한국과 프랑스 음식문화에서 마늘 이용에 관한 문헌적 고찰 (A Study on the Culinary Culture of Garlic in Korea and France)

  • This treatise deals mainly with the culinary cultures of garlics, a very important condiment in Korea and France. Classified specifically as a condiment in the category of spices, garlic(A. sativum L.) is typically used to season a wide variety of foods, to give the dishes to add a pungent and pleasant flavor, highly characteristic of the delicate seasoning styles of Korean and French cuisine. Garlic is also known to be used as an invigorant. used for medicinal and mystical purposes. In both Korea and France. garlic is used in fresh state, sliced, diced, or crushed. Some examples of traditional Korean dishes using garlic is Tongmaneul Jangachi(garlic in a whole bulb, seasoned in soy sauce), alcoholic liquor of garlic, and red pepper paste with garlic. French cuisine includes garlic in sauces such as Aillade, Vinairette a l'alil, Sauce Pailloti, and in a variety of salads and Cruton, mixed with the local vegetables of every province of the country.

마늘의 첨가가 사과잼의 품질특성에 미치는 영향 (The Effects on Quality Characteristics Resulting from the Use of Varying Amounts of Garlic as Additives in Apple Jams)

  • Influence of garlic on the quality characteristics of apple jam was investigated. Apple jams with various amounts of sugar and garlic were prepared, and their sweetness, color difference, and instrumental texture were evaluated. The results were as follows: 1. When equal amount of sugar was added, the sweetness of apple jam decreased as the garlic content increased. 2. As the garlic content increased, the lightness and yellowness tended to be high and the redness and ΔE tended to be low, resulting that the color of apple jam was improved. 3. As the sugar content increased, the hardness and adhesiveness of the jam tended to increase when garlic was added at 10%. 4. Apple jam with 60% sugar and 10% garlic was the best in adhesiveness, glossiness, and overall quality by sensory evaluation. As the addition of garlic did not cause any significant difference in flavor, cooked garlic could be applied in apple jams.

흑마늘 농축액을 첨가한 우유두부의 품질특성 (The Quality Characteristics of Milk Tofu with Added Black Garlic Concentrate)

  • The principal objective of this study was to evaluate the quality characteristics of black garlic milk tofu prepared with five different levels (0%, 0.5%, 1%, 1.5%, and 2.0%) of black garlic concentrate (BG0~BG4). We conducted the pH, total phenol and flavonoids, Hunter's color values, mechanical characteristics, and a sensory evaluation analysis of black garlic milk tofu. The total phenol and flavonoid content of black garlic concentrate were 1.67mg/100 g and 1.07 mg/100 g. The more black garlic concentrate increased, the more lightness (L) decreased, but redness(a) and yellowness (b) increased. The hardness, gumminess, and chewiness scores significantly increased (p<0.05) in all black garlic milk tofu samples. In color, taste, flavor, texture, and overall quality, the score of milk tofu with 1.0% black garlic concentrate (BG2) increased the most.

  • The principal objective of this study was to evaluate the quality characteristics of jelly prepared with five different levels(0, 0.5, 1.0, 1.5, and 2.0%) of black garlic concentrate(BG1-BG4). We conducted the pH, sugar content, Hunter's color value, mechanical characteristics, and a sensory evaluation analysis of black garlic jelly. The more black garlic concentrate increased, the more the sugar content of the black garlic jelly increased(p<0.05). In terms of color, lightness(L) and yellowness(b) decreased as the black garlic concentrate increased, while redness(a) increased. With regard to the mechanical properties of the black garlic jelly samples, the higher the score of hardness, gumminess, and chewiness significantly increased(p<0.05). In color, flavor, texture and overall quality, the score of jelly with 1.0% black garlic concentrate(BG2) increased most of the all.

