Traditional Foods: Historical Perspectives and Future Prospects (문화와 과학의 융합적 관점에서 본 전통음식의 역사 및 미래)

  • Traditional cuisine reflects cooking traditions shaped by political, economic, social, cultural, and environmental conditions characterized by authenticity and uniqueness. Traditional food is not only a part of our cultural heritage but also a knowledge resource. Application of food science and technology in Korean traditional foods was reviewed from six points of view, including food preservation, fermentation, changes in food materials, utilization of food functionality, and packaging and development of cooking appliances. Books from disparate times were chosen in order to cover a wide range of materials from the past to the present. Food preservation and fermentation techniques were applied to various food materials. Combination of science and skills contributes to the accessibility of diverse food materials and better quality foods. Koreans use assorted and resilient plants, which have an abundance of functional substances such as food materials. Among cooking appliances, microwave oven and refrigerator are the most innovative products with huge influences on food eating patterns as well as lifestyle. Packaging effectively reduces post-harvest preservation losses, and better packaging has technical improvements for storage and distribution. Kimchi was chosen as an example in order to study technology from the past to the present. Availability of Kimchi cabbage, enrichment of functional ingredients, identification of useful microbial species, standardization of recipe for commercialization, prevention of texture softening, introduction of salted Kimchi cabbage and Kimchi refrigerators, and packaging were reviewed. The future of traditional foods in the market will be competitive. First, traditional foods market should be maintained to protect the diversity of food materials. Secondly, tailored foods for individuals should be considered using foods with functional properties. Information on health benefits would provide insights into health and traditional food products. Third, speedy transfer of new technology to the traditional food industry is needed to ensure food quality production and new opportunities in the market. Fourth, safety of traditional foods should be ensured without sacrificing the essential characteristics of culturally important foods. Improvement of logistics, distribution, and facility should be carried out. As demand for convenience foods increases, traditional foods should be developed into products.

Developing Woody Crops for the Enhancement of Ecosystem Services under Changing Climates in the North Central United States

  • Short rotation woody crops belonging to the genera Populus L., Salix L., Pinus L., and Eucalyptus L'Her. have provided broad economic and ecological benefits throughout the world, including afforestation and reforestation along urban to rural gradients. Within the genus Populus, cottonwoods, poplars, aspens, and their hybrids (hereafter referred to as poplars) have been shown to exhibit favorable genotype ${\times}$ environment interactions, especially in the face of changing climates. Similar growth responses have been reported for Pinus, especially with white pine (Pinus strobus L.) in the North Central United States. This has led to current research priorities focused on ecosystem services for both genera. The Millennium Ecosystem Assessment (2005) defines cultural, supporting, provisioning, and regulating ecosystem services. The overarching objective of this paper was to synthesize information about the potential of poplars to provide multiple ecosystem services when grown at sites with varying soil and climate conditions across landscape gradients from urban to rural areas. Specific objectives included: 1) providing background of the United States Forest Service and its Research and Development branch, 2) integrating knowledge of current poplar breeding and development with biomass provisioning and carbon regulating ecosystem services as they relate to changing climates in the North Central United States, and 3) providing a case study illustrating this integration through comparisons of poplar with white pine. Our results were evaluated in the context of climate change mitigation, with specific focus on selection of favorable genotypes for sequestering atmospheric carbon and reducing fossil fuel carbon emissions.

A Study on Perspectives of the National Assembly Larchiveum: Focused on Discussion about Collaborative Strategies of Memory Institutions (국회 라키비움의 전망에 관한 연구 - 기억기관 협력 정책에 관한 논의를 중심으로 -)

  • The National Assembly and its institutions have heavy duties to the nation. Knowledge and information resources which they produce, manage and preserve are part of history and evidence of democracy. Therefore, activities for systematic management and long-term preservation of the resources are important tasks at a national level. However, organizational status of the institutions, which are in charge of management and preservation of the resource, are not in accord with their responsibilities. In this context, this study aims at analyzing necessary and sufficient conditions for establishing the National Assembly Larchiveum and at exploring possible strategies. The study conducts literature reviews concerning necessities, procedures, and success factors of collaboration. Futhermore it analyzes various cases and divides them into several types based on collaborative levels and geographical categories. Based on these theoretical discourse the study discuss the history of the National Assembly's memory institutions and obstacles to their collaboration. As a result, it provides alternative strategies for establishing the National Assembly Larchiveum.

