Contamination and Detoxification of Aflatoxins (아플라톡신 오염 및 저감화 방안)

  • South Korea is the representative consumption country of herbal medicines and most of herbal medicines circulating in Korea have been importing from the developing countries of Southeast Asia such as China, Vietnam, Indonesia and so forth. Domestic hygiene and safety are continuously proposed because herbal medicines which are circulating have the possibility could remain contaminants or residues. Physicochemical contaminants such as heavy metals, persistent organic pollutants, radionucleosides, microbial toxins, biological contaminants such as microorganisms and animals, agrochemical residues such as pesticides, substances used for fumigation, antiviral agents, and solvent residues are classified as major contaminants and residues in herbal medicines from 2005 September WHO.$^{1)}$ Currently our administration have established a permission standard and the inspection criteria against the heavy metal, the residual pesticides and a residual sulfur dioxide. Furthermore our administration is continuously monitoring and conducting researches for the policies and their scientific ground against herbal medicines. But the appearances or discoveries of the harmful new species due to environmental and industrial developments are becoming social problems. Therefore it may be necessary to continuously consider and investigate regarding hereupon. Recently, the contamination of the mycotoxins against foods such as cereals, nuts and the powdered red pepper have developed and started became problematic issue, and possibility of contamination against the herbal medicine is proposed. And since populations who are using the herbal medicines very limited to several nations, recognition and researches about contamination of mycotoxins in herbal medicines are very insufficient. Therefore it will be need to more focus on the international regulation of quality control and safety for herbal medicines. Now on, we are going to introduce the importance, occurrence, characteristic properties, World-wide research trends and detoxification of aflatoxins, which is known as the most potent mutagen, carcinogen and teratogen mycotoxins.

  • This study is a literature review on the recovering phosphorus from Incinerated Sewage Sludge Ash(ISSA), which has relatively high content of phosphorus. Experimental conditions and influencing factors related to the recovery of P and removal of heavy metals by wet and thermochemical methods were discussed. For the practical application of the recovery of P from ISSA, an integrated process linked to incineration facilities is required in terms of economy from the perspective of the entire system including disposal of wastewater and residues generated during the recovery process, and minimizing added chemicals and energy consumption.

Catechins Content and Color Values of Silk Fabrics Dyed with Korean Green Tea Extracts (녹차 염색 견포의 카테킨 함량 및 색상변화)

  • Despite several recent attempts to measure the concentration of individual catechins by HPLC, it has not been so easy to separate catechins accurately. The aim of the present work is to provide a proper condition for separating each component of catechins by HPLC analysis, and also to evaluate the experimental variables including color differences, and metal ion contents after dyeing and mordanting. Four kinds of Catechins, (-)-epicatechin(EC), (-)-epicatechin gallate(ECG), (-)-epigallocatechin(EgC), (-)-epigallocatechin gllate(EgCG) were isolated from the residues after dyeing. Catechins in Korean green tea leaves are richer when e tea leaves are younger. Higher concentration of catechins owes it to e way it is processed. The contents of catechins adsorbed in silk fabrics after dyeing were in order of EGCG>ECG>EGC>EC. We have found $68\%$ uptake of EGCG, and 116.8mg of EGCG in the silk fabrics after it was dyed with $1\%$ Korean green tea extracts. The absorbance intensity and K/S values of dyed silk fabrics were increased with dyeing temperature and time. Only the surface color of the silk fabric dyed with green tea extracts was yellowish red, but it changed from yellowish red to red with an increase in the mordant concentration. Post-mordanted silk fabrics with ferrous sulfate changed from yellowish red to red and purple color shade. In a practical evaluation, there is no significant change in color after twenty times of the continuous dry cleaning process. However, post-mordanted fabrics with ferrous sulfate faded the brightness of color after dry cleaning. Dyeing silk fabrics with a Korean tea extract reduced the metal ion contents in the silk fabrics when compared to the untreated silk fabrics. Metal contents in silk fabrics dyed and post-mordanted with $1\%$ each metal solution were 0.194 ppm for Aluminum, 1.601ppm for Copper, and 0.334 ppm for Iron. After the post-mordanting process, the heavy metal ion absorption increased, which was mainly attributed to the catechins and polyphenols in dyed silk fabrics.

