for analysis were collected at every 2 days for 10 days. Acid value (AV), peroxide value (POV), 2-thiobarbituric acid (TBA) value and fatty acid composition of the feeds were measured. No differences in the AV, POV and TBA value were observed in feed containing 5% moisture at all storage temperatures for 10 days. However, the AV, POV and TBA value of diets containing 15% and 25% moisture increased rapidly at $20^{\circ}C$ and $35^{\circ}C$ after 4 days. Fatty acids compositions of feeds containing 5% moisture did not change during the storage periods at $5^{\circ}C$ and $20^{\circ}C$. However, 5% moisture feed stored at $35^{\circ}C$ increased monoene fatty acid content and decreased the contents of polyene fatty acid, PUFA (polyunsaturated fatty acid)/SFA (saturated fatty acid) and $(C_{20:5}+C_{22:6})/C_{16:0}$ after 4 days. Also, 15% moisture feed stored at $35^{\circ}C$ showed increased monoene fatty acid content and decreased $(C_{20:5}+C_{22:6})/C_{16:0}$ after 2 days. The diet containing 25% moisture showed increased monoene fatty acid content and decreased contents of PUFA, PUFA/SFA and $(C_{20:5}+C_{22:6})/C_{16:0}$ at all temperatures after 2 days. In this study, lipid oxidation can occur in the extruded pellet feeds of 15% and 25% moisture at room temperature after 2 days.

This study was designed to observe the effects of the feeding Platycodon grandiflorum(6 or 22 years) extract on the improvement of the blood glucose, lipids in the serum and liver of alloxaninduced hyperglycemic rats(S.D. strain, ♂), alloxan monohydrate 15mg/kg B.W./day I.P. injection) for 3 weeks. Concentrations of blood glucose were significantly higher in the alloxan administration(I.P.) groups(groups 2, 3 and 4) than those in the control group(group 1, basal diet). Blood glucose concentrations were remarkably lower in the group 3(basa1+alloxan+6years Platycodon grandiflorum) and 4(basa1+alloxan+22years Platycodon grandiflorum) than those in the group 2(basal+alloxan), and particularly, lower in the group 4. Concentrations of total cholesterol and LDL-cholesterol in serum were significantly lower in the groups 3, 4 than those in the group 2, and remarkably, lower in the group 4 than those in the group 3. Concentrations of HDL-cholesterol in serum were tile highest in the group 1. Those in the groups 3 and 4 were higher than those in the group 2. Atherosclerotic index were lower in the group 3, 4 than those in the group 2. In the alloxan-induced diabetic groups(groups 2, 3, 4), the serum free cholesterol, cholesterol ester, triglyceride and phospholipid concentrations were significantly lower in the group 3, 4 than those in the group 2. Contents of total cholesterol, triglyceride and phospholipid in liver were remarkably lower in the all experimental groups than those in the group 2. The activities of aspartate aminotransferase, alanine aminotransferase and lactate dehydrogenase In serum were the highest in the group 2, but the other groups were rather lower. From the above research, the Platycodon grandiflorum(6 or 22 years) extracts were effective on the improvement of the blood glucose, lipid compositions in serum and liver. And particularly, Platycodon grandiflorum(22 years) was more effective than those in the Platycodon grandiflorum(6 years).
After pigs was fed by commercial diets supplemented with various concentrations (0, 0.5, 1, and 1.5%) of the fermented mushroom by-product of Pleurotus eryngii, the meat qualities and the serum lipid compositions of the individual pig groups were investigated. The levels of total lipid, total cholesterol, and triglyceride in the serum were significantly lower when the pigs were fed with the diet supplemented with 1.5% fermented mushroom by-product than those of the control pigs. HDL-, LDL-, and VLDL-cholesterol contents in the serum exhibited no significant difference between the pig group fed by the diet containing the fermented mushroom by-product and the control group. In comparison to the control group, the pig group fed by the diet supplemented with 1.5% fermented mushroom by-product showed significantly lower level of AI, CRF, GOT, and LDH values in the serum, whereas the difference in the level of antioxidant activity of the serum was not significant. Sensory evaluation regarding color, off-flavor, tenderness, juiciness, and overall acceptability also showed that the pork from the pig group fed by the diet supplemented with the fermented mushroom by-product ($0.5{\sim}1.5%$) was better than that from the control group. Although enhancement in the lghtness ($a^*$) value of the pork was significant in 20 days of storage at $4^{\circ}C$, the redness ($L^*$) value was not significantly differential during the storage periods regardless of the supplementation of the fermented mushroom by-product into the diet. The cooking loss of the pork from the pig group fed by the diet supplemented with the fermented mushroom by-product (1% and 1.5%) decreased in the storage 10 days, but it increased in the storage 20 days. After storage for 20 days at $4^{\circ}C$, shear force of the pork obtained from the pigs fed by the diet supplemented with $1%{\sim}1.5%$ fermented mushroom by-product appeared to become significantly lower than that of the control. There were, however, no significant changes between two groups in the level of moisture content, crude lipid, and pH during the storage period. Although the TBARS content was enhanced in all groups during the storage period, the enhancement appeared to be more significant in the pork from the pig group fed by the diet containing the fermented mushroom by-product in comparison to the control. On the other hand, the ratio of UFA/SFA for the pork obtained from the individual pig groups showed no considerable diet-associated alterations during the storage period.

