렌즈콩의 영양성분과 생리활성 및 식품산업의 응용 (Chemical Composition and Nutritional Characteristics of Lentils(Lens culinaris), and Their Application in the Food Industry: A Review)

  • 본 총설에서는 렌즈콩 영양성분 함량과 특성 그리고 그동안 응용된 식품을 조사하여 식품관련 산업에 필요한 기초자료로 활용하고자 하였다. 영양성분 함량 조사 결과 렌즈콩은 산지에 따라서 차이는 있으나 고단백질, 저지방, 식이섬유, 저항 탄수화물을 함유하고, 아미노산의 함량 비교에서는 천연의 상태에서 요리된 후에도 영양의 손실이 크지 않음이 확인되었다. 특히 다양한 무기질이 풍부하여 무기질 결핍의 위험에 노출된 사람들의 좋은 식품원료로 확인되었다. 특히 항암, 항종양, 항산화, 항고혈압 효과들과 같은 다양한 생리활성들이 보고되고 있다. 지금까지 렌즈콩은 콩과 콩가루의 형태로 식품소재로 응용되어 왔다. 일부 발아 또는 발아의 기술을 이용한 콩나물이나 유산균 음료, 치즈 등이 생산되기도 하였다. 그러나 본격적인 콩의 발효기술을 렌즈콩에 이용하는 것은 극히 제한적이었다. 특히 소화 흡수율이 높고 우수한 혈전분해능과 다양한 생리활성을 나타낸 청국장 제조 관련 기술을 렌즈콩 발효에 이용하려는 연구는 아직 초기 단계라고 할 수 있다. 발효의 효과는 가수분해 효소에 의해서 저분자 펩타이드를 증가시키고 항산화활성, 지질의 산화를 억제하는 중요한 역할을 하며 금속 킬레이트 능력, 라디칼 소거능, 불포화 지방산에 대한 높은 결합력 등이 있을 수 있다. 음식문화 또한 다양해지고 있어서 건강에 유익하며, 우리의 기호에 알맞은 식품의 개발이 절실히 필요하다. 그러므로 영양학적 성분으로 우수한 특성과 효능이 확인된 렌즈콩과 청국장 발효기술을 접목한 렌즈콩 청국장 혹은 발효 렌즈콩 제품의 미래는 무척 밝다고 사료된다.

Compositional Analysis of Lentil (Lens culinaris) Cultivars Related to Colors and Their Antioxidative Activity

  • Metabolite profile is a powerful analytical technique to identify the functional characterization of plants. In this study, the phytochemicals and secondary metabolites of lentils (Lens culinaris) were analyzed to compare the anti-oxidative activities according to the different colors. The polar metabolites, fatty acids, carotenoids, flavonoids, anthocyanins, total phenolic acids, DPPH activity were analyzed. Three kind of lentils, French green whole lentil (FG), red whole lentil (LR), and green whole lentil (LG) (ASIA SEED Co., LTD), were used for this study. Fatty acids, phytochemicals, and antioxidative components from each lentil varieties were analyzed by official methods. The contents of lutein in carotenoids were 6-9 times higher than zeaxanthin in all lentils, but were not significantly different among three varieties. The content of carotenoids in FG was lower significantly than those in the LR and LG. Myricetin and luteolin were detected in the only FG. Kaempferol and delphinidin were significantly highest in the FG. Most of the phenolic acids except coumarate were higher in FG and LG than in LR. Also antioxidant effects ($EC_{50}$) were higher in FG and LG than in LR. The analyzed metabolites obtained from lentils showed distinct separation in the PCA results according to the varieties. Also, lentils showed different anti-oxidant profiles according to the colors. FG and LG showing higher contents of phytochemicals showed higher antioxidative activity than LG containing relative low contents of phytochemicals.

  • Proteasome inhibitors can improve the efficiency of cancer treatments by inhibiting nuclear factor ${\kappa}B$($NF-{\kappa}B$) activation in cancer cells. Lentils are a type of beans of which consumption of such beans is increasing. The purpose of this study was to investigate the effects of lentils extract (LE) on the proteasomal activities, $NF-{\kappa}B$ activation, and cell cycle in HepG2 human liver cancer cells. LE treatments inhibited proteasomal activities at concentrations of 10, 50, and $100{\mu}g/mL$ respectively, and repressed $NF-{\kappa}B$ activation at concentrations of 1, 10, and $100{\mu}g/mL$ respectively, in HepG2 cells. LE treatments at concentrations of 1, 10, and $100{\mu}g/mL$ respectively, increased sub-G1 cell population in HepG2 cells, which may be the result of apoptosis. The results suggest that LE inhibited $NF-{\kappa}B$ activation partially with its proteasome inhibitory activities, and the increase of sub-G1 cell population was induced partially, by inhibition of $NF-{\kappa}B$ activation in HepG2 cells.

