식품소비행태조사를 이용한 수입산 돼지고기 섭취의향 결정요인 분석 (Examining Factors Influencing the Consumption of Imported Pork Using the Consumer Behavior Survey for Food)

  • The domestic swine industry is currently facing a threat due to the recent increase in pork imports. This study aims to determine what factors influence consumers' intention to consume imported pork and suggest measures to support the domestic pork industry. To achieve this, we analyzed data from the Korea Rural Economic Institute's Food Consumption Behavior Survey using a binary logistic regression model. The results revealed that a higher intention to consume imported pork is linked to a higher intention to consume imported rice, purchasing meat online, frequent purchases of HMR, and procuring U.S. beef, especially among urban residents. On the other hand, a lower intention to consume imported pork is associated with a higher awareness of animal welfare certification, frequently dining out, and older age. Based on these findings, we propose the following response measures for the domestic swine industry: implementing educational programs, marketing, and advertising specifically targeting urban residents to improve their perception of domestic agricultural products; enhancing price competitiveness through distribution optimization; and developing policies to promote the use of domestic pork as an ingredient in processed foods.

유가공장의 HACCP 적용 (The Application of Hazard Analysis Critical Control Point (HACCP) in Milk Processing Plants)

  • With the starting of Uruguay Round(UR) and World Trade Organization(WTO), the direction of trade in world market has been setting up with the beginning of an opening age. However, world nations has been expressed a deep concern on the marketing and the circulations of unsafe foods, especially in the international trade of food products. Therefore, administration of most countries are taking a firm step on the safety of imported food products. The implementation of hazard analysis critical control point(HACCP) system in food industry is strongly appeared on the world stage at this point. Major international organizations, such as WHO, WTO, and EC have been recognized the importance of HACCP and already documented on their future plan for standardization of food safety in the international trade of food products by means of the this system. Several advanced countries have already developed HACCP system for the food industry and have been producing food products under this system. Now they have proposed rulemakings on a mandatory HACCP program in the production of domestic and imported food products. However, with the lacking of knowledge and information on the HACCP, there has been no actions for applying this system in the food industry of Korea. It is a very clear fact that Korean dairy and food industry will be faced on serious problems in exporting food products without applying HACCP system in the very near future. The objective of this article is to introduce the world trend. necessity, and application of HACCP system in food and dairy industry. Also a HACCP system developed by one dairy processing plant in Europe will be demonstrated as a moldel system.

Comparison of Antioxidant Activities of Hydrolysates of Domestic and Imported Skim Milk Powders Treated with Papain

  • Milk proteins have many potential sequences within their primary structure, each with a specific biological activity. In this study, we compared and investigated the bioactivities of hydrolysates of the domestic (A, B) and imported (C, D) skim milk powders generated using papain digestion. MALDI-TOF analysis revealed that all milk powder proteins were intact, indicating no autolysis. Electrophoretic analysis of hydrolysates showed papain treatment caused degradation of milk proteins into peptides of various size. The antioxidant activity of the hydrolysates, determined using 2,2-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) and total phenolic contents (TPC) assays, increased with incubation times. In all skim milk powders, the antioxidant activities of hydrolysates were highest following 24 h papain treatment (TPC: A, 196.48 μM GE/L; B, 194.52 μM GE/L; C, 194.76 μM GE/L; D, 163.75 μM GE/L; ABTS: A, 75%; B, 72%; C, 72%; D, 57%). The number of peptide derived from skim milk powders, as determined by LC-MS/MS, was 308 for A, 283 for B, 208 for C, and 135 for D. Hydrolysate A had the highest antioxidant activity and the most potential antioxidant peptides amongst the four skim milk powder hydrolysates. A total of 4 β-lactoglobulin, 4 αs1-casein, and 56 β-casein peptide fragments were identified as potential antioxidant peptides in hydrolysate A by LC-MS/MS. These results suggest that domestic skim milk could have applications in various industries, i.e., in the development of functional foods.

