Survey of Research Papers on the Sensory Evaluation of Kimchi (관능검사에 의한 김치의 품질평가방법에 관한 실태조사: $1970{\sim}1995$년 학회지 게재논문 분석)

  • The purpose of this study is focused on the quality of Kimchi by sensory evaluation in 67 research papers published by 8 kinds of food & nutrition related Korean journals from $1970{\sim}1995$. The results are summarized as follows : 1) Among 126 research papers on Kimchi, sensory evaluation results were shown in 67 papers. 2) The numbers of panelists for sensory evaluation were $10{\sim}12$ in 32 papers, $7{\sim}9$ in 15 papers, and $4{\sim}6$ in 6 papers. 3) The method of sensory evaluation applied was scoring test in all 67 papers. Among them, 25 papers utilized 5-points scale, 16 papers 9-points scale, and 11 papers 7-points scale evaluation. 4) Evaluated sensory characteristics were taste, texture, odor, appearance & color, and others. Sourness, salty, and carbonic taste in taste; hardness, crispness, and toughness in texture; moldy, acidic, and grassy odor in odor were the most frequently tested characteristics. 5) Fermentation/storage periods, fermentation/storage temperature, and concentration of salt/time of soaking in salt solution were the most frequently tested variables. 6) To evaluate the statistical difference, 31 papers applied F-test, and 9 papers were applied Duncan's multiple range test to determine which samples are significantly different from others. In 6 papers, correlation coefficients were calculated between sensory evaluation scores and the results of mechanical determinations.

The relationships among children's perceived parent-child communication style, stress coring behaviors and behavior problems. (아동이 지각한 부모-자녀간 의사소통 방식 및 스트레스 대처행동과 아동의 행동문제와의 관계)

  • The purpose of this study is to obtain basic data needed to understand school-age children's parent-child communication style, stress coping behaviors, and child behavior problems. The subject of this study were 362 primary school children (the fourth and the sixth graders) and their mothers in "D" Metropolitan City, Korea. The research tools included standardized parent-child communication style scale (Min,l991), stress coping behaviors scale (Min,1998), and child behavior problems scale (Hun,l996). The data were analyzed using statistical techniques such as Mean, standard deviation, frequency, percentile, t-test, F-test, pearson's correlational analysis, stepwise regression analysis. In the relationship between child perceived parent-child communication style and stress coping behaviors, the children who make open communication with their parents demonstrate high problem-solving, support-seeking coping behavior. The children with closed communication with their parents have high hope expectation, revenge coping behavior. In the relationship between child perceived parent-child communication style and child behavior problem, the children making more closed communication with their parents show more behavior problems. The children with more closed communication with their mothers have more hyperactive behaviors, aggressive behaviors, and immature behaviors, and the children who are making more closed communication retain more anxious behaviors and withdrawn behaviors. In the relationship between child stress coping behaviors and behavior problems, the more problem-solving and support-seeking coping behaviors the children possess, the less problem behaviors they demonstrate. The more hope expectation, revenge coping behavior the children possess, the more problem behaviors they show. With the results above, we can find out that parent-child communication style has an effect on stress coping behavior, and parent-child communication style and stress coping behavior have an influence on child behavior problem.

Next-generation gene targeting in the mouse for functional genomics

  • In order to elucidate ultimate biological function of the genome, the model animal system carrying mutations is indispensable. Recently, large-scale mutagenesis projects have been launched in various species. Especially, the mouse is considered to be an ideal model to human because it is a mammalian species accompanied with well-established genetic as well as embryonic technologies. In 1990', large-scale mouse mutagenesis projects firstly initiated with a potent chemical mutagen, N-ethyl-N-nitrosourea (ENU) by the phenotype-driven approach or forward genetics. The knockout mouse mutagenesis projects with trapping/conditional mutagenesis have then followed as Phase II since 2006 by the gene-driven approach or reverse genetics. Recently, the next-generation gene targeting system has also become available to the research community, which allows us to establish and analyze mutant mice carrying an allelic series of base substitutions in target genes as another reverse genetics. Overall trends in the large-scale mouse mutagenesis will be reviewed in this article particularly focusing on the new advancement of the next-generation gene targeting system. The drastic expansion of the mutant mouse resources altogether will enhance the systematic understanding of the life. The construction of the mutant mouse resources developed by the forward and reverse genetic mutagenesis is just the beginning of the annotation of mammalian genome. They provide basic infrastructure to understand the molecular mechanism of the gene and genome and will contribute to not only basic researches but also applied sciences such as human disease modelling, genomic medicine and personalized medicine.

