The Effect of Feeding Frequency on the Growth and Composition of Individual Organs in Rats (식이섭취 빈도수가 흰쥐의 성장 및 각 기관의 조성에 미치는 영향)

  • The effect of feeding Sequency on the growth and composition of individual organs in young and adult rae were investigated Young and adult male rats were received 20% casein diet by one-meal, three-meals per day or ad libitum for 24 days The rats were tilled and analyzed with regard to the composition of individual organs DNA, RNA, Protein lipid and water content of the liver, kidney, speen were determined In both young and adult rats, the body weight gain of the three- meal group was similar to that of ad -lib. group, but the body weight gain and food intake of the one - meal group were lower than those of others. In case of young rats, DNA, RNA and protein content of liver, kidney and spleen was less in one- meal group than in ad-lib group : their compositions per DNA were, however, similar in both instances In case of adult rats, the weight of liver increased significantly and their composition per DNA except lipid increased in one - meal group, but the total DNA content in the liver did not show any significant difference. The size of stomach and intestine tend to increase in meal -feeding group, but the serum cholesterol showed no significant change.

Myo-inositol Requirement in Diets for Juvenile Olive Flounder (Paralichthys olivaceus) (넙치 치어의 사료 내 myo-inositol 요구량)

  • A long-term (26 weeks) feeding experiment was conducted to examine the essentiality and requirement of inositol in diets for olive flounder because no information is available in the species. Five casein-gelatin based semi-purified diets were formulated to contain four different levels of myo-inositol (0, 0+antibiotic, 400, 800, and 1600 mg/kg, designated as M0, M0+, M400, M800, and M1600, respectively). One (M0+) of the control diets contained tetracycline hydrochloride (0.4%, wt/wt) as an antibiotic to inhibit biosynthesis of inositol by micro-organism in intestine of fish. Olive flounder at the early juvenile stage (initial body weight 1.22 g) were randomly distributed into fifteen 35 L tanks (48 fish/tank) and fed with one of the experimental diets (3 replicates per diet). At the end of the feeding trial, the weight gain, feed intake, specific growth rate, and protein efficiency ratio of fish fed diets containing higher levels of myo-inositol (M800 & M1600) were significantly higher than those of fish fed the other diets (P<0.05). Feed conversion ratio, survival, hematocrits, and hemoglobin of fish fed experimental diets were not significantly different among all the fish groups. Whole body compositions of fish were not different except for lipid content. The lipid content was significantly different between M0 and M400 diet groups. These results indicate that juvenile olive flounder requires dietary supplementation of myo-inositol in diets for normal growth and its optimum level seems to be approximately 800 mg myo-inositol/kg diet.

  • Owing to their high growth rate, marine microalgae such as Chlorella, Spirulina, Porphpidium and Dunaliella have been believed to be potentially useful for the production of foods, drugs and energy from light, $CO_2$ and minerals. In this study, we investigated the relationship between the growth and fatty acid composition in the blue green alga Spirulina platensis when the temperature and light intensity of culture conditions were changed. The optimal growth conditions for Spirulina platensis from the biomass and lipid contents were $30^{\circ}C$ on 6391 $\mu$E/$m^3$/sec and $35^{\circ}C$ on 4235 $\mu$E/$m^3$/sec. The difference of lipid contents between exponential phase and stationary phase were very large according to growth conditions. According to growth conditions the fatty acid compositions of Spirulina platensis differed, but regardless of growth conditions the main fatty acids were C16 : 0 and C20 : 0 in saturated fatty acid, C16 : 1, C18 : 1 and C 18 : 2 in unsaturated fatty acid.

Effect of Starvation on the Total Metabolism of Crangon affinis (자주새우, Crangon affinis의 총대사에 미치는 기아의 영향)

  • Biochemical composition, the rates of nitrogen excretion in the form of ammonia, amino acids and total nitrogen, and oxygen consumption of the shrimp Crangon affinis were measured at three temperature regimes $(7,\;15,\;and\;25^{\circ}C)$ and the variations were also determined for starvation periods (1-25 days). The composition of the major biochemical fractions was analysed into carbohydrate: $4.2\%,\;protein:\;68.6\%,\;lipid:\;7.0\%,\;chitin:\;6.3\%,\;and\;ash:\;14.6\%,$ all expressed as percentage of dry weight. Molting frequency was lower at $7^{\circ}C\;than\;25^{\circ}C$ during the period of starvation, and during the same period the higher temperature was, body weight and body compositions the more decreased. Through all starvation periods $O_2$ consumption tended to decrease but total nitrogen tended to increase at any temperature regimes. The dominant form of excreted total nitrogen was ammonia-N at any temperature. From the O:N ratio it appeared that carbohydrate and lipid reserves were quickly exhausted (1-5 days), and that proteins were the substrates oxidized to meet the energetic requirements of C. affinis at any temperature. After 25 days of starvation the O:N ratio remained constant near a value of 8, which indicates that only proteins were being utilized at three temperatures. After 25 days of starvaion C. affinis excreted 23.01ug N/mg body nitrogen per day at $7^{\circ}C,\;32.97\mu g\;N/mg$ body nitrogen per day at $15^{\circ}C,\;and\;44.81\mu g\;N/mg$ body nitrogen per day at $25^{\circ}C$, and lost about 1.75, 2.47 and $3.29^{\circ}C$ of body protein per day at 7, 15, and $25^{\circ}C$ respectively.

