  • As the life style of modern people is gradually being more scientific, up-to-date and specialized, food habit and food culture are a measure of cultural level of a country. Studies on consumer behavioral model show that food habit is closely related to consumer preference, changing life pattern and increasing family income. The purpose of this study was, accordingly, to define the impact of menu characteristics on customer menu selection. For that purpose, some attempts were made: First, discuss the theories on Italian food and customer purchasing behavior as a standard of analysis. Second, find out if there are any differences in customer menu-selection factors in hotel Italian restaurant. Third, make an empirical analysis of menu-selection factors in hotel Italian restaurant to suggest in which direction it should move forward. Fourth, analyze the relationship of demographic characteristics to menu-selection factors.

  • Now days, the life style of people is getting more scientific and more specialized, so food habit as well as food culture are a measure of cultural level of a country. Studies on consumer behavioral model show that food habit is closely related to consumer preference due to changing life pattern and increasing family income. Therefore, The definition of the impact of menu characteristics on customer menu selection is the object of this study. For that purpose, some attempts are made: First, discuss the theories on Korean food and customer purchasing behavior as a standard of analysis. Second, find out if there are any differences in customer menu-selection factors for Korean restaurantin in a hotel. Third, make an empirical analysis of menu-selection factors for Korean in a hotel to suggest which direction it should go forward. Fourth, analyze the relationship between demographic characteristics and menu-selection factors.

  • A lifestyle changes according to environment. It appears more in the dietary life connected with the necessities in life. This study is executed empirically through the questionnaire that consists of selection attribute and variables connected with "well-being" that is examined in empirical analysis. It was carried out for 20 days from July 15 to August 5, 2003 with the customers who live in Seoul and the suburbs. With collected data, there were frequency analysis and factor analysis, reliability analysis using SPSS 10.0 packages, and T-test and ANOVA were enforced for the verification of differences between demographic elements with each factor. The result indicates that the inclinations of customers changed from the "well-being" trend have four factors: health consideration factor, food materials factor, cooking factor, and habit factor. And the housewife group shows the great changes in habit factor. In case of the changes according to incomes, the larger income earners tend to consider health more. In conclusion, people came to prefer the healthy Korean style food from the well-being trend.

  • This study was carried out to investigate the information concerning dietary patterns in middle school students. The subjects of this study were 420(underweight 140, normalweight 140, overweight 140) middle school students. We investigated eating habits, life habits, food attitude. Data were collected by questionnaire and analyzed with the SAS program(Version 8.1). The results of investigation are summarized and concluded as follows ; The average BMI of underweight was 18.3kg/$m^2$ , normalweight was 22.2kg/$m^2$ , overweight was 26.6kg/$m^2$ . In the case of eating habit, the overweight group shows that low frequency of meal and high of skipping meal than the others group. Also in Life habit, the overweight group shows longer of watching TV and using computer. The score of food attitude was also high in over weight group. This study can´t represent the whole middle school students in Seoul. So the survey for the whole students should be followed. We can expect to offer basic data for effective nutrition education by studying.

Effects of Sleep Habits on EEG Sensory Motor Rhythm in Female College Students (여자 대학생의 수면습관이 감각운동리듬 뇌파에 미치는 영향)

  • To evaluate the effects of sleep habits on the powers of beta waves and the sensory motor rhythm of the electroencephalogram (EEG), female college student subjects were divided into four groups, according to their sleep habits, as follows: GSHG (Good Sleep Habit Group), CSHG (Common Sleep Habit Group: late bedtime), CSDG (Cognitive Sleep Disorder-Delayed Sleep Phase Syndrome Group), and NSDG (Non-cognitive Sleep Disorder-Delayed Sleep Phase Syndrome Group). Brain function was stimulated by reading a book for 3 min in the morning (9~12 am) and the EEG was measured. According to the results, the powers of the beta waves and sensory motor rhythm were not different during the resting period among the four groups. However, during the reading stimulation period, the powers of beta waves and the sensory motor rhythm in the GSHG were significantly greater than in the other groups ($p$ <0.05). Beta powers during stimulation also increased in all brain areas in the GSHG ($p$ <0.05). Interestingly, these were decreased in the frontal and temporal lobes in the CSHG by the reading stimulation ($p$ <0.05). On the other hand, sensory motor rhythm, which represents focusing efficacy, only improved in the GSHG. These results indicate that the brain's focusing function during the reading stimulation was not properly operating in the morning in the female college students who had a delayed bedtime and bad sleep habits.

A Study on the Food Behaviors and Nutritional Status of Industrial Workers (산업체 근로자의 식생활 습관과 영양 및 건강상태에 관한 연구 - 마산지역을 중심으로-)

  • This study inrestigated the dietary behavior, nutritional intake, and health status of industrial workers. Two hundred seventy workers(165 men and 105 women) in Masan, who were provided food services were selected as survey subjects. They were given questionnaires on nutrition knowledge, food frequency questionnaires, and blood analysis were conducted through an annual health examination from May to August 1998. The average age of the subjects was $35.7\pm{11.8}$ years, and 80% the of women were in their teens and 20's and 80% of men were in their 30's and 40's. The nutrition knowledge score was higher in women than in men, while food habit score was higher in men than in women. As age increase, the degree of life stress became lower and food habit score was higher in men than in women. As age increases, the degree of life stress became lower and food habit was improved. In women, all nutrient intakes were avove the recommended dietary allowances(RDA), and in men intakes of only vitamin E and calcium were under RDA. Levels of serum total cholesterol, triglyceride, and blood glucose, blood pressure, body mass index were positively related to age. The number of subjects suspected of having chronic disease was the highest for those in their 40's. The results indicate that nutritional status of industrial workers in the present study was fairly good probably due to food services, but their health status should be supervised as their age increases.