  • A survey was conducted to investigate the relationship between knowledge of perceived food safety and actual food purchase practices among parents of children under the age of seven (N=309) in 2005. The seventeen following perceived food safety items were included in the survey (bovine spongiform encephalopathy, foot and mouth disease, pathogenic avian influenza, swine fever, allergens, GMO, irradiated food, food poisoning bacteria, endocrine disrupter, antibiotics, food additives, carcinogen, natural toxin, agrichemical residues, place of origin, cultivation methods, and heavy metal) Most parents were highly concerned about investigating all food safety topics. Up to 90.0% of the participants recognized the importance of food safety. The public concern has caused a considerable decline in the demand for food afterreceiving news about food safety through mass media, Also, the majority of subjects required correct food safety information.

  • This study was performed to assess the contamination levels of the heavy metals (Pb, Cd, Cr, Cu, Fe, Zn and Mn) for common restaurant meals in Seoul area. The samples were seolong-tang, galbi-tang, yeukge-jang, kalguksoo, doenjang-chige, bibim-bab, bibim-nangmyon, bulgogi, chazang-myon, yanggobchang and zumuluk, which were seperated draind residues from fluids. The heavy metal contents were determined by atomic absorption spectrophotometer. The results obtained were as follows : ${\circ}$ The total amount of heavy metals per meals were $131.8{\mu}g\;lead,\;18.4{\mu}g\;cadmium,\;135.5{\mu}g\;chromium,\;804.9{\mu}g\;copper,\;7430.6{\mu}g\;iron,\;2807.4{\mu}g\;zinc,\;and\;841.6{\mu}g$ manganese. ${\circ}$ Intake levels per daily through common restaurant meals were lower than the daily intake limit established by FAO/WHO.

Analysis of Levels of Risk Perception using Psychometric Paradigm and Factors Affecting Concerns about Food Risk Elements of Housewives in Daegu (심리측정 패러다임을 이용한 대구 지역 주부들의 식품 위해요소에 대한 위험 지각 수준 및 우려도에 영향을 미치는 요인 분석)

  • This study examined the levels of risk perception of food risk elements by adopting a psychometric paradigm and analyzed factors affecting concerns about food risk elements to obtain basic materials for food safety policy. The data were collected from 296 housewives in Daegu, Korea, by a self-administered questionnaire. Frequency distributions, Pearson's correlation coefficient analysis, factor analysis, Cronbach's ${alpha}$, and multiple regression analyses were conducted by SPSS 21.0. The mean level of concern for food safety was 3.75/5.00 points, and the mean percentage of correct answers about heavy metal contamination was highest among food risk elements. The respondents perceived radioactive contaminated foods, GM foods, and endocrine disruptors as a new, delayed, scientifically unknown, involuntary, serious, and uncontrollable risk in risk perception. According to the result of factor analysis for risk perception, two factors such as non-controllability and dread were categorized. In the risk perception map, radioactive contaminated foods and GM foods were considered as an uncontrollable and dreaded risk, heavy metal contamination, endocrine disruptors, and pesticide residues as a controllable and dreaded risk, and foodborne illness and food additives as a controllable and less dreaded risk. On the other hand, the levels of concerns about food risk elements were higher in order of radioactive contaminated foods, GM foods, and endocrine disruptors. The results of multiple regression analysis showed that age, concern for food safety, percentage of correct answers about food risk elements, non-controllability, and dread influenced the concerns about food risk elements. These results imply that food safety policies should consider differences in consumer's risk perception of food risk elements.

The Content of Heavy Metals in Herbal Pills Used as General Processed Food and Risk Assessment of Heavy Metal Intakes (유통 환(丸)제품의 중금속 함량 및 위해성 평가)

  • The purpose of this study was to investigate some heavy metals (Pb, Cd, Cr, Cu, Hg) in 52 commercial herbal pills used as general processed food, to identify weekly heavy metal intakes from herbal pills and to evaluate their potential health risks. The samples were digested with a microwave and determinations of heavy metal residues were carried out by inductively coupled plasma mass spectrometry (ICP-MS) and mercury analyzer. The mean values of heavy metal contents for herbal pills used as general processed food were Pb 0.421 (0.032~1.630), Cd 0.157 (0.011~0.515), Cr 1.033 (0.112~9.933), Cu 6.923 (1.333~16.755), Hg 0.010 (0.001~0.088) mg/kg. Lead contents of herba and cadmium of algae, herba were high (ANOVA-test, p<0.05). Levels of cadmium concentrations exceeding WHO reference values (0.3 mg/kg) were observed in 10 samples (4 species). The significant correlation was observed between Pb and Cd (r=0.633, p<0.01). The weekly intakes of Pb, Cd, Cr, Cu, Hg from herbal pills were 1.112 (0.072~5.088), 1.614 (0.029~9.257), 3.000 (0.252~23.690), 0.182 (0.008~1.235), 0.220 (0.000~0.420)%, respectively, as compared with the Provisional Tolerable Weekly Intake (PTWI) established by Joint FAO/WHO Expert Committee for food safety evaluation. Our data suggest regulations limiting heavy metals in herbal pills used as general processed food.