Risk Perception of Fire Fighters Responsible for Nuclear Power Plants : A Concept Mapping Approach (원자력발전소 관할 소방관의 위험인식 개념도 연구)

  • The perception of risk that firefighters have is closely related to their performance and emergency preparedness in nuclear power plant accidents. This study investigated the unique risk perception among firefighters working in nuclear power plants (NPPs) using a concept mapping method. Thirty three firefighters in NPPs participated in this study. Two core axes, "fear and control" and "coping resource", emerged in the firefighters' risk perception. In particular, the risk perception consisted of six clusters: fear of radiation exposure and low controllability; anxiety caused by the lack of control and authority; lack of trust and cooperation; lack of authority and professionals; lack of equipment, manual, and information; and lack of knowledge and training. Catastrophic expectation and a low sense of control caused by the lack of responsive resources were the main factors that increase the risk perception. The theoretical and practical contributions of this study were discussed.

Emergence and Success of Xiaomi in the Transitional Situation of Chinese Smartphone Industry

  • Purpose - 2013 to 2014 was a transitional situation in which China's Smartphone industry was fluctuating. So in this paper, we will look at the strategies and achievements of Xiaomi, a company that has emerged in this situation and topped the market share. In particular, the purpose of this paper is to analyze why Xiaomi, which is considered a copycat, was able to succeed in the smartphone market four years after entering the market and analyze its strategy. Research design and methodology - Various secondary data are to be used for this study. Using various newspaper articles as well as corporate reports, the company analyzes the transitional situation from 2013 to 2014 and the competitors together. Through these analyses, Xiaomi's strengths are selected objectively and analyzed to identify the factors that made Xiaomi successful. Results - After China's transitional shift in 2014, Xiaomi brought about a 152.3 percent share change over the previous year. In addition, it surpassed Samsung Electronics, which has been the industry's No. 1 player, in 2014, and achieved the No. 1 ranking with a 16 percent share. Xiaomi Mi4's phone had a strong point of maintaining low price while being loaded with high performance. Conclusions - Xiaomi's success is because its price and performance was excellent. Xiaomi's Mi4's specifications were not far behind its competitors', but it was very cheap compared to its competitors' prices. They also valued software and used talent-oriented human resource strategies. Plus, it created the 'Mifan' culture successfully and benchmarked the strengths of its competitors smartly.

Determinants of E-Intermediary Use in Export Marketing: Cross-National Differences in the US and Korean SMEs

  • Purpose. Electronic intermediaries (e-intermediaries) are gaining significance in international marketing with the rapid development of e-commerce. The goal of this study is to explain empirically what leads to a higher use of this relatively new exportation alternative. Relying on a resource-based view as our research foundation, we focus on information technology (IT) and non-IT factors as possible determinants. Further, this study brings arguments offered by transaction cost theorists to explain the other non-IT determinants. Methodology/Approach. Data are collected from small and medium-sized enterprises (SMEs) in the electronic industry in Korea and the U.S to ensure generalizability. Ordinary least square (OLS) regression is utilized to analyze the data. Findings. This study raises new issues regarding a relatively new type of exporting channel, e-intermediary. Exporting is regarded as the most appropriate strategy for SMEs in international commerce. A number of SMEs stay away from exporting due to limited resources or lack of knowledge regarding foreign markets. The findings in this study should help SMEs use e-intermediaries more widely by developing appropriate IT-related resources (IT-related human and relationship assets) and dealing with non-IT factors (international competence, environmental uncertainty, and duration of relationship) effectively. Originality/Value/Contribution. This study illustrates the significant role of e-intermediaries, which may help SMEs to penetrate the global market effectively. Finding relevant sources in the global e-marketplace is a challenge for non-experienced users like SMEs. This study proposes e-intermediaries as an effective alternative for them. Another contribution of this study is to show how the use of indirect exporting channels, e-intermediaries, decrease costs in exporting transactions. This study suggests an e-intermediary as a hybrid exporting channel to balance risk and profit.

How Does Communication Structure Influence Team Performance in Complex Tasks (커뮤니케이션 구조가 팀 성과에 미치는 영향에 관한 연구)

  • This is an experimental study which is designed to identify the joint relationship between communication density and centrality as independent factors to team performance, discovering how they would jointly affect work team performance. Specially different from existing studies, separating team performance into team efficiency and team effectiveness, we identified differential influences to the two independent factors. Findings suggest a competing relationship between communication density and centrality. A framework was proposed to help managers understand the joint effect of density and centrality on performance. Work team has high communication density and low centrality is "Innovating", which is likely to have a great extent of ideas, knowledge and information sharing, and reach high effectiveness. Team with high centrality and low density is characterized as "centralized". Such communication structure may reduce diversity of perspectives and accelerate team decision making. When both density and centrality are low, the team is "Autonomous". To increase external validity, other factors such as leadership, organizational climate influencing on team performance should be reflected in the future research.