Strain differentiation of canine distemper virus by reverse transcriptase polymerase chain reaction and restriction fragment length polymorphism analysis

  • To detect CDV RNA in clinical samples and differentiate prevailing CDV virulent strains affecting susceptible animals from attenuated vaccine strains, we performed RT-PCR, RFLP, and sequencing. CDV specific primers were generated from the middle part of nucleocapsid gene. The expected size of PCR products, 519 bp, was observed in tissues of Jindo dog, poodle dog, badger, fourteen of nineteen blood samples as well as 5 vaccine strains including domestic and imported products. The PCR products obtained from tissues and PBMCs of infected animals were digested to 317- and 202-bp fragments by Bam HI, but the products obtained from four of five vaccine strains and Lederle strain were not digesed by Bam HI. Only one vaccine strain of which the PCR products were digested by Bam HI was confirmed as imported vaccine, modified Synider Hill strain. Based on seqencing data obtained from the 519-bp products, it was confirmed that Bam HI restriction site tends to be conserved in field isolates compared to the commercially available attenuated vaccine strains. Partial nucleotide sequences of CDV NP gene obtained from tissues of Jindo dog, poodle and badger shared 100% homology each other, whereas the nucleotide sequences showed 96.3, 96.5, 93.6 and 93.4% homology with Yanaka (virulent), Han95 (virulent), Lederle (attenuated) and Onderstepoort (attenuated) strain, respectively.

수도권(首都圈) 여대생(女大生)의 기초(期初) 피부(皮膚) 색조(色調) 화장품(化粧品) 사용(使用) 상태(賞態)에 관(關)한 연구(硏究) (A Study on The Basic Skin Makeup Products Consuming Patterns of Female College Students lived in Metropolitan Area of Seoul)

  • The purpose of this research is to analyze the patterns on consuming basic skin makeup products of female college students, and to provide basic information to understand the patterns of ordinary consumers. The survey was included 283 female students from 5 colleges located in metropolitan area of Seoul. The survey data were analyzed by one-way ANOVA, Duncan test, T-test, chi-scuare-test methods. The results are as follows : 1. 60% of the college students of metropolitan area are doing basic skin makeup for aesthetic reasons in most cases, eye makeup is regarded the most important part, so 92% students have experienced to buy imported cosmetic products because of it's better absorption to skin. 2. Significant correlations were found between the skin types and dissatisfaction about foundation after using. 3. According to demographic variables, significant correlations were found between grade and makeup extent, grade and the reasons why they use imported products. 4. According to demographic variables, significant correlations were found between grade and foundation types used, monthly average living expense and purchasing channels, grade and purchasing channels, price level of the currently using face powder and monthly average living expense, monthly average spending for cosmetic products and level of wealth, price level of the currently using foundation and monthly average living expense. 5. According to demographic variables, significant differences were found in monthly average living expense, monthly average spending for cosmetic product, mother's job, grade.

수입 의료용 압박스타킹의 압력 측정치 비교 (The Comparison on the Compression Measurement Value of Medical Compression Stockings)