Molecular Characterization of a Thermophilic and Salt- and Alkaline-Tolerant Xylanase from Planococcus sp. SL4, a Strain Isolated from the Sediment of a Soda Lake

  • To enrich the genetic resource of microbial xylanases with high activity and stability under alkaline conditions, a xylanase gene (xynSL4) was cloned from Planococcus sp. SL4, an alkaline xylanase-producing strain isolated from the sediment of soda lake Dabusu. Deduced XynSL4 consists of a putative signal peptide of 29 residues and a catalytic domain (30-380 residues) of glycosyl hydrolase family 10, and shares the highest identity of 77% with a hypothetical protein from Planomicrobium glaciei CHR43. Phylogenetic analysis indicated that deduced XynSL4 is closely related with thermophilic and alkaline xylanases from Geobacillus and Bacillus species. The gene xynSL4 was expressed heterologously in Escherichia coli and the recombinant enzyme showed some superior properties. Purified recombinant XynSL4 (rXynSL4) was highly active and stable over the neutral and alkaline pH range from 6 to 11, with maximum activity at pH 7 and more than 60% activity at pH 11. It had an apparent temperature optimum of 70℃ and retained stable at this temperature in the presence of substrate. rXynSL4 was highly halotolerant, retaining more than 55% activity with 0.25-3.0 M NaCl and was stable at the concentration of NaCl up to 4M. The enzyme activity was significantly enhanced by β-mercaptoethanol and Ca2+ but strongly inhibited by heavy-metal ions and SDS. This thermophilic and alkaline- and salt-tolerant enzyme has great potential for basic research and industrial applications.

A Study on Risk Perception Characteristics for Food Risk Elements of University Students in Yeungnam Region (영남 지역 대학생들의 식품 위해요인에 대한 위험 지각 특성 연구)

  • The purpose of this study was to investigate the levels of risk perception characteristics for food risk elements using a psychometric paradigm from 298 university students in Yeungnam region, Korea, by a self-administered questionnaire. The respondents showed the highest level of risk concern about radioactive contaminated foods and the lowest level about GM (genetically modified) foods. In the risk perception characteristics for food risk elements, they perceived radioactive contaminated foods as a catastrophic, worried, new, and uncontrollable risk. In addition, they regarded food additives and foodborne illness as a chronic, controllable, old, and scientifically and individually known risk. According to the results of the factor analysis for risk perception characteristics, dread and unknown were categorized. In the risk perception map, mad cow disease, heavy metal contaminated foods, and radioactive contaminated foods were considered as a dreaded and unknown risk, whereas pesticide residues and GM foods were perceived as a less dreaded and unknown risk. Additionally, food additives and foodborne illness were regarded as a less dreaded and known risk and endocrine disruptors and avian influenza as a dreaded and known risk. These results imply that risk perception characteristics of consumers should be considered to establish strategies for risk communication in food science.

Pesticide and Heavy Metal Residue Monitoring in 13 Types of Agroforestry Products in 2019 (2019년 유통 임산물 중 산나물류와 약초류, 과실류 13종의 농약 및 중금속 잔류 실태)

  • In accordance with the implementation of the Positive List System (PLS), the proper usage of pesticides is now being enforced. It is assumed that unregistered pesticides are being used on agroforestry products due to the low number of registered pesticides in the agricultural industry. In this study, pesticide and heavy metal residues were investigated in 13 types of products to determine the status of usage. The levels (%) of pesticides detected in Pimpinella beachscape, Platycodon grandiflorum, Codonopsis lancekolate, Artemisia dubia, Angelica gigas, Pyrus pyrifolia, and Punica granatum were 40.0, 20.0, 26.7, 13.3, 56.3, 57.1, 33.3, 26.7, 66.7, and 46.7%, respectively, while, those in Petridium aquilinum, Disoscorea batata and Senna tora were zero. Heavy metals (Pb, Cd) were detected only from P. grandisflorum and A. dubia. The pesticide usage and registration data by agroforestry product obtained in the study will be useful in the future for ensuring the safety of domestic agroforestry products.
