This study was conducted to analyze seasonal and annual variations in rice quality and factors affecting the quality, for quality evaluation of the brand rice varieties produced in Jeonnam region. Coefficient of variation (CV) values for the seasonal variation in the rice quality were 3.1% in Toyo value, 2.1% in whiteness, 1.6% in protein content, 1.0% in moisture content, and 0.4% in head rice ratio. Quality characteristics of the brand rice varieties generally showed a decreasing tendency after April, as the months progressed. CV values for the annual variation in the rice quality were relatively high at 5.6% in protein content and 5.2% in Toyo value whereas those for whiteness and head rice ratio were relatively low, at 2.7% and 1.8%, respectively. Palatability and protein content showed high correlations with minimum air temperature, sunshine hours, rainfall, and daily temperature range. Head rice ratio had a negative correlation with daily temperature range whereas chalky rice ratio had a positive correlation with rainfall. Based on these results, we formulated a multiple regression equation to estimate palatability of cooked rice using protein content, whiteness, head rice ratio, and moisture content as follows: y = - 6.71a + 2.27b + 1.29c + 0.51d - 15.34 ($R^2$=0.51*) (y: palatability of cooked rice, a: protein content, b: moisture content, c: whiteness, d: head rice ratio).
This study was performed to compare the differences in physicochemical characteristics between head and incomplete kernels separated from Ilpumbyeo, Korean rice cultivar. The contents of mineral and protein were higher in incomplete than head kernels. There was significant difference in composition of fatty acid and amino acids, which affect the taste, between two kernels. The gelatinized head kernel had the higher viscosity than incomplete kernel. The content and chain length of amylose were higher in head than incomplete kernels. Differential scanning calorimeter results revealed that head kernel had lower starting temperature, higher maximum temperature, and higher enthalpy for gelatinization than incomplete kernel. Also we could found that the hydrolysis rate by glucoamylase was higher in the head kernel than incomplete kernel.
The purpose of this study was to measure fundamental data required for the prediction of milling ratios, and to develop regression models to predict the head rice ratio of milled rice using NIR spectra of hulled rice. A total of 81 rice samples used in this study were collected from Jeongeup, Jeonbuk province in 2006. NIR spectra were measured using one mode of measurement, reflection. The reflectance spectra were measured in the wavelength region of 400-2500 nm with an NIR spectrophotometer "NIRSystems 6500" (Foss, Silverspring, USA). Calibration equations were developed by the modified partial least squares (MPLS), partial least squares (PLS), and principal components regression (PCR). Math treatments were 1-4-4-1, 1-10-10-1, 2-4-4-1, and 2-10-10-1. The software used was WinISI (Infrasoft International, State College, USA). Automatic head rice production and quality checking system used was "SY2000-AHRPQCS" (Ssangyong, Korea). The calibration was made with the first derivative and the spectrum designated was in 8 nm interval. The determination coefficients of head rice ratios were 0.8353, 0.8416 and 0.5277 for the MPLS, PLS and PCR, respectively. Those obtained with 20 nm interval were 0.8144, 0.8354 and 0.6908 for the MPLS, PLS and PCR, respectively. The calibration was made with second derivative that spectrum designated was 8 nm in interval. The determination coefficients of head rice ratios were 0.7994, 0.8017 and 0.4473 for the MPLS, PLS and PCR, respectively. Those with 20 nm interval were 0.8004, 0.8493 and 0.6609 for the MPLS, PLS and PCR, respectively. These results indicate that the accuracy of determination coefficient for MPLS and PLS is higher than that of PCR.
We investigated the first symptom emerging date of rice bacterial leaf blight disease during four years from 2002 to 2005. The disease occurrence date was earlier 20$\sim$30 days in 2005 than that of 2002. The damage in different rice growth stage by the bacterial disease on rice yield and grain quality in southern part of Korea was examined. The disease decreased rice yield following by increased infection rates. Slight loss in rice yield and brown head rice rate were observed at below 10% level of infected leaf area, while over 25% infected leaf area caused the significant decrease in rice yield and brown head rice rate. More than 50% of the infected leaf area rate caused 29% yield reduction in case of infection at panicle formation stage and 18% of brown head rice rate. Cooked rice quality was also affected in the diseased rice by damage in palatability score and viscosity.

The-state-of-the-art of rice drying in the U.S.A. is presented. The U.S.A. is a minor producer but major exporter of rice. Head yield is its major criterion in evaluating rice quality . A decrease of 1 to 3 points in head yield can be expected to occur in a well-designed rice-drying system. Rice is dried on the farm in bins in the U.S. A., and n high-temperature continuous -flow dryers at the elevator level. Two relatively new rice-drying systems are discussed in some detail. : The top-bin/in -bin-counterflow bin-type on-farm dryer, and the concurrent-flow high-temperature elevator dryer.
