Background and objective: The nanobubbles remain stable in water, and it increased dissolved oxygen (DO) in the water that promotes the seed germination and the plant growth. We evaluated the seed germination and growth of sprouts (radish, wheat, and barley) and leafy vegetables (red mustard and pak choi) when irrigated with various DO of nanobubble water (NB). Methods: The oxygen NB was generated by surface friction and treated in 4 levels: NB 0% (control, DO 9.21 mg·L-1), NB 20% (DO 15.40 mg·L-1), NB 33% (DO 20.93 mg·L-1), and NB 100% (DO 39.29 mg·L-1). Results: The root length of radish and wheat increased more in NB 33% than the control plot. The fresh weight increased in NB 33% compared to the control plot in radish and wheat, and both fresh and dry weight increased more in NB 20%, NB 33%, and NB 100% than the control plot of barley. The leaf length and width of red mustard decreased more in NB 33% and NB 100% than the control plot and NB 20%, which indicated the leaf compactness. The fresh and dry weight of shoot and root increased more in NB 100% than the control plot in red mustard. In pak choi, the shoot fresh weight increased more in NB 100% than the control plot. In leafy vegetables, the germination rate of red mustard in NB 100% was higher than the control plot, however, it was not significantly different between oxygen NB plots in sprout vegetables. Conclusion: The results showed that the root growth and biomass increased after applying NB 33% in sprout vegetables. The leaf growth properties as the number of leaves and leaf size were not significantly different or decreased in NB treatments compared to control plots, but NB 100% (DO 39.29 mg·L-1) effectively increased the root growth and plant biomass in leafy vegetables.

This study was conducted to investigate the effect of each light intensity and photoperiod combination on the growth and glucosinolates (GSLs) content of three species of Brassicaceae plants under the same daily light integral (DLI) conditions. Seeds of leaf mustard (Brassica juncea (L.) Czern.), red mustard(Brassica juncea L.) and kale (Brassica oleracea L. var. acephala (DC.) Alef.) were sown in a rockwool cubes and grown for three weeks. DLI was set to 10 mol·m-2·d-1 and treated with 10h-280, 14h-200, 18h-155, 22h-127 µmol·m-2·s-1 for three weeks. As a result at 14h-200 µmol·m-2·s-1 treatment, shoot fresh/dry weight, the number of leaves, and leaf area were increased in leaf mustard and kale but there was no significant difference in other treatments. In the total GSLs content, the treatment of 14h-200 µmol·m-2·s-1 increased significantly 139.95, 135.87, 154.03% compared to 10h-280, 18h-155, 22h-127 µmol·m-2·s-1 treatment in red mustard, and 14h-200 µmol·m-2·s-1 treatment increased significantly 132.96, 132.96, 134.03% compared to other treatments in kale. In red mustard, the treatment of 18h-155 µmol·m-2·s-1 showed an increase in shoot fresh/dry weight and the total GSLs contents than other photoperiods and 14h-200 µmol·m-2·s-1 treatment, the number of leaves significantly 15.62, 12.12, and 32.14% higher than other photoperiods. Since the DLI response is different depending on species even for similar Brassicaceae crops, it is necessary to get more detailed results by conducting optical light quality studies and deriving optimal DLI conditions to achieve minimum power consumption and maximum efficiency.
The aim of this study was to investigate the quality characteristics of Kimchi, prepared with seasoning fluid, vinegar, and mustard extract to inhibit the proliferation of microorganisms and extend the edible period during fermentation at $25^{\circ}C$. We also added perilla leaf, endive, and mustard leaf to Kimchi to improve the flavor. The pH of control Kimchi fluid over 1 day after Kimchi processing, was $5.40{\pm}0.01$ and that of the experimental groups in which vinegar and mustard extract were added was $4.51{\pm}0.01{\sim}4.52{\pm}0.01$, which was lower than that of the control. As the fermentation progresses, the pH of the control decreased rapidly and that of the experimental groups decreased slowly. The initial titratible acidity of the control was low and 3 days later reached $0.95{\pm}0.04$. However, that of the experimental groups was $0.42{\pm}0.01{\sim}0.43{\pm}0.02$ and 5 days later reached a level similar to that of the control. The salinities of the Kimchi juice of both the control and the experimental groups were $2.67{\pm}0.06{\sim}2.80{\pm}0.10$% after 1 day and decreased during fermentation. The amount of lactic acid bacteria of the control was $8.17{\pm}4.01{\times}10^8cfu/g$, 1 day after the Kimchi processing and that of the experimental groups was $2.70{\pm}2.08{\times}10^7{\sim}3.63{\pm}2.80{\times}10^7cfu/g$. After 3 days, these were $3.13{\pm}1.94{\times}10^{11}cfu/g$ and $2.47{\pm}2.23{\times}10^9{\sim}8.03{\pm}3.71{\times}10^9cfu/g$, respectively. According to the result of sensory evaluation, throughout the entire period of the experiment, all sensory items such as color, odor, taste, texture, and total acceptability of the experimental groups were better than those of the control group (p<0.05). Especially, Kimchi in which perilla leaf was added was the best. With the addition of vinegar and mustard extract to the Kimchi, microorganism proliferation was inhibited and the edible period was extended. The minerals, vitamins and antioxidants of leaf vegetables could therefore be obtained.

