김치발효 관련 젖산균에 대한 향신료의 항균력 (Antimicrobial Activity of Exracts from Spices on Lactic Acid Bacteria Related to Kimchi Fermentation)

  • Antimicrobial activities of the extracts from spices microorganisms related to kimchi fermentation were investigated. 32 kinds of spices such as allspice, mount, basil, bay leaves, caraway, cardamon, celery, chilli powder, chives, cinnamon, clover, coriander, cumin, dill, fennel, garlic, horseradish, marjorarm, mugwort, mustard, nutmeg, onion, oregano, paprika, parsely, pepper, peppermint, rosemary, sage, tarragon, thyme and tumeric were extracted with water, ethyl ether, ethyl acetate and ethanol. Fractions were tested for antimicrobial activities against Lactobacillus plantarum and Leuconostoc mesenteroides, The extracts of 28 kinds of spices except caraway, cardamon, paprika and tarragon by water extraction, those of 29 kinds except arrowroot, paprika and tarragon by ethyl ether extraction, those of 30 kinds except paprika and tarragon by ethyl acetate extraction, and those of 29 kinds except clover, paprika and tarragon by ethanol extraction showed strong antimicrobial activities against Lactobacillus plantarum. On the other hand, the extracts of 28 kinds of spices except caraway, cardamon, paprika and thyme by water extraction, those of 27 kinds except cardamon, cumin, paprika, tarragon and thyme by ethyl ether extraction, thou of 30 kinds except paprika and thyme by ethyl acetate extraction, and those of 28 kinds except cardamon, cumin, paprika and thyme by ethanol extraction showed strong antimicrobial activities against Leuconostoc mesenteroides.

조선시대 궁중의 천신(薦新) 식품에 대한 고찰 (A Study of Chunshin(薦新) Ceremony Food Items from Annals of the Chosun Dynastys)

  • The list of monthly offering items of the Chunshin(薦新) ceremony, the service of offering the first food product of year to ancestors, shown in the Walryong(月令) in Oreaeui(五禮儀), the book written in early years of the Chosun dynasty, was studied and classified by food group. Six kinds of the cereals and grain products - barley, wheat, an early-ripening rice plant, a barnyard millet, and millet seed were offered. The meat products offered were wild geese, pheasants, swans, hares and dried-pheasants. Though not shown in e Walryong, roe deer and deer were offered from hunting trips in e winter. Eight kinds of sea-fish, six kinds of fresh-water first and six kinds of other seafood such as crab, octopus, and squid were offered. Ten kinds of vegetables: bamboo shoots, e99plants, cucumbers, etc. - were offered. Eleven kinds of tree fruits - cherries, apricots, Pears, etc., seven kinds of citrus fruits - tangerines, citrons, etc., seven kinds of nuts - chestnuts, pine-nuts, etc. and two kinds of melons - watermelons etc. - were offered. The hi인est variety in the offering items was the fruits category The remaining offering items included wine brewed from new rice. new brown seaweed, and green tea.

가공식품의 무기질 함량에 관한 연구 (A Study on Mineral Content in Processed Foods)

  • We analysed 398 kinds of processed foods sold on market - 43 kinds of ramyun, 67 kinds of bread, 104 kinds of cookies, 5 kinds of pizza, 28 kinds of sausage, 31 kinds of steamed fish cake, 4 kinds of tomato ketchup, 30 kinds of canned goods, 82 kinds of beverage and 4 kinds of danmoogi- to know mineral content such as p, Ca, Mg, Na and K. We used atomic absorption spectrophotometry for this study and the results were as follows; 1) P content was 204.24mg% in sausages, 101.80mg% in pizza, 671mg% in canned fish, 44.50mg in canned vegetable, 38.62 mg% in ramyun and 32.10mg% in steamed fish cake. Sausage had the highest P content showing almost 6 times as much as steamed fish cake. There was little difference between ramyun and steamed fish cake. 2) Ca content was 115.00 mg% in pizza, 106.94 mg% in steamed fish cake, 100.59 mg% in sausage, 91.25 mg% in canned vegetable, 79.84 mg% in bread and 78.97 mg% in ramyun, 3) Mg content was 555.16 mg% in steamed fish cake, 476.14 mg% in cookies, 436.75mg% in ketchup, 394.00mg% in canned vegetables 346.95mg% in ramyun and 341.40mg% in canned fish. Steamed fish cake was highest in Mg content and there was little difference between ramyun and canned fish. 4) Na content was 730.49mg% in ramyun, 680.25 mg% in danmoogi, 548.43 mg% sausage, 463.50mg% in canned vegetable, 449.25 mg% in ketchup, 401.29 mg% in steamed fish cake and 366.00 mg% in pizza. Ramyun had the highest Na content 5) K content was 302.30 mg% in pizza, 280.25 mg% in ketchup, 219.68 mg% in sausage, 219.2 mg% in canned fish, 183.75 mg% in canned vegetable, 166.49 mg% in ramyun and 122.77 mg% in cookies. Pizza had the highest K content.