예열처리가 마늘의 향미성분에 미치는 영향 (Effects of Pre-heating on the Flavor of Garlic)

  • 마늘의 향미를 조절하기 위하여 박피하지 않은 마늘쪽을 $60^{\circ}C{\sim}90^{\circ}C$의 범위에서 30분간 예열처리한 경우와 전자레인지로 10초간 가열한 경우에 마늘의 향미성분변화를 조사한 결과는 다음과 같다. 마늘의 향기성분은 예열처리 온도가 상승함에 따라 감소하였고, $70^{\circ}C,\;80^{\circ}C$$90^{\circ}C$에서 30분간 예열처리하면 대조구에 비하여 각각 20%, 31% 및 49% 감소하였다. 전자레인지로 10초간 가열한 경우에는 열풍건조기에서 $70^{\circ}C{\sim}80^{\circ}C$에서 가열한 것과 유사한 경향을 보였다. 열풍건조기로 예열처리하면 glucose, fructose 및 fructooligosaccharide가 감소하였으며, 이런 감소는 온도가 높을수록 컸으며 fructooligosaccharide 보다는 단당류인 glucose와 fructose에서 더욱 컸다. 전자레인지로 가열처리한 경우에는 열풍건조기로 예열처리한 경우에 비하여 유리당의 변화가 현저히 적었다. Alliin의 분해산물로 알려진 pyruvic acid는 예열처리 온도가 증가할수록 감소하는 경향을 나타내었고, 그 밖의 유기산은 유의적 변화가 없었다. 마늘의 주요 아미노산인 arginine은 열풍에 의한 예열처리시 감소하였으나 전자레인지로 가열한 경우에는 감소하지 않았고, glutamic acid와 tyrosine은 모든 처리구에서 감소하였다.

흑마늘 추출 분말을 첨가한 기능성 머핀의 품질특성 (Quality Characteristics of Functional Muffins Containing Black Garlic Extract Powder)

  • This study was performed to examine the quality and antioxidant activity of muffin containing black garlic extract powder that was stored for 9 days at room temperature. Black garlic extract powder was added to the muffin batter at concentrations of 0, 1, 4, 8, and 12%. Specific gravities of muffin batters increased as black garlic extract powder increased, whereas, height and specific volume of the muffins decreased. For the color of muffin crust and crumb, lightness decreased as the level of garlic extract powder increased, whereas redness and yellowness increased. For sensory evaluation, the color, flavor, softness, and chewiness of the muffins containing 1% black garlic extract powder were superior compared to those of other samples. Scores for taste and overall acceptability were the highest in muffin containing 4% black garlic extract powder. The antioxidant activity of muffins measured by DPPH(2,2-diphenyl-1-picrylhydrazyl) radical scavenging assay increased as the level of black garlic extract powder increased. Further, the TBARS(thiobarbutric acid reactive substance) content of the muffins containing various levels of black garlic extract powder was lower than that of control.

흑마늘와인 제조과정 중 숙성칩의 종류에 따른 향기성분 변화 (Change in Flavor Components of Black-fermented Garlic Wine according to the Type of Chips during the Manufacturing Process)

  • 흑마늘을 이용하여 와인을 제조해보고 숙성 칩의 종류에 따른 향기 성분의 변화를 조사하였다. 흑마늘 와인을 제조한 후, 저장 조건으로 미국산 칩과 프랑스산 칩을 이용하여 3개월간 $10^{\circ}C$에서 숙성하여 흑마늘 와인을 완성하였다. 향기 성분을 분석을 위하여 GC/MS를 이용하였다. 미국산 칩을 사용한 경우 주요 향기성분으로 2-methyl-1-propanol, 3-methyl-1-butanol, 2-methyl-1-butanol, acetaldehyde, butanoic acid, octanoic acid, 1,1-diethoxyethane, allyl methyl sulfide가 검출되었다. 프랑스산 칩을 사용한 경우에는 1-propanol, 2-methyl-1-propanol, 3-methyl-1-butanol, acetaldehyde, acetic acid, propanoic acid, butanoic acid, octanoic acid, 2-heptanone, 1,1-diethoxyethane, N-amino32-hydroxypropanamidate, n-butylamine, chloroacetonitrile, allyl methyl sulfide가 주요성분으로 검출되었다. 미국산 칩을 사용한 와인에서 과일향성분인 n-propylacetate, butanoic acid, octanoic acid가 상대적으로 높게 검출되었고, 흑마늘에서 기인된 allyl methyl sulfide는 미국산 칩을 사용한 경우에서만 검출이 되었다. Acetic acid는 프랑스산 칩을 이용한 경우에만 검출되었다.