The study was carried out to determine the changes of growth characteristics, anthocyanidin, and brown rice yield grown at coast and inland areas apart from the east coastline of Gyeongsangbuk-do province. Number of spikelets per panicle was much more increased in inland area. Regional difference in number of spikelets per panicle was observed in Jeongjinju cultivar. Among these red rice cultivars, the highest brown rice yield was Jeongjinju rice cultivar having 702 kg in inland area and 692 ㎏ in coast area, respectively. Anthocyanidin content ranged 524 to $610{\mu}g/g$ dry weight basis. Cyanidin content was 11.4 to 14.0 times higher than that of delphinidin under coast and inland area. Anthocyanidin content was higher in rice cultivar grown at coast area. Highest head brown rice rate was only observed in Geonganghongmi to 95.2 at coast area and 95.4 inland area. In considering brown rice yield and pigment content, Hongjinju rice cultivar was recommended in optimal pigment rice cultivar in eastern coast of Gyeongsangbuk-do Province.
Objective: To compare black rice (Oryza sativa L) extract with three different staining methods for human sperm head assessment. Methods: Semen samples were collected from 34 volunteers. Four smears of each ejaculate were prepared for staining using the rapid Papanicolaou (PAP) stain, SpermBlue, DipQuick, and black rice extract. The percentage of defective sperm heads (mean${\pm}$standard deviation) was compared. Results: Black glutinous rice extract, a natural dye, was used instead of hematoxylin to stain the nuclei of the sperm heads. The percentage of defective sperm heads showed a significant difference between black rice extract and DipQuick (p= 0.000). In contrast, black rice extract and rapid PAP showed no statistically significant difference (p= 0.974). A strong correlation (r = 0.761) was found between the findings obtained using rapid PAP and black rice extract. In contrast, a weak correlation (r = 0.248) was obtained between DipQuick and black rice extract for the percentage of defective sperm heads. Conclusion: The results showed good agreement and a strong correlation between the rapid PAP and black rice extract stains. The advantages of black rice extract as a novel substitute for hematoxylin for nuclear staining include ease of preparation, local availability, and favorable nuclear staining properties. Further studies could also focus on comparing staining techniques in clinical samples.
This study was carried out to determine the response of the rice yield and grain quality by rice leaf folder (RLF, Cnaphalocrocis medinalis G.) and identify the damages caused by different transplanting dates, nitrogen amounts and chlorophyll amounts (SPAD value) of rice leaf. As the damage degree of RLF was getting severer, the ripened grain rate and 1000-grain weight were decreased and due to the increasing of chalky rice rate the rate of head rice was reduced. Therefore, the yield of head rice was decreased by 36% in heavily damaged rice plant. Among the physicochemical characteristics, protein content of rice grain was increased but amylose content was reduced, consequently, the palatability was deteriorated in heavily damaged rice by RLF. The degree of damage of RLF was getting serious as transplanting date was delayed and as the amount of nitrogen was increased. In the relationship between the SPAD value and the damage degree of RLF, as the SPAD value was increased by nitrogen fertilizing, the damage degree was also increased exponential functionally.
This study aimed to find the optimum instrumental test conditions for the Texture Profile Analysis (TPA) of cooked rice in order to predict the sensory texture attributes (hardness, adhesiveness, chewiness). Sensory evaluation was performed for three kinds of instant cooked rice with university students in their twenties and the results of the sensory evaluation were compared to instrumental TPA patterns. Using partial least squares regression, the instrumental TPA results at a cross-head speed of 1.0 mm/sec and a compression ratio of 70% proved to be an excellent predictor of the sensory attributes of hardness ($R^2=0.99$) and chewiness ($R^2=0.99$). The results at a cross-head speed of 0.5 mm/sec and compression ratio of 30% provided an excellent model for the prediction of sensory adhesiveness ($R^2=0.83$). In this experimental range, sensory hardness and chewiness showed a high correlation with instrumental TPA parameters (hardness, cohesiveness, adhesiveness, springiness, chewiness) with a high cross-head speed and compression ratio, while sensory adhesiveness showed a high correlation with the TPA parameters with a low cross-head speed and compression ratio.
In response to elevated temperature, a shift in the rice planting period was proposed as a promising option in temperate regions. To understand the yield response of early maturing rice to different transplanting dates and to analyze the related agronomic traits in the central plain area, we performed a two-year study using different transplanting dates and six varieties in Suwon, Korea. The maximum head rice weight was achieved in the treatments transplanted between June 14 and 29, depending upon the varieties. The optimal mean temperature during the 40 days from heading stage for attaining the maximum head rice weight was $21.8^{\circ}C$ on the average of six varieties. The index of head rice weight was positively correlated with the indices of both the milled rice weight and head rice percentage, the latter showing a higher coefficient of determination. The highest milled rice weight was commonly achieved from the treatment transplanted on June 29, where the head rice weight was also the highest. The index of milled rice weight was significantly correlated with the indices of grain filling percentage and number of spikelets per area, but not correlated with the index of 1000-brown rice weight. The transplanting date with the highest milled rice yield produced the largest number of spikelets per area, greatest biomass at the heading and harvesting stages, and highest level of harvest index. We suggest that the optimal transplanting date for early maturing rice varieties in the central plain area is from June 14 to 29. High head rice yield in this study was attributed to increased spikelets owing to the increased biomass production at the heading stage, enhanced grain filling due to the high biomass production and harvest index at maturity, and improved head rice percentage.