An Empirical Investigation into the Role of Core-Competency Orientation and IT Outsourcing Process Management Capability (핵심역량 지향성과 프로세스 관리역량이 IT 아웃소싱 성과에 미치는 연구)

  • Recently, the role of IT service providers has been enlarged from managing a single function or system to reconstructing entire information management processes in new ways to contribute to shareholder value across the enterprise. This movement toward extensive and complex outsourcing agreements has been driven by the assumption that outsourcing information technology functions is a reliable approach to maximizing resource productivity. Hiring external IT service providers to manage part or all of its information-related services helps a firm focus on its core business and provides better services to its clients, thus obtaining sustainable competitive advantage. This practice of focusing on the strategic aspect of outsourcing is referred to as strategic sourcing where the focus is capability sourcing, not procurement. Given the importance of the strategic outsourcing, however, to our knowledge, there is little empirical research on the relationship between the strategic outsourcing orientation and outsourcing performance. Moreover, there is little research on the factor that makes the strategic outsourcing effective. This study is designed to investigate the relationship between strategic IT outsourcing orientation and IT outsourcing performance and the process through which strategic IT outsourcing orientation influences outsourcing performance, Based on the framework of strategic orientation-performance and core competence based management, this study first identifies core competency orientation as a proper strategic orientation pertinent to IT outsourcing and IT outsourcing process management capability as the mediator to affect IT outsourcing performance. The proposed research model is then tested with a sample of 200 firms. The findings of this study may contribute to the literature in two ways. First, it draws on the strategic orientation - performance framework in developing its research model so that it can provide a new perspective to the well studied phenomena. This perspective allows practitioners and researchers to look at outsourcing from an angle that emphasizes the strategic decision making to outsource its IT functions. Second, by separating the concept of strategic orientation and outsourcing process management capability, this study provides practices with insight into how the strategic orientation can work effectively to achieve an expected result. In addition, the current study provides a basis for future studies that examine the factors affecting IT outsourcing performance with more controllable factors such as IT outsourcing process management capability rather than external hard-to-control factors including trust and relationship management. This study investigates the major factors that determine IT outsourcing success. Based on strategic orientation and core competency theories, we develop the proposed research model to investigate the relationship between core competency orientation and IT outsourcing performance and the mediating role of IT outsourcing process management capability on IT outsourcing performance. The model consists of two independent variables (core-competency-orientation and IT outsourcing process management capability), and two dependent variables (outsourced task complexity and IT outsourcing performance). Comprehensive data collection was conducted through an outsourcing association. The survey data were analyzed using a structural analysis method. IT outsourcing process management capability was found to mediate the effect of core competency orientation on both outsourced task complexity and IT outsourcing performance. Further analysis and findings are discussed.

Policy Model for the Development of the Arts Educator in the field of the Comic & Animation Education (만화애니메이션 교육 강사의 전문직종화를 위한 지원모델 연구 - 만화애니메이션 강사 지원 사업을 중심으로 -)

  • The article concerns the public policy for the development of the arts educator in the field of the comic and animation education. The comic and animation education programs are focused on the promotion of the creativity and communication skills of the student in terms of the arts education. The article seeks to examine the case on the support program for the comic and animation educators, which has been managed by Korea Arts & Culture Education Service(KACES) since 2005. The forty two educators were surveyed. As a result, the support program of the KACES has an effect on the educator's recognition of the comic and animation education in the positive way. The most of the educators suggest that the support program should try to develop the comic and animation educator job as a special work with the full time job. In this repect, the article recommend the policy alternatives such as the promotion of the education program R & D, the knowledge and information system, training system and the establishment of the governance system.

A review of effect and how to use xylitol (자일리톨의 효과 및 활용방법에 대한 고찰)

  • Objectives : This paper is designed to help the public prevent their future dental caries, based on the studies of xylitol about it's efficacy and effectiveness, and its appropriate usage. Methods : This study of xylitol on the basis of existing research papers and literature is not only to learn about the mechanism of what xylitol acts, but also to search the effectiveness of incompleteness of xylitol-containing foods, bacterial infection between xylitol and mother-baby, and the side-effects of xylitol. Results : 1. Xylitol's continuous intake of teeth effects the decrease of calculus amount, cleanness of teeth, as well as the remineralization process. The xylitol effect varies depending on the weight of xylitol, which has no effect on root caries. 2. Mouth gargle solution is higher resistant against acids; recalcification is significantly reduced; and remineralization effect represents. 3. It is reported that regular consumption of xylitol by mothers just during two years after birth has significantly decreased the spread possibility of mutans streptococcei. 4. The reduction of dental caries by xylitol is happened by its restraining the growth of bacteria resource caries, with their presence in amount of uncontrolled growth. 5. When a small amount of eating xylitol is absorbed slowly into gastrointestinal tract, being followed by glucose metabolism in the liver, while its excessive amount of eating can cause gastrointestinal problems. Conclusion : Dental hygienists should be required to provide dental information to the public on the basis of academic knowledge. In situation that one is not yet sure of xylitol on solid and multifaceted researches, there must be needed more accurate and detailed reviews on the side-effects of xylitol and the overall impact on the oral environments.