마늘 분말을 첨가한 식빵의 품질 특성 (Quality Characteristics of White Pan Bread with Garlic Powder)

  • This study investigated the quality characteristics of the white pan breads with garlic powder. Three different powder concentration levels of 1%, 2% and 3% were added to flour to make the breads. The contents of moisture and crude fat of the breads added with garlic powder were lower than that of control group. However, ash content was not significantly different among groups. The pH increased with increasing garlic powder concentration. The weight of breads increased with increasing garlic powder concentration, while the volume and baking loss rate of breads decreased. In color values, with increase of garlic powder concentration, L value decreased, but a and b values increased. The water activity in the breads decreased by increasing garlic powder concentration was the highest in the control group. In the texture analyzer measurement, hardness of the breads increased with increases of garlic powder concentration, but springiness decreased. In the results of sensory evaluation, the quality of the 1% garlic powder breads showed the highest in taste, flavor and overall acceptability. The color, appearance, mouth feel and texture of the breads decreased with the increasing garlic powder content. From the results of this study, the white breads with 2% garlic powder content was shown to have the best quality.

국내산 마늘의 향미성분 (Flavor Composition of Garlic from Different Area)

  • 산지별 마늘의 향미성분으로서 향기, 유리당, 유리아미노산 및 유기산 함량을 비교, 분석하였다. 마늘의 향기성분을 GC로 분리한 결과 28개의 피크를 얻었고 이중 GC/MS를 이용하여 25종의 화합물을 동정할 수 있었다. 향기성분을 총피크면적을 기준으로 할 때 서산산이 가장 높았으며 함평산은 낮은 것으로 나타났다. 마늘의 주요 향기성분으로 알려진 황화합물에 있어서는 남해산, 서산산 및 의성산 사이에는 유의적인 차이가 없는 것으로 나타났다. 이온 크로마토그래피로 유리당을 분석한 결과 glucose, fructose, sucrose 이외에 fructooligosaccharide인 1-kestose, 1-nystose, 1-f-fructosyl nystose가 비교적 많이 함유되어 있었으며, 서산마늘은 1-nystose, 1-F-fructosyl nystose함량이 높았다. 총 유리아미노산 함량은 $2036.1{\sim}2704.0mg%$ (건조물기준)정도 함유되어 있었으며, 한지계마늘인 의성마늘과 서산마늘이 남해 및 함평산 마늘 보다 유리아미노산 함량이 비교적 높은 것으로 나타났다. 유기산 분석 결과 마늘중에는 citric acid, pyruvic acid, malic acid, lactic acid, pyroglutamic acid, succinic acid, oxalic acid, malonic acid, levulinic acid 및 fumaric acid가 존재하였고 이들 유기산의 총함량은 건조마늘 100g당 $1905.7{\sim}2359.2mg$이 함유되어 있었다. 함평산 마늘은 다른 지역의 마늘 보다 유기산 함량이 비교적 적은 것으로 나타났다.

  • 김치의 주재료인 배추와 부재료를 한가지씩 첨가한 각 시료들을 $12{\sim}16^{\circ}C$에서 숙성시키면서, 유기산, 이산화탄소, alcohol 및 카보닐 화합물의 함량 변화를 측정하였고, 관능 검사를 실시하였다. 비휘발성 유기산은 lactic succinic, fumaric, malic acid가 분리되었고, 휘발성 유기산은 acetic, formic, propionic, butyric, valeric n-heptanoic acid 등이 분리되었으며, 카보닐 화합물은 acetaldehyde와 acetone이 분리되었다. Lactic acid는 숙성 시간에 따라 점차 증가했고, 고춧가루, 마늘, 파가 첨가된 김치에 많았다. Acetic acid도 발효가 진행됨에 따라 함량이 증가하였으며, 특히 마늘이 첨가된 김치에서 두드러졌다. 이산화탄소의 함량은 마늘이 첨가된 김치에 많았으며, alcohol류는 전 시료에서 ethanol 만이 확인되었다. Acetaldehyde와 acetone은 김치의 off-flavor와 직접적인 관계가 없는 것으로 나타났다.