  • This study measured and analyzed pressure at each measurement part of imported compression stockings sold in Korea to provide basic information to establish a pressure standard and grade ranking. This study used 40 medical compression stockings imported from 6 countries. Pressure measurements were taken at 11 points: front side and back side of ankle, end-point of the gastrocnemius muscle, front, inner side, back, and outer side of calf, back side of below knew girth, inner side, and outer side of mid-thigh girth, and inner side of thigh girth. AMI 3037-10 and AMI 3037-2 were used for measurements taken inside an environmental chamber at a temperature of $21^{\circ}C$ and a relative humidity (RH) of 65%. For the measurements, 11 air pack sensors were attached to a wooden model leg (Hohenstein) and three measurements were taken at each measurement point in three minutes. The average of these measurements was used for analysis. The findings of this study were as follows. As for the front side of the ankle, of the 40 products, 14 products (6 USA, 2 Swiss, 3 Italian, and 2 Taiwanese) were within the pressure range indicated on the product label; however, no German products fell within the pressure range. A total of 8 products (5 USA, 1 Swiss, 1 Italian, and 1 German) were gradient compression type; however, no Japanese or Taiwanese product were of this type. The majority of products had the highest pressure at the end-point of the gastrocnemius muscle. Only 3 products, 1 USA (Jobst Opaque 30-40mmHg), 1 Swiss (Sigvaris Cotton 34-46mmHg) and 1 Italian (Jobstocking 25-32mmHg), had measurements that met the indicated standard pressure, were a gradient compression type, and met the overall standard for compression stockings.

다층구조의 고효율 수처리용 필터 제조 (Manufacture of Multi-Layered High Efficiency Water Treatment Filter)

  • 본 연구는 외국제품과 동등 또는 이상의 품질을 가진 고효율성 수처리 필터의 제조와 그 공정을 개발하는데 목적이 있다. 개발된 필터의 여과효율은 93~99%로 기존의 국내산 82~97.5%, 일본산 92.5~98% 보다 우수하거나 유사하였다. 오염 입자의 양에 따른 압력손실(내구성)은 기존의 국내산보다는 현저하게 작았으며 일본산과 비교해도 약 $0.1kg_f/cm^2$의 낮은 압력 손실을 나타내었다. 또한 본 연구에서 개발된 카트리지 필터는 일본산 제품에 비하여 약 50%의 가격으로 생산이 가능하므로 기존의 국내산 제품뿐 아니라 일본산 제품에 대한 수입대체 효과도 기대할 수 있다.

생산공정 현장실사를 통한 수입 집성재로부터 규제해충 검출 원인 조사 (Investigation on The Cause of Interception of Regulated Pest from Imported Glue-laminated Boards Through In-situ Inspection of Their Manufacturing Processes)

  • 본 연구는 규제해충(이하 해충이라 칭함) 검출 건수 상위 3개국인 말레이시아, 인도네시아, 중국의 집성재 생산업체에 대한 현장실사를 통해 해충 검출 원인을 파악하여 검역 안전성 확보를 위한 적정 집성재 생산공정을 제시하고자 수행되었다. 현장실사 결과, 수입 집성재로부터 해충 검출은 생산공정상의 문제(층재의 천연건조 또는 미흡한 열기건조, 건조 층재의 부적절한 보관, 집성재의 불완전 포장)로 확인되었다. 특히 중국은 오동나무 층재를 전적으로 천연건조하는 점을 비롯하여 생산공정이 전반적으로 가장 불량하였다. 향후 수입 집성재의 검역 안전성을 확보하기 위해서는 수입업체 스스로 해외 생산업체에 층재에 기 서식하던 해충의 구제가 가능하면서 동시에 건조 층재나 완제품인 집성재에 대한 해충 가해를 예방할 수 있는 타당한 집성재 생산공정(층재의 적절한 열기건조, 집성접착 전까지 건조 층재의 밀봉 보관, 집성재의 밀봉 포장)의 적용을 요구하여 수입 집성재로부터 해충이 검출되지 않도록 해야 할 것이다.

한국시장에 유통 중인 수입산 및 국내산 삼겹살의 관능적 특성 (The Sensory Properties of Imported and Domestic Pork Bellies in Korean Market)