"규호시의방"의 정리학적 고찰 (A Study on the Book "Gwngonsiuebang")

  • The Gwugonsiuebang is a book of Korean woman's life in the Yi dynasty which published I 1653 by Mme. Jang. I have studied the food habits of the Yi dynasty that wrote in Gwugonsiueband as following. The staple foods are Guksu (wheat vemicell as like western noodles) 5, Mandu (bun stuffed with seasoned meat and vegetables) 6 kinds in this book. the side dishes are Guk (soup) 8, J'm (steamed meat or fish) 6, chae6, Nooruemi 5, Hyae (sliced raw fish) 3, Jockpyun (jellied beef soup) 3, Jockgall (salted sea food) 2, Jock (skewer or broach) 2, jihee 2, Sun (Steaming of stuffed vegetable) 1, Bockuem (saute) 1, Jon (pan fried fish) 1, Gui (meat or fish grilled with seasoning) 1, and the other 13 kinds. The desserts are D,ock (Korean rice cake) 11, jabgwa 8, Beverages 5 kinds and Jungwa 1 kind. The alcohol and fruits wine are 51 kinds. The alcohol and fruits wine are 51 kinds. The seasonings are Soybean sauce, oil, Sesamol oil, pepper, Ginger, Garlic, Vinegar, Wine, Salt, Bean paste etc. Raw materials of Guksu, Mandu, D'ock, Jabgwa, Beverage, Wine, vinegar are all carbohydrates. It shows that a tendency of Korean people too much take a carbohydrates. Now and then, there are no special difference of winter over pass for vegetables, fruits, dried beef, dried fish and salt fishes. In yi dynasty, there are 62 kinds of table ware and cooking kitchen utensils, but many of them come to uselessness. 19 kinds of measuring unit are very non-scientific because that is not by weight but by bulk or volume. There are many food making terms which are 198 kinds of prepared cooking term, 11 kinds of cutting term and 20 kinds of boiling term. And 10 kinds of expression of taste can see this book.

우리나라 면체 여과식마스크 성능에 관한 연구 (A Experimental Study on the Performance of Filter-integrated Half-masks)

  • This study is conducted to experiment on the performance test for 20 types of Filter-integrated Half-masks which could not only protect workers exposed to dusty environment, but also improve workability. Results and conclusions are as follows : 1) Respirators that removal efficiency of aerosols is 95 percent or more are 11 kinds(55%), and those who are 99.9 percent or more are 4 kinds(20%). Respirators that inhalation resistance is 4 mm in water or less are 13 kinds(65%), and those who are 6 mm in water or less are 17 kinds(85%). Respirators that efficiency of cumulative inhalation resistance is 100 percent or less are 11 kinds(55%) . 2) Respirators that resistance of moisture inhalation is 6 mm in water or less are 11 kinds(55%). and those who are 10 mm in water or less are 13 kinds(65cio), Respira'tors that ratio of removal efficiency for aerosols between dry and wet conditions is 95 percent or more are 9 kinds(45%). 3) Respirators which are not only 95 percent or more for removal efficiency of aersosls and 6 mm in water or less for inhalation resistance, but also 200 percent or less for efficiency of cumulative inhalation resistance, are 8 kinds(40%). Respirators which are not only 99.9 percent or more for removal efficiency and 6 mm in water or less for inhalation resistance, but also 100 percent or less for efficiency of cumulative inhalation resistance, are 3 kinds(15%). Respirators which are not only 95 percent or more for removal efficiency of aerosols and 6 mm in water or less for inhalation resistance, but also 200 percent or less for efficiency of cumulative inhalation resistance and 10 mm in water or less for resistance of moisture inhalation, are 6 kinds(30%) . 4) As standard rrlodel of artificial human head which would be perhaps different from the true one Is used to experiment fitness test, leakage rate is shown to be more or less high. However, artificial human head shall be accurately examined and follow-up studt. would be conducted in the future.

