The Convective Drying Characteristics of garlic(Allium sativum L.) (마늘의 열풍건조 특성)

  • We examined the drying characteristics and the drying rate model equation of garlic(allium sativum L.) using computer aided convective drying. The drying chanacteristic curve of garlic divided into constant rate drying period and 2 stage of falling rate drying period. The drying rate was fairly affected by hot air temperatures during the total drying period, but air flow rates has nearly no effect on the drying rate except initial drying period. Of the several model equation, r2 values of page model equation was the highest, and the estimated drying profiles were comparatively coincided with the observed drying profiles. Page model equation was suitable to predict the drying rate and moisture content during drying of sliced garlic.

Physicochemical Characteristics and Antioxidant Activities of Fermented Garlic Husk (발효 마늘껍질의 이화학적 특성 및 항산화 활성)

  • This study was carried out to evaluate the possibility for functional characteristics of garlic husk and its products fermented by Lactobacillus plantarum. Each water and 80% ethanol extracts made from garlic husk and its fermented products were tested for antioxidant activities. Total mineral content of fermented garlic husk was 2,056.23 mg/100 g and its content was 1.5 times higher than the unfermented sample. Total phenol contents were the highest in the ethanol extracts made from fermented garlic husk. Activities of electron donating, reducing power and NO radical scavenging in the ethanol extracts of fermented product were significantly higher than the unfermented sample. ABTS radical scavenging activity of fermented garlic husk was higher than the unfermented sample. Also, its activity was higher in the ethanol extracts than the water extracts. Nitrite scavenging activity of garlic husk was significantly different between fermented and not fermented sample. Because antioxidative effects of fermented garlic husk were elevated, these results recommended its utilization as a functional materials for animal feed.

Effects of Aged Black Garlic Extract on Lipid Improvement in Rats Fed with High Fat-Cholesterol Diet (흑마늘 추출물에 의한 고콜레스테롤혈증 유발 흰쥐의 지질대사의 개선효과)

  • This study was performed to investigate the increase of S-allylcysteine content, a biomarker of black garlic, during its aging period, as well as the serum lipid-lowering effects of black garlic extract in high fat diet fed rats. The highest content of S-allylcysteine was observed on the 15th day of the aging period. Sensory evaluation was also estimated to be extremely good on the 15th day of the aging period. High fat diet rats with induced hyperlipidemia were fed diets containing black garlic extract of low, medium, and high doses for 6 weeks. No significant difference in body weight gain and food efficiency was observed between normal, placebo and black garlic fed groups. Liver weight was significantly higher in black garlic fed groups than in the normal group. Total serum cholesterol and triglyceride were significantly lower in low, medium, and high dose groups than in the normal group. Also, HDL-cholesterol was significantly higher and LDL-cholesterol was significantly lower in black garlic diet fed groups than in the normal group. Hepatic levels including total lipid and cholesterol were especially decreased in the black garlic diet fed group than in the placebo group. These results suggest that black garlic intake reduces the levels of serum and hepatic cholesterol in high fat diet fed rats. In conclusion, black garlic has a potential to be used as a functional health food ingredient with beneficial effects on lowering cholesterol and triglyceride levels.

Quality characteristics of vinegar fermented with different amounts of black garlic and alcohol (흑마늘의 첨가량과 초기 알코올 농도를 달리한 발효 식초의 품질특성)

  • The quality characteristics of black garlic vinegar produced by acetic acid fermentation were analyzed over a 25 day period. Black garlic vinegar was produced using black garlic 3, 6, 9 and 12 folds with water, and initial alcohol concentrations of 6~12%. The pH values of the vinegar samples were in range of 3.85~4.46 after 25 days fermentation, and the sugar contents were highest after 9 days of fermentation ($12.00{\sim}13.50^{\circ}Brix$). The total polyphenol concents of vinegars were in the range of 20.65~52.04 mg/100 mL 25 days fermentation. Pyrogallol and vanillic acid were detected in the completely fermented vinegars, and their contents increased with black garlic content. Five organic acids (lactic acid, acetic acid, citric acid, succinic acid and propionic acid) were detected after 25 days of fermentation, with the total amount of organic acids being 5,327.34~6,307.64 mg/100 mL, and the total abetic acid contents beging the highest of the organic acids at 4208.90~5,570.29 mg/100 mL. After 25 days of fermentation, the total minerals contents were higher, and depending on the quantity of black garlic added. Of the minerals, the of potassium content was the highest (366.23~1,619.67 mg/L).