렌틸과 백년초의 혼합첨가가 소시지의 품질특성에 미치는 영향 (Effect of Lentil and Opuntia ficus-indica Mixtures Addition on Quality Characteristics of Sausages)

  • 세계 10대 슈퍼 푸드인 렌틸과 안정한 붉은 색소로 갖는 것으로 알려진 백년초를 첨가하여 제조한 소시지의이화학적, 물리적 및 관능적 특성의 변화를 관찰하고 건강에 유익한 소시지 제조에 적합한 배합비를 찾고자 하였다. 아질산나트륨 0.15% 첨가군을 대조군(F0)로 하여렌틸 5%와 백년초 추출물(0%, 1%, 3%)을 첨가한 시료군(F1, F2, F3)과 렌틸 10%와 백년초 추출물(0%, 1%, 3%)을 첨가한 시료군(F4, F5, F6)으로 구분하였다. 동물성 단백질을 대체하는 렌틸의 첨가에 의해 조단백의 유의적 증가, 조지방의 유의적 감소를 보였다. 또한, 렌틸에 함유된 다량의 식이섬유와 전분으로 인하여 소시지에서도 렌틸 첨가량 증가에 따라 식이섬유와 전분 함량에 유의적 증가를 나타내었다. 렌틸은 소시지에서 부족한 식이섬유를 보충하고 소시지 제조에 일반적으로 사용되고 있는 증점제인 전분에 대한 대체효과 까지 가능한 것으로 나타났다. 백년초는 렌틸과 마찬가지로 다량의 식이섬유와 미네랄을 함유하고 있어 소시지의 식이섬유를 보충하고 미네랄을 증가시켰다. 렌틸과 백년초 혼합첨가로 소시지의 표면색도는 밝기(L)가 낮아지고 황색도가 높아졌으나 적색도는 각각에 대한 영향이 다르게 나타나서 렌틸 첨가에 의해서는 감소되고, 백년초 첨가에 의해서는 증가하였다. 처리군 중에서 대조군과 가장 유사한 색도를 나타내는 것은 F5(렌틸 10% + 백년초 1%) 이었다. 렌틸과 백년초 첨가로 인한 조직의 변화는 주로 렌틸에 의해 나타났으며 렌틸 첨가량 증가에 의해 경도, 탄력성, 검성, 씹힘성이 증가하여 소시지의 texture를 향상시켰다. 소비자에 대한 기호도 평가에서 색은 F3(렌틸 5% + 백년초 3%)가 대조군과 유의차가 없이 가장 높게 평가되었으며 맛은 대조군보다 F4, F5가 더 높게 평가되었고 전체 기호도는 F3, F4, F5가 유의차 없이 대조군보다 높았다. 렌틸과 백년초를 소시지 제조에 첨가하여 식이섬유가 보충되고 증점제로 주로 첨가되는 전분에 대한 대체효과를 나타내었으며 소시지의 texture를 향상시키고 맛에 대한 기호도를 높여주었다. 또한, 대조군과 적색도가 유사한 것은 F3(렌틸 5% + 백년초 3%) 와 F5(렌틸 10% + 백년초 1%) 이었으나 황색도와 표면밝기를 모두 고려시 대조군과 가장 색도가 유사한 것은 F5 이었다. 따라서, 렌틸과 백년초의 첨가량이 많을수록 식이섬유가 보충되고 물성이 우수한 소시지가 제조되었으나 소시지에 발현되는 색상을 고려할 때 렌틸 10%와 백년초 에탄올 추출물 1%의 첨가가 가장 제조에 적합하였다.

피부 미용 개선을 위한 맥주 효모 및 두류 첨가 수유부용 쿠키 개발 (Development of Cookies with Brewer's Yeast and Beans to Improve Skin Health of Lactating Women)

  • The purpose of this research was to provide basic information for cookies made with black soybeans, chick peas, lentils, oatmeal, and brewer's yeast and to establish the optimum formula for the development of low glycemic index (GI) cookies with high biotin content for lactating women. This study was performed to determine the optimal composite recipe of oatmeal cookies with two different concentrations levels of bean powder (black soybeans, chick peas, lentils) and brewer's yeast using a central composite design. In addition, the mixing conditions of oatmeal cookies were optimized using response surface methodology of sensory evaluation and mechanical and physicochemical analysis. As a result, mechanical and physicochemical analyses showed significant values for lightness, redness, yellowness, hardness, and water content (P<0.05), while sensory evaluation showed significant values for flavor, taste, crispness, and overall acceptability (P<0.05). The optimal sensory combination was suggested to be 3.73 g of bean powder and 1.59 g of brewer's yeast. Considering all outcomes obtained throughout the experiments, brewer's yeast, black soybeans, chick peas, lentils, and oatmeal are suitable ingredients for increasing functionality and consumer acceptability of cookies. In addition, these results are expected to be useful in producing cookies of optimal quality, contributing to the development of various nutritious foods, and improving the food industry for lactating women.