A Study on the Weight Control and Food Habit in Obese and Normal-Weight Elementary Children (초등학교 비만 아동과 정상 체중 아동의 체중 조절 실태와 식습관에 관한 연구)

  • This study examined the weight control and food habits in 160 obese children and 191 normal-weight children in 4th, 5th and 6th graders of some elementary schools in Gumi city. Regarding the subjects' self-recognition of their body shape, 27.8% of the normal weight group and 92.5% of the obese group acknowledged themselves to be obese. 58.9% of the normal weight group and 61.0% of the obese group were not satisfied with their own body shape and the difference between two groups was very small, 23.6% of the normal weight group and 87.5% of the obese group have tried to reduce weight. The main causative factor of weight gain that children themselves recognized was a sedentary life style. All the students showed a high rate of irregular and unbalanced diet. The obese children showed a significantly higher rate of skipping meals and eating meals faster than the normal weight children. More obese children disliked exercise, and did less excercise than the normal weight children. There was a negative correlation between the obesity index and the food habit score. In other words, they frequently skip a meals, eat in a hurry and dislike vegetables and dairy products. In addition, there was a positive correlation between the student's BMI and the parents' BMI. Overall, many normal weight children showed a high level of self-consciousness of being obese or underweight. Both groups showed a low degree of satisfaction with their own body shape. Therefore education for the distorted perception of body shape is needed because, even normal weight children have tried to reduce their weight. Obese children should be encouraged to exercise, not skip a meals and eat slowly. They also need a systematic education program on weight reduction and weight maintenance. Moreover, education on a healthy diet, healthy food habits, and healthy body shape are necessary for elementary school children.

The Effect of Life Stress on Eating habit of University students in Chungcheongnam-do Province (충남 지역 일부 대학생의 생활 스트레스가 식사행동에 미치는 영향)

  • The purpose of this dissertation is to analyze the factors which university students feel as stress in their daily life and the correlation between these and their eating habits. The subject are students enrolled at 'H' university in Asan. There are 801 students who response for this research. We surveyed and analyzed the correlation between the life stress and eating habit of university students. It is analyzed that the objects suffered stress most by 'schooling' and 'job complication.' Surveying the general eating habit of university students, it is found that they do not eat meal regularly, i.e., 'average meals (40.9%)' and 'irregular meal(35.2%).' No significant difference was observed in the regularity of meals between sexes. When it comes to overeating or voracity, male students answered 'sometimes(77.6%)' or 'often(22.5%)', but female students answered 'sometimes(66.2%)' or 'often(28.2%)', which means that female students are more frequent in overeating or voracity. The frequency of eating snack is more than once a day 60.1% in female students and 47.3% in male students, which shows that the rate of female students is much higher than that of male students. Surveying the correlation between stress that male and female university students suffer and the regular meal, we found that both of them tend to eat meal irregularly if they are stressed. Comparing the stress for its factor, male students eat meal irregularly if they are stressed by 'schooling' and female students eat meal irregularly if they are stressed by 'figure.' Checking the correlation between stress and time spent for meal, it is found that while male students eat meal in a hurry when they are stressed by 'job affair', female students do so when they are stressed by 'home economy. Analyzing the correlation between frequency of snack and stress, both male and female tend to eat snack more frequently when they are stressed more. In general, males like the oily food more than male, but when students get stresses, females want to eat oily food than male. Analyzing the correlation between stress and preferential menu, males like green vegetables, sea food in the life get less stresses than others Females like a menu of meat get higher stress than others.

A Study of Factors Affecting the Purchases of Well-Being Tea Drinks (웰빙 차(茶) 음료 구매 영향요인에 관한 연구)

  • The purpose of this study was to identify factors affecting the purchases of well-being tea drinks based on the analysis of demographic characteristics, well-being oriented consumer behaviors, and consumer consciousness toward well-being tea drinks. The subjects of this study were undergraduates and graduate students in Seoul. The findings were summarized as follows: 1. Well-being oriented consumer behavior patterns were categorized in three factors; non-dietary life, selective dietary life, and regular/temperate behavior and consumer consciousness toward well-being tea drinks were categorized in two factors; habit/ familiarity and health/ economical efficiency. 2. Multiple regression analysis was used for finding out factors affecting the purchases of well-being tea drinks; independent variables were demographic characteristics(sex, monthly average family income and the amount of personal expenditure), well-being oriented consumer behavior factors and consumer consciousness factors toward well-being tea drinks. Weekly purchase frequency of well-being tea drinks was defined as a dependent variable. As a result, the purchases of well-being tea drinks were influenced in order of regular/temperate behavior, the consciousness of health/ economical efficiency, the amount of personal expenditure and the consciousness of habit/ familiarity. Especially, regular/temperate behavior negatively affected the purchases of well-being tea drinks.
