초등학교 급식 식단 중 미생물학적 위해가 내재된 식품의 사용 빈도 분석 (Analysis of Usage Frequency of Foods with Microbiological Hazards in Elementary School Foodservice Operations)

  • The purpose of this study was to provide basic information about the usage frequency of foods and menu items that may have microbiological hazards in elementary school foodservice operations in order to prepare a sanitation management manual for the foodservice production process. Menus from 200 elementary school foodservice operations from June 2004 were analyzed. An analysis of the foodservice production process of the menu revealed that the following processes were used: heat process(63.9%), non-heating process(28.1%), and after-heating process(8.0%). The cooking methods used for side dishes were: Stir-frying(19.9%), Saenchae(15.6%), Jorim(15,1%), Sukchae(13.1%), Frying(11.3%) and so on. Overall, 85 menu items known to include microbiological hazards were offered a total of 3,537 times; they were Doegi-bulgogi(7.0%), Bibim-bap(5.2%), Oi-saengchae(4.6%), Kongnamul-muchim(4.2%), Ddeok-bokkeum(4.0%), Japchae(3.7%), and so on. To serve safe and hygienic foods, menus including microbiological hazards should be planned very carefully. Furthermore, if a menu is high in microbiological hazards and frequency, the manuals of sanitation management should be applied more thoroughly.

HMR 제품과 방송 속 레시피의 영양성분 분석: 국, 찌개, 탕류를 중심으로 (Comparative Analysis of Nutrients between HMR Products and TV Recipes: Focusing on Soup, Stew, and Broth)

  • This study examined the nutrient content of HMR products and recipes by television chefs. Twelve menu items from the soup, stew, and broth category were chosen from HMR products and TV chef's recipes. The data on the nutrition labeling from the HMR products and TV chef's recipes were calculated using Can-Pro 5.0. The results of the analysis were the differences between the HMR products and TV recipes per serving size. The energy content of TV recipes 236.1 kcal was significantly higher than the HMR products. On the other hand, HMR products contained significantly higher sodium (926.9 mg) levels than the TV recipes (565.8 mg). In general, HMR products contained more sodium and less energy and protein than TV recipes. The highest sodium content containing products among the 12 menu items was the Spicy soft tofu stew (1,421.4 mg) from HMR products. The results revealed the significant differences in the macronutrient and sodium content between HMR products and the TV chef's recipe. This study provides supportive data for the need to reduce the sodium content in HMR products. TV cooking programs should focus on the importance of balanced nutrition, how to reduce sodium intake, and how to achieve this without disrupting well-balanced nutrition.

협업 필터링과 빈발 패턴을 이용한 개인화된 그룹 추천 (Personalized Group Recommendation Using Collaborative Filtering and Frequent Pattern)

  • 본 논문에서는 개인화 서비스를 제공하기 위해 책, 음악, 영화 등과 같이 단일 항목을 추천하는 기존 방법의 한계를 극복하고, 패션, 요리 등과 같이 연관성에 따른 항목의 조합, 즉 그룹을 추천하는 방법을 다룬다. 협업 필터링은 사용자 간의 유사도를 측정하여 비슷한 성향의 사용자들이 선택한 항목을 추천하는 방법이며, 사용자의 성향을 예측할 수 있다는 장점이 있다. 본 논문에서는 이러한 협업 필터링과 연관 규칙을 바탕으로 빈발 항목 집합을 생성하고, 그룹 간의 유사도에 따라 그룹을 추천하는 알고리즘을 제안한다. 제안하는 방법의 타당성을 검증하기 위하여 의류 전자상거래에서 4개월 동안 소비자가 구매한 목록 데이터로 실험을 수행하였다.

교육시설 안전 등급 인증과 학교 안전도 심사에 대한 연구 (A Study on Indoor Environment Safety Level Certification of Educational Facilities and School Safety Level Evaluation)