Effects of thirteen essential oils (anise oil, clove oil, marigold, mustard oil, neem oil, quassia, quilaja, rosemary oil, rotenone, tea tree extract, thyme oil, wintergreen oil, and yucca) and caffeine on typical industrial insect, silkworm (Bombyx mori) and two entomopathogenic nematodes, Steinernema carpocapsae GSN-1 strain (Sc) and Heterorhabditis sp. Gyeongsan strain (Hg) were investigated in the laboratory. When 1,000 ppm of each essential oils was treated, neem oil showed the highest insecticidal activity against silkworm. Mortality of silkworm fed on neem oil treated mulberry leaf was 55.3 and 100% 5 and 10 days after treatment, respectively. The silkworm fed on neem oil treated mulberry leaf did not make cocoon and pupa. Weight of cocoon and pupa was low in rotenone treatment showing 0.27 g and 1.01 g, respectively. Mustard oil had the highest nematicidal activity against entomopathogenic nematodes. 20 ppm of mustard oil resulted in 69.0% and 100% mortality of Sc and Hg 3 days after treatment, but 4% and 36% at 5 ppm in X-plate, respectively. Mortality of baited Galleria mellonella larva by Sc was not different from control at the concentration of 100 ppm of mustard oil while 30% lower in Hg in sand barrier. Mean numbers of established infective juveniles of Hg in Galleria larva were lower than Sc in sand barrier. Survival rate of Sc was similar to control at the concentration of <200 ppm of mustard oil in sand barrier.

This study was conducted to develop the suitable nutrient solutions for variable Cruciferae leafy vegetables. l/2, 1 and 3/2 strength of nutrient solution recommended by National Horticultural Research Institute were supplied to plants in deep flow technique systems during 25 days. The growth of pak-choi and leaf mustard 'Asia curled' was highest in the 3/2 strength, and kaie 'TBC' in the 1 strength. Mean cation ratio of nutrient solution for pak-choi, leaf mustard and kale was K $49.5\%$, Ca $35.8\%$ and Mg $14.7\%$, which was obtained by calculating the uptake rates of water and nutrients. Suitable composition of the nutrient solution for Cruciferae leafy vegetables was N 14, P 3, K 6.8, Ca 4.8, $Mg 2m{\cdot}L^{-1}$. To examine the suitability of nutrient solution developed for Cruciferae vegetables (NSC), plants were grown 4 times from Sep. 2003 to Oct. 2004. When plants were grown in NSC, relative growth rate increased 1.1 to 2.5 times and vitamin C content 1.06 to 1.52 times. The proper plants to apply NSC for functional leaf vegetable production were leaf mustard 'Asia recurled', 'Redcurled' and 'Pamagreen', kale 'TBC', 'Portugal' and 'Hanchu collard', leaf broccoli 'New green', pak-choi, baby cabbage 'Red king' and 'Green king', flowering red chinese cabbage and Korean cabbage.

The brine Korea cabbage (BKC) with various ingredients was stored at 5$^{\circ}C$ and 15$^{\circ}C$ for 13 days to examine the changes in pH, total acidity, ascorbic, and cholrophylls. Decrease in pH and increase in total acidity in the BKC stored at 15$^{\circ}C$ were greater than in the BKC stored at 5$^{\circ}C$, indicating these changes are closely related to the storage temperature. The effect of ingredints was various; garlic, red pepper powder, and fermented anchovy juice accelerated the decrease in pH and increase in total acidity; mustard powder and leaf mustard suppressed their changes and freen onion and ginger had no effect. At both temperatures, ascorbic acid was remained at high level in the BKC with leaf mustard, but it was maintained at lowest level in the BKC with ferented anchovy juice. Degradation od chlorophylls was slow in the BKC with leaf mustard, which maintained the high level os ascorbic acid during storage. Meanwhilr the degradation of chlorophylls or production of pheophytin and pheophorbide was cinsistent with the production of acid. These results suggset that degradation of chlorophylls in a BKC was positively correlated with ascorbic acid content and the acid produced during storage.