Changes in Cerebral Blood flow Following Fermented Garlic Extract Solution with High Content of Nitrite (흰쥐에서 고용량 아질산이온 함유 마늘 발효농축액에 의한 뇌혈류 변화)

  • Nitrate-nitrite-nitric oxide (NO) pathway is a major alternative source of NO and is essential for NO - dependent physiological functions in body. Food supplements having nitrate/nitrite can improve metabolic syndromes including hypertension through antioxidant activity or vasodilation. The purpose of this study was to observe the effects of fermented garlic (F. garlic) having high concentration of NO2- on changes in blood flow and nitric oxide synthesis in the cerebral cortex of rodents. The generation of nitric oxide detected by a chemi-luminescence detector was higher in F. Garlic compared with NaNO2 solution under artificial gastric juice with pH 2.0. Ether F. garlic or NaNO2 diluted with artificial cerebrospinal fluid was directly applied into around the needle probe of laser Doppler flow meter that was located on epidural surface of the cortex. Direct application of F. garlic resulted in increase of cerebral blood flow detected by a laser Doppler flow meter with a dose-dependent manner. Compared with NaNO2 solution, F. garlic produced changes in cerebral blood flow at lower concentration of NO2-. Pretreatment of methylene blue, a guanylyl cyclase inhibitor prevented upregulation of cerebral blood flow by the treatment of F. garlic. In addition, the application of F. garlic with 250, 500ppm of NO2- caused significantly the production of NO in the cortical tissue but NaNO2 solution with 500ppm of NO2- did not. In summary, these results suggested that F. garlic with high content of NO2- induce increase in cerebral blood flow through nitric oxide-dependent signal pathway.

Effects of Rapid Temperature Change on Growth Response and Yield of Garlic in Greenhouse with Thermostat Control System in Jeonnam Province

  • The garlic cultivation area is moved by change of grown environment due to global warming. It is important to predict changes in cultivation area, quantity and quality of each crop. This study was carried out to estimate the yield and response of garlic growth by the rapid temperature changes in the greenhouse with thermostat control system. Seedlings of Namdo garlic were planted on September 27, 2012 and harvested on May 30, 2013. The used treatments for a rapid temperature change in March-April-May were T0 (control): $6.0-10.4-17.2^{\circ}C$, T1: $6.0-5.4(-5)-17.2^{\circ}C$, T2: $6.0-10.4-22.2(+5)^{\circ}C$ and T3: $6.0-5.4(-5)-22.2(+5)^{\circ}C$. Total dried weight per plant of garlic significantly increased by 5.0% for T2, but T1 and T3 decreased by 12.5 and 4.6%, respectively, compared to T0. Total yields of bulb within the temperature change as T2 and T0 increased significantly (p<0.05), as compared to T1. Decreasing temperature significantly (p<0.05) reduced plant height, SPAD reading, crude protein and fiber contents etc., as compared to T0 and T2. ABA contents gradually increased with time but IAA content rapidly decreased. Conclusively, growth and yield of garlic were more affected by decreased temperature than increased temperature at bulb development stage.

Protective Effect of an Aged Garlic-bamboo Salt Mixture on the Rat with the Alcohol-salicylate Induced Gastropathy (마늘-죽염 제제가 위장 장애 유발 흰쥐의 항산화 효소활성에 미치는 영향)

  • Garlic has been known to be effective against the gastrointestinal diseases which can be induced by production of oxygen-derived free radical. It has been shown that bamboo salt is effective on the treatment and prevention of various gastrointestinal disorders. Bamboo salt is a processed salt invented by a Korean, ll-Hoon Kim. It has been reported that garlic and bamboo-salt are useful to the treatment of gastric disorders in Korea. To clarify the protective mechanism of the garlic-bamboo salt mixture, the gas-tropathy was induced in rats with alcohol-salicylate and the activities of the free radical scavenging enzymes were examined. In this study, we found that the garlic-bamboo salt mixture reduced the severity of hemorrhagic lesion in gastric mucosa in the rats. In addition, the activities of superoxide dismutase (SOD), glutathione peroxidase (GPx), glutathione reductase (GR) were significnatly increased and the total content of GSH was recovered. From those results, we concluded that the protective effect of the garlic-bamboo salt mixture on gastropathy in rats is its ability to recover the level of GSH and to increase the activities of the free radical scavenging enzymes (SOD, GPx, GR).

