The purpose of this study is to prepare a systematic implementation of safety management for adult's foods through recommendations and guidelines for nutrition and hygiene standards for food quality certification system preferred by adults. To achieve this goal, the study studied the current status of adult preferred foods sold near the university, elicited the risks and problems of such foods, and selected nutritional and hygiene risk factors from those foods. To provide quality certification standards and guidelines for adult food preferences, this study looked at practical examples of relevant domestic and international policies and standards. The nutritional standards for food quality certification for sugars, fats, sodium, additive microorganisms and pathogenic bacteria, which are nutrients that can impair health when consumed in large quantities, and dietary standards limited to less than 100 kcal per serving were studied. One excessive amount of caffeine is reported to cause loss of calcium and potassium in the body, suggesting that if an adult is continuously exposed to high concentrations of caffeine, it could lead to imbalance in the resolution in the body and be flavored by growth and foot moon. Therefore, it is necessary to prepare an individual banner based on feasible food types, which is coordinated with the nutritional aspects that fit the purpose of presenting right amount, safe food through the quality certification system for adult's favorite foods and practical aspects that can induce companies' response and voluntary impacting efforts.
A hazard analysis which included watching operations, measuring temperatures of foods throughout preparation and display, and sampling and testing for microorganisms of total plate counts and coliform bacteria was conducted in various phases of product flow of Naeng-myeun (Cold noodles) and Pi-bim bab (mixed rice) prepared at Korean restaurants. Large numbers of total plate counts were counted from the cooked foods after handling and holding. Ingestion of these foods must be considered high risk. Critical control points identified were, pre-preparation, food handling after cooking, and holding on display in product flow of Nang-Meon and pre-preparation, preparation, and holding on display in product flow of Pi-bim bab. It need for effective quality control of Nang-Meon and Pi-bim bab that training program consist of surveillance, education of the staff, standard operation procedures, forbidding dangerous processes and control of critical points.
Chronic consumption of a high-fat, high-sucrose (HFHS) diet increases insulin resistance and results in type 2 diabetes mellitus in C57BL/6J mice. Hyperglycemia in diabetics increases oxidative stress, which is associated with a high risk of diabetic complications. The purpose of this study was to examine the hypoglycemic and antioxidant effects of chamnamul [Pimpinella brachycarpa (Kom.) Nakai] in an animal model of type 2 diabetes. The ${\alpha}$-glucosidase inhibitory activity of a 70% ethanol extract of chamnamul was measured in vitro. Five-week-old male C57BL/6J mice were fed a basal or HFHS diet with or without a 70% ethanol extract of chamnamul at a 0.5% level of the diet for 12 weeks after 1 week of adaptation. After sacrifice, serum glucose, insulin, adiponectin, and lipid profiles, and lipid peroxidation of the liver were determined. Homeostasis model assessment for insulin resistance (HOMA-IR) was determined. Chamnamul extract inhibited ${\alpha}$-glucosidase by 26.7%, which was 78.3% the strength of inhibition by acarbose at a concentration of 0.5 mg/mL. Serum glucose, insulin, and cholesterol levels, as well as HOMA-IR values, were significantly lower in the chamnamul group than in the HFHS group. Chamnamul extract significantly decreased the level of thiobarbituric acid reactive substances and increased the activities of superoxide dismutase, catalase, and glutathione peroxidase in the liver compared with the HFHS group. These findings suggest that chamnamul may be useful in prevention of hyperglycemia and reduction of oxidative stress in mice fed a HFHS diet.
The purpose of this study was to investigate dietary habits and food compliance in stroke patients. One-hundred sixty eight elderly stroke patients and 97 young patients with first -ever stroke admitted to Asan Medical Center between 1994 and 1998 were studied. Using a structured interview, we assessed food intake. food consumption frequency and compliance to low salt, low meat hight fish and high fruit and vegetable diets. These results were analyzed with X$^2$, t-tests, and analysis of variance (ANOVA) using the SAS package program. Salted food intake and cholesterol-containing food frequency were increased whereas frequency of fruits and vegetables intake was decreased in young stroke patients compared to the elderly. Meat intake and cholesterol-containing food frequency were increased in the males compared to the females in elderly stroke patients. and fish intake and cholesterol-containing food frequency were higher in the males than the females in the young. In patients with high economic status, frequency of fruits and vegetables was elevated. Also compliance the low meat and high fruit and vegetable diet in young patients was lower than that in the elderly. When the life-style risk factors influencing the food intake of frequency of fruits and vegetables was affected by education in young stroke patients. In elderly stroke patients, meat intake frequency of cholesterol-containing foods and fruits and vegetables were influenced by sex and /or income. Our results suggest that dietary intake of salt meat ,cholesterol-containing foods. fruits and vegetables in stroke patients may vary with age, sex the presence of risk factors or economic status therefore guidelines and nutrition education should by formulated to prevent stroke recurrence based on dietary habits and risk factors of individual patients.