Antioxidative activities (AA) of mustard leaf kimchi (MLK) by the addition of optional ingredients among selected minor materials were studied. In order to determine AA of MLK with different spices, the model systems of ground cooked beef with green onion, garlic, and red pepper powder were prepared and stored for 4 weeks at 4$^{\circ}C$. AA of red pepper added group was stronger than those of others. AA of red MLK was relatively higher than that of (green) MLK. For the enhancement of AA of MLK, another model systems were prepared with the selected antioxidative optional ingredients, which were bonnet bellflower root, leek, burdock, sea tangle, sea mustard, seastaghorn at the level of 2% or 4%. The extracts of water, 75% methanol and hexane of MLK, bonnet bellflower root added MLK, and seastaghorn added MLK had a considerable AA with the inhibition of peroxide formation during the autioxidation of linoleic acid mixtures in aqueous model systems at 37$^{\circ}C$. Therefore, AA was more effective in MLK containing specific optional ingredients than that of MLK alone significantly.
This study aimed to evaluate the growth of Cichorium intybus, Brassica juncea, and Lactuca sativa at varying seed ratios, and to suggest an efficient management plan for sustainable indoor agriculture systems. It was treated with mixed sowing as follows: 30 chicory seeds (chicory alone: CC), 22 chicory seeds + 8 lettuce seeds (C3L1), 20 chicory seeds + 10 lettuce seeds (C2L1), 15 chicory seeds + 15 lettuce seeds (C1L1) as intraspecies, and 30 mustard seeds (mustard alone: MC), 22 mustard seeds + 8 lettuce seeds (M3L1), 20 mustard seeds + 10 lettuce seeds (M2L1), 15 mustard seeds + 15 lettuce seeds (M1L1) as interspecies. The study identified the competitive response in seed germination between Cichorium intybus and Lactuca sativa, and in the C3L1 experimental group, Lactuca sativa had the highest leaf length, root length, chlorophyll content, and fresh weight. Therefore, the higher the ratio of Cichorium intybus, the higher the growth and productivity of Lactuca sativa; however, higher the ratio of Lactuca sativa, the lower the growth of Cichorium intybus. Furthermore, the nitrogen and potassium content in the substrate was the highest in the C3L1 experimental grorp which had the highest seeding rate of the Cichorium intybus. Comparing the groups Brassica juncea and Lactuca sativa, the higher the seeding ratio of Lactuca sativa, the higher the growth and productivity of Brassica juncea. Therefore, a companion seeding of Brassica juncea and Lactuca sativa is beneficial; this could be effective in having a high seeding ratio of Lactuca sativa.

Oxidation of low density lipoprotein (LDL) is regarded to play an important role in the development of atherosclerosis. In the present study, salad vegetables with a remarkable DPPH radical-scavenging activity were extracted with methanol, and the methanol extracts were evaluated for the inhibition of $Cu^{2+}$-induced oxidation of human LDL. Separately, the amount of total phenolics was determined colorimetrically using Folin-Ciocalteu reagent. The vegetable extracts, expressing a strong inhibition of LDL oxidation ($IC_{50}$ values, <$100\;{\mu}g/mL$), were from angelica, dandelion, mustard leaf, and water spinach, which contained relatively high level of polyphenol content. Noteworthy, a highly positive correlation was observed between inhibition of LDL oxidation and amount of total polyphenol (p<0.01). Based on these results, it is suggested that salad vegetables, especially angelica, dandelion, and mustard leaf, may be used as easily accessible sources of natural antioxidants, especially in anti-atherosclerosis.

A major component(compound A) in the ethylacetate fraction exhibited a strong antimicrobial activity was identified by UV, IR, FABMS and NMR. The compound A showed strong absorbance at 209, 259 and 359nm, indicating a flavonoid ring structure. IR spectrum possessed absorbance of OH at 3400∼3300cm-1, ketone at around 1650cm-1, and aromatic C=C at around 1660cm-1. Molecular weight of the compound A calculated as 478 from the information of m/z 479(M+H)+ and m/z 477(M-H)+ in the FABMS spectrum. Molecular formula of this compound was found to be C22H22O12 from m/z 479.1220(+3.1mmu for C22H23O12) of HRFABMS spectrum and from 13C-NMR spectrum. 1H-NMR and 13C-NMR spectra of the compound A revealed aromatic proton and benzene rings. Distortionless enhancement by polarization transfer(DEPT) exhibited that the compound A possessed 10 quaternary carbons and 3 substituted benzene rings including a methoxy group substitution. The compound A was identified as isorhamnetin 3-O-β-glucopyranoside by spectrophotometric methods in conjunction with 1H-1H COSY, 1H-13C COSY and HMBC, which revealed a flavone with OH group at 3, 5, 7, and 4' and methoxy group at 3' positions esterified to glucose.