A Study on the Relationship Between Health Protective Behavior and Health Locus of Control (예방적 건강행위와 건강통제위 성격 성향과의 관계에 대한 연구)

  • It is assumed that the more society advances in its complexity and development, the more people pay attention to their health and accordingly the more people tend to practice health protective behavior. Most of human behavior is based on social inter-actions. The concept in Locus of Control has been developed from social learning theory to help better understanding the social phenomena affecting human behavior. Multidimensional Health Locus of Control is consisted of three dimensions: Internal, Powerful Others and Chance. This study was conducted to find out the health protective behavior patterns of the people and its relationship with Health Locus of Control as an influencing factor to their behavior. All the subjects in this study were the ones of the bank employees in Seoul, Among the total of 1,430 bank employees, 761 were chosen as a sampled subjects. Questionnair survey was conducted from March 4 to March 13, 1985. Research instruments used in this study were two kinds, one was the Health Locus of Control Scale developed by Wallston & Wallston and the other was the Measuring Scale for Health Protective Behavior developed by the investigator. Analysis of data was done by using Descriptive Statistics, X²-test, t-test, ANOVA, Pearson's correlation coefficient. The results of this study are summarized as follows: The mean score of Internal was 24.1, Powerful others was 19.7 and Chance was 15.3 out of maximum range of 6-30 respectively. The mean score of Health Protective Behavior Scale fell as 53.2 out of a maximum range of 18-90. Internals were more likely closely related with sex, educational levels and religion, Powerful others were related with age, educational levels and the number of family members. Chances were related with edu cational levels. The older the subjects were, the more concerned about their health. They tended to practice more favorable health protective behaviors. Furthermore, married people tended to fay more attention to their health than single individuals. Also, the number of family members and religion affected their attitudes in the health protective behavior patterns. Internals and Powerful Others were related with health protective behaviors. If one believes he can do something about his health and others play a significant role on his health, he is more apt protective patterns more suitable for health and actually shows that he is better off.

  • Recently, Deep learning has been used successfully to solve many recognition problems. It has many advantages over existing machine learning methods that extract feature points through hand-crafting. Deep neural networks for human activity recognition split video data into frame images, and then classify activities by analysing the connectivity of frame images according to the time. But it is difficult to apply to actual problems which has small-scale activity classes. Because this situations has a problem of overfitting and insufficient training data. In this paper, we defined 5 type of small-scale human activities, and classified them. We construct video database using 700 video clips, and obtained a classifying accuracy of 74.00%.

A Comparison of the Dietary Habit and Nutrient Intakes of Korean Farmers according to Different Family Patterns and Farming Types

  • The purpose of this study was to compare the dietary habit and nutrient intakes of Korean farmers according to their different family patterns and farming types. Food and nutrient intakes were obtained by food frequency method. The subjects(male 35%, female 65% : mean age, $48{\pm}11 years)$ were compared 46% of nuclear family, 59% of 3-4 person of family size ; 50% of middle-scale farming ; 54% of rice farming. Sixteen percent were over 60 years old group. In aspects of dietary habit, farmers of medium size farming and 10-20 years of farming experience frequently skipped meals. But their appetite was better than small farm famers. Dinner irregularity was more frequent in their group of 3-4 person families. The numbers of food intake were significantly different according to family pattern. Nuclear family groups consumed more kinds of foods. The mean energy intake was 2000Kcal/day, with PFC ratio of 19 : 16 : 65. The energy and nutrient intakes showed the same tendency as the food variety. Intakes of calcium and iron were lower than the Korean RDA. Families with over 5 people consumed higher amounts of protein and minerals. Intakes of thiamin, niacin, and vitamin E were better in large families and large-scale farming groups. As compared with the PMS ratio, the level of monounsaturated fatty acids as higher than saturated FA. The lipid intake was also better in large families and large-scale farming. The results suggest that dietary habit and nutrient intakes were different by family pattern and farming types.

Study on Correlation between Acoustic Profiles and Fatigue (노권상과 음성 지표간의 상관성에 관한 연구)

  • Objectives : The purpose of this study is to find out the correlation between the Vocal indicators and the 'Buzhongyiqi-Tang questionnaire' and the 'Chalder fatigue scale.' Methods : This study examined the mean value of each factor in the 'Buzhongyiqi-Tang Questionnaire,' 'Chalder fatigue scale' and the different voice indicators conducted on 81 healthy adult participants in relation to the results of the /a/ /e/ /i/ /o/ /u/ pronunciation test. Results : There was significant correlation between the pronunciation of /a/ /e/ /i/ /o/ /u/ vowels' F0 indexes and 'the Deficiency symptoms of Buzhongyiqi-Tang'. The results of the regression analysis showed the following significant findings for each pronouncing vowels: /i/ as a factor for 'the Deficiency symptoms of Buzhongyiqi-Tang'.; /a/ for 'the Consumptive fever of Buzhongyiqi-Tang'.; /i/ for 'the Vocal inflammation of Buzhongyiqi-Tang.; and /e/ as a factor of 'the Chadler physical fatigue'. Conclusions : The study showed a negative correlation between the Fundamental Frequency and the mean value of the questionnaire, which could be understood as higher the fatigue level, increased level of vocal vibration and higher pitch tone compared to the less fatigued group. We expect future studies to conduct research on methods to diagnose other illnesses using the vocal indicators based on the correlation between the vocal index and illnesses prescribed under traditional oriental medicine.