The known risk factors for atherosclerosis include plasma low density lipoproteins (LDL)or Cholesterol, low PUFA in the diet, hypertension, and high Na intake, obesity, diabetes, lack of exercise, cigarette smoking, sugar, low fiber and nicotinic acid in the diet, sources of Protein foods, and Psychological factors. Among various dietary factors, fat is known as the most serious causative agent for atherosclerosis. The genetic factor is a18o known as an important one but is out of scope in this paper. Since atherosclerosis is a progressive disease which may develop for many years before showing any definitive symptoms, it is very important to develop preventive programs especially in the country like Korea that is not quite overdevelopted as some western countries. In this paper all the factors mentioned above were reviewed and the dietary suggestion were made on the basis of the content of polyunsaturated and saturated fat in the diet to prevent or/and to cure this disease. Most of the available data on diet therapy with emphasis. on P/S ratio were tabulated together. after tile patient's habitual dietary intake is analized the guidelines of personalized fat-controlled diet can be recommended. It is of utmost importance to develop Korean diets for beth prevention and cure of atherosclerosis emphasizing individual eating habit in the near future which can be more Practicaly used both at home and in the hospital.
본 연구는 65세 이상 노인들의 치아건강도와 선호식품과의 관련성을 알아보고자 국가통계자료인 2010년과 2011년 국민건강영양조사 원시자료를 분석하여 다음과 같은 결론을 얻었다. 채소류, 과일류, 기타식품의 선호도가 높은 사람은 T-health 지수와 FS-T 지수가 높았고, ST와 PT도 많은 반면, 채소류, 과일류, 기타식품의 선호도가 낮은 사람은 MT가 많은 것으로 나타났다. T-health 지수는 곡류, 과일류, 기타식품, 65~69세, 70~74세, 소득분위 중하위권과 하위권에서 유의하였고, ST는 곡류, 기타식품, 65~69세, 70~74세, 소득분위 중하위권에서 유의한 영향을 미쳤다(p<0.05). FS-T 지수는 과일류, 유지 및 당류, 기타식품, 65~69세, 70~74세, 소득분위 중하위권과 하위권에서 유의하였으며, PT 및 MT는 곡류, 과일류, 65~69세, 70~74세, 소득분위 중하위권과 하위권에서 유의한 영향을 미쳤다(p<0.05). 이상의 결과를 종합하면, 65세 이상 노인들의 치아건강도와 식품의 선호도는 밀접한 연관성이 있는 것으로 조사되었다. 특히, 노인들의 치아건강도에 따라 선호식품에 차이가 있으며, 노인들의 치아건강상태가 영양불균형을 초래하는 위험요인으로 작용될 수 있다는 것에 주목할 필요가 있다. 따라서 노인들을 비롯한 모든 연령층에서 치아건강을 유지하기 위한 노력이 필요하며, 생애에 걸쳐 구강건강관리 를 할 수 있는 프로그램 마련이 필요할 것으로 판단되었다.

BACKGROUND/OBJECTIVES: Metabolic syndrome is closely associated with lifestyle factors, including diet and nutritional intake. Modern trends show a shift in food consumption from healthy home-cooked meals to processed and instant foods. Therefore, this study analyzed the association between ultra-processed food intake and the development of metabolic syndrome in Korean adults based on the data from the Korea National Health and Nutrition Examination Survey (KNHANES) 2013-2018. SUBJECTS/METHODS: The subjects of this study were 17,414 adults aged 19-80 years who participated in the 6th-7th KNHANES. Processed food was classified into four categories, NOVA1 to NOVA4, using 24-h recall data. The higher the NOVA category, the more processed the food. Statistical analysis was conducted using logistic regression to investigate the prevalence of metabolic syndrome according to the consumption of ultra-processed foods. RESULTS: Among the diagnostic criteria for metabolic syndrome, hypertension (odds ratio [OR], 0.72; 95% confidence interval [CI], 0.62-0.85; Q4 vs. Q1, P-trend < 0.001) and high triglycerides (OR, 0.83; 95% CI, 0.72-0.94; Q4 vs. Q1, P-trend < 0.001) showed a correlation with the percentages of energy consumed from ultra-processed foods. The OR for metabolic syndrome, according to the percentages of energy consumed from ultra-processed foods, is shown only for men. The OR showed that the percentages of energy consumed from ultra-processed foods were associated with increased metabolic syndrome. CONCLUSIONS: This study suggests that consumption of ultra-processed foods raises the risk of metabolic syndrome especially among men. To prevent metabolic syndrome, it is necessary to prepare appropriate dietary guidelines for Korean adults.