  • This study aimed to verify the validity of the evaluation items and weight determination of the indoor environmental safety area, which has the most frequent accidents, among the safety certification evaluations of educational facilities by the Ministry of Education of the Republic of Korea, which has been conducted since May 2021. As a preceding study, the evaluation items of the school safety evaluation checklist being implemented in the US state of Vermont were compared, and the causes of accidents judged by teachers in the accident experiences written by 200 Korean teachers were compared with the safety certification evaluation items belonged to the Ministry of Education. In addition, research literature using the AHP analysis technique on safety risks of elementary and secondary schools in China and safety evaluation index study cases of 539 elementary school children in Indonesia were analyzed. Through these preceding studies, measures to add and adjust evaluation items were derived and the validity and importance rankings of evaluation items were calculated through AHP questionnaires to teachers and safety experts. In addition, a survey was conducted on 104 ordinary people to verify the results of expert analysis. As a result of expert AHP analysis, 'safety education and disaster response training (.396)' was the highest priority for the relative importance of the first layer, followed by 'safety measures (.387)' and 'building materials'. Safety (.216)' was found to be the highest priority. In the overall importance ranking of the 13 second-tier screening items, safety accident prevention education had the highest priority and disaster preparedness training ranked second, proving that the Ministry of Education's review weight was underestimated. In addition, slip and collision accident countermeasures, which were not in the existing Ministry of Education review items, ranked 4th, laboratory practice room safety measures ranked 6th, and sanitation, cleanliness, hazardous substance management, and cafeteria/cooking room safety measures ranked 9th, indicating a significant level of importance. Referring to the importance ranking, which is the result of this study, it is suggested that it is necessary to review the weight of each review item again.

남녀 대학생의 지방에 대한 영양지식과 실천도 (College Students' Nutrition Knowledge and Practices toward Dietary Fat)

  • This study was made for male and female university students regarding the nutrition knowledge about fat, fat contents in food, and practice toward fat. The result is as follows;1.Out of 13 questions inquiring the knowledge about fat a significant difference was observed between female and male students in 10 questions. Male students' nutrition knowledge about fat was $6.33{\pm}0.16$, and that of female students' was $6.33{\pm}0.16$ and there was no significant difference. The ratio of correct answer was 49% and 59% respectively. Female students marked high ratio of correct answer such items as ${\omega}-3$ fatty acid, the relation between high fat diet and atherosclerosis(coronary disease), the relation between obesity and fat, the relation between ${\omega}-3$ fatty acid and heart disease, cholesterol, fatty acid in butter, degree of unsaturation in liquid oil, margarine, chicken fat, rancity of fat. 2.Male students' total score of knowledge about fat quantity in food was $4.91{\pm}0.10$ and that of female students was $5.58{\pm}0.10$. There was significant difference(p<0.001) and the ratio of correct answer was 55% and 62% respectively. Out of 9 food items, significant difference was observed in 7 items according to student's majoring subject. The ratio of correct answer for the questions about the quantity of fat in food female showed high figures in such items as white meat(p<0.01), whole milk(p<0.0001), skim milk(p<0.01), potato chips(p<0.001), biscuit(p<0.001). However, male students showed high figures on the question about the quantity of fat in vegetable margarine. 3. Out of 12 items observing the degree of diet practice on fat, significant difference was observed between male and female students in 6 items. Female students practice the question items positively with high ratio: intake of fish instead of meat(p<0.01), removing visible fat in meat(p<0.0001), removing chicken skin(p<0.0001), removing oil during cooking (p<0.05), selection of low fat milk or skim milk(p<0.05), selection of meat part(p<0.001). There was significant difference between male and female students in practicing diet on fat (p<0.001) and the total score was $31.52{\pm}0.52$ and $34.65{\pm}0.41$ respectively.

고교학점제를 대비한 가정 교과 '1인 가구의 식사와 조리' 교육 프로그램 개발 및 실행 효과 (Effect of Development and Implementation of Home Economics Education's 'Meal and Cooking for Single-Person Households' Education Program in Preparation for the High School Credit System)