Efficient Management of the pH of the Wet Scrubber Washing Water for Risk Mitigation (리스크 완화를 위한 Wet Scrubber 세정수 pH의 효율적 관리)

  • Wet Scrubber reacts the incoming pollutant gas with cleaning water (water + absorbent) to absorb pollutants and release the clean air to the atmosphere. Wet scrubbers and packed tower scrubbers using this principle are widely used in businesses that emit acid gases. In particular, in the etching process using hydrochloric acid (HCl), alkaline washing water (NaOH) having a pH of about 8 to 11 is used to absorb a large amount of acid gas. However, These salts are attached to the injection nozzle (nozzle), filling material (packing), and the demister (Demister), causing air pollution, human damage, and inoperability due to clogging and acid gas discharge. Therefore, In this study, an improvement plan was proposed to manage the washing water with pH 3~4 acidic washing water. The test method takes samples from the Wet Scrubber flue measurement laboratory twice a month for 1 year. Hydrogen chloride (HCl) concentration (ppm) was measured, and nozzle clogging and scale conditions were measured, compared, and analyzed through a differential pressure gauge and a pressure gauge. As a result of the check, it was visually confirmed that the scale was reduced to 50% or less in the spray nozzle, filler, and demister. In addition, the emission limit of hydrogen chloride in accordance with the Enforcement Regulation of the Air Quality Conservation Act [Annex 8] met 3 ppm or less. Therefore, even if the washing water is operated in an acidic pH range of 3 to 4, it is expected to reduce air pollution and human damage due to clogging of internal parts, and it is expected to reduce maintenance costs such as regular cleaning or replacement of parts.

Study on the Priorities of Fashion Technology Development for Small-Scale Fashion Designer Brands using IPA Analysis (IPA 분석을 통한 패션 소상공인 디자이너 브랜드를 위한 패션테크 개발 우선순위 도출)

  • This study aimed to explore fashion technologies for small-scale designer brands and reveal the priorities of the derived fashion technologies. Interviews were conducted with owners of 15 designer brands to explore fashion technologies needed in the field based on the business operation stage (study 1), and an online survey of owners of 61 designer brands was conducted to verify their priorities (study 2). A total of 12 fashion technologies were derived from study 1, including 2 market analysis stages, 6 season planning stages, and 4 product operation stages. In study 2, importance and satisfaction were measured with 12 fashion techniques derived from study 1, and importance-performance analysis (IPA) was performed. The technologies of product management with image tagging and sales channel matching were considered to be the fashion technologies that should be developed first. Second, in the case of maintenance, demand prediction and price determination were applicable. Third, over-effort avoidance was revealed through market analysis and design generation. Finally, in automatic product detail page creation and digital marketing, development was the lowest priority. The results of this study are expected to provide insight into priority areas for fashion technology developers and policy departments providing emerging brand support.

The Effect of Paternal and Maternal Helicopter Parenting on the Career Preparation Behavior of High-School Students: Sequential Mediation Effects of Academic Achievement Attribution and Career Decision-Making Self-Efficacy (아버지와 어머니의 헬리콥터 부모역할이 고등학생의 진로준비 행동에 미치는 영향: 학업성패귀인과 진로결정자기효능감의 순차적 매개효과)

  • This study examined the sequential mediation effects of academic achievement attribution and career decision-making self-efficacy on the effect of paternal and maternal helicopter parenting on high-school students' career preparation behavior. A total of 285 (119 male and 166 female) Korean high-school students in the second grade participated in the study. Research variables were measured using the Career Preparation Behavior Scale (Kim, 1997), Helicopter Parenting Scale (LeMoyne & Buchanan, 2011), Attribution Questionnaire (Weiner, 1979), and Career Decision-Making Self-Efficacy Scale-Short Form (Betz et al., 1996). To examine the sequential mediating effect, data analysis was performed using SPSS 29.0 and PROCESS MACRO (v4.2) Model 6. The results revealed no correlations between helicopter parenting and academic failure attribution. However, higher paternal and maternal helicopter parenting were found to indirectly reduce high-school students' career preparation behavior through lower internal academic success attribution (effort and ability) and higher external academic success attribution (task difficulty and luck), which reduced career decision-making self-efficacy. These findings can be employed to develop more effective intervention programs comprising career guidance for adolescents, which emphasizes the negative effect of helicopter parenting. This study expands the research field, as previous findings on helicopter parenting mostly focus on college students.
