Development of a Flavor-Enriched Yeast Extract with a High Glutathione Content (글루타치온 고함유 정미성 효모추출물 개발)

  • Yeast strains with good sensory properties were selected, and those yeasts were subjected to mutation to develop high glutathione producing yeasts. In addition, the antiradical activity and flavoring effect of the yeast extract were evaluated. A total of 68 strains were screened, and three strains of Saccharomyces utilis, four strains of Candida utilis, and one strain of Zygosaccharomyces rouxii were selected based on the flavoring effect. Among them, a random mutation was elicited against SEM-Y8, resulting in a high flavoring effect and growth rate. The glutathione production by SEM-Y8 increased 2.0-fold following the mutation, and the DPPH radical quenching effect of the SY8-M2-1-derived extract increased 3.2-fold compared to that of the wild type. The sensory properties of the SY8-M2-1-derived extract were better than those of garlic or onion extract in umami and mouthfulness. Thus, the SY8-M2-1 extract could be used as a functional flavoring material with improved antiradical activity.

Fast Food Consumption Pattern and Food Habit by Fast Food Intake Frequency of Middle School Students in Wonju Area (원주지역 중학생의 패스트푸드 섭취정도에 따른 패스트푸드 이용태도 및 식습관 비교)

  • The purpose of this study was to investigate fast food consumption, awareness of fast food and food habit of middle school students in Wonju area according to their intake frequency of fast foods. Subjects were categorized into 3 groups according to intake frequency of fast foods : frequent users($\geq$ 1 times/week, 29.5%) users(2~3 times/month, 50.7%), non-users($\leq$ 1 time/month, 19.8%). As for the purpose of eating fast food, many ate fast food between meals. The most favorite fast food was chicken regardless of intake frequency, followed by pizza, hamburger, the reason being that it tasted good. Regarding if there was any room for improvement, the largest number of the students asked for inexpensive price, irrespective of fast food intake frequency. Compared to users, non-users intake more diverse foods, vegetables, dairy products, fruits, protein foods and seaweed. Users or frequent users of fast food more felt drowsy, cold in the hand and foot, rough skin symptoms than non-users. In conclusion, frequent consumption of fast foods can lead unbalanced diet intakes for middle school students, and those who consumed fast foods frequently showed undesirable food habits in their daily meal.

A Study on Drying Models of Ginseng (인삼의 건조모델에 관한 연구)

  • Ginseng, one of the important economic crops, is processed into medicine, teas, beverages and even foods. Drying is the most important and burdensome work in the processing of ginseng, so development of ginseng dryer is needed for efficient drying and good quality of ginseng. Investigation of drying model is essential for development of ginseng dryer. Drying models for peeled ginseng were investigated to determine dominant drying factors and fitted with five selected drying models and an empirical model. Thompson and the empirical model showed best fit with the experimental data. Pother experiment is necessary to prove the superiority of the empirical models.

A Study on Infant Weaning Practices Based on Maternal Education and Income Levels (양육인의 교육 및 수입정도에 따른 이유기 식생활관리에 대한 실태조사)

  • The aim of the present study was to examine the relationship of maternal factors such as knowledge, attitude and practice of weaning with infant feeding. The subjects were 103 mothers visiting a public health center in Gumi, Kyungbook who filled out self-administered Questionnaires. First of all, about $90\%$ of the participants recognized the importance of complementary foods and proper weaning practices. The response for the recognition of the importance of infant weaning process showed a significant difference by education levels. Concerning an appropriate time for the introduction of weaning foods, $53\%$ of mothers had commenced weaning at age $4\~6$ months, while $38\%$ had done so at age $6\~8$ months. Approximately $76\%$ of mothers fed their babies without the knowledge of age-related weaning method and type of weaning foods. There were no statistical differences in maternal weaning knowledges between levels of education and house income. Mothers with higher levels of education and family income tended to show high perception scores regarding possibility of food allergies caused by baby foods. A demand for reliable sources and education related to nutritious weaning foods and weaning practices were strong in the group with higher education. Knowledge of weaning method and baby foods were obtained by 59 of the 103 mothers from mass media, 35 from friends caring babies, and 9 obtained advice from health professionals or family. Advice from the heath professionals was not the main influence on their decision to introduce weaning foods. Although commercial baby foods are the most commonly used as first weaning foods, those with higher education groups considered commercial baby food are not nutritionally better than home-maid foods. The current findings suggest to us that to improve weaning process, mothers should be educated on the selection and preparation of nutritious, balanced weaning foods and on good weaning practices. It is advised that supportive health professionals from community public health centers should lead the education of infant feeding practices based on maternal characteristics and on basic food and nutritional knowledge.