Effects of the Feeding Mixed with Various Levels of n-3 and n-6 Polyunsaturated Fatty Acid on the Lipid Components and Fatty Acid Metabolism of Serum Lipoprotein in Hyperlipidemic Rats (n-3 및 n-6계 다불포화 지방산의 함유비율이 다른 유지가 고지혈증 흰쥐의 혈청 지단백 지질성분 및 지방산 대사에 미치는 영향)

  • This study was designed to observe the effects of the feeding mixed with the sardine oil containing n-3 EPA, DHA and the safflower oil in which rich n-6 linoleic acid on the improvement of the lipids and on the fatty acid matabolism of serum lipoprotein in the dietary hyperlipidemic rats. Experimental oils mixed with 16% butter(control group) and 8% butter+8% olive oil, 8% butter and various level of sardine and safflower oils were administered to the male rats of the Sprague Dawley for 4 weeks. Concentrations of total cholesterol in serum lipoproteins were highest in the LDL, followed by VLDL, HDL and chylomicron components. in the triglyceride concentrations, chylomicron were highest, and much VLDL, LDL, HDL components. There were highest in the HDL, followed by LDL, VLDL and chylomicron in phospholipid concentrations of serum lipoproteins. Concentrations of total cholesterol, triglyceride and phospholipid in serum lipoprotein were lower in the other groups than in the control groups, and particularly, lowest in the group 5(4% sardine oil+4% safflower oil). From this results, the feeding equal quantity mixed oil with n-3 PUFA rich sardine oil and n-6 PUFA rich safflower oil were effective on the improvement of the lipid composition in the serum lipoprotein. It might be due to the effects of appropriate rations of P/S, 0.85 and n-6/n-3P, 2.85 in the test lipids. In the fatty acid composition of serum lipoprotein, ratio of P/S and n-3/n-6P were influenced from the fatty acid compositions of the mixed test lipids. And EPA contents were higher in the chylomicron components.

Food Intake and Clinical Blood Indices of Female College Students by Body Mass Index (체질량지수에 따른 여대생의 식이섭취 실태와 혈액성상에 관한 연구)

  • This study was conducted to investigate the relationships among body composition, dietary intake, and clinical blood indices in college students by body mass index (BMI). Their body compositions were determined by means of BIA (Bioelectrical Impedance Analysis) method. Their dietary intake was determined using a 3-day record method and their hematological indices were determined by semi-automated microcell counter (Sysmex F-520). Their serum lipid levels were measured using biochemical analyzer (Spotchem). Subjects were classified as underweight, normal or over-weight groups according to their BMI. The subjects were 69 healthy college students aged 20 to 26 years. The average age, height, weight, and BMI was 21.3 years, 162.6 cm, 54.4 kg, and $20.6cm/m^2$, respectively. Their average consumption of energy was 1693 kcal, 84.7% of RDA and their mean ratio of carbohydrate: protein: fat were 54.5 : 16.4 : 29.0. There was no significant difference in nutrient intake among the groups except ${\beta}$-carotene and vitamin C. The ${\beta}$-carotene intake was significantly higher in the underweight group. Vitamin C intake was significantly higher in the overweight group. The mean intakes of Ca, Fe, Zn and folate of subjects were 74.8% to 83.2% of RDA. Especially, intakes of Ca, Fe, Zn and folate were lower in the abnormal weight groups. The overall mean values of the hematological indices in female college students were within the normal range and there was no significant difference among the groups. However, anemic subjects with hemoglobin (< 12 g/dl) and hematocrit (< 36 g/dl) accounted for about 11% of the subjects. The everall mean values of the serum lipid levels were within the normal range and there was no significant difference among the groups. But serum HDL-cholesterol level of the overweight group was lower than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the overweight group compared to the other groups. Based upon this study, it is necessary for college women to be educated regarding consuming more Ca, Fe, Zn, folate and less fat and cholesterol in order to have better health promotion.