The Study on Soil Classification in Sri Lanka

  • Land information is important for the international agricultural companies. This study investigated the agriculture and soil information in Sri Lanka. This study is the results from investigation of soil properties and agricultural properties determined by the Soil Taxonomy classification system for the soils in Sri Lanka. The order of the main agricultural imports in Sri Lanka was wheat > refined Sugar > dry Onion > Rice > Lentils. The climate of Sri Lanka is divided into three climatic zones. There are a wet zone, an intermediate zone, and a dry zone. Rainfall of the wet zone was $3,000-5,000mm\;year^{-1}$. The rainfall of the dry zone was less than $1,000m^{-1}$. The intermediate zone was in the middle area. Soil series of Sri Lanka were 109 in total. Detailed information of soil series was: 6 of soil Orders, 15 of Suborders, 39 of Great groups, and 56 of Subgroups. Soil texture of topsoil was much more coarse, but subsoil was gravelly coarse soil. Soil of Sri Lanka was classified as a Soil Order. The orders were Entisols > Alfisols > Ultisols > Inceptisols > Histosols > Vertisols.

재래간장으로부터 분리한 Bacillus subtilis를 이용하여 제조한 렌틸콩 청국장의 개발 (Development of Lentil Cheonggukjang Fermented by Bacillus subtilis Isolated from Traditional Soy Sauce)

  • This study was conducted to screen for superior strains for preparation of Cheonggukjang and identify the optimal fermentation time based on fermentation of lentils by various Bacillus subtilis strains. Bacillus count was significantly high at 48 hrs of fermentation (9.22-9.51 log CFU/g). In addition, the pH was significantly high in the range of 7.60-7.92 at 48 hrs fermentation, and the reducing sugar content was significantly high (0.89-1.45). The amino-type nitrogen content and ammonia-type nitrogen content were significantly increased with fermentation time. Additionally, the amylase activity was significantly high (3.05-4.22) at 48 hrs of fermentation, as was the protease activity (4.80-5.63). Bacillus subtilis S3 (5.63), S4 (5.60) were higher than S1 (4.80), S2 (4.92). The viscous substances and DPPH radical scavenging activity increased at 48 hrs, then decreased. Sensory evaluation revealed that lentil Cheonggukjang fermented by S3 showed the highest scores in color, smell, savory taste, sweet taste, viscous substance and overall acceptability. Therefore, 48 hrs of fermentation should be suitable for lentil Cheonggukjang fermented by Bacillus subtilis S3.

The contents of β-carotene and cholesterol in selected types of agricultural and processed foods in Korea

  • In this study, the contents of ${\beta}$-carotene and cholesterol were evaluated in various types of agricultural and processed foods (vegetables, legume products, dairy products, and eggs). Certified reference material (CRM) with an assigned value was used for the validation of the ${\beta}$-carotene and cholesterol analytical methods. High recoveries (accuracy) of ${\beta}$-carotene (96%) and cholesterol (97%) were obtained from the quantitative analysis of the CRM, with a relative standard deviation (%) of 1.86 and 3.35% for the ${\beta}$-carotene and cholesterol, respectively. Vegetables contained relatively high concentrations of ${\beta}$-carotene (raw Toona sinensis, $1650.97{\mu}g/100g$, a raw small onion, $879.09{\mu}g/100g$, and a raw lettuce stem, $591.89{\mu}g/100g$). The ${\beta}$-carotene values in dried chickpeas ($22.94{\mu}g/100g$) and dried brown lentils ($21.98{\mu}g/100g$) were similar. The highest ${\beta}$-carotene value among the analyzed dairy products was found in banana milk ($234.21{\mu}g/100g$) while other flavored products (strawberry milk and chocolate milk) did not contain any ${\beta}$-carotene. Furthermore, ${\beta}$-carotene was not detected in goat milk and high calcium milk in this study. With regard to cholesterol among the analyzed samples, the highest cholesterol value was found in egg yolk (629.30 mg/100 g), and cooking methods (boiling and frying) had little effect on the cholesterol levels of eggs. In addition, the cholesterol content in vanilla ice cream was 28.77 mg/100 g which was the highest value among the analyzed dairy products.