Serum Lipid and Lipoperoxide levels and Their Related Factors in Middle-Aged Men in Teagu (대구지역 중년 남성의 혈청 지질과 혈청 과산화지질의 관련 인자 연구)

  • The present study was aimed to examine various factors related to serum total cholesterol, triglyceride, atherogenic index, lipoperoxides and vitamin E in 174 middle-aged men residing in Taegu. Body mass index was positively correlated with serum triglyceride, and waist-hip circumference ratio was positively correlated with serum total cholesterol, triglyceride, atherogenic index and vitamin E concentration. Total cholesterol, triglyceride and atherogenic index of the subjects who smoked more than 20 cigarettes per day were significantly higher than those with smoking less or non-smokers. drinking alcohol more than 5 times per week showed higher atherogenic index than drinking less frequently of non-drinking. Subjects doing exercise had higher HDL-cholesterol level than those with no exercise. The intakes of all nutrients were above 90% of RDA and the subjects with good food habit had lower of total cholesterol, triglyceride, atherogenic index and lipoperoxides. The study indicates that avoiding heavy smoking and drinking as well as obesity and keeping regular exercise, good food habit and diversity of foods will reduce risk of cardiovascular diseases in middle-aged men.

A Review on the Relationship of Milk Consumption, Dietary Nutrient Intakes and Physical Growth of Adolescents (청소년의 우유 섭취,영양 섭취 및 신체 발달간의 관계에 대한 고찰)

  • Adolescents grow rapidly and have lots of schoolwork for entrance examination, so good nutrition is very important to them. However, adolescents tend to have a poor dietary behavior including frequent consumption of empty calorie foods and skipping breakfast. In particular, frequency of drinking milk has been low among Korean adolescents, thus their dietary calcium intakes has been low. Undesirable dietary behavior of adolescents is a risk factor for poor nutrition, obesity and chronic disease of them. Milk is a good source for calcium, high quality of protein, vitamin and bioactive compounds including anti-obesity component, thus it has been reported that milk helps improvement of dietary nutrient adequacy and physical growth, increment of bone mineral density, and prevention of obesity and chronic diseases. Therefore, milk consumption of adolescents should be encouraged in order to help their nutritional status, physical growth and health.

Synthesis of $\beta$-Sitosterol Esters with Conjugated Linoleic Acid and Medium Chain Fatty Acids by Using Lipase as Catalyst

  • Plant steryl esters have good effects on plasma cholesterol level and are used as functional food ingredient. Conjugated linoleic acid (CLA) presents mainly in animal foods and has a good benefit and medium chain fatty acids (MCFAs) are a rapid energy source for human. In this study, we produced the ${\beta}$-sitosterol esters from CLA and MCFAs using various lipases as catalysts. Among lipases, AYS (from Candida rugosa) was the most effective for synthesis of ${\beta}$-sitosterol esters in the presence of water (24.35% conversion) or hexane (25.33% conversion). The second esterification extent was obtained by lipase AK (from Pseudomonas sp), showing 10.26% conversion in water and 15.94% conversion in hexane, respectively. The reaction condition was 1:3 molar ratio (${\beta}$-sitosterol:fatty acid, 1:3) and stirred (175 rpm) at 55$^{\circ}C$ in water bath shaker for 48h.