Fatty Acid Composition of Lipids obtained from Korean Soybean Varieties (한국산 콩의 품종별 지방질의 지방산 조성)

  • The fatty acid compositions of lipids from five local varieties and three imported varieties of soybean were determined. Total and free lipids of the samples were extracted with chloroform-methanol mixture (2:1, v/v) and ethyl ether, respectively. The ether-extracted samples were extracted again with water saturated n-butanol to obtain bound lipids. The average percent contents of the lipid fractions were 21% (total), 18% (free), and 3.3% (bound). The results indicated that seven fatty acids (10:0, 12:0, 14:0, 16:0, 17:0, 20:0 and 22:0) were identified as minor fatty acids for all the varieties examined in this study. The relative contents of 18:2 were the highest (50.1-59.7%) in all the lipid fractions, and the contents in total and free lipids were in-fluenced by the local varieties. Little difference in fatty acid composition was noted between the total and free lipids of the samples. Total and free lipids contained more 18:1 (about 10%) and less 16:0 (about 40%) and 14:0 (about 34%) than did the bound lipids. The relative percent contents of 18:3 in the total, free and bound lipids were on average 8.9, 9.0, and 7.3 percents. The content in the total lipids of Gwanggyo varieties showed the highest level (11.1%), and in the bound lipids of Eundaedoo varieties the lowest (6.0%). In case of the total and free lipids, those varieties which showed higher relative contents of 18:1 generally had lower relative contents of 18:2 and 18:3.

Nutrient Composition in the Parts of Opuntia ficus-indica var. saboten and Opuntia humifusa (보검선인장과 저단선인장의 열매와 줄기 영양성분 조성)

  • This study was conducted to analyze the nutrient compositions of stem and fruit of Opuntia ficus-indica var. saboten (OF) and Opuntia humifusa (OH). The results of the two-way analysis of variance test indicated that the parts, varieties and parts*varieties had influence on nutrient content except crude protein, soluble dietary fiber, Fe, Se, I, vitamin E, niacin and vitamin C. Moisture and crude ash content was higher in stem than in fruit, while crude lipid and insoluble dietary content was higher in fruit than in stem. Mineral content revealed that K (1,313.67 mg% in OF, 1,351.38 mg% in OH) was the highest in fruit and Ca (5,146.29 mg% in OF, 1,388.19 mg% in OH) was the highest in stem. Vitamin C was the most abundant vitamin in the fruit of OF (199.98 mg%) and OH (187.12 mg%). Polyunsaturated fatty acid was the highest among fatty acids (66.9~70.1%), with higher content in the stem (753.89 mg%) than fruit (578.01 mg%) in OF, while higher in the fruit (1,093.63 mg%) than stem (475.07 mg%) in OH. Moisture, crude protein, Mg, Se and riboflavin was higher in OF than OH; whereas, crude lipid, insoluble dietary fiber, total dietary fiber and monounsaturated fatty acid were higher in OH than OF. These results indicated that OF and OH could be a good food source for Ca, K and Vitamin C. Also, different nutrient content by parts and varieties, can be helpful in choice of parts or varieties for consumer purposes.

Effect of Dietary Clay Mineral on Meat Quality of Hanwoo (Korean Cattle) Bull Beef during Refrigerated Storage (점토 광물질의 급여가 비거세 우육의 저온저장 중 품질에 미치는 영향)

  • The effect of dietary clay mineral on meat quality in M. longissimus of Hanwoo (Korean cattle) bull beef during refrigerated storage (4$^{\circ}C$) was investigated. Experimental groups were divided into control (basal diet) and CT-1.25% (basal diet + 1.25% clay mineral) groups. There was no significant differences in proximate and fatty acid compositions between control and CT-1.25% groups. The pH of control group was significantly (p<0.05) changed during storage, but CT-1.25% group was little affected by storage time. CIE a* (redness), chroma (C*) values and R630-R580 were significantly (p<0.05) decreased during storage for both groups. In particular, those values decreased more rapidly in the control group. The rate of metmyoglobin accumulation during storage increased more rapidly in the control group. Therefore, discoloration in the control group was more accelerated compared to the CT-1.25% group. TBARS (thiobarbituric acid reactive substances) which represents lipid rancidity were significantly (p<0.05) lower in CT-l.25% group than in the control. Water-holding capacity (WHC) was significantly (p<0.05) increased during storage for both groups, and CT-1.25% group had significantly (p<0.05) higher WHC than control group. Consequently, feeding of clay mineral (1.25%) was effective in increasing meat color stability and WHC, and retarding lipid oxidation than did control group.

Food Component Characteristics of Cold Air Dried Anchovies (냉풍건조 멸치의 식품성분 특성)

  • This study was conducted to evaluate the quality of the cold air dried anchovies (CA), and compared with those of sun-dried anchovies (SA) and hot air dried anchovies (HA). Peroxide value increased, while ratio of percentage of (20:5+22:6) to that of 16:0 decreased during boiling and drying. The extents of change were CA>SA>HA in the order. In the case of CA, lightness was higher, but redness, yellowness and degree of browning was lower than in SA and HA. From the results of lipid properties, color test and sensory evaluation on color and rancidity odor, lipid deterioration was the lowest in CA of all boiled dried anchovy. Favorite properties such as a hot-water soluble nitrogen content and sensory evaluation on color and appearance of CA was superior to that of SA and HA. The nutritional properties (total amino acid contents, mineral contents and fatty acid compositions) of CA was similar to that of SA, but was superior to that of HA. Consequently, CA was recognized as a boiled dried anchovy with the most quality.