This cross-sectional study was conducted to describe the changes of plasma cardiovascular disease(CVD) risk factors in Korea. Overnight fasting plasma levels of total cholesterol, high density lipoprotein(HDL)-cholesterol, triacylglycerol and glucose were analyzed. Blood pressure and anthropometric data were also measured. Health practice factors such as smoking status, alcohol consumption and frequency fo exercise were evaluated by a self-administered questionnaire. Questions regarding dietary habits and food preferences were also asked. Seventy eight percent of the subjects had more than one CVD risk factor. Plasma total cholesterol, triacylglycerol, and fasting blood glucose were significantly increased according to the subjects body mass index$(kg/m^2$, BMI), whereas HDL-cholesterol, low density lipoprotein(LDL)-cholesterol and blood pressure showed no significant differences with BMI. Current smokers had significantly high plasma total cholesterol, LDL-cholesterol and triacylglycerol levels. Alcohol consumption significantly increased plasma total cholesterol and fasting blood sugar, but regular exercise had no effects on the plasma CVD risk factors. Overeating and frequency of fast food consumption were positively correlated with the CVD risk score, whereas intake of grains, meats and vegetables were negatively correlated with that score. A stepwise multiple regression analysis was performed to examine the effects of specific dietary factors on plasma lipid levels. For plasma total cholesterol level, the frequency of fast food intake explained 8% of the variance, followed by habitual overeating, frequency of grain intake and high cholesterol food intake(Model $R^2$=22.4%). For plasma triacylglycerol level, preference of oily foods accounted for 7.5% of the variance, followed by eating breakfast, preference of fruit and frequency of grain intake(Model $R^2$=22.0%). The findings suggest that intervention programs to reduce the risk of CVD should focus on health practice through reducing BMI, smoking cessation and moderate or no alcohol drinking. Moreover, desirable dietary habits such as eating breakfast, not overeating and reduced intake of fast food may improve CVD risk.
Introduction: Fumonisin B1 (FB1) is a toxic and carcinogenic mycotoxin produced in cereals due to fungal infection. This study was conducted to determine FB1 contamination of rice and corn samples and its relationship with the rate of esophageal cancer (EC) in a high risk area in northeastern Iran. Methods: In total, 66 rice and 66 corn samples were collected from 22 geographical subdivisions of Golestan province of Iran. The levels of FB1 were measured for each subdivision by thin layer and high pressure liquid chromatographies. The mean level of FB1 and the proportions of FB1 contaminated samples were compared between low and high EC-risk areas of the province. Results: The mean of FB1 levels in corn and rice samples were 223.64 and 21.59 ${\mu}g/g$, respectively. FB1 contamination was found in 50% and 40.9% of corn and rice samples, respectively. FB1 level was significantly higher in rice samples obtained from high EC-risk area (43.8 ${\mu}g/g$) than those obtained from low risk area (8.93 ${\mu}g/g$) (p-value=0.01). The proportion of FB1 contaminated rice samples was also significantly greater in high (75%) than low (21.4%) EC-risk areas (p-value=0.02). Conclusion: We found high levels of FB1 contamination in corn and rice samples from Golestan province of Iran, with a significant positive relationship between FB1 contamination in rice and the risk of EC. Therefore, fumonisin contamination in commonly used staple foods, especially rice, may be considered as a potential risk factor for EC in this high risk region.