  • 1. Generally speaking, our people have been carrying out the government policy of using grains other than rice comparatively well. But it is desirable that the government heirs the whole nation as well as the farmers to understand better the scientific meaning of using foods made from the flour of various grains. This will greatly improve the nation's eating habits, for it will make people discard the habit of eating only boiled-rice, which will not only improve our national health but will also increase the national income. 2. For the purpose of improving health and developing intellectual faculties of our mind, we had better, if possible, get much protein from plants(especially beans) which we can obtain more readily than from animals. However if we must use animal protein, we should dependonly on livestock. Pregnant women and new-born children must not be in ill health because of malnutrition caused by following groundless superstitions about foods: for example, some religions forbid the use very healthful foods or some traditional conventions do the blend of certain foods together with other victuals. 3. It is good that we conquer the difficulty of living in the season of spring poverty by having other substitute for regular victuals. But it requires us to pay a careful attention to the food and to do research on many foods problems such as food pollution. Farmers should cooperate with each other and help those who have very little arable land, or even those who have no place for cultivating, to grow miscellaneous cereals on the land which other farmers don't use that year. 4. On the whole, farmers have a good appetite for any, food, whatever it is. Neverthless, because they aren't econmically well-off, they generally eat hot meals only for breakfast and supper in the busy faming season. They eat a tepid lunch which, they think saves time and cooking fuel. In conclution, I feel sorry that many village farmers still steeped in conventional thought and superstition are inclined to have an unbalanced diet of boiled-rice and that they continue not to use the floor from other grains all the year round. when these unscientific dieting customs mentioned above are discarded, we will be able to enjoy good health, better knowledge or intellegence, and higher income. Then we will ba able to make our present lives more self-reliant and self-supporting.

Study on the obesity and nutrition status of housewives in Seoul and Kyunggi area

  • This study was conducted to evaluate the rate of obesity of 212 women (age 45-60 years) in Seoul and the Kyunggi area through analysis of BMI and the dietary life factors related to obesity using a survey on dietary habits, dietary assessment, and nutrient intake. The height of the underweight group was taller than normal. The height of the obese group was equal to that of the normal group, but the weight was 8.5 kg greater than the normal group. Women in the underweight group consumed meals irregularly, and only 33.4% ate breakfast. Additionally, the rate of overeating was low in the underweight group, and milk, dairy products (yogurt, etc.), fruit, and fruit juice were consumed more than once a day. It was found that 62.1% of the women in the obese group never ate out, and the rate of eating one serving of fruit, drinking one cup of fruit juice, and eating various kinds of foods was high. The average point of women's dietary life was $21.9{\pm}2.9$, and 12.7% of all women responded that their dietary life was good. However, in the obese group, only 6.9% of the women reported that their dietary life was good. Evaluation of snacking habits revealed that the underweight group consumed a high level of carbonated drinks and ice cream, whereas for in the obese group, 24.1% of the women consumed milk and its products and 5.6% regularly consumed fast and fried foods. Evaluation of nutrient intake revealed that the consumption of energy, protein, vitamin A, vitamin $B_1$, $B_2$, $B_6$, niacin, vitamin C, and vitamin E was high in all of the groups, but the intake of folic acid in the underweight group was lower than the required level. Overall, 24.1% of the women in the obese group were found to have metabolic diseases, mostly hypertension (43%). In conclusion, a balanced diet to avoid excessive nutrient intake is needed to prevent obesity.

A Rice Noodle Making Procedure for Evaluating Rice Flour Noodle-Making Potential (제면 적성 시험을 위한 쌀국수 제조 방법)

  • Rice noodles are popular worldwide; however, no standard procedure is available for screening the potential for rice flour to make good quality noodles. This study reports two standard laboratory-scale procedures for preparing flat (sheet type) and extruded noodles. Eight rice cultivars were examined and the cooking loss and tensile strength of cooked noodles were determined. It was relatively easy to control the amount of water added to extruded noodles, whereas flat noodles were very sensitive to the amount of water used. Sheet formation was determined based on the amount of moisture content during preparation, and the Chenmaai cultivar was found to be most appropriate for both noodles making procedures and cooking and textural properties. Finally, good noodle making cultivar such as Chenmaai was less likely to be affected by the milling method.