Evaluation of Melanoidins Formed from Black Garlic after Different Thermal Processing Steps

  • The objective of this study was to evaluate the characteristics of melanoidins formed from black garlic (BG) after different thermal processing steps. The melanoidins formed from BG during thermal processing were produced in large amounts, and the initial (280 nm), intermediate (360 nm), and final stage product (420 nm) had similar tendencies. Compounds like degraded proteins, peptides, and phenolic acids were present in the melanoidins during thermal processing. All the melanoidin samples showed different absorptions in the UV-visible spectra, although these had similar shapes. Moreover, the carbon, hydrogen, and oxygen content of melanoidins formed from BG during thermal processing decreased initially, and then increased. However, the nitrogen content increased during thermal processing. As thermal processing progressed, the molecular weight of all the melanoidin samples showed increasing intensities, whereas the major peaks of each melanoidin sample had different retention times. Furthermore, the melanoidins formed from BG after different thermal processing steps contained -OH, -CH, amide I, and III groups. The crystallinity of the melanoidins was majorly formed at $31.58^{\circ}$ and $43.62^{\circ}$ ($2{\theta}$).

Effect of Blanching on Dietary Fiber and Free Sugar Content of Vegetables

  • Vegetables are rich sources of dietary fiber, which exhibit various health benefits. In the Republic of Korea, vegetables are consumed after cooking using different methods. However, they are most commonly eaten raw or blanched. In this study, chamnamul, sesame leaf, Fischer's ragwort, burdock root, and garlic stem from Korea were analyzed according to the Korean Food Code, and changes in dietary fiber content after blanching were compared. Blanching reduced the total dietary fiber (TDF) content in chamnamul (from 3.67±0.03 to 2.61±0.14 g/100 g), burdock root (from 4.95±0.40 to 3.89±0.10 g/100 g), and sesame leaf (from 4.32±0.12 to 3.65±0.17 g/100 g), but increased it in Fischer's ragwort (from 6.09±0.49 to 6.43±0.01 g/100 g) and garlic stem (from 4.52±0.35 to 5.09±0.04 g/100 g). Sucrose, glucose, and fructose were detected in the vegetables; however, sesame leaf did not have sucrose. Fresh burdock root had the highest sucrose content (1.71±0.07 g/100 g) whereas garlic stem had the highest glucose and fructose content (1.65±0.02 and 1.73±0.02 g/100 g, respectively) compared with other vegetables. Upon blanching, the free sugar content of vegetables decreased for all sugars except for sucrose, which increased in Fischer's ragwort (from 0.10±0.01 to 0.14±0.01 g/100 g) and garlic stem (from 0.76±0.00 to 0.83±0.01 g/100 g). These results can provide information on blanching-associated changes in the content of dietary fiber and free sugar in foods prepared using these vegetables.

Effects of Fresh, Red and Black Garlic Powder on Lipid Metabolism of Obese Rats Induced by High Fat Diet (생마늘, 홍마늘 및 흑마늘 분말이 고지방 식이로 유도된 비만 흰쥐의 지질대사에 미치는 영향)

  • This study was aimed to evaluate the effects garlic such as fresh garlic powder (FGP), red garlic powder (RGP) and black garlic powder (BGP) by lyophilized, on serum lipid metabolism in obese rats induced high fat diet. Food efficiency ratio (FER) of the experimental groups was lower than the control group and it was significant difference. Total lipid content of serum decreased from 7.0 to 20.9% compared to the control group. Especially, triglyceride content decreased from 40.8% (BGP) to 42.1% (RGP) group as compared to the control group. There was no significant difference in HDL-C content between groups fed garlic powder and normal group. LDL-C contents of the experimental groups were lower than the control group, but has not showed significant diggerence compared to control group. Total lipid content was significantly increased in liver compared to the control group, but decreased over 30% in RGP and BGP groups to the control group. The lipid level in feces was increased by feeding periods of garlic powder, while total cholesterol and triglyceride were significantly increased in feces of RGP group. TBARS content in serum and liver of RGP and BGP groups was significantly decreased than the control group. Antioxidant activity of serum was 68.05% in the RGP group, which was significantly higher than the control group. From the above result, we suggested that red and black garlic powder were effective in the improvement of lipid level in obese rats induced high fat diet.