인체암세포주에 대한 천연자원의 세포독성 검색 (I) (Cytotoxic Activities of Herbal Drugs against Human Cancer Cell Lines (I))

  • For the search of new antineoplastic agents from natural resources, two hudred and one kinds of oriental medicinal drugs were extracted with petroleum ether/ether(1:1), ethyl acetate and methyl alcohol, successively and their cytotoxicities were evaluated against A549 (human lung carcinoma) and SK-OV-3 (human ovary adenocarcinoma) cell lines. Among them, thirty kinds of ether extracts, forty-one kinds of ethyl acetate extracts and nine kinds of methanol extracts showed significant cytotoxic activities (above 70% inhibition) against A549 cell lines at a concentration of $40\;{\mu}g/ml$. And also, twenty-four kinds of ether extracts, thirty-one kinds of ethyl acetate extracts and six kinds of methanol extracts showed significant cytotoxic activities against SK-OV-3 cell lines at the same concentration.

한국 해조류 음식의 문헌적 고찰 - 1450${\sim}$1950년대를 중심으로 - (A Study on Korean Seaweed Foods by Literature Review)

  • In this study, a total of 70 seaweed names among various kinds of seaweeds, including dried and powdered foods, were investigated by examining Korean foods literature published during 1450${\sim}$1950. There were 14 kinds of sea mustard, 13 kinds of laver, 3 kinds of kerp, 6 kinds of sea staghorn, 15 kinds of green laver, 1 kind of Ecklonia cava, 11 kinds of agar and 7 seaweeds classified as other. It was also found that seaweed was used as a main ingredient, secondary ingredient, or a garnish in a total of 74 traditional Korean foods. The seaweed foods appearing in the literature were classified by a traditional Korean food classification system according to cooking method. These traditional seaweed foods were placed into 6 categories including main dishes, side dishes, tteok lyou and hangwa lyou. Finally, a database was established in order to provide a research basis for traditional Korean seaweed foods.

가열하여 담그는 전통 김치 (A Study on Traditional Kimchi made with Heating)

  • 조선시대 김치는 재료를 가열하여 담그는 김치가 많았다. 소금이 비쌌기 때문에 소금과 시간을 절약하기 위하여 채소를 가열하여 세포벽을 파괴하는 방법을 사용한 것이다. 그러나 현재는 맥이 끊겨 있기 때문에 본 논문에서 조선시대 김치 조리서를 분석하여 가열하여 담그는 김치를 밝혔다. 그 결과, 재료를 데쳐서 담그는 김치는 27가지였다. 김치가 무르는 것을 방지하기 위하여 재료를 백반물에 담그는 김치는 2가지, 재료를 석회물에 데쳐서 담그는 김치는 3가지였다. 재료를 식초로 가열하여 담그는 김치는 7가지, 재료를 삶아서 담그는 김치는 5가지, 재료를 볶아서 담그는 김치는 6가지, 재료를 소금에 볶아서 담그는 김치는 2가지, 재료를 쪄서 담그는 김치는 3가지였다. 잡균을 죽이고 유산균만 잘 번식하게 하기 위하여 끓인 담금액을 부어서 담그는 김치는 25가지였다. 말똥이나 두엄으로 김칫독을 가열하여 숙성시키는 김치는 17가지였다. 치아와 소화력이 좋지 않은 노인을 위한 익혀 담그는 김치는 7가지였고, 그 중 3가지가 숙깍두기였다. 노인용 김치인 채김치 3가지와 채깍두기 3가지도 있었다.