  • 국내 시장에 유통 중인 국내 및 수입산 냉장$\cdot$냉동 삼겹살의 관능적 품질 특성을 조사하기 위하여 총 12종의 수입산 및 국내산 삼겹살을 구입, 연령 및 성별로 구분된 60명의 관능 검사 요원을 대상으로 조사하고 분석하였다. 냉동 삼겹살의 경우, 풍미, 맛 및 연도에서는 처리구별 유의적인 차이를 나타내지 않았으나, 다즙성 및 기호도에서는 국내산 냉동 삼겹살에 비해 수입산 냉동 삼겹살을 더욱 선호하였으며 (p<0.001) 특히, 북미산 냉동 삼겹살에 대한 기호도가 높은 것으로 조사되었다. 또한, 연령에 따른 조사 결과 역시, 국내산보다는 수입산 냉동 삼겹살에 대한 선호도가 높은 것으로 조사되었다. 국내산 냉장 삼겹살과 수입산 냉동 삼겹살의 검사결과의 경우, 국내산 D산의 냉장 삼겹살보다는 수입산 냉동 삼겹살을 더욱 선호하는 경향을 나타내었다(p<0.05). 그러나 국내산C사의 경우에는 기호도면에서 북미산과는 유의적인 차이를 나타내지 않았으나(p>0.05), EU산보다는 높은 기호도를 나타내는 것으로 조사되었다(p<0.05). 또한, 연령에 따른 조사 결과에 의하면 20대의 경우에는 국내산 C사의 냉장 삼겹살을, 30, 40대의 경우에는 북미산 냉동 삼겹살에 대한 선호도가 높은 것으로 조사되었다.

국내산 및 수입산 벌꿀의 물리적 특성 및 Diastase 활성 평가 (Physicochemical and Diastase Activity Properties for Domestic and Imported Honey)

  • 벌꿀은 과당 및 포도당 외 다양한 생리활성 물질을 함유하고 있어 매우 선호도가 높은 식품이지만, 최근 기후변화 등으로 벌꿀 생산성 및 수입산 벌꿀에 대한 가격경쟁력이 급격히 낮아지고, 진위 여부에 대한 소비자 불신이 팽배해 있어 이에 대한 대책 마련이 시급하다. 이에 따른 대책으로 우리나라는 2023년부터 꿀 등급제를 전면 시행하고 있으며, 현재 시행되고 있는 꿀 등급제 지표를 새롭게 도입해야 하는지에 대한 연구도 지속적으로 이루어질 필요가 있다. 이에 본 연구에서는 현재 우리나라 벌꿀 등급제에서 사용하고 있지 않는 지표인 전기전도도, pH 및 효소 활성 특성을 국내산과 수입산 벌꿀 31종을 비교함으로써 해당 지표의 꿀 등급제 도입 가능성을 확인해 보고자 하였다. 그 결과, 국내산 벌꿀 및 수입산 벌꿀의 수분함량은 20% 내외로 국내 품질 규격 관리가 비교적 양호한 것으로 판단되며, pH 값은 pH 3.91-6.31 범위로 분포하여 산성을 나타내는 것으로 확인되었다. 국내산 벌꿀 및 수입산 벌꿀의 전기전도도는 0.09-1.51mS/cm로 시료간에 큰 차이를 보였지만, 벌꿀 종류에 따른 차이가 크므로 우리나라 벌꿀에 적용 가능한지에 대해서는 추가 연구가 필요할 것으로 보인다. 마지막으로 diastase 활성의 경우, 국내산 벌꿀은 베트남, 뉴질랜드, 미국, 중국 수입산 벌꿀과 수입산 벌꿀에 비해 상대적으로 높은 DN 값을 보였다. 이에 따라 diastase 활성도는 벌꿀의 품질을 평가할 수 있는 중요한 지표이니만큼 국내 꿀 등급제를 위한 추가 지표로써 도입 가능성 확인을 위한 추가 연구가 필요하다. 본 연구는 국내산 및 수입산 벌꿀에 대한 물리적 특성 및 효소 활성 특성을 평가한 논문으로 꿀 등급제 기준 마련을 위한 기초 정보를 제공함으로써 꿀 등급제를 통한 소비자의 신뢰를 향상 및 벌꿀 유통 선진화를 제고할 수 있기를 기대한다.