This study was established to investigate the effect of germanium-fortified yeasts on the serum lipid composition and immune system of human body. All 50 subjects with the age range of $50{\sim}75$ were entered in this clinical trial for 6 months. The effects were determined by the proliferative responses of immune-mediated cells, T-cell, B-cell and NK-cell during daily supplementation with/without germanium-fortified yeast. The results of hematology and blood chemistry didn't show any significant differences during administration periods. Serum lipid compositions also didn't show any significant differences during administration periods except triglyceride (TG) and VLDL-cholesterol. TG and VLDL-cholesterol levels were increased significantly by the consumption of germanium-fortified yeast (p<0.05). Immune mediated T-celt and NK-cell didn't increased in both control and test group supplemented with germanium fortified yeast, while B-cell increased in the germanium fortified yeast group after 8 week (p<0.05). Also $TNF-{\alpha}$ increased in the group of germanium fortified yeast after 8 week (p<0.05) but not in the control group. From the above results, germanium fortified yeast is expected to be useful on the improvement of the cellular immune response and protection of organs from various chronic diseases.

This study was designed to observe the efforts of the feeding Platycodon grandiflorum, Codonopsis ianceolata, perilla oil and safflower oil on the improvement of the lipids in the serum and liver of dietary hypercholes-terolemic rats. Experimental groups mixed with 5% cellulose+10% lard (group 1, control group), 2% cholestyramine+10% lard (group 2), 5% C. Ianceolata+10% perilla oil (group3). 5% P. grandiflorum+10% perilla oil(group 4), 5% C. ianceolata+10% safflower oil(group 5) and 5% P. grandiflorum+10% safflower oil (group 6) were administered to the male rats of the Sprague Dawley for 3 weeks. Concentrations of total cholesterol in serum were significantly lower in the all experimental groups (2~6 groups) than in the control group, and particularly, the lowest in the group 2 and 6. Concentrations of HDL-cholesterol in serum were remarkably higher in the groups 2 and 4. The ratio of HDL-cholesterol to total cholesterol was the highest in the group 2. Atherosclerotic index was lower in the groups 2, 4 and 6. Concentrations of LDL, phospholipid and triglyceride in serum were remarkably lower in the all experimental groups than in the control group, and particularly, lower in the groups 2, 4 and 6. Concentrations of free cholesterol and cholesteryl ester in serum were significantly lower in the all experimental groups than in the control group, and particularly, the lowest in the group 2. Concentrations of glucose in blood were the lowest in the group 2. And groups 3 and 5 were slgnificantly lower. Contents of total cholesterol and triglyceride in liver were significantly lower in the all experimental groups than in the control group, and particularlyr the lowest in the groups 2 and 3. Phospholipid content was showed little differenre among groups but the lowest in the group 2. From the above research, the feeding 5% Platycodon grandiflorum+10% perilla oil and 5% Platycodon grandiflorum+10% safflower oil were effective on the improvement of the lipid compositions in serum and liver.

Nutritional compositions, volatile compounds, and sensory attributes of Cynanchi wilfordii Radix were analyzed in order to examine its practical utilization as a food resource. In the proximate analysis, protein and lipid contents were shown to be 14.6 and 5.0 mg/100 g, respectively, in C. wilfordii Radix. Potassium was the most predominant mineral (809 mg/100 g), as determined by inductively coupled plasma-optical emission spectrometry in parallel with microwave acid digestion. Total phenolic content was found to be 410 mg/100 g. Further, arginine and linoleic acid were the most abundant amino acid and fatty acid of C. wilfordii Radix, respectively. To examine its functional properties, classical 2,2-diphenyl-1-picrylhydrazyl (DPPH) analysis was performed. As a result, the concentration of C. wilfordii Radix required to scavenge 50% of DPPH radicals was 1.16 mg of dried material. Lastly, in olfactory and sensory tests, ${\beta}$-eudesmol (woody odor) was the major flavor compound responsible for the bitter taste and sensory attributes of C. wilfordii Radix. Taken altogether, the above results provide important preliminary results for utilization of C. wilfordii Radix as a food resource.

제 5 장 계약 해지 및 이용 제한
제 15 조 (계약 해지)

제 16 조 (서비스 이용제한)
① 당 사이트는 회원이 서비스 이용내용에 있어서 본 약관 제 11조 내용을 위반하거나, 다음 각 호에 해당하는
경우 서비스 이용을 제한할 수 있습니다.
- 2년 이상 서비스를 이용한 적이 없는 경우
- 기타 정상적인 서비스 운영에 방해가 될 경우
② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