  • 이 연구는 '1인 가구의 식사와 조리' 교육 프로그램을 개발하고 실행하여 고등학생들의 식생활관리 역량 향상에 미치는 효과를 확인하는데 목적이 있다. 이에 ADDIE 교수 설계 모형에 따라 '1인 가구의 식사와 조리' 교육 프로그램을 개발하고, 실행한 후 평가하였으며 결과는 다음과 같다. 첫째, 1인 가구의 식생활과 가정 교과에서의 식생활 교육 프로그램 관련 문헌과 선행 연구를 분석한 결과를 바탕으로 '1인 가구의 식사와 조리' 교육 프로그램을 개발하였다. 개발한 총 16차시의 교수⋅학습 과정안과 학생용 워크북을 현직 고등학교 가정과교사로서 식생활교육 프로그램 관련 연구를 수행한 경력이 있는 전문가 6인으로부터 전문가 타당도 검증을 받았다. 그 결과, 전체 문항의 평균은 4.90(5점 만점), CVI는 0.98로 매우 우수한 내용타당도를 확보하였다. 둘째, 세종특별자치시 소재 Y고등학교 1학년 총 100명의 학생을 대상으로 '1인 가구의 식사와 조리' 교육 프로그램을 실행하였다. 학교 상황을 고려하여 16차시의 핵심 주제가 모두 포함되도록 6차시로 축약하여 운영하였다. 참여한 학생들을 대상으로 사전⋅사후 검사를 한 결과, 개발된 프로그램이 식생활관리 역량을 향상시키는 데 유의미한 효과가 있음을 확인하였다. 이 연구는 고교학점제에 대비하여 1인 가구 시대의 사회적 변화에 따른 가정 교과의 새로운 과목 개발 및 식생활관리 역량 향상의 효과 확인에 의의가 있으며, 본 연구에서 개발한 '1인 가구의 식사와 조리' 교육 프로그램은 2022 개정 교육과정의 미니 과목으로 활용할 수 있을 것이다.

대형 양식당 음식에 대한 미생물학적 위해분석 (Microbiological Hazard Analysis of Foods in Large Western-style Restaurants)

  • 본 연구는 대형 양식당을 대상으로 조리공정별 메뉴 분석 및 미생물 검사를 실시하여 대형접객업소의 HACCP plan 개발을 위한 기초 자료로 제공하고자 하였다. 이를 위해 대구지역 양식당 44개소의 메뉴를 수집하여 크게 3가지 조리공정으로 분류하였고, 각 공정별로 대표 메뉴를 선정하여 조리공정 흐름도를 작성하였다. 또한 대구지역 3개 대형 양식당을 대상으로 음식생산단계별 소요시간 및 온도를 측정하고, 일반세균, 대장균군과 식중독균에 대한 미생물학적 품질을 측정하였다. 연구결과를 요약하면 다음과 같다. 대형 양식당의 메뉴를 조리공정별로 분류하면 크게 가열공정, 비가열공정, 가열-비가열 혼합공정으로 구분된다. 이중 가열공정은 저장-가열 조리공정과 가열-냉각-저장-재가열 조리공정으로 나눌 수 있다. 가열공정의 대표 메뉴인 햄버거스테이크는 냉동저장-해동-가열조리 등의 순서로 생산되며, 내부온도 $82{\sim}86^{\circ}C$로 10분간 가열하여 제공할 때 일반세균 $10^2\;CFU/g$ 이하, 대장균군 및 식중독균 음성으로 미생물적 품질이 적합한 것으로 나타났다. 또한 저장-가열조리 되는 가니쉬 포테이토의 경우도 가열조리 후 미생물학적 품질이 적합한 것으로 나타났다. 가열-냉각-냉장저장-재가열의 순서로 생산되는 매쉬드 포테이토는 냉장저장 시 대장균군의 수치가 $10^2\;CFU/g$이상이었으나 재가열 조리 후 일반세균 $10^2\;CFU/g$이하, 대장균군 및 식중독균 음성으로 미생물적 품질이 적합한 것으로 나타났다. 비가열공정의 대표메뉴인 샐러드는 전처리 후 냉장보관 시 일반세균 $10^2{\sim}10^7\;CFU/g$, 대장균군 $10^2{\sim}10^6\;CFU/g$, 대장균이 검출되어 미생물적 품질이 낮은 것으로 나타났다. 그러므로 양식당에서 미생물학적 품질이 높은 음식을 제공하기 위해서는 조리 또는 재가열 공정 등의 가열공정에서는 가열온도를 철저히 지키고, 샐러드처럼 가열하지 않고 제공되는 메뉴는 씻기, 냉장저장 등 공정에서의 위생관리를 철저히 해야 하겠다. 이상의 결과를 바탕으로 향후 양식당의 HACCP 관리계획이 개발되어 식품 접객업소에서의 과학적인 위생관리를 철저히 하는 것이 필요하겠다.