17세기 이전 조선시대 찬물류(饌物類)의 문헌적 고찰 (An Investigation of Side-dishes found in Korean Literatures before the 17th Century)

  • In this study, we investigated e kinds and names of side dishes along with their recipes and ingredients occuring in Korean cookbooks published before the 17th century. The side dishes were classified 79 kinds of Guk, 23 kinds of Jjim and Seon, 15 kinds of Gui, 3 kinds of Jeon, 7 kinds of Nureumi, 3 kinds of Bokkeum, 30 kinds of Chae, 11 kinds of Hoe, 7 kinds of Jwaban, 6 kinds of Mareunchan, 12 kinds of Pyeonyuk and 5 kinds of Jeonyak, Jokpyeon and Sundae. The earliest records were found on Guk, Jjim, Jwaban, Po and Pyeonyuk Gui, Namul and Hoe were recorded after the 1500's and Nureumi, Jeon, Jeonyak, Jokpyeon and Sundae were developed relatively late in the late 17th century. As to the kinds of side dishes, Guk was the most common. Guks cooked before the 17th century used different recipes and more types of ingredients than today, including some that are not used today. For Jjim, various seasonings were added to main ingredients such as poultry, meat, seafood and vegetable. Most of the records found for Jjim used chicken as the main ingredient. Gui was recorded as Jeok or Gui and there weren't many ingredients for Gui before the 17th century. Gui was usually seasoned with salt or soy bean sauce and broiled after applying oil. Vegetables were broiled after a applying flour-based sauce. The Jeon cooked at that time was different from the one that is cooked today in that cow organs or sparrows were soaked in oily soy bean sauce before being stewed. Nureumi, which was popular in the 17th century, but rarely made today, was a recipe consisting of adding a flour or starch-based sauce to stewed or broiled main ingredients. Chae was a side dish prepared with edible plants, tree sprouts or leaves. Chaes like Donga and Doraji were colored with Mandrami or Muroo. Hoe was a boiled Hoe and served after boiling seafood. Jwaban was cooked by applying oil to and then broiling sparrows, dudeok, and mushrooms that had been seasoned and dried. For dried Chans, beef or fish was thin-sliced, seasoned and dried or sea tangle was broiled with pine nuts juice. There are some recipes from the 17th century whose names are gone or the recipes or ingredients have changed. Thus we must to try to rebuild three recipes and develop recipes using our own foods of today.

조선왕조후기의 궁중연회음식의 분석적 고찰 (An analysis of foods used in the Royal parties during the latter half period of Yi Dynasty)

  • This study was designed to establish Korean food culture by analyzing 17 sets of Jinyounuigue, Jinchanuigue, and Jinjarkuigue which were the records of royal party procedures in Yi dynasty, Analysis was made on royal parties in terms of table setting, kinds of dishes served, composition of foods, frequency of the food materials used, and food items changed over the period from 1719 to 1902, the latter half period of Yi dynasty. Foods used in those parties were classified into seven groups in this study; rice and noodoes, side dishes, Docks, desserts, fruits and nuts, beverages, and sauces. There were about 10 kinds of steamed rice and noodles including Mandoo and Byungtang, 140 different kinds of side dishes, 53 kinds of Kocks, 142 kinds of various desserts, especially Dasik and Korean cookies, 38 kinds of fruits and nuts, 10 kinds of beverages including Hwachae and Sujeongkwa, and 10 kinds of sauces such as soy sauce, mustard, honey, and etc. There was no tendency in omission or addition of food materials, but the number and heights of dishes were designated by the scale or character of the party. There were unique measuring units that were quite different from metric system. More than 30 different units were appeared in the differences. Most of them were used for typical items such as Sari for noodles only. However some were quite general and used until now. Mal and Dye were the units for volume, Kwan and Kuen for weight, and Chock and Chon for length.