본 실험에 선정된 메뉴를 대상으로 경쟁 미생물이 존재하는 상태(비멸균)와 존재하지 않는 상태(멸균)에 따라 접종한 S. aureus의 증식결과를 비교 시 콩나물은 경쟁미생물이 존재하지 않는 상태에서, 두부조림과 잡채는 경쟁미생물이 존재하는 상태에서 우세적으로 S. aureus가 성장하였으며 미트볼 완자전의 성장은 경쟁 미생물이 존재하는 상태와 존재하지 않는 상태에서 모두 유사하게 활발히 증식하는 것으로 관찰되었다. S. aureus는 독소를 생성하는 균으로 조리 후에도 생육이 가능하므로 조리 후 배식되기까지 보관온도 및 초기 오염 농도에 따른 균의 증식을 예측한 결과 초기오염농도에 대한 S. aureus의 증식은 오염농도가 낮을 때($1.0{\times}10^2\;CFU/g$)보다도 오염농도가 높을 때($1.0{\times}10^5\;CFU/g$) 균증식이 빠르게 일어남이 확인되었다. 같은 보관온도와 처리조건에서 균의 오염농도가 낮은 경우와 비교했을 때 오염농도가 높을 경우 LT는 감소하고 SGR은 증가하여 균증식이 더 빠르게 나타났다. 일반적으로 S. aureus는 경쟁력이 약하기 때문에 경쟁미생물이 존재하지 않는 상태에서 증식이 잘 되는 것으로 알려져 있으나, 잡채의 경우는 경쟁 미생물이 존재하지 않는 상태보다도 경쟁 미생물이 존재하는 상태에서 균 증식이 잘 이루어졌다. 미트볼 완자전을 제외하고는 잠재적 위해 메뉴들의 경쟁 미생물이 존재하는 상태에서 균 증식은 기존의 증식예측 모델이 Gompert 공식에 잘 적용되지 않았다. 이는 본 연구에서 의도했던 외적인 환경인자(온도, 초기오염농도 등)외에 의도하지 않았던 식품 내 존재하는 내적인 환경인자(항균효과가 있는 양념, 경쟁관계 있는 균 분포 및 농도 등)의 영향이 S. aureus의 성장에 영향을 미친 것으로 추정된다. 결론적으로 모든 메뉴에서 초기 접종 농도가 높고. $35^{\circ}C$에서 배양한 경우 S. aureus의 증식 속도가 높아 3시간 이내에 6 log CFU/g 이상으로 나타나 위험범위에 도달하였으며, 특히 동물성 단백질이 주성분인 미트볼 완자전의 경우 증식속도가 가장 빨랐으며, 비멸균과 멸균군의 차이는 메뉴에 따라 차이가 있었다. 학교급식에서 제공되는 메뉴의 특성에 따른 보관온도별 S. aureus 분포 변화는 본 연구의 접종실험 결과와 USDA Pathogen Modeling Program(PMP) 모델으로부터 얻어진 S. aureus의 성장곡선 결과사이에 유의적 차이가 관찰되었다. 이는 USDA Pathogen Modeling Program(PMP) 프로그램에 S. aureus의 성장을 최적으로 지지할 수 있는 조건으로 형성된 broth 상태에서 실시된 것과 다르게 접종실험이 현재 학교급식에서 제공되는 메뉴를 대상으로 하여 실시하였기 때문인 것으로 해석되며, 본 연구에서 실험 메뉴는 실제 조리된 식품에 존재하는 미생물의 분포와 수준을 반영하기 위해서 경쟁 미생물이 존재하는 상태와 비존재 상태로 구분하여 실시하였다. 실제 제공되는 메뉴에는 S. aureus 이외에도 다른 미생물들의 경쟁적인 존재와 식품을 구성하는 영양성분, 식품의 조리과정중 사용되는 양념류, 조리방법의 차이가 균의 증식에 영향을 미칠 수 있을 것이라 사료된다. 본 연구는 예측 미생물학을 가공식품이나 유제품이 아닌 급식에서 제공되는 음식에 시도한 연구로서 실험 조건인 접종농도, 멸균여부와 보관온도의 모든 조건에서 성장예측 결과를 얻지는 못하였으나 앞으로 조리된 식품에서 예측모델 연구에 기초 자료로 활용되어질 가능성이 높을 것이라 생각된다. 또한 식품에서 미생물의 증식을 정확히 예측하여 정량적 위해평가에 활용하기 위해서는 실제 식중독 발생의 원인이 되는 미생물들이 생존, 오염, 성장하는 식품에서의 결과를 기본 자료로 하여 새로운 증식예측 모델 개발 및 연구가 보다 활발히 이루어져야 할 것으로 사료되어진다.

회원이 이용계약을 해지하고자 하는 때에는 [가입해지] 메뉴를 이용해 직접 해지해야 합니다.
제 16 조 (서비스 이용제한)
① 당 사이트는 회원이 서비스 이용내용에 있어서 본 약관 제 11조 내용을 위반하거나, 다음 각 호에 해당하는
경우 서비스 이용을 제한할 수 있습니다.
- 2년 이상 서비스를 이용한 적이 없는 경우
- 기타 정상적인 서비스 운영에 방해가 될 경우
② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