부산 경남지역 초등학교 급식에서의 국수식의 식단유형분석 (Analysis of Menu Patterns of Noodle Meals in the School Foodservices in Busan and Gyeongnam Province)

  • The purpose of this study was to classify noodle meals into a few groups according to their menu patterns and cooking methods from the 318 noodles and Ttokgook menus of 360 elementary school foodservices around Busan and Gyeongnam province. Noodle meals with high frequency were also analyzed by season and region to give information for menu planning and to improve elementary school foodservices. The menus were collected from the internet(http://www.kdclub.com) and the home pages of elementary schools between December 2004 and September 2005. Taking all kinds of noodle meals together, the serving frequencies were significantly different among regions, but were not different from season to season. Three different menu patterns were revealed from the collected noodle menus. The most frequently served menu pattern was 'main dish+starchy food & dessert+fruit & beverage+kimchi'. Gooksu, Ttokgook, Udong, and Kalgooksu meals were served with this menu pattern. The menu pattern of Jajangmeon meal was 'main dish+side-dish+starchy food & dessert+fruit & beverage+(kimchi)'. For the Bibimmeon and the spaghetti meals 'main dish+soup+starchy food & dessert+fruit & beverage+kimchi' was used. Ttigim, Danmugy, Saengchae, and chicken were frequently selected as side dishes in the overall noodle menus. More side dishes of a wide variety were served in Ttokgook meal, whereas Danmugy was the most preferred food item as a side dish with Jajangmeon and Udong meals. Comdog, Mandu, Ttok, Matang, and doughnut were preferred food items as a 'starchy food & dessert' with most kinds of noodle meals, except spaghetti with which only garlic-bread was served. The fruit and beverage items were not different with the majority of noodle meals. These results suggest that cost food habits, compatible flavor combinations, and food preference of children rather than nutritional considerations contributed to the selection of food items for the components of noodle meals in the school foodservices.

지속가능경영을 위한 학교급식 영양사의 지식, 태도, 실천 가이드라인 콘텐츠 개발 (Development of the Contents of the Guideline for Dietitians' Knowledge, Attitudes and Practices (KAP) for Sustainable Management at School Foodservice)

  • The purpose of this study is to identify the guideline's contents for dietitians' knowledge, attitudes, and practices (KAP) for the sustainability management at school foodservice. The contents for the guideline were determined by the Delphi technique of two rounds. The Delphi panels of experts were consisted of sixteen school dietitians and fourteen professors of food and nutrition with more than 10 years of experiences by convenience sampling method. Based on the literature, knowledge, attitudes, and practices required for dieticians were classified into menu management, procurement, food production, facility and energy management, waste management, personnel management, and nutrition education. Data were analyzed using SPSS for Windows version 24 and EXCEL to calculate descriptive statistics, content validity ratio, degree of agreement, and degree of convergence. As a result of the second round, the validity scores of 'knows eco-friendly certification standards and labeling systems (4.53 point)' in the knowledge category, and 'tries to purchase local agricultural products (4.87 point)' in the attitude category were the highest. From that round in the practice category, the validity scores of 'plan menus for students' health', 'purchases eco-friendly food', and 'conserves energy in pre-processing and cooking process' were the highest with 4.73 point. Applying the criteria for securing the validity of the contents, the contents of 25 knowledge items, 20 attitude items and 30 practice items were confirmed. The findings of the study can be used to develop the guideline for dietitians required for the sustainability management.

초등학교 급식 조리종사자의 위생지식 검사를 통한 교육 필요성 평가 (Need Assessments of HACCP - based Sanitation Training Program in Elementary School Foodservice Operations based on Sanitation Knowledge Test of Employees)

  • The study was conducted to assess sanitary concepts of employees and needs of HACCP-based sanitation training program for elementary school foodservice operations. Subjects consisted of 370 foodservice employees. Foodservice employees' demographic characteristics were surveyed, and their food sanitation knowledge was tested. Food sanitation knowledge included 4 dimensions of foodborne disease & food microbiology; sanitary management in food product flows; personal hygiene management; and equipment & facility sanitation management. The data were analysed using the SPSS package for descriptive analysis, t-test and ANOVA test. The average sanitation knowledge score was 9.5 out of 15. The working periods of foodservice employees were singnificantly(p<01) related to food sanitation knowledge dimensions. Correct answering rate of 4 sanitation management dimensions were 74.4% in foodborne disease & food microbiology; 536% in sanitary management in food product flows; 78.7% in personal hygiene management; and 50.5% in equipment & facility sanitation management. 6 items in 4 sanitation knowledge dimensions under mean score were identified. Those items were temperature danger zone, thawing method of frozen foods, cooking & holding temperature, proper sampling & storage methods, proper storing methods in refrigerator, and proper washing & sanitizing method for utensils. Identified 6 items were included in 12 critical control points developed for the elementary school generic HACCP plan, and should be emphasized in implementing HACCP-based sanitation training program.