품종별 렌틸 추출물의 폴리페놀화합물 함량 및 항산화 활성 (Polyphenol Contents and Antioxidant Activities of Lentil Extracts from Different Cultivars)

  • 본 연구에서는 렌틸을 이용한 새로운 기능성 소재의 개발에 우선하여 세계적으로 소비량이 비교적 많은 벨루가, 레드, 그린, 프렌치 렌틸을 연구 소재로 선정하고, 0.2% HCl을 함유한 메탄올을 이용하여 추출물을 제조한 후 이들의 항산화 활성을 조사하였다. 총폴리페놀과 플라보노이드 함량은 각각 27.3~30.3 mg TAE/g과 13.14~16.29 mg QUE/g으로 다양하게 나타났으며, 그중 벨루가와 레드 렌틸이 상대적으로 높은 총폴리페놀 함량을 보였다. DPPH와 ABTS 라디칼 소거 활성 및 $H_2O_2$ 소거 활성은 총폴리페놀 함량이 상대적으로 높았던 벨루가와 레드 렌틸이 다른 품종에 비해 유의적으로 높은 활성을 보였으며, 항산화 활성 및 폴리페놀함량과의 비례적 상관관계가 있음을 확인할 수 있었다. ROS 소거 활성이 가장 높았던 벨루가 렌틸을 이용하여 linoleic acid에 대한 과산화 억제 효과를 FTC법으로 조사한 결과, $62.5{\sim}500{\mu}g/mL$에서 농도 의존적으로 유의적인 산화억제효과를 보였으며 $RC_{50}$$222.76{\mu}g/mL$로 확인되었다. 또한, 벨루가 및 레드 렌틸 추출물은 산화적 스트레스 발생을 통해 간세포 손상을 유발하는 것으로 알려진 알코올의 세포독성으로부터 우수한 간세포 보호 효과를 나타내었다. 따라서 향후 추가적인 세포실험과 동물실험을 통한 렌틸의 항산화 활성 검정 및 항산화 기전에 관한 연구가 필요할 것으로 생각되며, 이를 비롯한 다양한 생리활성에 대한 연구들이 이루어진다면 기능성 소재로서 렌틸의 산업적 응용이 활발해질 것으로 기대된다.

성서에서 언급되는 농산물에 관한 연구 -곡물을 중심으로- (A Study on The Agricultural Products Mentioned in the Bible with Priority to the Cereals)

  • Varieties of the cereals produced in the Biblical times and the ways these cereal foods have been grafted into Korean food culture has been pursued, and the regulations of agricultural life and the metaphors or parables of cereals represented throughout the Bible have been studied. The word "grain" appears eight times in the KJV and one hundred seventeen times in the RSV. On the other hand, the word "corn" shows up one hundred and one times in the KJV but not in the RSV at all. Wheat, one of the earliest cultivated and the most important grains for food is mentioned fifty two times in KJV and generally the rich in those days lived on wheat in the parched state or in the form of bread. Barley, one of the staple cereal crops of Palestine is referred to thirty six times in the KJV. It was less expensive than wheat and so was used mainly for the food of such animals as horses, donkeys and cattle, but sometimes it was mixed with flour and used for making bread for men, mostly for Poor men. The spelt (in ASV and RSV) and the rie(in KJV) appearing in Exodus 9:32 is a kind of grain, which is translated into Na-mack (in Hangul Revised Bible ; HRB), Ssal-bori (in Hangul Common Translated Bible : HCB) and Ho-mil (in Hangul King James Bible; HKJB) but which should be put into Spelt-mil in Korean. The lentil appearing in Genesis 25 : 34 is translated into Pat (red-bean) and Bul-kong respectively in HRB and HCB but the same word in the Second Book of Samuel is translated into Pat in both HRB and HCB. HCB translates lentil into Bul-kong in Genesis and into Pat in the Second Book of Samuel (23:11). HCB and HKJB which put lentil into Pat in previous parts translate the word into Nok-tu in the Second Book of Samuel. The word, lentil here should be put into lentil-kong and parched pulse into "Poken-Chong-ja" not into Poken-Nok-tu. Millet which is translated into Cho should be put into Gui-jang. filches should not be classified as a grain or a cereal but as a flavor or a condiment, so the word filches should be put into So-Hoi-hyang or Hoi-hyang. Regulations in reference to agriculture are included in the Bible. That is, it is seen that the Bible regulates the observance of the sabbatical year and feasts, the partition of land, how to sow and so on. It is also observed that grains are used for metaphors or parables: wheat represents the peaceful times and straws are compared to trifles. As seen above, there should be more prudent examinations and standards for the translation of grains into Pat, Pul-kong, Nok-tu, Gui-ree, Ssal-bo-ri and Na-mack.i-ree, Ssal-bo-ri and Na-mack.
